- Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish with cooking spray.
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels.
- Arrange potatoes in an even layer on the bottom of the prepared baking dish. Season chicken thighs with salt and pepper, then arrange on top of the potatoes. Drizzle the chicken dish with olive oil; sprinkle with thyme and rosemary. Crumble the bacon over the top of the dish.
- Bake in the preheated oven until chicken is no longer pink in the centers and potatoes are tender, about 1 hour.

CREAMY CHICKEN AND POTATO BAKE
Tender chicken, potatoes and carrots baked in a rich, creamy Alfredo Sauce. This easy to make meal will quickly become a family favorite!

- Preheat the oven to 375 degrees. Spray casserole dish with non stick cooking spray, set aside.
- Cut the chicken breast into large chunks. Place in casserole dish.
- Top the chicken with the quartered potatoes and carrots.
- Combine the cream cheese, evaporated milk, cream of chicken soup, ranch mix and half the shredded cheese in a medium sauce pan. Place over medium high heat and whisk until smooth.
- Pour cream mixture over the top of the potatoes. Finish with the remaining shredded cheese. Cover tightly with foil. Bake in preheated oven for 1 hour 30 minutes.
- Remove foil, place under broiler for 4-6 minutes until the top of the casserole is golden brown. Watch it carefully so it doesn't burn, you just want it to get all golden and toasty!
- Allow to rest 15-20 minutes before serving.

BACON-WRAPPED JALAPEñO POPPER CHICKEN

- Wear gloves to protect your hands and use a small paring knife to cut the stem-end off the jalapeño; you should see the white ribs attached to the walls of the jalapeño. Use the paring knife to remove the ribs from the walls. Make a cut down the length of the jalapeño from the top to the tip. Carefully, without breaking the jalapeño in half, scrape out the ribs and seeds. Transfer to a microwave-safe bowl, add 3 tablespoons water, cover tightly with plastic wrap and microwave on high power until the jalapeños turn olive green and are lightly softened but are still firm and hold their shape, 2 to 3 minutes. Let cool.
- Stuff each cooled jalapeño with a piece of cream cheese; squeeze the walls around the cream cheese to force out any air pockets and to seal the jalapeño walls together.
- Mix together the cumin, 1 tablespoon salt and 1/2 teaspoon pepper in a small bowl. Pound the chicken lengthwise down the breast to make a rectangular 1/4-inch-thick cutlet. Sprinkle with a quarter of the seasoned salt. Repeat with the remaining chicken and seasoned salt.
- With one of the narrow ends of the chicken facing you, lay a piece of Colby Jack cheese at the bottom of the cutlet. Place 1 stuffed jalapeño crosswise on top of the cheese about 2 inches from the bottom. Tightly roll up the chicken and the cheese around the jalapeño, folding in the sides as you roll. Repeat with the remaining chicken and jalapeños.
- Lay 5 strips of bacon on a clean work surface so that the strips are slightly overlapping (about 1/4-inch) and are wide enough to completely cover a chicken roll. Place 1 chicken roll at the bottom of the bacon blanket. Wrap the bacon tightly over the chicken roll. Repeat with the remaining bacon and chicken rolls.
- Prepare a grill for indirect grilling and heat to medium-high heat.
- Place the chicken rolls, bacon seam-side down, on the cooler side of the grill. Cover and cook until the bacon is beginning to brown and the cheese is beginning to melt and ooze from the sides, 15 to 20 minutes. Transfer the chicken rolls to the hot side of the grill and cook until lightly charred, 1 to 2 minutes per side. Let cool 10 minutes before serving.
CHICKEN WRAPPED BACON & ALFREDO POTATOES

- Bacon Wrapped Chicken Drumsticks Directions: Preheat oven to 375 degrees, and line a high-walled baking sheet with foil. Brush foil with olive oil, set aside. Rinse and pat dry chicken drumsticks, place drumsticks in a bowl and drizzle with EVOO and toss to coat. Next, place drumsticks on a baking sheet and season with McCormick Chipotle Sea Salt, McCormick Medley Peppercorns and Old Bay Seasoning, make sure to rotate drumsticks to evenly coat with seasoning. Now, here's the part where things get very, um... interestingly YUMMY! Take a whole length of thick-cut bacon and wrap it around the drumstick and return to the foil lined and high-walled baking sheet, repeat the process until all of the drumsticks have b gotten the wrapped bacon "treatment." Place chick in the oven and back for 1 hour, juices should run clear, and bacon should be crispy. Remove from oven and arrange on top of the Alfredo Smashed Potatoes, and no sneaking a piece, I know is so freakin' tempting isn't?!

