4 chicken breasts, cooked and chopped in small pieces
3 tablespoons canola oil
1 large red pepper, chopped
1 large yellow pepper, chopped
1 large green pepper, chopped
1 garlic clove, crushed
1 medium onion, chopped
3 cups of rice
5 cups of water
2 cups of mixed veggies in pieces (carrot, peas, beans, yellow corn)
1 chicken bouillon cube
1 packet of seasoning with saffron
Salt to taste

Steps:

  • Heat oil in a large pot over low heat. Stir-fry the chopped peppers, garlic and onion, and stir until they're golden brown.
  • Add 3 cups of rice; remember to stir everything well.
  • Add 5 cups of water, the chopped veggies, chicken breast, bouillon, seasoning and salt. Stir and let cook at medium heat for approximately 15 minutes or until the rice dries.
  • Once rice has absorbed all the water, cover the pot and cook at low heat for 10 to 15 minutes until the rice is soft.

1/4 cup Achiote Oil, recipe follows
1 (3 to 4-pound) chicken, cut into 10 pieces
Fine sea or kosher salt and freshly ground black pepper
1/2 cup Sofrito, recipe follows
1/4 cup alcaparrado or coarsely chopped pimiento-stuffed olives
1 teaspoon ground cumin
Pinch ground cloves
4 cups long-grain rice
5 cups homemade or store-bought reduced-sodium chicken broth
2 large bottled roasted red peppers, cut into 1/4-inch strips (about 1 1/2 cups)
1 cup olive oil
2 tablespoons achiote (annatto) seeds, see Cook's Note*
2 medium Spanish onions (about 12 ounces), cut into large chunks
3 to 4 Italian frying peppers or Cubanelle peppers, cored, seeded and cut into large chunks
16 to 20 cloves garlic, peeled
1 large bunch cilantro, washed
7 to 10 ajices dulces (see Cook's Note*), optional
4 leaves culantro (see Cook's Note*), optional
3 to 4 ripe plum tomatoes (about 1 pound), cored and cut into chunks
1 large red bell pepper, cored, seeded and cut into large chunks

Steps:

  • In a paella pan or wide, shallow pan with a tight-fitting lid, heat the Achiote Oil over medium-high heat until the oil is rippling. Season the chicken with salt and pepper and add as many pieces skin side down to the pan as fit without touching. Cook, turning as necessary, until well browned on all sides, about 10 minutes. Remove the pieces as they are done and set aside. Adjust the heat under the pan, especially after you start removing chicken, so the chicken browns without the oil darkening.
  • When all the chicken is removed from the pan, add the Sofrito and alcaparrado. Season, to taste, with salt and pepper. Raise the heat to high and boil until most of the water is evaporated from the Sofrito. Add the cumin and cloves.
  • Stir in the rice until coated with oil. Return the chicken to the pan, pour in enough broth to cover the rice by the width of 2 fingers (about 1-inch), and bring to a boil. Cook over high heat until the level of liquid reaches the rice. Stir gently and reduce the heat to low. Cover the pan and cook until the liquid is absorbed, the chicken is cooked through, and the rice is tender but firm, about 20 minutes. Fluff the rice with a fork. The arroz con pollo can be brought to the table right in the pan or transferred to a large serving platter. Either way, garnish with the red pepper before serving.
  • Heat the oil and annatto seeds in a small skillet over medium heat just until the seeds give off a lively, steady sizzle. Don't overheat the mixture or the seeds will turn black and the oil will turn a nasty green. Once they're sizzling, remove the pan from the heat and let stand until the sizzling stops. Strain and reserve in a jar with a tight-fitting lid at room temperature for up to 4 days.
  • Chop the onion and Cubanelle or Italian peppers in the work bowl of a food processor until coarsely chopped. With the motor running, add the remaining ingredients 1 at a time and process until smooth. The sofrito will keep in the refrigerator for up to 3 days. It also freezes beautifully.

