HOT & SPICY WINGS WITH MAPLE CHIPOTLE HOT SAUCE
Spice rubs are the secret to mouth-watering barbecued meat, giving these sweet and sticky chicken wings extra crispy skin

- Heat oven to 200C/180C fan/gas 6. In a small bowl, mix the ingredients for the spice rub together. Put the chicken wings in a large bowl and mix with the spice rub and a good amount of seasoning. Spread out in a single layer on a large foil-lined baking tray (or 2 smaller ones). Roast for 45 mins, then remove from the oven and drain off any excess oil.
- Heat a gas or charcoal barbecue to high. Mix the ingredients for the hot sauce in a small bowl and brush all over the chicken wings. Cook the wings on direct heat on the barbecue for 3-4 mins each side or heat oven to 220C/200C fan/gas 7 and cook the wings for 15 mins. Serve with plenty of napkins.

CHICKEN WINGS COATED, SPICY HOT AND SO GOOD
I have been trying out many chicken wing recipes and finally came up with a recipe that is easy to make, quick to cook and has a nice crunchy coating and it tastes so good.

- Remove wing tips and any loose skin and discard. Leave the remaining skin on if desired.
- Rinse wings in cold water, pat dry with paper towels and set aside.
- In a large zip-loc bag, combine flour, salt, cayenne pepper and paprika, shake well.
- Add chicken to the zip-loc bag, seal and toss to coat well. Refrigerate for 1 to 4 hours. "Chilling the chicken wings is important to achieve nice, crispy wings.".
- In a mixing bowl add Panko bread crumbs.
- In another bowl, whisk together eggs and milk until frothy.
- Remove chicken from the refrigerator and shake off any excess flour coating.
- Dip coated chicken in the egg mixture, then roll in the Panko bread crumbs until well coated.
- In a heavy bottom 12 inch frying pan or skillet, add oil and heat to 375°F.
- Place chicken in the pan with the main meat side up and fry for 6 minutes.
- Turn the chicken over and continue to fry for another 6 minutes. The wings should be nicely browned.
- Test for doneness by making a cut into the thick portion of the wing to make sure there is no pink showing.
- Remove chicken from the frying pan onto paper towels to absorb any excess oil, and immediately place in a large bowl.
- In a small saucepan, add butter, Sriracha hot chili sauce, black pepper, granulated garlic powder and heat just to boil, stirring constantly.
- Pour the hot sauce over the chicken wings and toss to coat well.
- Serve immediately or while they are still hot.
- You may also freeze the chicken after it is cooked and then reheated in a preheated 400 F oven for 10 minutes.
- NOTE: You may also use the following choices of hot sauces.
- 1 tablespoon of Red Hot Sauce - wings will be medium hot.
- 2 tablespoons of Sriracha Hot Chili Sauce - wings will be hot.
- 2 teaspoons of Sambal Oelek - wings will be very hot.
CRANBERRY GLAZED STICKY CHICKEN WINGS
This surprising twist on sweet and sour wings is so good you'll be tempted to eat them right after glazing-but the final broil in the oven is worth it. If you want to turn up the spice meter, add some of your favorite hot sauce to the glaze.

- Preheat the broiler to high with an oven rack set about 4 inches from the heat source. Remove the tips of the wings and discard or save for making stock. Use kitchen shears or a knife to separate the wings at the joint.
- Toss the chicken wings and vegetable oil on a baking sheet until well coated. Sprinkle with salt and a few grinds of pepper. Broil the wings until the skin starts to crisp and brown, about 12 minutes. Remove the pan from the oven and flip the wings over. Broil the other side until crisp and golden brown, about 8 minutes more.
- Meanwhile, put the cranberries in a food processor and pulse until you have small pieces. Add them to a medium skillet with the sweet chili sauce and 3/4 cup water. Add all of the scallion whites and 2 of the scallion greens. Bring to a boil, reduce the heat and simmer until thickened, about 3 minutes. Strain into a medium bowl, pressing to get as much liquid through as possible. Return the liquid to the skillet and simmer until thick and shiny, like a glaze.
- Remove the wings and check for doneness; if a knife inserted into the meat closest to the bone is no longer pink, it's done. Toss the wings in the sauce bowl until well coated, return to the baking sheet and broil until the glaze turns shiny and the skin has blistered spots of char, 1 to 3 minutes. Check the wings every minute at this stage to ensure the glaze does not burn. If your glaze is not sticking as well as you would like, apply the glaze with a pastry brush.
- Sprinkle the remaining scallion greens over the top of the wings. Serve while hot.
HOT AND SPICY CHINESE CHICKEN WINGS
This recipe is from The Gas Grill Gourmet. I served it at a gathering and received rave reviews. Very tasty wings, I should have doubled the recipe.

