Fresh lemon and dill create a quick Greek-inspired pan sauce for simple sautéed chicken breasts. Make it a meal: Serve with roasted broccoli and whole-wheat orzo.

Salt & freshly ground pepper, to taste
3 teaspoons extra-virgin olive oil, or canola oil, divided
¼ cup finely chopped onion
3 cloves garlic, minced
1 cup reduced-sodium chicken broth
2 teaspoons flour
2 tablespoons chopped fresh dill, divided
1 tablespoon lemon juice

Steps:

  • Season chicken breasts on both sides with salt and pepper. Heat 1 1/2 teaspoons oil in a large heavy skillet over medium-high heat. Add the chicken and sear until well browned on both sides, about 3 minutes per side. Transfer chicken to a plate and tent with foil.
  • Reduce heat to medium. Add the remaining 1 1/2 teaspoons oil to the pan. Add onion and garlic and cook, stirring, for 1 minute. Whisk broth, flour, 1 tablespoon dill and lemon juice in a measuring cup and add to pan. Cook, whisking, until slightly thickened, about 3 minutes.
  • Return the chicken and any accumulated juices to the pan; reduce heat to low and simmer until the chicken is cooked through, about 4 minutes. Transfer the chicken to a warmed platter. Season sauce with salt and pepper and spoon over the chicken. Garnish with the remaining 1 tablespoon chopped fresh dill.

4 boneless skinless chicken breasts (OR 4-6 chicken thighs)
salt and pepper (to taste)
1 tablespoon oil
2 tablespoons butter
1 tablespoon honey
½ teaspoon each dried oregano, dried basil, garlic powder
1 tablespoon butter
2 teaspoons minced garlic
½ cup chicken broth (I used low sodium )
⅔ cup heavy cream (OR half & half plus 1 tablespoon corn starch)
juice of ½ lemon (about 2 tablespoons)
1 tablespoon chopped fresh dill
cracked black pepper (to taste)

Steps:

  • Preheat oven to 375 degrees. Season chicken with salt and pepper, to taste along with garlic powder, oregano, and basil. Combine butter and oil in a large oven-safe skillet (see note), once butter is melted add honey and stir to combine.
  • Add chicken to pan, brown chicken 2-3 minutes on each side. Transfer chicken to a plate (it won't be cooked through at this point). Add butter and garlic and saute for 1 minute until fragrant. Add chicken broth, heavy cream, and lemon juice and stir over medium heat for 2-3 minutes.
  • Return chicken to pan and transfer to preheated oven. Bake for 15 minutes or until chicken is cooked through. Spoon pan sauce over the chicken and sprinkle dill over the chicken and sauce, add cracked black pepper to taste and serve.

1/2 teaspoon garlic salt
1/4 teaspoon pepper
1 tablespoon olive oil
4 cups fresh broccoli florets
1 cup chicken broth

1 tablespoon snipped fresh dill
1 cup 2% milk

Steps:

  • Sprinkle chicken with garlic salt and pepper. In a large skillet, heat oil over medium heat; brown chicken on both sides. Remove from pan., Add broccoli and broth to same skillet; bring to a boil. Reduce heat; simmer, covered, until broccoli is just tender, 3-5 minutes. Using a slotted spoon, remove broccoli from pan, reserving broth. Keep broccoli warm., In a small bowl, mix flour, dill and milk until smooth; stir into broth in pan. Bring to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes. Add chicken; cook, covered, over medium heat until a thermometer inserted in chicken reads 165°, 10-12 minutes. 4 (5 ounce) boneless chicken breasts
4 tablespoons honey
5 lemons
4 teaspoons dried dill weed
1 teaspoon dried oregano
1 teaspoon dried basil
½ teaspoon garlic powder
salt and freshly ground black pepper to taste
4 tablespoons butter

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Set chicken breasts into a shallow casserole dish and brush 1 tablespoon honey onto each breast.
  • Zest 1 lemon, then cut in half. Slice remaining lemons. Squeeze juice from 1 lemon over the tops of the chicken breasts and sprinkle with lemon zest. Combine dill, oregano, basil, garlic powder, salt, and pepper in a small bowl and sprinkle spices on top of the chicken. Cover chicken breasts with lemon slices and set 1 tablespoon butter on each piece of chicken breast.
  • Bake until chicken is no longer pink in the center and the juices run clear, about 40 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

4 boneless chicken breast halves (or cutlets, about 1 1/4 to 1 1/2 pounds)
1/2 teaspoon seasoned salt
1 tablespoons butter
1 tablespoon extra virgin olive oil
1/2 cup chicken broth (low sodium)
1/2 cup half-and-half (or light cream)
1 tablespoon flour
1 teaspoon dried dill weed (or 2 teaspoons freshly chopped dill weed)
Optional: garnish with fresh chopped parsley

Steps:

  • Gather the ingredients.
  • Sprinkle the chicken breasts with seasoned salt. If the chicken breasts are quite large, slice each one in half horizontally to make two cutlets. For faster and more uniform cooking, put each chicken breast or cutlet between two sheets of plastic wrap and gently pound with the smooth side of a meat tenderizer.
  • In a large skillet over medium-high heat, melt the butter and olive oil.
  • When the butter and oil are hot and sizzling, add the chicken breast halves or cutlets to the skillet. Cook for about 3 to 5 minutes on each side or until chicken is browned. Reduce the heat to low.
  • Add the chicken broth to the skillet; cover and simmer 10 to 12 minutes or until chicken is cooked through.
  • Remove the chicken breasts from skillet to a hot platter; tent them with foil to keep them warm.
  • In a small bowl, combine cream or half-and-half, flour, and dill; whisk or blend with a fork until smooth.
  • Add the flour mixture to the skillet; cook and stir until the mixture has thickened.
  • Serve the creamy dill sauce over chicken breasts with rice, noodles, or potatoes and your favorite side vegetables.