6 bone-in chicken thighs (about 6 ounces each)

1 large yellow onion, finely chopped
2 tablespoons minced garlic
1 large tomato, chopped
2 dried bay leaves
1 1/2 cups short-grain rice, preferably Valencia
3 cups low-sodium chicken broth, plus more if needed
1 cup pimiento-stuffed green olives, drained

Steps:

  • Preheat oven to 375 degrees. In a bowl, combine wine and saffron.
  • Season chicken with salt and pepper. In a large Dutch oven or braiser, heat oil over medium-high. Add chicken, skin side down; cook until browned, 6 to 7 minutes. Flip and cook 2 minutes more; transfer to a plate.
  • Drain all but 2 tablespoons fat. Add onion and garlic; cook, stirring often, until translucent, 4 minutes. Add tomato and cook, stirring often, until softened, about 5 minutes. Stir in wine-saffron mixture, bay leaves, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Cook until wine is nearly evaporated, 5 to 8 minutes.
  • Stir in rice, broth, and olives. Nestle chicken into rice, skin side up. Bring to a simmer, cover, and transfer to oven. Cook until liquid is absorbed and chicken is cooked through, 25 to 30 minutes. Let stand 10 minutes before serving.

Steps:

  • Add the olive oil to a large heavy-bottomed stockpot or Dutch oven set over medium-low heat.
  • Add the onions and carrots and cook, stirring, until the vegetables are softened, 5 to 7 minutes.
  • Add the garlic and cook, stirring, until fragrant, about 2 minutes.
  • Add the chicken thighs, 1/2 teaspoon salt and 1/4 teaspoon pepper. Cook, stirring, until the chicken thighs are no longer pink, about 7 minutes.
  • Stir in the turmeric powder, paprika and oregano.
  • Add the olives, peas, rice, and stock and stir to combine.
  • Increase the heat to medium-high to bring the mixture to a boil. Cover the pot then reduce it to a simmer and cook, undisturbed, until the rice is cooked through, about 30 minutes.

12 bone-in, skin-on chicken pieces (6 drumsticks and 6 thighs)
Kosher salt and freshly ground black pepper
1 large onion, chopped
1 red bell pepper, chopped
4 cloves garlic, minced
1 teaspoon smoked paprika
1/2 teaspoon ground cumin
1/2 teaspoon saffron threads
3 bay leaves
1/2 cup diced tomato
4 cups chicken stock
One 12-ounce bottle lager beer
2 cups arborio rice
1 cup frozen peas, thawed
1 pimiento, chopped

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat the olive oil in a large Dutch oven over medium-high heat. Sprinkle the chicken with salt and pepper. Add 3 drumsticks and 3 thighs to the Dutch oven and cook until browned on both sides, 7 to 8 minutes. Remove the chicken pieces with a slotted spoon and set aside. Repeat with the remaining drumsticks and thighs.
  • Add the onions and peppers to the pot and cook until the onions are translucent, 2 to 3 minutes. Add the garlic and saute for about 1 minute. Add the paprika, cumin, saffron and bay leaves, stirring until incorporated. Next, add the diced tomatoes, chicken broth, beer, rice and 1 teaspoon salt; mix well. Bring to a boil, then lower to a simmer.
  • Return the chicken pieces to the pot, cover, and transfer to the oven for 20 minutes. Remove the pot from the oven, add the peas and pimientos, then cover and return to the oven until the rice is completely tender, another 5 to 10 minutes.

  • Cover the pan and place it in the oven. Bake for 30 minutes.
  • Remove the pan from the oven. Stir the peas into the rice.
  • Top with parsley and serve.

