4 6-to-8-ounce skinless, boneless chicken breasts
Kosher salt and freshly ground pepper
3 tablespoons extra-virgin olive oil
1 9-ounce package frozen artichoke hearts, thawed and patted dry (see Cook's Note)
1 small red onion, cut into wedges
3 cloves garlic, thinly sliced
1 teaspoon dried oregano
3/4 cup low-sodium chicken broth
1/4 cup pitted kalamata olives
1/4 cup chopped fresh parsley
1/4 cup crumbled feta cheese
1/4 cup sliced Peppadew peppers, plus 2 teaspoons brine from the jar (see Cook's Note)

Steps:

  • Place the chicken breasts between 2 pieces of plastic wrap and pound with a skillet until about 1/2 inch thick. Season with salt and pepper. Heat 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add the chicken and cook, undisturbed, until golden on the bottom, 4 to 5 minutes; turn and cook until the other side is golden, 2 to 3 more minutes. Transfer to a plate and set aside.
  • Wipe out the skillet and return to medium-high heat. Add the remaining 2 tablespoons olive oil; when hot, add the artichoke hearts and red onion and cook, undisturbed, until golden in spots, about 1 minute. Season with salt and pepper and continue cooking, stirring occasionally, until the vegetables are tender, about 2 more minutes. Add the garlic and oregano and cook, stirring, 30 seconds.
  • Return the chicken to the skillet and add the broth and olives. Bring to a gentle simmer, cover and cook until the chicken is cooked through, 4 to 6 minutes. Top with the parsley, feta, peppers and brine.

1 10-ounce package frozen artichoke hearts, thawed
1 clove garlic, chopped
1/4 teaspoon red pepper flakes
1 28-ounce can whole peeled San Marzano tomatoes, crushed by hand

3 cups chopped rotisserie chicken (skin removed)
1/4 cup fresh basil, roughly chopped, plus more for topping
4 slices rosemary focaccia (about 4 ounces)
4 ounces fresh mozzarella, thinly sliced
1/4 cup grated parmesan cheese

Steps:

  • Preheat the broiler. Heat the olive oil in a large ovenproof skillet over medium-high heat. Add the artichokes and cook, stirring occasionally, until tender and browned in spots, about 5 minutes. Add the garlic and red pepper flakes. Cook, stirring, until the garlic is soft, about 30 seconds.
  • Add the tomatoes, 1 cup water, 1 teaspoon salt and a few grinds of pepper to the skillet. Bring to a boil, then reduce to a simmer and cook, stirring occasionally, until the sauce thickens, about 10 minutes. Stir in the chicken and basil; season with salt.
  • Meanwhile, toast the focaccia in a toaster oven or under the broiler and let cool slightly; roughly chop to make coarse breadcrumbs. Sprinkle the crumbs over the chicken mixture and top with the mozzarella and parmesan.
  • Transfer the skillet to the broiler and cook until the breadcrumbs are browned and the cheese is bubbling, 3 to 5 minutes. Let cool, 5 minutes. Top with basil.

1 cup all-purpose flour
4 chicken cutlets (about 4 ounces each)
1/4 cup extra-virgin olive oil
1/2 bunch fresh flat-leaf parsley
8 ounces angel hair pasta
9 ounces frozen artichoke hearts, thawed
2 tablespoons capers in brine
1/2 cup dry white wine
1/2 cup chicken stock
4 tablespoons unsalted butter

Steps:

  • Position an oven rack in the center of the oven and preheat to 450 degrees F.
  • Place a large saute pan over medium-high heat and fill a second large saute pan halfway with warm water and set over high heat. Add a very large pinch of salt to the water and cover with a lid.
  • Put the flour and a large pinch of salt and pepper into a large resealable plastic bag. Sprinkle the chicken cutlets generously with salt and pepper and place them in the bag, then close it tightly and give it a few shakes to coat the chicken completely.
  • Pour the olive oil into the hot pan and let it warm up for 30 seconds. Shake excess flour from the cutlets and add them one at a time to the hot oil. Cook until lightly browned on both sides, about 4 minutes total. While the chicken is cooking, tear off the leaves from the parsley and roughly chop; reserve. Transfer the chicken to a baking sheet lined with a rack and place in the oven to finish cooking while you prepare the rest of the meal.
  • At this point, the salted water should be at a full boil. Put the pasta into the water and cook, uncovered, until al dente, about 3 minutes.
  • Meanwhile, add the artichokes and capers to the same pan that the chicken was cooked in and use a wooden spoon to scrape up any browned bits at the bottom of the pan. Stir in the white wine and chicken stock and cook until the liquid is reduced by almost half, about 3 minutes. Stir in 2 tablespoons of the butter until melted. Turn off the heat and reserve.
  • Drain the cooked pasta and add to a large bowl along with the chopped parsley and remaining 2 tablespoons butter. Stir gently until the butter is melted and season to taste with salt and pepper. Transfer the chicken to a serving platter and spoon the artichokes and sauce on top. Serve immediately.

