Spicy Buffalo wings get a little twist with some Sriracha sauce. I like to deep fry my wings, but I've also included instructions in the recipe notes for baking them.

1 1/2 lbs party chicken wings
vegetable oil (for frying)
3/4 cup all-purpose flour
3/4 cup water
1 tbsp cornstarch
4 tbsp butter
6 tbsp sriracha sauce
squeeze of fresh lime juice (optional)
chopped cilantro (optional, for garnish)

Steps:

  • Heat vegetable oil to 350°F in preparation for frying. In a small bowl, whisk flour, water, and cornstarch until thick, smooth slurry forms. Coat wings lightly in the slurry (if it clings on too thick, manually wipe some of it off). Fry in small batches, about 9-10 minutes until crispy and golden.
  • While wings are cooking, make the buffalo sauce. Melt butter in a small saucepan on the stove. Stir in sriracha until sauce becomes uniform and orange. If desired, add in a squeeze of fresh lime juice. Coat finished wings with sauce (I used a brush and brushed the wings with the sauce, double coating each one). Garnish with cilantro if desired. Serve with carrots, celery and ranch dressing.

Sriracha buffalo chicken wings are easy to make, spicy, and totally delicious!

2 lb chicken wings
1 teaspoon oil
½ teaspoon sea salt
½ teaspoon fresh ground pepper
¼ cup butter
¼ cup sriracha
Cilantro or parsley (for garnish)

Steps:

  • Preheat the oven to 425 degrees. Line a rimmed baking sheet with parchment paper.
  • Place the chicken wings in a large bowl and toss with the oil, sea salt, and pepper. Place the chicken wings on the prepared baking sheet in a single layer. Bake in the oven for 35-40 minutes, or until the wings are quite crispy.
  • While the wings are baking prepare the sauce. Melt the butter in a small frying pan over medium-high heat. Add the sriracha and whisk to combine.
  • When the chicken has finished cooking remove it from the oven and place it in a large clean bowl. Pour the sauce over the top and toss to coat everything well. Serve immediately sprinkled with a little cilantro or parsley.

PARMESAN-GARLIC CHICKEN WINGS

2 lemons, plus wedges for serving
1 head garlic, cloves smashed and peeled
1/2 cup olive oil, plus more for the grill
1/2 cup packed fresh basil, plus 2 large sprigs
5 large sprigs oregano, halved
8 to 10 sprigs thyme, halved
Kosher salt and freshly ground pepper
5 pounds chicken wings
4 tablespoons unsalted butter, at room temperature
1/4 cup grated parmesan cheese

Steps:

  • Grate the zest of 1 lemon and set aside; juice both lemons. Combine the garlic and olive oil in a large microwave-safe bowl and microwave until the garlic starts sizzling, 1 to 2 minutes; let cool. Add the lemon juice, herb sprigs, 1 teaspoon each salt and pepper, and the chicken wings. Using your hands, rub the wings with the oil mixture; firmly press the wings down, making sure they are covered with some of the herbs and garlic. Cover and refrigerate at least 4 hours or overnight, stirring once or twice.
  • Meanwhile, pulse the butter, basil leaves, lemon zest and 1/2 teaspoon each salt and pepper in a mini food processor until combined. Cover and refrigerate until ready to use.
  • Preheat a grill to medium high and prepare for indirect grilling: On a charcoal grill, bank the coals to one side; on a gas grill, turn off half the burners. Remove the basil butter from the refrigerator. Remove the wings from the marinade. Brush the grill grates with olive oil and place the wings on the cooler side of the grill (indirect heat). Cover the grill and cook, turning the wings once, until almost completely cooked through and the skin is beginning to crisp, about 30 minutes. Move to direct heat and grill, turning often, until the skin is crisp and lightly charred, 10 to 15 more minutes.
  • Transfer the wings to a large bowl. Add the basil butter and toss to coat. Add the parmesan and season with salt and pepper; toss again. Serve with lemon wedges.

I whipped these little guys up since we were craving chicken wings from our favorite local restaurant. We didn't want to drive the 10 miles there - so I came up with this recipe with ingredients we had on hand. My fiance swears they are better than any we've had; and I have to agree!!!