1 large chicken, fryer cut in pieces or 6/8 drumsticks or thighs
1 large fresh green sweet pepper diced small
1 large vidalia or sweet onion diced
5 clove fresh garlic smashed or put through garlic press
1 c olive oil, extra virgin
1/2 c good white table wine
1 small can tomato sauce ( i use hunts)
1 c frozen green peas
3 c chicken broth or water
3 c white long grain rice
1/2 c beer (not dark beer)
1 tsp dried oregano
1/2 tsp ground cumin
1 large bay leaf
2 Tbsp salt
1 tsp ground paprika
1/2 tsp ground black pepper
2 small packets of goya sazon seasoning with culantro & achiote
1 tsp bijol yellow food coloring can be found in latino spice & food section
1 small can roasted red pimentos cut in strips for garnish

Steps:

  • 1. The night before or early in the morning take your chicken and season liberly all over with oregano, cumin, black pepper, & salt. Leave the skin on for good flavor. Store in refrigerator overnigt or for at least three hours. One hour before you start to make this dish take chicken out and let come to room temperature.
  • 2. In a deep large pot that has a good lid heat 3/4 cup of the oil and begin browning the chicken pieces on all sides do not cook chicken completely just brown all over. Remove chicken to a platter and let rest Do not place on paper towels. This should take about 10/12 minutes.
  • 3. Into the same pot where the chicken was browned, add the remaing oil, diced green pepper, onion, garlic, and begin to saute, when the onion starts to wilt add the wine, stir then add the tomato sauce, oregano, cumin, bay leaf, 1 tbsp salt, paprika, black pepper, packet of Goya Sason seasoning and the bijol (yellow food coloring) If you are unable to find you can substitute with a few strands of Saffron. It is expensive but well worth it. It also can be purchased in the Latino food section. Stir well over a low flame.
  • 4. While the sofrito is simmering on a low flame, rinse your three cups rice in cool water twice, drain well and set aside. Next add the three cups of chicken broth or water to the simmering sofrito sauce and return the chicken pieces to the pot. Raise the heat to medium and dump the rice in the pot with the chicken. Mix well and add the beer, and remaining tbsp salt. Stir well again and last add the cup of frozen green peas on top of the mixture do not stir again. Cover with the lid and reduce the flame to a low simmer. Do not uncover the pot for one hour. After one hour uncover and taste a few grains to see if the rice is cooked. Rice should be tender. If rice is not cooked cover again and continue to cook fifteen more minutes. When finished transfer to a platter and garnish with roasted red pimento strips. INSTANT POT ARROZ CON POLLO (CHICKEN WITH RICE)

Arroz con Pollo means "rice with chicken" in Spanish and it is a crown jewel in such cuisine. Bot no two recipes are alike. I like mine a with a smooth texture and with chorizo tossed in for good measure.

2 tbsp of olive oil
2 tbsp (1/4 stick) of butter
1/2 tsp of saffron (a key flavor ingredient, so I strongly suggest you use it if possible. If not, it's not the end of the world and it will still taste fabulous)
1 medium yellow onion, diced
1 red bell pepper, diced
1 tbsp of crushed garlic
1.5 - 2 lbs of chicken thighs (boneless & skinless preferred), cut into bite-sized pieces
1 lb of Chorizo (Spanish sausage), sliced into 1/4″ discs (I used pre-cooked sausage that is in links at the market so it was sliceable but some Chorizo is in a tube and is crumbled like ground beef. Either is fine but I prefer the pre-cooked links)
1 cup of a dry white wine like chardonnay or sauvignon blanc (or 1 cup more of broth if not using)
2.5 - 3 cups of chicken broth (I used 3 tsp of Chicken Better Than Bouillon + 3 cups of water; NOTE: use 3 cups for an extra smooth sauce-like consistency and 2.5 cups for slightly less sauce)
14.5 oz can of diced tomatoes, with their juices
14 oz of Goya Arroz Amarillo/Yellow Rice (I use this specific rice for this dish as it contains wonderful flavor spices - you can use the low sodium version as well)
Juice of 1 lime
2 tsp of dried parsley
2 tsp of smoked or regular paprika
2 tsp cumin
1 tsp chili powder

Steps:

