PUMPKIN SEED-CRUSTED CHICKEN

Ingredients

1 cup pumpkin seeds
1 teaspoon ancho powder
Salt and freshly ground black pepper
1 teaspoon thyme (fresh, chopped)
1 cup goat cheese
4 (12-ounce) chicken breasts, skin and wing bone attached
2 tablespoons extra-virgin olive oil
Serving suggestion: a green salad or favorite vegetables

Steps:

Preheat oven to 425 degrees F.
Toast the pumpkin seeds and ancho powder in a saute pan on medium high heat. Remove, crush in a mortar and pestle, and place in a large bowl. Add salt, pepper, and fresh thyme.
Stuff the goat cheese underneath the chicken skin of the breast, then dredge the chicken on both sides in the mixture and remove. Heat a saute pan on medium heat, add olive oil. Place the chicken, skin side down into the pan.
When it becomes golden, flip the chicken and place into the oven for 12 to 15 minutes. Serve with a green salad or favorite vegetables.

This is an excellent way to use up leftover chicken. This is served up at our house at least once a month. We like it with mashed potatoes or rice and a green vegetable.

Ingredients

5 cups chopped cooked chicken
1 (10.5 ounce) can condensed cream of chicken soup
1 cup sour cream
1 ½ cups crushed buttery round crackers
1 teaspoon poppy seeds
½ cup butter, melted

Steps:

Preheat the oven to 350 degrees F (175 degrees C).
Place the chicken into a 9x13 inch baking dish. In a medium bowl, stir together the condensed soup and sour cream. Pour over the chicken. In a separate bowl, stir together the crushed crackers, poppy seeds and melted butter. Sprinkle over the chicken and sauce.
Bake for 30 minutes in the preheated oven, until the top of the casserole is browned and the sauce is bubbly.