1 pound skinless, boneless chicken thighs, cut into 1-inch pieces
salt and freshly ground black pepper to taste
1 tablespoon olive oil
1 medium onion, chopped
1 (8 ounce) package baby bella mushrooms, sliced
3 cloves garlic, minced
1 cup low-sodium chicken broth
¼ cup dry white wine
1 tablespoon dry sherry
½ cup plain low-fat Greek yogurt
¼ cup chopped fresh dill, or more to taste
2 teaspoons Dijon mustard
2 tablespoons unsalted butter
1 tablespoon all-purpose flour

Steps:

  • Season chicken with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5 minutes.
  • Reduce heat to medium and add onion; cook until translucent and soft, about 3 minutes. Add mushrooms and cook, stirring occasionally, for 4 to 5 minutes. Stir in garlic and sauté until fragrant, about 30 seconds.
  • Pour in chicken broth, wine, and sherry and bring to a boil. Stir in Greek yogurt, 1/4 cup dill, and Dijon mustard until well incorporated. Add butter and stir until melted.
  • Place flour in a small bowl. Add a ladle of hot broth and whisk until smooth and no lumps remain. Pour mixture into the skillet and stir until well incorporated.
  • Reduce heat to low and simmer until the sauce starts to thicken, 3 to 4 minutes. Taste and adjust seasoning and/or add additional dill if necessary.

2 cups plain yogurt
2 cups fresh dill weed, chopped
4 scallions, including the green part, sliced thin
1 tablespoon fresh gingerroot, peeled and finely grated
1 1/2 tablespoons ground cumin
1 -6 fresh hot green pepper, chopped fine (to taste)
3 tablespoons fresh lemon juice
2 1/2 teaspoons salt
black pepper, to taste
6 1/2 lbs chicken parts (breasts halved if whole and the legs and drumsticks cut into sections)
5 tablespoons vegetable oil
1 cinnamon stick, 1 inch in length
6 whole cloves

Steps:

  • In a bowl, whisk the yogurt well, add the dill, scallions, gingerroot, cumin hot peppers, lemon juice, 1/2 teaspoons salt, black pepper and combine mixture well.
  • Pull off and discard the skin from the chicken, and sprinkle the chicken on both sides with black pepper and the remaining 2 teaspoons of salt.
  • In a heavy large deep skillet or wide flameproof casserole heat the oil over moderately high heat until it is hot but not smoking, add the cinnamon stick, the cloves and cook the spices, stirring, for 5 seconds. Brown the chicken in the spiced oil in batches, transferring it as it is browned with tongs to a bowl.
  • Return the chicken to the skillet with any juices that have accumulated in the bowl, arranging the drumsticks and thighs on the bottom and the breast pieces on the top. Add the yogurt mixture and bring it to a boil. Simmer the mixture, covered, stirring occasionally for 20 minutes. (This dish can be prepared 2 days in advance and kept covered and refrigerated until the day of serving.).
  • Remove the lid and boil the mixture, uncovered stirring occasionally, for 5 to 10 minutes, or until the liquid is reduced to a thick sauce.

1 broiler/fryer chicken (4 to 5 pounds)

  • Place onions on bottom of a 6-qt. slow cooker. In a small bowl, mix butter and lemon zest., Tuck wings under chicken; tie drumsticks together. 2 boneless skinless chicken breasts
1 tablespoon all-purpose flour
1 pinch salt
1 pinch pepper
1 teaspoon butter
1 teaspoon vegetable oil
1/4 cup white wine or 1/4 cup chicken stock
1/3 cup whipping cream
1 tablespoon fresh dill
2 teaspoons chopped fresh chives or 2 teaspoons green onions
1/2 teaspoon lemon juice
lemon slice (to garnish)
dill sprigs (to garnish)

Steps:

  • Dredge the chicken breasts lightly in flour; season with a pinch each of salt and pepper.
  • In a skillet, heat butter and oil over medium-high heat; cook chicken, turning once, for about 6 minutes or until golden brown and no longer pink inside.
  • Remove from the pan and keep warm.
  • Pour off all the fat from the pan.
  • Pour in the wine and bring to a boil over high heat; cook, stirring to scrape up any brown bits in the pan, for about 1 minute or until reduced and syrupy.
  • Add the cream; boil for about 1 minute or until thick enough to coat a spoon.
  • Stir in the dill, chives, lemon juice, and salt and pepper to taste.
  • Stir any accumulated juices from the chicken back into the pan; pour the sauce over the chicken.
  • Garnish with lemon slices and dill sprigs.