  • Add the oil and butter to the Instant Pot, hit "Sauté" and "Adjust" so it's on the "More" or "High" setting. Once the butter's melted, add in the saffron and allow it to sauté in the butter and oil for 30 seconds.
  • Next, add in the onions and peppers and sauté for 3 minutes. Then, add the garlic and sauté for another minute
  • Now, add in the chicken and chorizo and stir in the pot. Add in the paprika, cumin, parsley flakes and chili powder. Stir constantly for 3 minutes so the chicken sears and also making sure the spices don't stick to the bottom of the pot (we want it to be nice and clear)
  • Add in the white wine and allow everything to simmer in it for a minute. Then, add in the broth, lime juice and can of diced tomatoes. Stir well and allow it to come to a bubble (make sure it does this, even if ever so slightly)
  • Once bubbling, add in the rice but make sure you don't stir it in - just lightly submerge it under the broth with a mixing spoon
  • Secure the lid in sealing mode, hit "Keep Warm/Cancel" and then hit "Manual" or "Pressure Cook" on High Pressure for 10 minutes. Quick release when done (NOTE: Because all pots seem to be calibrated slightly differently with different sensitivity levels, if for whatever reason you receive a "burn" message AFTER the pin has come up and the time begins to countdown, DO NOT FREAK OUT. Simply ignore it. It is only because there is a lot of volume in the pot with the rice mixed with everything else but there is also plenty of liquid as well. It will continue cooking, countdown won't be affected, and it will come out perfectly. If you receive a "burn" notice BEFORE the pin pops up, simply remove the lid, go back to the "Sauté" setting adjust so it's on "More" or "High", place the lid on top in the venting position and allow it to cook for about 15-20 minutes, stirring occasionally. It will be perfect this way too but it is unlikely this will happen)
  • When the lid comes off, it may appear there is a lot of liquid left, but that's an illusion. Give everything a stir from the bottom up and the excess liquid will magically become a lush and velvety sauce for this astounding Arroz con Pollo. Let it set for about 5 minutes and the sauce will thicken significantly as it cools down a bit
  • Place in a serving dish and enjoy with some fixins' such as sour cream, salsa or my contest-winning roasted garlic guacamole and refried beans!

Colombian-Style Arroz con Pollo was one of my favorite recipes growing up. My mom would make it at least once a week for lunch. Rice with chicken is one of the most popular dishes in Colombia and South America, but every country has their own variation. This is my mom's Arroz con Pollo recipe. Enjoy!

2 whole chicken breast (bone in and skin removed)
1 scallion
½ white onion
2 garlic cloves
½ tablespoon ground cumin
½ tablespoon sazon Goya with azafran
1 bay leaf
Salt and Pepper
2 tablespoons olive oil
¼ cup chopped onion
1 garlic clove (minced)
¼ cup chopped red bell pepper
¼ cup chopped green pepper
1 cup long- grain white rice
1 tablespoon tomato paste
1 chicken bouillon tablet
2 ½ cups chicken stock
½ tablespoon sazon goya with azafran
¼ cup chopped fresh cilantro
½ cup frozen peas
½ cup frozen diced carrots
½ cup frozen diced green beans

Steps:

  • To make the stock: Place the chicken breast, 5 cups water and the remaining ingredients for the stock in a medium pot. Bring to a boil, cover and reduce the heat to medium low. Cook for 20 to 25 minutes. Turn the heat off and let the chicken rest in the pot for about 15 minutes covered. Let it cool, shred and set aside. Strain stock and measure 2 ½ cups and set aside.
  • In a medium pot, heat the olive oil over medium-high heat. Add the onions, green peppers, garlic and red bell pepper. Cook until the onions are translucent, about 4 to 5 minutes.
  • Add the rice, tomato paste, chicken bouillon and sazon goya. Stir until the rice is well coated about 3 minutes. Add the chicken stock and bring to a boil. Then reduce the heat to low. Cover and simmer for about 15 minutes. Add the peas, carrots and green beans and cook for and additional 7 minutes, add the shredded chicken and cilantro, mix well with a fork, cover and cook for 5 minutes more.
  • Serve this arroz con pollo with a green salad on the side and Enjoy!

