CHICKPEA AND BROCCOLI SKILLET

2 15 oz cans cooked chickpeas
3 cups frozen broccoli
3 cloves garlic
1/2 onion
1/2 cup vegetable broth
12 cherry tomatoes
1 tsp cumin powder
1/2 tbsp sweet smoked Spanish paprika
2 tbsp extra virgin olive oil
pinch sea salt
pinch black pepper

Steps:

  • Finely mince 3 cloves of garlic, finely dice 1/2 of an onion, drain & rinse two 15 ounce cans of cooked chickpeas and reserve 3 cups of frozen broccoli
  • Heat a large fry pan with a medium heat and pour in 2 tbsp extra virgin olive oil, after 2 minutes add in the diced onions & minced garlic and mix with the olive oil, after 3 minutes and the onions are nice and translucent, add in 1 tsp cumin powder & 1/2 tbsp sweet smoked Spanish paprika and mix it all together, then add in the frozen broccoli, 1/2 cup vegetable broth and season with sea salt & black pepper, give it a gentle mix so everything is well mixed, evenly divide 12 cherry tomatoes around the ingredients and place a lid on the pan
  • After 5 minutes remove the lid from the pan, add in the rinsed chickpeas and season again with sea salt & black pepper, mix together until well combined, simmer for 4 minutes or until the broth has reduced in half, remove from the heat and serve directly from the pan, enjoy!

Flavorful broccoli stir fry with chickpeas and a delicious garlic ginger sauce! This vegan weeknight dinner is easy to make in just one pan and it's ready in about 25 minutes. The healthy takeout recipe is meat-free, gluten-free, low in fat, and very simple!

1 tablespoon oil ((*see recipe notes))
1 onion (diced)
5 garlic cloves (minced)
1 heaped tablespoon fresh ginger (minced)
1 teaspoon onion powder
1 teaspoon paprika
1/2 teaspoon smoked paprika
Black pepper & sea salt (to taste)
Pinch of cayenne pepper
1 medium head of broccoli (cut into small florets)
1/3 cup vegetable broth
1 (15 oz) can of chickpeas (rinsed and drained)
Cooked rice of choice (for serving)
1/2 cup of water
3 tablespoons soy sauce ((gluten-free if needed))
2 tablespoons rice vinegar or balsamic vinegar
2 tablespoons maple syrup (or any other sweetener)
1 tablespoon cornstarch

Steps:

  • Heat oil in a pan over medium heat. Add onion, ginger, garlic, and all spices. Sauté for 3-4 minutes.
  • Add broccoli florets and vegetable broth. Fry until the broccoli is tender but not soft, about 10 minutes.
  • Meanwhile, prepare the sauce: In a medium bowl, combine water, soy sauce, vinegar, maple syrup, and cornstarch. Whisk.
  • Pour the sauce in the pan and add chickpeas.
  • Bring to a boil until the sauce simmers. Fry for a further few minutes.
  • Taste and adjust seasonings. Add more salt/pepper/cayenne pepper if needed.
  • Serve alone or with cooked rice. Enjoy!

These falafel-inspired broccoli balls are perfectly crisp on the outside, creamy on the inside and loaded with vibrant fresh herbs and spices. Paired with a tangy and spicy harissa-yogurt sauce, they can be perfect guilt-free hors d'oeuvres for your next party, a fiber-packed vegetable side dish or a crunchy addition to a salad. Since harissa pastes can vary widely in spiciness, feel free to adjust to your liking. They freeze really well, so make a double batch and freeze some for another night.

5 cups broccoli florets (about 12 ounces; see Cook's Note)
One 15-ounce can chickpeas
1 cup roughly chopped fresh parsley leaves and stems
1 cup roughly chopped fresh cilantro leaves and stems
1 tablespoon fresh lemon juice
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon baking powder
3 cloves garlic
1 small onion, diced
Kosher salt and freshly ground black pepper
3/4 cup panko breadcrumbs
3/4 cup full-fat plain Greek yogurt
1 tablespoon extra-virgin olive oil
3 to 6 teaspoons harissa paste
Olive oil cooking spray, for coating the broccoli balls

Steps:

