Chicken Salad With Walnuts and Grapes image

A pile of this chicken salad plopped on top of a bed of greens or tucked between two slices of good bread would make a most excellent lunch or light supper. It starts with a quick dressing made of mayonnaise, chopped chives, parsley and tarragon and the juice and zest of a lemon. Combine the dressing with chopped, cooked chicken (for ease, use supermarket rotisserie chicken or Thanksgiving turkey leftovers), red grapes, red onion, celery and walnuts. It's a delightful and deeply satisfying combination of flavors (sweet, salty, tangy) and textures (cold, crunchy, juicy) that's almost impossible to stop eating.

1/3 cup plus 1 tablespoon mayonnaise
Finely grated zest and juice of 1 lemon
1/4 teaspoon salt, or to taste
1/8 teaspoon freshly ground black pepper, or to taste
1 1/2 teaspoons finely chopped chives
1 1/2 teaspoons finely chopped flat-leaf parsley
1 tablespoon finely chopped tarragon
1 3-pound roasted chicken, skin removed, meat roughly chopped
1/3 cup finely chopped red onion

3/4 cup roughly chopped walnuts, lightly toasted

Steps:

  • In a small bowl, whisk together the mayonnaise, lemon zest and juice, salt and pepper. Add the chives, parsley and tarragon and mix gently.
  • In a large bowl, combine the chicken, onion, celery, grapes and walnuts. Add the mayonnaise mixture and fold together to combine. Season to taste. If desired, serve over mesclun or with bread.

A touch of curry makes this salad interesting but not overpowered like some. This calls for roasting chicken (better flavor than poaching), but I prefer to use rotisserie chicken. It is so easy and flavorful, not to mention a time saver. I always season to taste, but the measurements should be about right. I toss the salad the night before to give the flavors time to meld.

5 chicken breasts, halved bone-in
1 tablespoon olive oil
salt
pepper
seasoning, such as Mrs. Dash
1 3/4 cups diced celery
2 cups halved red grapes
1 1/4 cups mayonnaise
2/3 cup sour cream
4 tablespoons lemon juice
2 tablespoons sugar
1 teaspoon curry powder
salt
pepper

Steps:

  • Place chicken on rack inside a 9"x13" pan. Rub breasts with olive oil. Season with salt, pepper and Mrs. Dash (or similar seasoning).
  • Roast until no longer pink, about 45 minutes.
  • Cool until easy to handle. Remove skin and bones. Shred meat into bite-sized pieces. (Shredding instead of cubing allows the dressing to adhere to the chicken more easily.).
  • Meanwhile, combine dressing ingredients. Taste often to reach desired outcome.
  • Combine chicken, celery and grapes. Toss with enough dressing to coat, allowing for a little extra as the chicken will absorb some while melding in the refrigerator.
  • Best chilled overnight, but it is still great if you can't wait that long.
  • Serve alone or with rolls for sandwiches.

5 boneless skinless chicken breasts
2 gala apples (or Fuji)
30 purple seedless grapes (give or take)
1/2 purple onion
1 (8 ounce) bag walnuts (or Pecans)
1 (12 ounce) jar poppy seed dressing (I use Briannas)

Steps:

  • Boil chicken unitl done.
  • While Chicken is cooking: Mince Purple Onion. Cube Apples. Cut the grapes in half.
  • Once the Chicken is done, chop into cubes.
  • Pour ALL ingredients into a large bowl, including the bag of Nuts & Dressing.
  • Mix well until all is coated.
  • Chill before serving.

6 -8 boneless skinless chicken breast halves, cooked and chilled
2 tablespoons vegetable oil
2 medium white onions, diced
1 tablespoon curry powder
1/4 cup tomato ketchup
4 teaspoons apricot jam
4 teaspoons mango chutney (mild or hot, your choice)
1/2 cup oil-based mayonnaise
1/2 cup low-fat whipping cream
sliced peeled mango
sliced peeled peach
sliced crisp granny smith apple
seedless grapes
cashew nuts or walnuts

Steps:

  • Heat the oil over moderate heat and add the onions.
  • Cook until softened, then remove from heat.
  • If the apricot jam and the mango chutney contain chunks of fruit, chop these up small.
  • Add the tomato ketchup, apricot jam and mango chutney to the onions, but do not cook.
  • When this mixture is cool, fold it into the mayonnaise.

It's always a hit and I'm always asked for the recipe. It's nice served over a large leaf of romaine, on a croissant, or just out of the bowl with a fork!