  • Preheat oven to 325 degrees F (165 degrees C).
  • Heat the olive oil in a Dutch oven over medium heat. Sear the chicken until golden, then set aside. Steps:

  • Using paper towels, pat chicken dry. Season chicken with Adobo. Heat oil in caldero, or large heavy pot over medium heat. Cook chicken, in batches, until brown on all sides, 7-10 minutes; set aside.

8 pieces bone-in chicken thighs or drumsticks

Steps:

  • Mix 2 teaspoons of salt, garlic powder, chili powder, cumin and black pepper in a small bowl.
  • Pat chicken dry and remove the skin if desired. Place chicken on a large plate or other flat surface and evenly coat chicken with the spice mixture.
  • Heat oil in a large, 12-inch skillet or saute pan with high sides over medium-high heat. Add the chicken, skin side first, and cook until browned on all sides; 5-6 minutes per side. Transfer to a clean plate.
  • Add onions and bell pepper to the skillet and season with a pinch or two of salt. Cook over medium heat until softened; 5-7 minutes. Add minced garlic and the rice and cook for an additional minute, until rice begins to turn a golden color and the garlic is fragrant.
  • Meanwhile, combine 1 ¼ cups of water, chicken broth, tomato sauce and a teaspoon of caldo de tomat* in a medium bowl. Pour into the skillet with the rice, stirring to make sure that all the rice is covered with the liquid.
  • Nestle the chicken pieces in with the rice and bring to a boil. Add the peas, then reduce heat to low and cover. Cook until chicken is cooked through (registers 165 on an instant read digital thermometer), rice is tender and fluffy and most of the liquid is absorbed; about 30-35 minutes.
  • Remove from heat and let stand, covered, for 10 minutes before serving.

1 lb bone-in, skin-on chicken thighs
Pinch of salt, pepper, cumin for chicken thighs
1/2 cup chopped yellow onion
1/2 cup chopped red bell pepper
4 cloves garlic (minced)
2 cups uncooked long-grain white rice (rinsed and washed)
4 cups chicken stock
8 ounces tomato sauce
1/2 teaspoon annatto powder, bijol, or turmeric (to color the rice)
1 bay leaf
2 teaspoons dried oregano
2 teaspoons ground cumin
Salt + pepper to taste
1/2 cup frozen peas

Steps:

  • First, pat the chicken thighs dry with a paper towel then season with salt, pepper, and cumin.
  • In a wide Dutch oven or large pot with a heavy bottom and a lid, heat 2 tablespoons of olive oil. Over medium heat, place chicken thighs in the pan and brown on both sides. Transfer to a plate.
  • Next, add the remaining olive oil and sauté onion, garlic and red pepper, stirring frequently, until the onion is translucent and the garlic is fragrant.
  • Add the rice, chicken stock, tomato sauce, annatto powder, bay leaf, oregano, cumin, salt, and pepper to the saucepan. Stir to combine all the ingredients.
  • Bring to a boil then add the chicken thighs to the mixture. Reduce heat to low and cover with the lid.
  • Cooking low and slow will ensure you don't burn the rice. Every stove cooks differently so after 40 minutes, take a peek and see if the liquid has been absorbed. If yes, remove the pot from the heat immediately so it doesn't continue to cook with the residual heat. If not, continue to cook in 5 minute increments until all the liquid has been absorbed and the rice is tender. Remove pot from the heat.
  • Fluff the rice with a fork then stir in the frozen peas until warm. Serve and enjoy!