A recipe that I thought sounded delicious from Paula Deen's Comfort Food Magazine. Posting for safe keeping. Update 10/17/2013: Made this for DH and myself, so I made 1/3 of the recipe, but still made 2 pieces of bacon (will even make more next time) and I added some additional heavy cream as we like it creamy. We loved the addition of the bacon, onion and garlic to the normal Chicken Alfredo, DH even went back for seconds.

- Heat a large skillet over medium heat. Add bacon; cook until crisp. Remove bacon to paper towels to drain, reserving drippings in skillet. Crumble bacon and set aside.
- Sprinkle chicken with salt and pepper. Brown chicken in drippings; add chicken broth. Cover and cook for 15 to 20 minutes or until cooked through. Remove chicken; shred meat.

- Preheat oven to 400 degrees F (200 degrees C).
- Wrap each chicken piece in a slice of bacon, trying to cover as much of the chicken as possible. - 2. Wrap one slice of bacon around each chicken breast, place in casserole dish

- Heat the grill to high. Put the bacon rashers on a baking tray lined with foil and grill for 5 mins on each side until crisp. Leave to cool, then roughly chop.
- Heat the oil in a large saucepan or high-sided frying pan over a high heat. Season the chicken, then brown on both sides. Sprinkle over the oregano and add the garlic, then stir for another minute. Crumble in the stock cube and add 250ml water.
- Bring to a simmer, cover and reduce the heat to low-medium. Cook until the chicken is tender, about 15-20 mins, topping up with more water if the pan looks dry. Transfer the chicken to a board using tongs, then shred using two forks. Return the shredded chicken to the pan with the sauce.
- Whisk the flour into the cooking juices in the pan, turn up the heat and keep stirring until you have a smooth paste that clings to the chicken. Add 500ml water and the cream, then simmer, stirring occasionally for 8-10 mins, or until the sauce has thickened.
- Meanwhile, cook the pasta in a large pan of boiling salted water for about 10 mins until it is just cooked but retains some bite. Drain.
- Add most of the parmesan, the mustard, spinach and half the chopped bacon to the sauce, then season to taste, if needed. Stir until the spinach has wilted, then stir in the cooked pasta.
- Tip the mixture into a large baking dish. Mix the breadcrumbs with the remaining parmesan and scatter over the top along with the tomatoes and remaining chopped bacon. The unbaked dish can now be frozen for up to two months (see below).
- To cook straightaway, heat the oven to 200C/180C fan/gas 6. Bake for 35-40 mins, or until the top is golden and crunchy and the sauce is bubbling.

- Skin 2 chicken breasts, then cut a pocket in each side and stuff each with 25g/1oz soft goat's cheese.
- Wrap each breast in 2 rashers rindless streaky bacon, tucking in a few fresh sage leaves, then put the breasts in a baking dish and season. Spoon over 1 tbsp olive oil.
- Roast the chicken breasts in a baking dish, uncovered, for 30-35 minutes in a preheated oven (190C/gas 5/fan oven 170C). To check if they are done, insert a sharp knife into the centre of a parcel and leave it for a few seconds, if the chicken is cooked the tip should feel very hot when you pull it out and touch it. - Preheat your oven to 350 degrees. Dry your scrubbed potatoes, and rub them with vegetable oil and sprinkle the skin with salt. I like to use a coarsely ground sea salt, but any kind is fine. Pierce the potatoes a few times with a knife to allow steam to escape while baking and place them on the oven rack. Bake for 50-60 minutes, or until they feel soft when you squeeze them.
- When your potatoes are almost done baking, start on your creamy alfredo sauce. In a small saucepan, melt butter over medium high heat. Sauté your garlic in the butter for a couple of minutes and then add flour. Whisk the flour and butter together for a couple more minutes.
- Slowly add milk, and whisk the flour and butter paste into the milk until it is smooth. Bring it to a gentle boil and let it cook on medium heat until it starts to thicken up a bit (5-8 minutes). Whisk in the shredded cheese and add salt and pepper to taste. Remove the pan from the heat.
- Make a slit in the top of each potato with a knife, and squeeze the sides of the potato to open them up. Add a bit of butter to each potato and sprinkle with salt and pepper to taste. Divide your grilled chicken between each of the potatoes, and spoon your creamy alfredo sauce on top of the chicken. Sprinkle with bacon and green onions.
