Number Of Ingredients 15

6 large chicken leg-thigh pieces (about 5 1/2 pounds total)
2 tablespoons finely grated lemon peel
2 tablespoons fresh thyme leaves
2 tablespoons chopped fresh Italian parsley plus 6 sprigs
4 tablespoons (1/2 stick) butter, divided
1 tablespoon extra-virgin olive oil
1 cup sliced onion
1 cup sliced leeks (white and pale green parts only)
1/2 cup dried morels (about 3/4 ounce)
2 bay leaves
1 cup dry white wine
1/4 cup dry Sherry
4 cups low-salt chicken broth
White Asparagus, Morels, and Leeks
1/2 cup crème fraîche or sour cream

Steps:

  • Toss chicken pieces with peel, thyme, and chopped parsley in large bowl. Cover and refrigerate at least 4 hours or overnight.
  • Let chicken pieces stand at room temperature 15 minutes. Sprinkle with salt and pepper; let stand 15 minutes more.
  • Preheat oven to 325°F. Melt 2 tablespoons butter with oil in large skillet over medium-high heat. Working in 2 batches, add chicken pieces, skin side down; cook until deep brown, about 5 minutes. Turn chicken over; reduce heat to medium and cook 2 minutes. Arrange in single layer in large ovenproof pot. Pour off all but 4 tablespoons drippings from skillet. Add onion, leeks, morels, and bay leaves to skillet; sauté over medium heat until vegetables are golden, about 7 minutes. Add wine and Sherry; increase heat to high and boil until liquid is reduced by half, about 2 minutes. Add broth; bring to boil. Add 6 parsley sprigs. Pour vegetables over chicken. Cover pot with plastic wrap, then foil. Bake until chicken is very tender, about 1 1/2 hours.
  • Increase oven temperature to 400°F. Transfer chicken pieces to rimmed baking sheet; roast in oven until brown, about 15 minutes.
  • Meanwhile, strain vegetable-broth mixture into medium saucepan. Press on solids to extract as much liquid as possible. Boil liquid until reduced to 3 cups, about 15 minutes. Whisk in remaining 2 tablespoons butter. Season with salt and pepper.
  • Arrange chicken on large platter. Spoon reduced juices over. Arrange white asparagus, morels, and leeks over and around chicken. Top each chicken leg with dollop of crème fraîche and serve.

CHICKEN WITH ASPARAGUS AND LEMON CRèME FRAîCHE SAUCE

50g/1¾oz butter
2 tbsp oil
6 small chicken breasts, boned, skinned
6 banana shallots, quartered lengthways
30g/1oz plain flour
400ml/14fl oz chicken stock
1½ tbsp chopped lemon thyme leaves
12 asparagus spears, woody ends snapped off
1 large lemon, juice only
200ml/7fl oz full-fat crème fraîche
2 tbsp chopped parsley
salt and freshly ground black pepper

Steps:

  • Preheat the oven to 180C/160C Fan/Gas 4.
  • Heat half the butter and half the oil in a large, deep, ovenproof frying pan. Season the chicken breasts with salt and pepper and fry, in batches if necessary, for 2 minutes on each side until golden-brown. Remove from the pan and set aside.
  • Add the remaining butter and oil to the pan, tip in the shallots and fry over a high heat for 5-10 minutes or until lightly golden-brown.
  • Put the flour in a bowl, whisk in 8 tablespoons of the stock and mix until smooth. Add to the pan and bring to the boil, then pour in the remaining stock. Add the lemon thyme and return the chicken to the pan.
  • Cover with a lid and cook in the oven for about 20 minutes, or until the chicken is cooked through.
  • Just before serving, trim the tip from each asparagus spear and slice the stem into short, even lengths. Cook the tips and sliced stems in boiling salted water for 2-3 minutes. Drain, reserving the tips for a garnish.
  • Stir the lemon juice, crème fraîche and parsley into the pan with the chicken. Add the sliced asparagus stems and bring to the boil. Remove the chicken, slice each breast into three and arrange on a plate. Spoon over the sauce and arrange two asparagus tips in a cross over the top.