2 tbsp canola oil ()
2 tbsp homemade sazon
1 1/2 c jasmine rice (uncooked)
3 c water
1 1/4 c homemade sofrito
1 tsp turmeric
1/2 tsp kosher salt (or to taste)

Steps:

  • Set the oven temp to 400 degrees. Begin heating canola oil in a large cast-iron skillet and seasoning your chicken with saźon. Pan sear skin side down for 4-6 minutes to crisp the skin. Turn and allow the chicken to cook another 3-5 minutes to sear the bottom. Remove and rest the partially cooked chicken in a shallow dish.
  • Turn off the heat and add to the pan, the rice, turmeric, salt, and sofrito. Stir well, scraping the flavors from the chicken.
  • Next, stir in the water then carefully place the chicken with the juices from the resting plate to the pan onto the rice. Do not submerge the meat in the liquid.
  • Loosely tent the skillet with aluminum foil and place in the preheated oven for 30 minutes. Remove the foil and bake for another 10-15 minutes as needed to ensure the liquid is absorbed and the chicken crisps. Fluff the rice before serving.

8 pieces Dark Meat Chicken (bone in and skin on (about 2½-3 pounds))
3 - 3½ teaspoons Salt (divided)
4 tablespoons Olive Oil
1 Medium Onion (finely diced)
3-4 Garlic Cloves (minced)
½ teaspoon Dried Oregano
½ teaspoon Paprika
¼ teaspoon Turmeric
¼ teaspoon Cumin
¼ teaspoon Black Pepper
2 tablespoons Tomato Paste
¼ cup White Wine
2 cups Long Grain White Rice
4 cups Chicken Broth
1 cup Water
1 Bay Leaf
12 ounces Light Beer (room temperature)
15 ounce can Sweet Peas (drained, for garnish optional)

Steps:

  • Trim any excess fat from the chicken and season with 1 teaspoon of salt.
  • Add 1½ teaspoon of salt, oregano, paprika, turmeric, cumin and black pepper to a small bowl. Stir the seasoning mix to combine.
  • Heat the olive oil in a large, heavy pot over medium heat. When the oil is hot, but not smoking, add the chicken, skin side down. Cook the chicken for 5 minutes, then turn and cook for another 5 minutes.
  • Remove the pot from the heat. Remove the chicken from the pot and set on a plate or pan. Loosely cover the chicken with a piece of foil, to keep it warm.
  • Do not wash the pot. Set it back over medium heat and add the onions. Cook the onions for 2-3 minutes, stirring frequently.
  • Add the garlic, tomato paste and the prepared seasoning mix (1½ teaspoon of salt, oregano, paprika, turmeric, cumin and black pepper) to the pot. Stir well until combined. and cook for 1-2 minutes, stirring frequently.
  • Carefully, add the white wine to the pot and stir, while gently scraping any bits off the bottom. Cook for 1 minute, or until most of the wine cooks out.
  • Add the rice, chicken broth, water, and the bay leaf to the pot. Stir well to combine.
  • Add the chicken back to the pot. Arrange it so that it's not stacked.
  • Raise the heat to high and bring the liquid to a boil. Stir the rice frequently while waiting for the liquid to come to a boil.
  • Once boiling, lower the heat to medium and simmer for 8-10 minutes, stirring occasionally.
  • The rice should now be visible on the surface and should not sink to the bottom of the pot when stirred.
  • Give everything a good stir. Lower the heat to low, cover and cook the chicken and rice for 20 minutes. Stir after 10 minutes, then stir again after the 20 minutes.
  • Taste a little bit of the rice. If it needs a salt, this is the time to add it. As a reference, we added ½ teaspoon of salt to ours. Stir well.
  • Raise the heat to medium-low and slowly add the beer, while stirring. Cover and cook the chicken and rice for 10 minutes. Lower the heat to low and cook another 10 minutes.
  • Taste the rice, if it's still not done, cover and let it steam another 15 minutes or until done.
  • Garnish with the sweet peas, if desired.

  • Dice up onion and bell pepper and chop garlic.
  • Add the onion,pepper and garlic to pot with 1/2 cup of cooking wine and the bullion cube.
  • Cover and cook until chicken is done.
  • Add rice and the can of beer and the 2 teaspoons of bijol, return to a boil then lower heat to simmer and cover pot for about 20 minutes until rice is cooked . You can add more beer or wine if needed.Stir in peas and garnish with the strips of pimento.