1 lemon, halved
12 baby artichokes
3 tablespoons olive oil
1 3 1/2-pound chicken, cut into 8 pieces
20 pearl onions, blanched 1 minute in boiling water, peeled
1/4 cup red wine vinegar
1/2 cup water
3 large garlic cloves, peeled
2 bay leaves
1/4 cup chopped fresh Italian parsley

Steps:

  • Squeeze juice from lemon halves into large bowl; add lemon halves. Fill bowl with water. Trim stem of 1 artichoke. Starting at base, bend leaves back and snap off where they break naturally, continuing until all tough outer leaves have been removed. Using small sharp knife, trim outside of base until smooth and no dark green areas remain. Cut artichoke in half lengthwise; cut out any choke. Add to lemon water. Repeat with remaining artichokes.
  • Heat oil in heavy large pot over medium-high heat. Sprinkle chicken with salt and pepper. Working in batches, add chicken to pot and brown well on all sides, about 12 minutes per batch. Transfer chicken to plate. Drain artichokes. Add artichokes and pearl onions to pot and sauté until onions are golden, about 6 minutes. Add vinegar and stir until evaporated, about 3 minutes. Stir in 1/2 cup water, garlic and bay leaves. Arrange chicken atop vegetables. Sprinkle generously with salt and pepper. Cover; simmer until chicken is tender, about 30 minutes. Discard bay leaves.
  • Transfer chicken and vegetables to platter. Sprinkle with parsley and serve.

Boneless, skinless chicken breast half (6 ounces)
Coarse salt and ground pepper
1 tablespoon all-purpose flour
4 sun-dried tomatoes packed in oil, drained, and slivered
4 teaspoons olive oil
1/2 cup artichoke hearts packed in water, drained, rinsed, and halved
2 scallions, green and white parts separated, thinly sliced
2 garlic cloves, thinly sliced
1/4 cup Israeli couscous (optional)

Steps:

  • Place chicken between 2 sheets of plastic wrap or waxed paper. With the flat side of a meat mallet or a small skillet, pound to a 1/2-inch thickness. To soften noise, place chicken in plastic on a folded kitchen towel when pounding.
  • In a medium skillet, heat 3 teaspoons of the oil over medium-high heat. Season chicken with salt and pepper. Coat chicken in flour, shaking off excess. Saute until golden brown and cooked through, 1 1/2 to 2 minutes per side. Remove.
  • To pan, add garlic, white part of the scallions, and 1/2 cup water; bring to a boil, scraping up browned bits. Add artichokes, sun-dried tomatoes, and remaining teaspoon oil; season with salt and pepper. Cook until artichokes are heated through and sauce has reduced slightly, about 1 minute. Spoon mixture over chicken.
  • To make couscous, if desired: Bring a small pot of salted water to boil; add couscous. Boil until couscous is tender but still pleasantly chewy, about 10 minutes. Drain, toss with scallion greens, and serve alongside chicken.

2 tablespoons cornstarch
2 tablespoon minced garlic, divided

4 sliced scallions, separate green and white
1/2 cup chicken stock (if canned, use low sodium)
2 cups sliced shiitakes

  • Marinate chicken in sesame oil, oyster sauce, cornstarch, 1 tablespoon garlic and 1 tablespoon ginger for 30 minutes. Blanch snap peas al dente in hot salted water followed by an iced bath. Steps:

  • Combine the thyme, lemon zest, salt and pepper; rub over chicken. In a large nonstick skillet, brown chicken in 2 teaspoons oil; remove and set aside. , In the same skillet, saute onion in remaining oil until tender. Add garlic; cook 1 minute longer. Stir in the artichokes, wine and olives. Return chicken to the pan. Bring to a boil. Reduce heat; cover and simmer for 6-8 minutes or until a thermometer reads 170°., Remove chicken and keep warm. Simmer artichoke mixture, uncovered, for 2-3 minutes or until liquid has evaporated; serve with chicken.