Steps:

  • Season chicken with Italian seasoning, crushed chili pepper, salt & pepper. Add 1 tablespoon olive oil to a large skillet over medium heat. Add chicken to the pan and cook for 5-6 minutes per side. Remove from skillet and set aside.

500g baby new potato, halved
4 skinless chicken breasts
1 tbsp sunflower oil
1 large onion, chopped
2 garlic cloves, crushed
350ml chicken stock
small bunch tarragon
175g asparagus, trimmed
3 tbsp reduced-fat crème fraîche

Steps:

  • Cook the potatoes in a large pan of boiling water for 8-10 mins until tender, then drain and keep warm in the pan. Season the chicken with ground black pepper. Heat the oil in a large non-stick frying pan. Gently fry the chicken with the onion and garlic for 5 mins until both are lightly browned. Turn over the chicken once and stir the onion regularly.
  • Pour over the stock, add 2 sprigs of tarragon and bring to a gentle simmer. Cook for 5 mins, then turn the chicken, add the asparagus and cook for 3 mins more. Chop the remaining tarragon.
  • Stir the crème fraîche and tarragon into the pan with the chicken and heat through, stirring, for a few secs. Serve with the new potatoes.

6 tablespoons butter, divided
12 ounces mushrooms, sliced
6 boneless chicken breasts
all-purpose flour (to dredge)
1 cup chicken broth
1 cup heavy whipping cream
3 tablespoons fresh lemon juice
1/2 teaspoon white pepper
salt and pepper

Steps:

  • Melt 3 tbs butter in a large skillet over medium heat.
  • Add mushrooms and saute until tender.
  • Remove with a slotted spoon and set aside.
  • Sprinkle chicken with salt& pepper, dredge in flour, shaking off excess.
  • Melt remaining 3 tbs butter in skillet.
  • Add chicken and saute 5 to 6 minutes on each side or until golden brown.
  • Transfer chicken to a serving platter (keep warm).
  • Add broth to skillet, scraping up browned bits.
  • Bring to a boil, reduce heat and simmer until reduced to approximately 3/4 cup.
  • Stir in cream and lemon juice.
  • Cook over medium heat until slightly thickened.
  • Stir in mushrooms, white pepper& salt to taste.
  • Add chicken and simmer for 15-20 minutes or until sauce is a medium thick consistency.
  • Serve over rice or noodles.

  • To blanch asparagus:.
  • Bring pot of water to rolling boil add steamer basket. Add asparagus stalks. Cover and cook for 5 minutes but still bright green. Immediately transfer to bowl of ice water to stop cooking.
  • To make soup:.
  • When asparagus is cold remove from water. Cut into large chunks. Place in blender. Add enough cold chicken stock to cover stalks. Add pepper, blend until mixture is thin puree. Continuing to blend, add olive oil in steady stream.
  • Blend in 1/4 cup creme fraiche. Strain soup through a fine-mesh strainer into large pot. Set aside.
  • To make lemon creme fraiche:.
  • In medium bowl, combine 1/4 cup creme fraiche, lemon zest and lemon juice. Using wire whisk, whip until thickened. Set aside.
  • To serve soup:.
  • Warm soup over medium heat until it bubbles. Ladle into bowls. Top with lemon creme fraiche and radish matchsticks. Serve immediately.
  • *Variation: Serve soup cold with lump of crab meat in each bowl.

1 tbsp seasoned plain flour
2 tbsp olive oil
knob of butter
4 shallots , finely chopped
4 tbsp brandy or cognac
300ml chicken stock
16 asparagus spears , halved
4rounded tbsp crème fraîche
1 tbsp chopped tarragon

Steps:

  • Dust the chicken with the flour. Heat the oil and butter in a large, wide pan with a lid, add the chicken, then fry on all sides until nicely browned. Add the shallots, then fry for about 2 mins until they start to soften, but not colour. Pour in the brandy, carefully ignite, then stand well back until the flames have died down. Stir in the stock and bring to the boil. Reduce heat, cover, then cook for 15 mins until the chicken is just tender.
  • Add the asparagus to the sauce. Cover, then cook for 5 mins more until tender. Stir in the crème fraîche and tarragon and warm through. Season to taste.

