CREAMY AVOCADO PESTO CHICKEN PASTA



Creamy Avocado Pesto Chicken Pasta image

Creamy avocado pesto chicken pasta. It's a lightened up version of traditional basil pesto and is done in about 45 minutes (including time to bake the chicken).

4-5 chicken breast tenders
olive oil (for brushing)
spices (for chicken)
1 lb penne pasta (or desired pasta)
1 tbsp salt
1 1/2 cups fresh basil leaves (packed )
2 cloves garlic (minced)
1/4 cup pine nuts or walnuts (I used a mixture of both)
2 1/2 tbsp extra virgin olive oil
2 tbsp freshly squeezed lemon juice (about 1 lemon)
1 avocado
sea salt and pepper
3 tbsp grated Parmesan cheese

Steps:

  • Heat oven to 400 degrees F.
  • Brush chicken generously with olive oil and season with desired spices. I sprinkled salt, pepper, garlic powder, dried basil, and cayenne pepper over top.
  • Place chicken equally-spaced on greased baking sheet and cook for 15-20 minutes, or until chicken is completely white throughout and internal temperature reaches 165 degrees F.
  • Cut chicken into small pieces and set aside.
  • Bring a large pot of water to a boil and add salt.
  • Add penne and cook for 11 minutes, or until your preferred doneness.
  • While the pasta is cooking, prepare sauce.
  • Add basil leaves, garlic, and nuts to a food processor and pulse so the basil and nuts are well broken up.
  • Add olive oil, lemon juice, avocado flesh, and salt and pepper and process until sauce is creamy.
  • Once the pasta is done, drain cooked penne with a colander and return pasta to the pot.
  • Add sauce, Parmesan cheese, and chicken and stir so that everything is combined.
  • Serve while warm.

A unique-tasting dish that combines the flavors of clementines and basil with the natural creaminess of avocado. I like to add spinach to this, but not always. It definitely looks prettier on the plate without the spinach, but the added nutrition is always a plus.

1 avocado, peeled, pitted, & chopped
1/3 cup fresh basil
2 tablespoons lemon juice
3 garlic cloves, minced
1/4 teaspoon black pepper
1/4 teaspoon salt
4 chicken breast halves
2 tablespoons olive oil, divided
2 shallots, sliced
1/4 cup sugar
4 clementines, sliced & peeled
2/3 cup water
1/3 cup white wine vinegar
1/4 teaspoon red pepper flakes
8 ounces penne pasta
2 cups fresh spinach, chopped (optional)

Steps:

  • In a large bowl, combine avocado, basil, lemon juice, garlic, black pepper, and salt. Set aside.
  • Start cooking the pasta according to your package's directions.
  • Lightly pound the chicken into 1/8" thick cutlets, then season both sides evenly with salt and pepper.
  • Heat half of the olive oil in a large frying pan over medium-high heat. Add cutlets and cook for 5 minutes on each side. Transfer to a plate and keep warm.
  • Heat the rest of the olive oil in the pan, then add the shallots and sautee for about 1 minute. Sprinkle sugar over the shallots and cook undisturbed until it is melted and golden, or about another minute.
  • Stir in clementine slices, water, white wine vinegar, & red pepper. Scrape the pan for about 30 seconds, then lower the heat and let simmer for 3 minutes. (If you are using the spinach, add it right after this step and stir the sauce until the leaves have wilted.).
  • Drain the pasta, but don't rinse it. Put the pasta in the bowl holding the avocado mixture, and stir to combine well.
  • Serve chicken over pasta and top with clementine sauce.

1/2 teaspoon salt
1/4 teaspoon cayenne pepper
2 garlic cloves, minced
1 (8 ounce) can stewed tomatoes
1/3 cup sour cream
1 avocado, ripe, peeled, seeded, and diced
1/4 cup fresh cilantro, coarsely chopped

Steps:

  • Pound chicken to 1/2 inch thickness.
  • Heat oil in a large skillet.
  • Sprinkle chicken with cumin, salt, and cayenne pepper.
  • Place chicken and garlic in skillet and cook over medium-high heat, 2 minutes per side.
  • Add tomatoes; cover and simmer until chicken is cooked through, 5 to 6 minutes.
  • Transfer chicken to serving platter; keep warm.
  • Cook juices in skillet over high heat until thickened, about 2 minutes.
  • Reduce heat to low; stir in sour cream, avocado, and cilantro until well blended.
  • Pour over chicken.
  • Serve over hot cooked linguine.

Creamy, thick, and rich with lots of garlic flavour and a hint of lemon. The avocado works wonderfully in this recipe to create a sauce so creamy and thick, you will think there is cream hiding in there. Found on a recipe blog and posted here for safe keeping :)

1 medium sized ripe avocado, pitted
1/2 lemon, juiced
2 -3 garlic cloves, to taste
1/2 teaspoon salt (to taste)
1/4 cup fresh basil (optional)
2 tablespoons extra virgin olive oil
6 ounces of your choice pasta
fresh ground black pepper, to taste

Steps:

  • Bring several cups of water to a boil in a medium sized pot. Add in your pasta, reduce heat to medium, and cook until Al Dente, about 8-10 minutes.
  • Meanwhile, make the sauce by placing the garlic cloves, lemon juice, and olive oil into a food processor. Process until smooth. Now add in the avocado, basil, and salt. Process until smooth and creamy.
  • When pasta is done cooking, drain and rinse in a strainer and place pasta into a large bowl. Pour on sauce and toss until fully combined. Garnish with lemon zest and black pepper. Serve immediately.
  • Please note: This dish does not reheat well due to the avocado in the sauce. Please serve immediately.
