1/2 cup lime juice
1 tablespoon olive oil
1/2 teaspoon garlic salt
1/2 teaspoon coarsely ground pepper
4 boneless skinless chicken breast halves (4 ounces each)
1 cup frozen corn, thawed
1 medium tomato, chopped
1 serrano pepper, seeded and chopped
1 green onion, cut into 1/2-inch pieces
1/4 teaspoon ground cumin
2 slices Monterey Jack or pepper Jack cheese, halved

Steps:

  • In a small bowl, combine the lime juice, oil, garlic salt and pepper. Set aside 5 tablespoons. Pour remaining lime juice mixture into a resealable plastic bag; add chicken. Seal and turn to coat; let stand at room temperature for 10 minutes., Meanwhile, in a small bowl, combine the corn, tomato, pepper, green onion, cumin and 3 tablespoons reserved lime juice mixture. Cover and refrigerate., Drain and discard marinade from chicken. Lightly oil the grill rack. Grill, covered, over medium heat or broil 4 in. from heat for 5-6 minutes on each side or until a thermometer reads 170°, basting twice with remaining lime juice mixture., Top with cheese; grill or broil 1-2 minutes longer or until cheese is melted. Serve with salsa.

Someone gave me this recipe a few years back and it's become a household favorite. You can use mild, medium or hot salsa depending on your taste. I usually serve it with Spanish rice and Mexican-style canned corn. Very easy and quick!

4 skinless, boneless chicken breast halves
4 teaspoons taco seasoning mix
1 cup salsa
1 cup shredded Cheddar cheese
2 tablespoons sour cream

Steps:

  • Preheat oven to 375 degrees F (190 degrees C)
  • Place chicken breasts in a lightly greased 9x13 inch baking dish. Sprinkle taco seasoning on both sides of chicken breasts, and pour salsa over all.
  • Bake at 375 degrees F (190 degrees C) for 25 to 35 minutes, or until chicken is tender and juicy and its juices run clear.
  • Sprinkle chicken evenly with cheese, and continue baking for an additional 3 to 5 minutes, or until cheese is melted and bubbly. Top with sour cream if desired, and serve.

4 cups mixed leaf greens, (3 types)
6 ounces garden salsa, recipe follows
4 potatoes
1 tablespoon butter
Olive oil
Salt and pepper
1 cup rice wine vinegar
3 cups olive oil
5 cups diced yellow squash
8 cups tomatoes, diced fine
2 1/2 cups red onion, diced fine
1 cucumber, peeled and seeded, diced fine
1 cup red pepper, diced fine
2 tablespoon cracked black pepper
4 tablespoons fresh basil
Salt, to taste

Steps:

  • Preheat oven to 375 degrees F. Mark chicken breast on grill, finish in oven for 20 minutes. Toss the mixed greens with 4 ounces garden salsa. Place mixed greens on a dinner plate top with chicken breast. Finish with 2 ounces of salsa and place grilled potatoes around outside of plate.
  • Preheat oven to 375 degrees F. Clean and butter whole potatoes, bake until soft, about 1 hour. Cut cooked potatoes in quarters, toss in oil and season with salt and pepper. Chill until ready to use.
  • Yield: 1 serving
  • Mix vinegar and olive oil. Mix all vegetables and season. Pour liquid over vegetables, cover and store in the refrigerator until ready to use.

Steps:

  • Stir the chili powder and cumin in a medium bowl. Add the chicken and toss to coat.
  • Heat the oil in a heavy 12-inch skillet over high heat. Add the chicken and cook until it's blackened and cooked through, stirring often. Remove the chicken from the skillet.
  • Stir the salsa and water in the skillet and cook until the mixture is hot and bubbling. Divide the greens among 6 plates. Top with the chicken and salsa mixture.