  • Pour about 1 inch of water into a large skillet and bring to a boil over medium-high heat. Put the broccoli florets in a steamer basket in an even layer. Set the steamer basket over the boiling water and cook until crisp-tender, about 8 minutes (depending on the size of the florets). Transfer the broccoli to a large plate to cool slightly.
  • Line a baking sheet with paper towels. Making sure to reserve the liquid, drain the chickpeas and rinse thoroughly under cold water. Spread the chickpeas evenly on one half of the prepared baking sheet and the broccoli florets on the other half. Pat the chickpeas and broccoli with additional paper towels to remove excess liquid.
  • Put the parsley, cilantro, lemon juice, cumin, coriander, baking powder, garlic, onion, 1 teaspoon salt, several grinds of pepper and 3 tablespoons of the reserved chickpea liquid into a food processor. Pulse the ingredients until finely chopped, about 30 seconds. Add the chickpeas and broccoli and pulse again, stopping and scraping down the sides as needed, until the chickpeas and broccoli are finely minced, about 2 minutes. Transfer the mixture to a medium bowl and stir in the panko. Cover and refrigerate for 30 minutes.
  • Meanwhile, combine the yogurt, olive oil, harissa (to preferred spice level), 2 teaspoons water, 1/2 teaspoon salt and several grinds of pepper in a small bowl. Refrigerate to chill.
  • Preheat the oven to 375 degrees F; set a wire rack inside a baking sheet.
  • Using a tablespoon or medium scoop, form the chickpea-broccoli mixture into 1 1/2-inch balls, each about 1 heaping tablespoon. Evenly space the balls on the wire rack and spray generously with olive oil spray. Bake, rotating the baking sheet halfway through and coating the balls again with olive oil spray, until deep golden and crisp, about 45 minutes. Serve warm with the yogurt sauce.

1 head broccoli (12 ounces), trimmed
1/4 cup extra-virgin olive oil
Kosher salt and freshly ground pepper
1/3 cup panko breadcrumbs
1/3 cup finely grated Parmigiano-Reggiano (2 ounces)
1/4 teaspoon garlic powder
1/4 teaspoon dried thyme
1/4 teaspoon dried oregano
1 1/2 cups marinara sauce
3 ounces low-moisture mozzarella, such as Polly-O, thinly sliced
1 can (15.5 ounces) chickpeas, drained and rinsed

Steps:

  • Preheat oven to 450°F, with a large cast-iron or other ovenproof skillet on middle rack. Quarter broccoli lengthwise; cut larger pieces in half again (also lengthwise) to create long florets. Remove skillet from oven; swirl in 2 tablespoons oil. Add broccoli and turn to coat, then arrange so a flat side of each piece faces down; season with salt and pepper. Roast 15 minutes.
  • Stir together panko, Parmigiano, remaining oil, garlic, thyme, and oregano; season. Transfer broccoli to a plate. Add marinara to skillet; top with mozzarella and chickpeas. Return broccoli to skillet, browned-sides up. Sprinkle evenly with panko mixture. Roast until panko is golden, mozzarella is melted, and sauce is bubbling, about 10 minutes. Remove from oven; let stand 10 minutes. Serve.

Braising in a pool of olive oil can turn tough ingredients creamy and luxurious without any of your attention. Canned chickpeas turn buttery-soft, and broccoli rabe's bitterness succumbs to an oil seasoned with garlic, rosemary, chile and fennel seeds. Speaking of that oil, it's as much a reason to braise as the silky chickpeas and rabe themselves. Soak it all up with crusty bread, or ladle it over pasta, yogurt, feta or mozzarella. The underpinnings of this recipe - chickpeas, vegetables, olive oil and seasonings - also make it great to riff on. Consider simmering chickpeas and olive oil with carrots, harissa and black olives; cherry tomatoes, thyme and lemon slices; or potatoes, shallots and cumin seeds.

Steps:

  • Heat the oven to 375 degrees. In a large ovenproof skillet or Dutch oven over medium heat, combine the oil, garlic, rosemary, fennel seeds and chile flakes. Cook until the mixture is fragrant and the garlic is golden, 3 to 5 minutes.
  • Turn off the heat, then add the rabe and toss until coated in oil. Scatter the chickpeas around the rabe and stir to coat in oil. Season generously with salt and pepper.
  • Cover with a lid or foil and bake for about 40 minutes, until the chickpeas are soft and crispy in parts and the broccoli rabe is tender, but the stems are not mushy.
  • Let cool slightly. Before serving, remove the rosemary and season to taste with salt and pepper. Serve with crusty bread for mopping up the seasoned oil.