1/2 cup uncooked rice
1 1/4 cups low sodium chicken broth
1/2 cup water
1 cup fresh asparagus, cut in 2 inch pieces
1 boneless skinless chicken breast, cut in bite size pieces
1 tablespoon lemon juice
2 teaspoons olive oil
1 1/2 teaspoons dried dill weed
1/8 teaspoon salt
1 tablespoon parsley, finely chopped

Steps:

  • Cook the rice in chicken broth as per package directions, approximately 15 to 20 minutes for white rice.
  • Add the 1/2 cup water to a 12-inch nonstick skillet; bring to a boil.
  • Add the asparagus and return to boil, reduce heat, cover and simmer for approximately 3 minutes or until crisp-tender.
  • Drain asparagus and set aside.
  • Wipe out the skillet with a paper towel.
  • Spray skillet with non-stick cooking spray.
  • Heat over medium-high heat until hot.
  • Add chicken and cook 3 minutes or until no longer pink, stirring frequently.

3 tablespoons unsalted butter
2 cups onions, minced
4 cups chicken stock
1/8 lb fresh asparagus, trimmed (thin asparagus is recommended)
1/4 cup creme fraiche or 1/4 cup whipping cream
3/4 teaspoon salt
1/4 teaspoon white pepper
1 teaspoon lemon juice (optional)

Steps:

  • In a 4-quart pan, melt butter.
  • Add onion and cook just until soft and golden; do not brown.
  • Add chicken stock and bring to a boil.
  • Meanwhile, cut 3 inches of tips off asparagus and set aside.
  • In food processor or blender or by hand, slice remaining asparagus into ¼-inch pieces.
  • Drop pieces into boiling broth. Cover and simmer until very soft, about 30 minutes.
  • Cool for 10 minutes, and then puree soup in blender or processor.
  • Return soup to pan.
  • Add asparagus tips and simmer until just tender, about 5 minutes.

8 chicken pieces (thighs or drumsticks), bone-in, skin-on
2 small onions, cut into quarters
6 garlic cloves, unpeeled, bashed
1 lemon, sliced and pips removed
500g asparagus, woody ends trimmed
100g fresh or frozen peas
1 heaped tbsp dried oregano
2 tbsp olive oil
100ml chicken stock
25g butter
crusty bread, to serve

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Arrange the chicken pieces, onion wedges, garlic, lemon slices, asparagus and peas in a roasting tin in a single layer, then sprinkle over the oregano, drizzle with the olive oil and pour over the stock. Give everything a good stir to mix well, then dot the butter over the chicken pieces and season well. Cover the whole tin with foil and bake for 30 mins.
  • Remove the foil and bake for 20-30 mins more until the chicken is cooked through and the juices run clear, and the vegetables are tender.
  • Heat the grill to high. Put the tin under the grill for a few minutes to crisp up the chicken skin, if needed, being careful not to let the asparagus catch. Serve straight from the tin, or on a platter, with crusty bread to mop up the juices.

Chicken With Crème Fraîche and Cherry Tomatoes image

An exceptionally easy and very tasty dish combining two sorts of tomatoes for extra piquant flavour.

Number Of Ingredients 8

4 chicken breasts, cubed
1 1/2 tablespoons pesto sauce
2 cups low-fat creme fraiche
7 ounces cherry tomatoes, halved
3 ounces sun-dried tomatoes
2 garlic cloves, chopped
7 ounces brown rice
1 pinch saffron (optional)

Steps:

  • First of all set a saucepan of boiling water, add a dash of lemon juice and olive oil. Add the rice and then add a few strands of saffron to impart an added delicate flavour.
  • Next, heat a dash of oil in a frying pan.
  • Carefully place the chicken in the pan and cook on a medium heat until chicken in browned on all sides (approx 2 mins). Stir in the garlic and the pesto and cook for another minute.
  • Add the cherry tomatoes, sun dried tomatoes and cook until they start to soften (approx 3 minutes), stirring continuously.
  • When the chicken is nearly cooked through, add the crème fraîche or yoghurt and stir through. Season with salt and pepper to taste.
  • Continue to stir for another couple of minutes until the temperature has risen again, the sauce in simmering and the chicken is cooked.
  • Serve immediately with rice.