2 (15 ounce) cans pineapple tidbits, drained with juice reserved
2 mangos - peeled, seeded and diced
2 green chile peppers, diced
⅓ cup chopped fresh cilantro
½ cup freshly squeezed lime juice and pulp
½ cup fresh orange juice
¼ cup dark rum
½ clove garlic, minced
8 skinless, boneless chicken breasts

Steps:

  • In a bowl, mix the pineapple and the reserved juice from 1 can, mangos, peppers, cilantro, lime juice and pulp, orange juice, rum, and garlic. Let stand for one hour before adding chicken.
  • Strain the juice from the salsa to use for the marinade. Set aside enough salsa without the juice to use for topping the chicken. Marinate the chicken breast halves in the bowl with the remaining salsa and juice mixture for 2 to 6 hours.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Discard salsa used for marinating, and bake chicken for 30 minutes in the preheated oven, or until chicken juices run clear. Top with reserved salsa to serve.

1 1/2 cups diced yellow onion
1 cup diced carrot
1 cup diced celery
6 garlic cloves, grated
1 1/2 medium chicken breasts, cooked and chopped
5 cups chicken stock
1 tablespoon kosher salt
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon black pepper
1 tablespoon dried thyme
1 1/2 cups half-and-half
1 pound gnocchi
1 tablespoon cornstarch
1 tablespoon water
1 1/2 cup chopped fresh spinach or kale
Parmesan cheese, for garnish

Steps:

  • In a large pot, heat the oil over medium-high heat until shimmering. Add the onion, carrots, and celery and sauté until tender, about 6 minutes.
  • Add the garlic and chicken and toss to incorporate, then pour in the chicken stock and season with the salt, garlic powder, onion powder, pepper, and thyme. Bring to a boil and cook for about 10 minutes, until fragrant.
  • Stir in the half-and-half and gnocchi and cook for 2 minutes, until beginning to thicken slightly.
  • In a small bowl, whisk together the cornstarch and water.
  • Reduce the heat to medium-low. Stir in the cornstarch slurry and cook for another 3 minutes, until the soup has thickened. Stir in the spinach, then remove the pot from the heat.
  • Ladle the soup into bowls and garnish with the Parmesan cheese, then serve immediately.

My husband and I love fresh salsa, so we decided to try making our own. We just started by adding ingredients, till it tasted the way we wanted. Since then, we have been growing a SALSA GARDEN in the backyard, so we can enjoy our homemade salsa all summer long!!

3 cups fresh tomatoes
1 1/2 cups fresh green peppers or 1 1/2 cups yellow peppers
1/2 cup fresh tomatillo
4 -5 jalapeno peppers
2 tablespoons cilantro
1 medium white onion
1 medium red onion
1/2 tablespoon apple cider vinegar
2 cloves garlic
1 fresh lemon
1 tablespoon seasoning salt
1/2 teaspoon garlic powder
1/8 teaspoon cumin
1/8 teaspoon onion powder
1 dash chili powder
1 dash lemon-pepper seasoning

Steps:

  • Chop up the tomatoes, peppers, tomatillo's cilantro, onions and put in a bowl.
  • Using a food processor, dice the garlic, lemon and two or three of the jalapeno peppers.
  • Add this to the chopped vegetables.
  • Add the rest of the ingredients, and mix well.
  • This salsa tastes the best after it has some time for the ingredients to marinade.
  • You can use any type of tomatoes you like, same goes with the peppers, just be sure to taste it as you add the jalepenos, because some of them can be a lot hotter than others.

1/2 cup chicken broth
1 cup sour cream
1 cup green chili salsa

  • Pound chicken breast (between 2 pieces plastic).
  • Put oil in skillet,Brown chicken on both sides.
  • Salt and pepper to taste.
  • Place chicken into casserole dish.
  • In same skillet put chicken broth and sour cream mix together and heat.
  • Pour mixture over chicken.
  • Spoon salsa over chicken.
  • Top with grated cheese.
  • Bake in 350°F oven for 30 to 45 minutes.
