SAUSAGE BALLS
Sausage balls are a classic party appetizer for a crowd and they couldn't be simpler--just mix, shape and bake. We've included thinly sliced scallions in our version for subtle onion flavor and a touch of color.

Steps:
- Preheat the oven to 350 degrees F and line 2 baking sheets with parchment.
- Combine the sausage, baking mix and scallions if using in a large bowl and gently knead with your hands until the baking mix is fully incorporated. Add the Cheddar and continue to mix until the cheese is evenly distributed.
- Using a tablespoon to scoop, divide the mixture into walnut-size pieces and shape into balls with your hands. Arrange on the lined baking sheets about 2 inches apart, about 20 balls per baking sheet.
- Bake until the sausage balls are golden brown and cooked through, about 26 minutes. Serve warm or at room temperature.

- Preheat oven to 375 degrees. Mix Uncooked turkey sausage, cheese, egg, cayenne pepper or tabasco sauce, (Garlic pepper if desired) and 3 cups biscuit mix; adding each ingredient in above order, and mixing thoroughly as each is added. Dough should be stiff and slightly dry, but not too dry. (If sausage dough sticks to your hands then it needs more Bisquick, add a small amount of Bisquick gradually, and blend until the meat doesn't stick to hands). Form into 1 inch balls by rolling between hands, place on ungreased cookie sheet, Bake at 375 for 10-18 minutes. Serve in a crock-pot with sauce of choice, BBQ sauce or Sweet & Sour. ***These freeze well uncooked. Put on a cookie sheet lined with wax or parchment paper, and insert wax paper between each layer of sausage balls, up to three layers. Freeze for 24 hours, then store in freezer bags or bowls for 3 months. ************************* GREAT SUMMER APPETIZER: ************************* These are excellent as a miniature skewers Drain and dry canned pineapple chunks between paper towels. Cut long, wooden skewers in half. Pierce pineapple chunk, thawed sausage ball, and pineapple chunk with half of skewer. Dip, roll, or drizzle in teriyaki sauce, place on very, very lightly sprayed cookie sheet with Olive Oil spray. Only enough spray to keep pineapple from sticking. (Make sure to discard Teriyaki Sauce after dipping raw meat!) Bake at 375 for about 10-18 minutes.
SAUSAGE BALLS
A crowd-pleaser for Holiday gatherings. This is my most requested recipe. These are best served with Versatile Mustard Dip (Recipe #150023).

Steps:
- Allow cheese and sausage to reach room temperature.
- Place in mixing bowl with Bisquick and blend until smooth. (I've had great success using my hand-held electric mixer to incorporate ingredients).
- NOTE: Mixture will be quite dry.
- Line a cookie sheet with aluminum foil.
- Spray well with vegetable oil spray.
- Press/roll mixture into 1 inch balls by hand; place on cookie sheet about 1 inch apart.
- Bake in 400 degree Fahrenheit oven for 10 to 12 minutes, or until golden brown.
- Drain on paper toweling.
- Serve warm with Versatile Mustard Dip (Recipe #150023).
ONE-PAN SMOKY BEANS & SAUSAGE MEATBALLS

- Squeeze the sausagemeat from one of the sausages, then roll into four balls. Repeat with the rest of the sausages. Heat half the oil in a flameproof casserole, shallow saucepan or deep frying pan over a medium heat and fry the sausage balls for about 8 mins, stirring occasionally until browned all over.
- Scatter in the onion, drizzle in the remaining oil and cook for 5 mins until the onions are golden. Add the garlic and cook for 2 mins more. Scatter in 1 tbsp sugar and the fajita spice mix, cooking for a minute or two until the mixture has thickened. Splash in the vinegar, tip in the tomatoes and a can of water, then add the beans. Season, stir, bring to a simmer and bubble gently for 15-20 mins until the sauce is thick and rich. Remove from the heat and leave to cool slightly. Can be prepared up to three days ahead, then cooled completely and chilled for up to three days or frozen for three months. Defrost completely in the fridge overnight and reheat in a pan until piping hot. Scatter with parsley or coriander and serve with crusty bread or jacket potatoes, if you like.
