These juicy Apricot and Bacon Stuffed Chicken Thighs are easy enough for a weeknight family dinner and yet special enough to make when you have company over. Apricots add sweetness without overpowering this savory dish and bacon adds a touch of smokiness.

1/3 cup dried apricots (chopped)
2 tbsp smoked bacon (chopped)
1/3 cup yellow onion (finely chopped)
2 garlic cloves (minced)
1/3 cup panko crumbs (or plain breadcrumbs)
½ tsp fresh sage (finely chopped)
1 tbsp parsley flakes
¼ tsp black pepper
½ - 1 tsp coarse kosher salt
6 chicken thighs (boneless and skinless)

Steps:

  • Preheat oven to 375°F and line a baking sheet with parchment paper.
  • Soak dried apricots in a cup of warm water for 10-15 minutes, and then chop them.
  • To create stuffing, combine apricots, bacon, onion, garlic, breadcrumbs, sage, and parsley flakes in a mixing bowl. Set aside.
  • Mix black pepper and salt in a small bowl and set side.
  • Place a chicken thigh, skin side down (where the skin would be), on a cutting board and cover with a piece of wax or parchment paper; pound with a meat mallet or a heavy skillet to flatten the thigh. Place the flatten thigh on a clean plate and set aside. Repeat with each thigh.
  • Lay a flattened thigh on a cutting board skin side down, and sprinkle with salt and black pepper mixture. Spread about 2 tbsp of stuffing on the thigh and press down with your fingers. Carefully roll the thigh and secure the roll with a toothpick. Place on a baking sheet. Repeat with all thighs. Use the leftover stuffing to sprinkle on the top of the stuffed thighs.
  • Bake at 375°F for 40-45 minutes or until a thermometer inserted sideways registers 175°F.
  • Remove the toothpicks and serve hot or cold.

1 packet dry onion soup mix
1 cup French dressing
1 cup apricot preserves
1 tablespoon fresh thyme (chopped)

Steps:

  • Preheat your oven to 375 degrees and set a cast iron skillet to heat on medium high heat.
  • Season the chicken with salt and pepper and add it to the cast iron skillet, skin side down.
  • Brown both sides of the chicken for 3-5 minutes.
  • In a bowl or large measuring cup add the rest of the ingredients and whisk them together.
  • Pour half over the chicken, putt the pan in the oven and cook for 25 minutes.
  • Pour the rest over the chicken and cook an additional 5 minutes.

Chicken with dried apricots is hardly a new idea, but I had issues with its most common interpretations. For one thing, they were almost always cloying; the routine addition of cinnamon and cloves does nothing to offset the apricots' sweetness and makes the dish taste more like dessert than dinner. For another, they were usually stewed rather than braised, turning the chicken skin sodden. I brown the chicken in a nonstick skillet with no fat, and that works well. A tablespoon or two of butter, stirred in at the end, will make the sauce richer. Or you can render some bacon, remove it, and brown the chicken in the bacon fat, then crumble the bacon and stir it in at the end of cooking. Finally, any dried fruit can be used, or a combination; with the short cooking time, even prunes will remain intact. But be aware that fruit dried with sulfur (the common method) becomes tender much faster than fruit dried organically, which needs a couple of hours of soaking before cooking.

1 cup dried apricots
1/4 cup red wine vinegar
1/2 cup red wine
1 chicken, cut into serving pieces
1 medium onion, chopped
Salt and freshly ground black pepper

Steps:

  • Combine apricots in a bowl with vinegar, wine and 1/4 cup water. Let soak while you brown the chicken.
  • Turn the heat to medium high under a 12-inch nonstick skillet, and add chicken pieces, skin side down. Cook, rotating but not turning pieces so they brown evenly. When they are nicely browned - take your time - turn them so they are skin side up. Make a little space to add the onion, and cook, stirring the onion occasionally until it has softened a bit, a minute or two.
  • Add apricot mixture and bring to a boil; cook for a minute, then turn heat to low and cover. Cook until chicken is done, 15 to 20 minutes. Uncover, raise heat and season chicken well with salt and pepper. Boil away any excess liquid; sauce should not be too watery. Serve with white rice or any other cooked grain, or bread.