1 -2 tablespoon sherry wine or 1 -2 tablespoon other white wine

Steps:

  • Saute 5 cloves in 1/2 Cup of butter in a large skillet.
  • Add chicken, sprinkle with salt and pepper.
  • Brown chicken, then remove chicken to a warm platter.
  • Add remaining 3 cloves garlic and 1/4 cup butter, olive oil. Brown the garlic and toss in mushrooms; add artichokes.
  • Heat, stir in wine. Let thicken.
  • Pour over chicken.
  • Serve with Rice or noodles.

1 cup soy sauce
1 cup Chinese rice wine or medium-dry Sherry
1/4 cup packed light brown sugar
1 (1-inch) cube peeled fresh ginger, smashed
3 garlic cloves, peeled and smashed
2 (2-inch-long) pieces Asian dried tangerine peel
4 whole star anise (1 tablespoon)
2 bunches scallions, cut into 1-inch pieces (4 cups)
1 (3- to 3 1/2-lb) chicken
1 teaspoon Asian sesame oil
1 1/2 tablespoons vegetable oil
1/2 lb fresh shiitakes, stems discarded and caps cut into 1/4-inch slices
1/4 teaspoon salt

Steps:

  • Bring water, soy sauce, rice wine, brown sugar, ginger, garlic, tangerine peel, star anise, and 2 cups scallions to a boil in an 8-quart pot, then reduce heat and simmer 10 minutes. Add whole chicken and simmer, covered, turning once, until just cooked through, 50 to 60 minutes. Transfer chicken with a large slotted spoon to a platter and brush with sesame oil. Keep warm, covered with foil.
  • Pour cooking liquid through a sieve into a large bowl, discarding solids. Skim fat from surface and reserve 1 cup cooking liquid. (Cool remainder, uncovered, then freeze.) Heat vegetable oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then stir-fry shiitakes and remaining 2 cups scallions with salt, stirring frequently, until mushrooms are tender, 3 to 5 minutes. Add reserved cooking liquid and boil until reduced by half, about 3 minutes. Cut chicken into serving pieces and serve with sauce.

2 tablespoons olive oil
4 skinless, boneless chicken breast halves
4 cups chicken stock
1 (9 ounce) package frozen artichoke hearts, thawed
1 cup fresh pearl onions, peeled
½ teaspoon dried thyme
¼ teaspoon salt
¼ teaspoon ground black pepper
3 ounces soft goat cheese, sliced into 4 pieces
2 tablespoons cornstarch

Steps:

  • Heat olive oil in a skillet over medium heat and cook chicken breast halves until browned on both sides, 5 to 8 minutes per side. Pour in chicken stock, artichoke hearts, pearl onions, thyme, salt, and black pepper and bring to a boil. Reduce heat to low and simmer until stock is reduced and onions and artichokes are tender, about 45 minutes; turn chicken breasts over in the skillet after 20 minutes.
  • Place a goat cheese slice on each chicken breast; cover skillet and let goat cheese melt. Place chicken breasts onto a serving platter. Spoon about 3 tablespoons liquid from skillet into a small bowl and whisk in cornstarch until smooth; stir cornstarch mixture into skillet and cook until sauce has thickened, about 1 minute. Serve pan sauce with chicken breasts.

Mrs. Dash seasoning mix (original)
1/4 cup butter
12 green onions, chopped
2 cups shiitake mushrooms, quartered
1/2 teaspoon salt
1/4 teaspoon pepper
1 garlic clove, minced
1/2 cup white wine
1 tablespoon olive oil
4 marinated artichoke hearts, quartered
2 cups cooked white rice

Steps:

  • Cut chicken into strips and sprinkle with Mrs. Dash (or other seasoning mix).
  • Melt butter in a large fry pan over medium-high heat.
  • Add chicken and saute until lightly brown, about 10 minutes.
  • Remove chicken and set aside.
  • Add green onions to pan and saute about 2 minutes.
  • Add mushrooms, salt, pepper, and garlic and cook for another 2 minutes, stirring often.
  • Add wine, olive oil, and artichoke hearts and simmer for 5 minutes.
  • Return chicken to pan and simmer until heated through.
  • Serve over rice.