3 lbs chicken wings, separated
2 teaspoons coarse salt
1/2 cup butter
3 tablespoons light corn syrup
1 cup soy sauce
1 cup brown sugar
1/2 teaspoon dry mustard
1/8 teaspoon cayenne pepper
3 garlic cloves, minced
1/2 tablespoon fresh ginger, pressed and minced (optional)
vegetable oil (for frying) or canola oil (for frying)

Steps:

  • Heat butter, soy sauce, corn syrup, brown sugar, dry mustard, cayenne, garlic and ginger until butter and brown sugar melt. Cool and set aside in large bowl.
  • Heat oil on high heat until it hisses when splashed with a drop of water.
  • Coat chicken pieces with salt.
  • Carefully lower chicken wings into hot oil. Fry until chicken is caramel in color and crispy; about 10 minutes.
  • Remove chicken from oil and drain on paper towels.
  • Toss chicken in butter mixture until well coated. Remove and serve with blue cheese or ranch.

Tired of the same old red pepper and butter 'hot sauce' on your wings? Try this on your next batch for a change of pace. We're crispy wing lovers, so we always make them fried. It might work for baked wings as well, but that hasn't been tested...yet. Make your fried wings according to your favorite recipe, coat the wings in this sauce, and sprinkle with sesame seeds just prior to serving. You should be able to coat about a dozen wing pieces with the recipe. Your wings are going to be sticky but the wing lovers I hang with claim they're well worth the mess.

The honey-sriracha glaze is quite delicious and incredibly simple, but merely an afterthought here. The real star of the show is the strange, but effective, technique of coating the wings with a baking powder-laced spice rub before baking. Through the magic of chemical reactions, the surface of the chicken becomes bone-dry, and eventually crisps up to something very similar to what would come out of a deep fryer.

1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon smoked paprika
2 ½ pounds chicken wing sections
⅓ cup honey
⅓ cup sriracha sauce
1 tablespoon seasoned rice vinegar
¼ teaspoon sesame oil
1 pinch sesame seeds, or as desired

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil and place an oven-proof wire rack over the foil.
  • Whisk baking powder, salt, black pepper, and paprika together in a small bowl. Place chicken wings in a large bowl. Sprinkle 1/2 of the baking powder mixture over wings and toss to coat. Sprinkle remaining baking powder mixture over wings and toss to coat again. Place wings onto the rack of the prepared baking sheet.
  • Bake in the preheated oven for 20 minutes. Turn wings and continue baking for 20 minutes. Turn wings again and bake until wings are browned and crispy, about 15 minutes more. Transfer wings to a large bowl.
  • Whisk honey, sriracha sauce, rice vinegar, and sesame oil together in a bowl until glaze is smooth. Drizzle glaze over wings and toss to coat completely. Transfer wings to a serving platter and sprinkle sesame seeds over the top.

1 tsp smoked paprika
1 tsp garlic granules
2 tbsp baking powder
1 tbsp cornflour
16 chicken wings (about 1.5kg)
2 tsp sesame seeds (optional)
1 tbsp cider vinegar
3 tbsp honey
4 tbsp sriracha

Steps:

  • Mix the paprika with the garlic granules, baking powder, cornflour, 1 tsp sea salt flakes and a good grinding of black pepper. Tip the chicken wings into a large bowl, scatter over half the seasoning mix and toss to coat. Scatter with the rest of the seasoning mix and toss again until completely coated. Cover the wings and keep chilled for at least 2 hrs, or up to 24 hrs.
  • Heat the oven to 230C/210C fan/gas 8 and line a large shallow roasting tin with baking parchment. Arrange the wings in a single layer, fleshy-side down, and roast for 20 mins, then turn over and roast for another 25-30 mins until the skin is blistered and crisp.
  • Meanwhile, whisk the glaze ingredients together in a small bowl until smooth. Remove the wings from the oven and brush liberally with the glaze, then scatter over the sesame seeds, if using. Roast for another 8-10 mins until the glaze is bubbling and starting to char a little. Serve straight from the roasting tin or pile onto a plate for everyone to dig in.
