" NOT" LASAGNA
This recipe, from Karin Calloway of the Augusta Chronicle, eliminates many of the steps in creating traditional lasagna. Instead of the cheese mixture and noodles, you use cheese ravioli. You layer the ravioli with meat sauce and mozzarella cheese and bake. Voila! -- It's "Not" Lasagna; and it is delicious and perfect for a weeknight supper.

NOT-SAGNA PASTA TOSS
Easier than lasagna, because it's not, this pasta, meat sauce and ricotta toss-up is just as hearty and comforting as the layered Italian fave, but it's ready in a fraction of the time and with much less effort.

Steps:
- Heat a large pot of water to boil for pasta. Salt water and cook pasta to al dente. Heads up: you will need a ladle of the starchy cooking water to help form sauce before draining.
- Heat a deep nonstick skillet over medium-high heat. Add extra-virgin olive oil, 2 turns of the pan. Add the meat and break it up into small bits as it caramelizes. Once meat has good color to it, 4 to 5 minutes, add garlic, onions and red pepper flakes and season with salt, pepper, allspice and Worcestershire sauce. Cook another 5 minutes, deglaze the meat and onions with red wine, cook off a minute, then combine about 1/2 cup of stock into the meat. Stir in the tomatoes and bring to a bubble. Reduce heat to medium low and simmer 5 minutes.
- Place ricotta cheese in the bottom of a shallow bowl. Add a ladleful of boiling, starchy pasta water to the ricotta and stir to combine. Add a couple of handfuls of grated Parmesan to the ricotta and mix it in.
- Drain pasta. Toss hot pasta with cheeses. Add half the thick meat sauce to the pasta bowl and combine. Tear or shred the basil and add to the meat and pasta, toss again. Taste to adjust salt and pepper. Serve bowlfuls of Not-sagna with extra sauce on top and more grated Parmesan to pass at the table.

Steps:
- Heat the olive oil in a Dutch oven or large, wide pot over medium-high heat. Add the sausage and cook, breaking up clumps with a wooden spoon, until brown, about 6 minutes. Add the Marinara and 3 1/2 cups water and bring to a boil. Add the pasta, then partially cover and cook, stirring occasionally, until the pasta is al dente and the sauce is coating it nicely, about 16 minutes. Stir in the mozzarella and ricotta, then sprinkle with the Parmesan and basil, and serve.
- Heat the olive oil in a large saucepan over medium heat. Add the garlic and cook, stirring frequently, until it just turns golden, 3 to 4 minutes. Add the tomatoes, Italian seasoning, basil, 1 teaspoon salt and a few grinds of fresh pepper. Bring to a simmer and cook, stirring occasionally, for 7 minutes. Take off the heat and stir in the butter until melted. Add salt and pepper to taste.
NO-COOK LASAGNA
No pre-cooking needed but your guests will never know! My adjustments to this recipe add more sauce and more cheese since I always seemed to run short when assembling this dish. This is a tried and true winner on Bridge night. For the best flavor I recommend Prego sauce flavored with Italian sausage - or brown some Italian sausage along with the ground beef for the sauce.

OUTSTANDING LASAGNA WITHOUT PRE-BOILING REGULAR NOODLES
This tastes fabulous! Uses a mix of turkey sausage & ground beef, and plain old regular style lasagna noodles that you do not have to pre-boil. Just follow the directions as it will take more liquid and cooking time. Choose your favorite sauce, and throw in green peppers while cooking the meat if you like them. Yes the cooking time is longer, but wouldn't you rather let it cook by itself while you do something else, rather than have to boil those noodles, then try to dry them, etc? Yeah, me too! Enjoy!

Steps:
- Important: do NOT pre-boil the noodles! Brown chopped onion, sausage and ground beef in small amount of olive oil. When almost browned, add minced garlic so it won't burn. Drain, put in large bowl, mix in with spaghetti sauce, salt & red pepper flakes. Set aside. Get another large bowl; mix in ricotta cheese, egg, ½ C each mozerella, parmesean and romano cheeses, parsley, basil. In 13x9 pan, put 1C of the red sauce in the bottom. Add approximately 3 ½ of the noodles, arrange 3 lengthwise, leaving space between them to allow them to absorb liquid and expand, and add a piece at the end of the pan since they are not long enough to cover the entire length. Take approximately ½ of the white cheese mix, drop by spoonfuls over the noodles and spread around a little. (doesn't need to cover everything or be perfect!) Then add 1C mozzarella cheese. Repeat this entire layer, using approximately ½ of the remaining red sauce, same amount of noodles and white mix, and another Cup of the mozzarella. Add the remaining red sauce, then 1C of parmesean cheese to top it off. Take the sauce can, fill it halfway with water, then slowly pour over the dish all over, so the liquid will rise up to about half full in the pan. This will all get absorbed by the noodles, because you didn't pre-boil them. Tightly cover with foil. Bake at 325 F for 2 hours. Then uncover, raise the temp to 350 F and bake another 15-30 minutes until the cheese is golden on top and the edges are pulling away from the pan. Remove from the oven, and let it sit for 10-15 minutes or until all the liquid has set up and the dish is firm.

NO-FUSS LASAGNA
I like this recipe because it can be prepared a day ahead and baked just before serving, so it's a great way to avoid that last-minute rush when attending a potluck. HOW TO MAKE LASAGNA: THE 10 MOST COMMON MISTAKES
From lacucinaitaliana.com
- Should you want to make the pasta at home, spread the pasta rather thin and boil it in water with a drizzle of oil to prevent the sheets from sticking to the each other, or boil one sheet at a time and once drained place it in cold water.
- If you buy fresh egg pasta, the process is the same as for homemade pasta. If you buy packaged dried sheets then you absolutely must cover them well with the filling, without leaving a single corner exposed.
- There shouldn’t be too much or too little filling. Too much between one layer and another will keep you from ever getting a perfect slice. Too little and all you’ll taste is pasta.
- Do not put large pieces of vegetables or meat in lasagna for the same reason as above. To get a perfect lasagna, the filling should be finely sliced or even creamy.
- If using parchment paper, remember to remove it once the lasagna is cooked. Otherwise, it will get wet and ruin the base. It’s better to grease an oven dish or to streak it with béchamel sauce.
- Don’t overdo it with the béchamel, a necessary ingredient in many recipes, particularly for the consistency it lends to the taste, but one which can ruin the dish if there’s too much of it.
- Lasagna should be cooked for at least 45 minutes in a hot oven at 350°F, though it really depends on the number of layers. To prevent an overcooked surface and an undercooked center, cover with aluminum foil halfway through the cooking process.
- Particularly when using store-bought dry pasta, be careful when cooking the corners. Cover them well with the filling and add a drizzle of water or milk to soften them once in the oven.
- Though it may seem obvious, any meat or vegetables in the filling must be cooked first. Vegetables can even be simply blanched, but putting them raw into the filling is highly risky.
- Don’t eat it now. Like a good eggplant parmigiana, baked pasta should always be left to rest. Forget about eating it fresh out of the oven ... it’s actually better the next day!