I had a version of this at an Italian restaurant and thought, I can make this. Well, here is my version. Serve with pasta or risotto.

4 slices pancetta or 4 slices bacon
1 tablespoon olive oil
2 chicken breast halves
8 dried apricots
1/2 cup white wine
1/2 cup chicken broth

Steps:

  • Cook pancetta in saucepan over medium high heat until fat is rendered and pancetta is done to your liking.
  • Pour off all but 1 T grease. Add olive oil into the same pan.
  • Cut each breast half in half. You will have 4 pieces of chicken. Season chicken with salt and pepper and place in hot pan. Sear 5 minutes on both sides. Remove chicken from pan.
  • Add white wine to pan to deglaze. Scrape up bits off the bottom off pan. Stir in chicken broth.
  • Add apricot and chicken with any juices. Cover and simmer until liquid is reduced by half, apricots are plump and chicken is done, about 10 minutes.
  • Place chicken on plate, top with pancetta and apricots, pour sauce over all.

Rustle up a homemade picnic pie for your al fresco feast, packed with bacon, pork sausages and dried fruit

450g pack boneless, skinless chicken thigh
1 medium onion , quartered
2 tsp coriander seed , toasted
½ tsp ground coriander
¼ tsp ground cumin
¼ tsp freshly grated nutmeg
454g pack pork sausage , meat squeezed from the skins
200g pack bacon lardon
2 tbsp chopped parsley
12 ready-to-eat dried apricots
340g pack mini chicken breast fillets
100g lard , plus extra for the tin
450g plain flour , plus extra for the tin
3 tbsp milk
1 egg , beaten, to seal and glaze

Steps:

  • Heat oven to 200C/180C fan/gas 6. Brush a 23cm springform tin with melted lard and dust with a little flour.
  • Whizz the chicken thighs in a food processor to mince them. Add the onion and blitz again to chop it. Tip into a bowl. Add the spices, sausagemeat, lardons, parsley and some salt. Mix really well.
  • To make the pastry, melt the lard in a saucepan with 150ml water and the milk. When melted, remove from the heat, tip in the flour and beat well. Knead on a lightly floured work surface, then roll out and use two-thirds to line the tin.
  • Spoon in half the sausage mixture and top with the apricots and half the chicken breasts. Cover with the rest of the sausage mixture, then press the remaining chicken breasts on top.
  • Roll out the remaining pastry and use to cover the pie. Press firmly onto the filling, then bring the pastry from the sides over the top and seal. Make a hole in the top of the pie for steam to escape, and brush well with the egg. Bake for 30 mins, then reduce oven to 180C/160C fan/gas 4 and bake for 1 hr more. Cool in the tin.

2 pounds chicken breast tenderloins, cut into bite-size pieces

1 large onion, chopped

1 cup chicken stock
1 cup apricot preserves
1 tablespoon chopped fresh thyme
3 tablespoons chopped fresh flat-leaf parsley

Steps:

  • Heat the olive oil in a large skillet with a lid over medium-high heat. Season the chicken with salt and pepper, and cook in the hot oil until golden brown around the edges, but still pink in the center, about 5 minutes. Stir in the onion, and cook for about 3 minutes more. Pour in the balsamic vinegar, bring it to a simmer, and allow it to reduce for a few minutes.
  • Cut half of the apricots in half, leaving the others whole. Place the apricots into the skillet, and pour in the chicken stock. Bring to a simmer, then stir in the apricot preserves and thyme. Reduce the heat to medium-low, cover, and simmer until the apricots have softened, 10 to 15 minutes. Sprinkle with chopped parsley to serve.