Peruvian arroz con pollo stands apart from other versions of chicken and rice across Latin America thanks to the addition of a bright green cilantro purée and aji amarillo, a fruity yellow hot pepper that's similar in flavor to habaneros or scotch bonnets. Traditionally, the dish contains choclo, very large and chewy Peruvian corn kernels with earthy flavor. Cooked canned hominy makes a great substitute that offers a similar taste and texture. This one-pot homestyle dish is commonly served with salsa criolla, a tangy and spicy red onion relish, but a Louisiana-style hot sauce is a good alternative.

3 tablespoons neutral oil, such as safflower or canola oil
2 pounds boneless, skinless chicken thighs, each thigh halved lengthwise

1 teaspoon ground cumin
2 cups basmati rice
1 (15-ounce) can hominy, rinsed and drained
3 cups low-sodium chicken broth

1 large red bell pepper, cored, seeded and thinly sliced

Steps:

  • In a blender, combine cilantro and 6 tablespoons of water, and purée until smooth. Set aside.
  • In a large Dutch oven or heavy pot, heat 2 tablespoons oil over medium. Add half the chicken, season with salt and pepper, and cook, turning halfway, until browned, 4 to 5 minutes. Transfer chicken to a plate, and repeat with remaining chicken.
  • Add remaining 1 tablespoon oil and the onion to the empty pot, and cook, stirring occasionally, until softened, about 2 minutes. Stir in garlic and cumin until fragrant, about 30 seconds. Add rice and hominy, season with salt and pepper, and stir until well combined, 30 seconds. Add broth, aji amarillo paste, bell pepper and reserved cilantro purée, scraping the bottom of the pot to remove any browned bits.
  • Nestle the chicken with any accumulated juices into the pot, and bring to a boil over high. Cover, reduce heat to low and cook until rice is tender and all of the liquid is absorbed, about 20 minutes.
  • Sprinkle with peas, then cover and steam for 3 minutes. Turn off heat, and fluff rice with a fork. Divide arroz con pollo in bowls and serve with salsa criolla or hot sauce.

1 packet sazon (Spanish seasoning)

1 can tomato sauce
1 packet chicken bouillon
2 cups rice
1/2 cup water
3/4 cup canola oil

Steps:

  • Chop onion, green pepper, and garlic and put into Dutch oven pot. Cut boneless chicken into cubes, wash & put into pot. Add a dash of salt & pepper, and the sazon to chicken. Add a dash of oregano. Add the 1/2 cup of water to the chicken. Cook in medium heat until chicken is 1/2 cooked.
  • Pour tomato sauce into chicken and chicken bouillon.
  • Pour rice into a saucepan, wash and drain, and pour into Dutch oven with the boneless chicken. Add 1/2 cup of water into Dutch oven with chicken & rice. Pour canola oil, and stir with a big spoon. Cover and let cook until rice is cooked completely & is fluffy -- 1-1/2 hours total time.

  • Add chicken to a large bowl. Add in 1 tablespoon olive oil and your adobo seasoning: cumin, paprika, chili powder, cayenne pepper, onion powder, garlic powder, coriander, salt and pepper. Use clean hands to toss the chicken in the mixture. Cover and allow chicken to marinate for 30 minutes, or you can skip this completely and begin the cooking process!

Once oil is hot, add in chicken and season with a little more salt and pepper. Cook until browned 4-5 minutes, then flip and and cook an additional 4-5 minutes. Remove from pan and transfer to a plate.
  • In the same skillet (it should be greased enough already for sauteing) you will make your sofrito by adding in garlic, jalapeno, diced green pepper, diced onion and cilantro.
  • Saute for 2-3 minutes, then add in your spices (also known as homemade sazon spices): cumin, turmeric, coriander, garlic powder, oregano, salt and pepper and cook for 30 seconds. Then add in tomato sauce and water and stir well to combine.