- Wash the chicken wings in cold water and pat them dry. With a sharp knife, trim off each wing tip right at the joint.
- Combine all the marinade ingredients in a nonreactive container and mix well. Add the wings, cover, and refrigerate for 4-6 hours, or overnight if desired.
- Preheat the grill for 10-15 minutes, with all the burners on high.
- While the grill is preheating, drain the marinade from its container into a nonreactive saucepan. Bring the liquid to a boil for a minute or two, remove pan from heat, and reserve for basting.
- Once the grill is hot, turn one burner off and turn the other(s) to medium. Place the wings over the burner that is off. Close the grill's lid and cook the chicken for 30-35 minutes, or until the skin is crispy and brown. Turn the wings once during the cooking process, basting with the boiled marinade.
- Transfer the wings to a serving platter, and garnish with sesame seeds and cilantro, if desired.

PANKO CRUSTED OVEN BAKED CHICKEN WINGS
I have been playing around with recipes for chicken wings at home and I came up with this. Panko crumbs (found in the Asian aisle or sometimes with the bread crumbs) are very crunchy. Baking the wings is better than frying if you are trying to cut down on fat. These turn out so crunchy, then you can 'spin' or coat them with your favorite sauce. Absorbs into the panko, but still keeps the crispy texture. Reminds me a little of Hooter's breading. Also, try to find Amish wings, they are tastier and usually larger than typical wings. Enjoy!

- Heat the oven to 425.
- Pour the flour into a shallow bowl or dish and season with salt.
- Beat the eggs until foamy in a medium sized bowl.
- Pour the Panko Breading into a shallow bowl or dish. You may need to add more as you go on, use best judgement.
- Take the wings, rinse and dry well with paper towel.
- One by one, Dredge in the flour, then dip in the egg. Shake off excess.
- Place each wing into the Panko crumbs, pressing the crumbs onto the chicken on all sides, coat well. Gently shake off excess.
- Place breaded wings on a non-stick baking sheet. Bake for 25-30 minutes.
- When done, flip over and put the broiler on Low for 2 minutes each side. You may want to drizzle a little butter before broiling. Keep a close eye, the breading does not need to be brown like typical bread crumbs, it will be crispy even if it looks white still.
- While the wings are still hot, put a few good shakes of your chosen sauce into a bowl and coat the wings one by one with the sauce. Let sit for about 5 minutes before serving. Wings are great with no sauce as well.
- First time trying I used Spicy Szechuan Peanut Sauce Recipe #72983 and loved it as well as some generic Honey BBQ sauce and also some Frank's Red Hot Buffalo Wing sauce and all were great!

EASY SPICY CHICKEN WINGS
The wings may be oven baked instead of grilling, this also works well using small chicken drumsticks instead of the wings although cooking time will need to be increased --- adjust the cayenne pepper to suit heat level, and the recipe may be doubled, this is easy and *ver* good!

- Set grill to high heat.
- Season the wings lightly with seasoned salt.
- Cook the wings 8-10 minutes on each side (cooking time will take slightly longer for larger pieces).
- Melt the butter in a saucepan and mix in hot sauce, cayenne pepper, garlic powder and black pepper.
- Place the wings in a large plastic container with a lid.
- Pour the sauce over the cooked wings and toss using hands fitted with rubber gloves or seal and shake the container to coat the wings with the sauce.

- Put the chicken wings, buttermilk and 1/2 tsp salt in a bowl and toss together to coat. Cover and leave in the fridge overnight.
- Heat oven to 200C/180C fan/ gas 6. Put all the ingredients for the spice mix in another large mixing bowl with a pinch of salt and mix well. Remove the wings from the fridge and, one at a time, roll them in the spice mix. Once fully coated, tip onto a baking tray lined with baking parchment, and roast for 35 mins. Meanwhile, mix the ingredients for the glaze together.
- Once the wings have browned, remove them from the oven and generously brush with the glaze. Reduce oven to 180C/160C fan/ gas 4, put the wings back in and cook for a further 15 mins or until the glaze has gone sticky and is starting to caramelise. Remove the wings from the oven and rest for a minute or so. Serve with a blue cheese dip, if you like.

- Heat oven to 220C/200C fan/gas 6. Put the chicken wings in a large roasting tin. Mix the honey, soy and 1/2 tbsp sesame seeds in a bowl, then pour over the wings. Use your hands to mix and ensure all the wings are coated, then roast for 20 mins until cooked through, sticky and golden.
- Meanwhile, combine the soured cream, buttermilk, mayonnaise, lemon juice and paprika. Season well, then chill until ready to serve.
- When the wings are cooked, scatter over the remaining sesame seeds and the chilli. Serve with the dip, and some carrot and celery sticks for dunking.
