1/2 cup peanut butter
1/2 cup hoisin sauce
1 tablespoon honey
2 teaspoons red wine vinegar
2 teaspoons minced ginger (or more if you wish)
2 minced garlic cloves
2 tablespoons toasted sesame oil
2 teaspoons soy sauce
1 teaspoon vietnamese chili sauce (or dried chili flakes)
1 tablespoon oyster sauce
2 tablespoons water
1 tablespoon olive oil
10 ounces boneless skinless chicken breasts, cut into 3/4 inch cubes
1 pizza dough, use your own recipe
cornmeal or flour, for handling
2 cups shredded mozzarella cheese
4 scallions, slivered diagonally
1/2 cup white bean sprouts
1/4 cup shredded carrot
2 tablespoons chopped roasted peanuts
2 tablespoons chopped fresh cilantro

Steps:

  • Combine sauce ingredients in a small pan over medium heat.
  • Bring the sauce to a boil; boil gently for one minute.
  • Divide into 2 portions for use on chicken and pizza; set aside.
  • To make Thai chicken: Cook the chicken in olive oil over med-high heat, stirring, until just cooked; 5 to 6 minutes do not overcook.
  • Set aside in refrigerator until chilled through.
  • Once chilled, coat the chicken with 1/4 cup sauce.
  • Set aside in refrigerator.
  • To make the pizza: Use a large spoon to spread 1/4 cup sauce evenly over pizza dough within the rim.
  • Cover sauce with 3/4 cup cheese.
  • Distribute half the chicken pieces over the cheese followed by half the green onions, bean sprouts, and carrots, respectively.
  • Sprinkle an additional 1/4cup cheese over the toppings and top the pizza with 1 TBSP chopped peanuts.
  • Transfer the pizza to oven; bake until crisp and golden and the cheese is bubbly, 9 to 10 minute.
  • When cooked through, remove pizza from oven.
  • Sprinkle 1TBSP chopped cilantro over the hot cheesy surface.
  • Repeat with remaining ingredients for a second pizza.

1 cup warm water (110 degrees F/45 degrees C)
1 tablespoon honey
2 teaspoons active dry yeast
3 cups all-purpose flour
1 teaspoon salt
2 tablespoons olive oil
3 ½ tablespoons peanut butter
3 tablespoons brewed black tea
3 tablespoons rice vinegar
2 tablespoons soy sauce
2 teaspoons chili oil
1 tablespoon minced fresh ginger
2 teaspoons honey
1 boneless chicken breast half, cooked and sliced into thin strips
2 tablespoons toasted sesame seeds
1 tablespoon paprika
1 small fresh red chile pepper, finely chopped
1 teaspoon salt
4 green onions, sliced
1 cup grated mozzarella cheese
1 carrot, peeled and grated
¼ cup chopped fresh cilantro

Steps:

  • Pour warm water into a small bowl; stir in honey until dissolved. Add the yeast, stirring until dissolved. Let stand until creamy, about 10 minutes.
  • In a large bowl, combine the flour and salt. Add yeast mixture and olive oil; stir well to combine. When the dough has pulled together, turn it out onto a lightly floured surface and knead in more flour until the dough is no longer sticky. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Punch down the risen dough on a floured surface. Divide into two equal portions. Allow the dough to relax for a minute, then roll each portion out into a thin circle. Place on lightly oiled pizza pans.
  • To make the peanut sauce, place peanut butter, tea, rice vinegar, and soy sauce in a blender. Add chili oil, ginger, and honey; process until smooth.
  • In a medium bowl, combine the chicken, sesame seeds, paprika, chile peppers, salt, and 3 tablespoons of the peanut sauce. Mix until the chicken is evenly coated. Spread the remaining peanut sauce evenly over pizza dough. Top with chicken, green onions, and cheese.
  • Bake in preheated oven for 20 minutes or until cheese is lightly browned. Garnish with carrots and cilantro.

1/2 cup duck sauce or plum sauce
1/2 teaspoon crushed red pepper flakes
1 package (2 cups) shredded provolone or Monterey Jack cheese
1/2 red bell pepper, thinly sliced
1 tablespoon vegetable oil
2 tablespoons soy sauce
1 rounded tablespoonful peanut butter
2 teaspoons hot sauce
2 teaspoons grill seasoning (recommended: Montreal Steak Seasoning) eyeball it
4 chicken breast cutlets, 1/2 pound
2 tablespoons honey
2 tablespoons rice wine vinegar or cider vinegar
1/4 seedless cucumber, peeled and cut into matchsticks
4 scallions, chopped
1 cup bean spouts, a couple of handfuls
Palm full cilantro leaves, chopped
1/4 cup chopped peanuts, 2 ounces

Steps:

