This sauce is very hot, but not too insane. For maximum heat increase habaneros as desired.

1 tablespoon olive oil
1 cup chopped carrots
½ cup chopped onion
4 cloves garlic, minced
5 habanero peppers
¼ cup water
¼ cup lime juice
¼ cup white vinegar
1 tomato
salt and ground black pepper to taste

Steps:

  • Heat the oil in a sauce pan over medium heat. Cook and stir the carrots, oil, onion, and garlic in the hot oil until soft, about 5 minutes; transfer to a blender. Add the whole habanero peppers, water, lime juice, white vinegar, and tomato to blender; blend until smooth. Season with salt and pepper to taste.
  • Transfer mixture to a saucepan, and simmer for 3 to 5 minutes. This gives the sauce a more liquid consistency.

This sauce tastes similar to the sauce used on the sticky fingers at one of my favorite restaurants. It is easy to make and has endless possibilities for modification. Try adding a bit of cinnamon or cloves to it. Honey is used to thicken the sauce, but isn't necessary. If not using the honey, just use extra brown sugar.

1 cup pepper sauce (such as Frank's Red Hot®)
⅓ cup honey
⅔ cup brown sugar

Steps:

  • Whisk hot sauce, honey, and brown sugar together in a saucepan until smooth. Bring to a simmer over medium heat, then reduce heat to medium-low, and simmer for 30 minutes, whisking frequently.

2 lbs chicken wings
1 (18 ounce) bottle honey teriyaki barbecue sauce
1/4 cup fresh honey
2 tablespoons liquid smoke
1 1/2-2 inches fresh ginger, grated
6 cloves garlic, crushed
8 habanero peppers, chopped
4 chili peppers, your choice,chopped
3 tablespoons fresh horseradish

Steps:

  • Cut wings into thirds, and discard the tips.
  • There should be about 36 pieces.
  • In a medium saucepan combine barbecue sauce, Worcestershire sauce, honey, Liquid Smoke seasoning, ginger, garlic, habanero peppers, chile peppers and horseradish.
  • Stir all together, and simmer over low heat for 1 hour.
  • Put chicken wings in a large glass bowl, and cover with 3/4 of the sauce.
  • Cover, and refrigerate for at least 6 hours.
  • Preheat grill for low heat.
  • Lightly oil grate.
  • Remove chicken from marinade, and place on grill.
  • Cook over low heat for 45 minutes to 1 hour, turning occasionally.
  • *WARNING: Wear gloves, and do not let the oil get anywhere near your eyes.

This sauce is Hot and has great flavor. Add as many habaneros as you like to accommodate the amount of heat you like but this is the tastiest sauce for chicken and ribs if you like the heat.

1/4 cup olive oil
1 medium yellow onion, coarsely chopped
6 garlic cloves, minced
2 tablespoons brown sugar
1/3 cup maple syrup
1/2 cup apricot brandy
1/4 cup cider vinegar
1/2 teaspoon allspice
1/2 teaspoon nutmeg
1/2 teaspoon ground thyme
1/4 teaspoon ground cinnamon
1 tablespoon ground coriander
1/4 tablespoon ground ginger
8 -12 fresh habanero peppers, stemmed
1 (14 ounce) bottle ketchup or 1 (14 ounce) bottle barbecue sauce, your favorite
4 kiwi, pealed
1 mango, peeled and pitted
2 peaches, peeled and pitted
1 pear
salt, to taste

Steps:

  • Heat the oil in a large, heavy pot over medium heat and sauté onion and garlic until soft.
  • Add habanero peppers with cinnamon and apricot brandy and sauté.
  • Lower heat, add sugar, syrup, vinegar, spices, and ginger, and reduce for 5 to 10 minutes. and salt to taste.
  • Add fruit and cook slowly for 1 hour, covered, stirring occasionally and add barbecue sauce for 5 - 10 min and stir/pulse in processor/blender until smooth.
  • Add water/more brandy if the sauce becomes thicker than ketchup/barbecue sauce.
  • When sauce has cooled refrigerated, the sauce will keep for months.
