Steps:
- Preheat oven to 350.
- Combine dry ingredients, except for sugar.
- Cream together butter and sugar (easiest if butter is softened to room temperature first).
- Separate the eggs, add egg yolks one at a time, beating after each addition.
- Add dry ingredients, alternating with mashed banana, to butter mixture, beating well after each addition.
- Optional: Can also add walnuts, chocolate chips (my fav!), dried cranberries, etc.
- Whip the egg whites and gently fold into batter.
- Pour into muffin tins, ideally lined.
- Bake at 350 for 18 minutes.
- let cool, then serve warm. Can be refrigerated for a few weeks or frozen for up to a few months! Microwave or toast to reheat.
- Optional: could also substitute 1/8 cup ground flaxseed for flour.

I make this for my vegetarian daughter. The whole family loves it. I don't usually add sugar, unless we have company because my family is used to low sugar treats. As a special treat sprinkle some semi sweet chocolate chips on top before you bake!

Steps:
- Preheat oven to 350 and grease and flour loaf pan.
- Rinse chickpeas.
- Use blender to mush chickpeas with the yogurt.
- Add bananas and continue to blend till smooth, thick consistency
- Scrape sides and check for large pieces of chickpeas -- if you find them keep blending.
- In one bowl, combine chickpea mixture with all other ingredients.
- Stir together.
- Put in loaf pan.
- Bake for an hour, until toothpick comes out clean.

- Preheat oven to 350°F (180°C). Line a 9-inch x 5-inch loaf pan with parchment paper. Oil the pan and paper with coconut oil. Set aside.
- Measure your chickpea flour in a medium-size mixing bowl. Using weight: grams or oz for precision. Otherwise, spoon, pack and level your measuring cups. If lumps show in your flour, squeeze between your fingers to remove them. Set bowl aside.
- In another large mixing bowl, combine mashed bananas, maple syrup, vanilla extract, cinnamon, apple cider vinegar, and baking powder.
- Gradually stir in chickpea flour, make sure your flour has no lumps, or it will form packets of flour in the dough that can taste bitter.

- In another bowl, whisk together the wheat flour, salt, baking powder, baking soda, cinnamon, and nutmeg. Add the dry ingredients to the wet and mix until moistened. Next, fold in the chocolate chips.
- Preheat your oven to 350 degrees. Then, lightly grease a bread pan and pour the batter inside. Bake the bread for 30 minutes and check. Bake for another 10-15 minutes and keep an eye on the bread so it doesn't over-bake. The bread will be done when a toothpick inserted in the middle of the loaf comes out clean.