  • Preheat oven to 425 degrees F.
  • Form pizza crust on pizza pan or cookie sheet. Top with duck or plum sauce - spread it around like you would pizza sauce. Sprinkle the pizza with some crushed red pepper flakes then top with cheese and peppers. Bake until golden and bubbly, 15 to 17 minutes.
  • Preheat a grill pan over medium-high heat. Combine vegetable oil, soy sauce and peanut butter with hot sauce and grill seasoning. Use the microwave to loosen up peanut butter if it is too cold to blend into sauce, 10 seconds ought to do it. Add chicken and coat evenly with mixture. Let stand 10 minutes then grill chicken cutlets 2 to 3 minutes on each side, until firm. Slice chicken into very thin strips.
  • While chicken cooks, mix honey and vinegar and add the cucumber. Turn to coat evenly.
  • Top the hot, cooked pizza with chicken, scallions, sprouts and cilantro. Drain cucumbers and scatter over the pizza. Garnish pizza with peanuts, cut into 8 wedges and serve.

  • Position an oven rack on the second-lowest level in the oven; place a baking stone on the rack.
  • Position another rack in the upper third of the oven; preheat oven to 500°.
  • Prepare toppings: in a saucepan, warm the oil over low heat; stir in the curry paste.
  • Add in the coconut milk, fish sauce, brown sugar, and lime juice.
  • Increase heat to medium; bring to a simmer.
  • Add in the chicken, chopped basil, and bamboo shoots; simmer until chicken is cooked through, about 10 minutes.
  • Using a slotted spoon, drain the chicken and bamboo shoots and transfer to a plate to cool.
  • Increase heat to medium-high; boil the sauce until it is reduced to about 2/3 cup; set aside to cool.
  • Coat a 14-inch pizza screen or perforated pizza pan with cooking spray.
  • Place dough on a lightly floured work surface; lightly dust the dough with flour.
  • Using a rolling pin, roll the dough into a 10-inch round without rolling over the edges.
  • Lift dough and check to make sure the dough isn't sticking to the work surface.
  • Shake excess flour from the dough; lay dough on prepared pan and gently stretch dough into a 14-inch round.
  • Top the pizza: spread the reduced sauce over the dough, leaving a 1-inch border.
  • Drain and discard any juice from the chicken and bamboo shoots; arrange them in a single layer over the sauce; sprinkle mozzarella evenly over the top.
  • Place the pizza in the oven on the upper rack; bake 10 minutes, until the crust is crisp and golden brown.
  • Using a pizza peel, lift the pizza off the pan and place the crust directly on the baking stone (remove pizza pan from oven).
  • Bake about 3 minutes, until the bottom of the crust is golden brown.
  • Using the peel, remove the pizza from the oven and transfer to a cutting board.
  • Scatter bell pepper, carrot, and basil ribbons over the pizza; slice pizza into wedges and serve immediately.

Thai Chicken Pizza With Sweet Chili Sauce image

I am not a huge fan of the peanut sauce that most Thai pizzas tend to use as a base, but love a small amount of peanutty flavor mixed with the sweetness of Thai Sweet Chili Sauce, so I came up with this pizza-pie!

1 pizza crust (I used 1/3 of my Pizza Dough Perfection)
1 -2 tablespoon olive oil
1/4-1/2 cup sweet chili sauce (mae ploy)
1 pinch red pepper flakes (optional)
1/4 cup Italian cheese blend
3/4 cup sharp cheddar cheese
1/8 cup broccoli floret (blanched)
1/8 cup green onion, thinly sliced on bias
1/8 cup carrot, thinly sliced on bias (or you can julienne or grate it)
1/8 cup red bell pepper, julienned (or small dice)
1/4-1/2 cup chicken breast (cooked and sliced very thinly, I used a bit of Peanut Sauce Peanut Sauce brushed on before roastin)
2 tablespoons sesame seeds
1 tablespoon cilantro, whole leaves (or minced if you prefer)
1 teaspoon hot chili sauce (siracha (optional)

Steps:

  • Preheat oven and pizza stone to 550* (or as high as your oven will go, may only be 500*).
  • Prepare your dough to top. You can prebake your crust for a minute or two after brushing with olive oil, or you can do as I do and just top the dough since I bake at such a high heat.
  • Brush crust with olive oil. Spread on Thai Sweet Chili Sauce as thick or thinly as you like. (It is very sweet with just a hint of heat, I happen to love sweet and savory together, so I use a lot and add a pinch or two or crushed chili flakes).
  • Layer on italian cheese and half of the cheddar. Add veggies, chicken, remaining cheddar. Sprinkle on sesame seeds allowing some to get on the untopped crust as well.
  • Working quickly so as not to let the oven temperature drop, transfer pizza to pizza stone using a pizza peel, cookie sheet, or parchment paper.
  • Bake for 8-10 minutes depending on the amount of toppings you added and how done you like your crust. If you have never baked a pizza at this high of heat before, you should DEFINITELY watch it like a hawk the first few times so you don't burn it. I have been told (and agree) that the high heat gives you more of a pizzaria-style pie!
  • Remove from oven and allow to cool for a minute. Drizzle with siracha and sprinkle with cilantro if desired.
