BURGERS WITH GREEN TOMATO SALSA

2 green tomatoes, diced
Juice of 2 limes
1 tablespoon sugar
Kosher salt
1/2 cup chopped fresh cilantro
1/2 small red onion, diced
1 red jalapeno pepper, seeded and finely chopped
4 ears of corn, husked and halved
2 teaspoons vegetable oil, plus more for the grill
Freshly ground pepper
1 1/2 pounds lean ground beef
4 sesame hamburger buns
1/2 cup prepared guacamole

Steps:

  • Preheat a grill to medium high. Make the salsa: Combine the tomatoes, lime juice, sugar and 1 teaspoon salt in a small microwave-safe bowl. Microwave 2 minutes, then stir in the cilantro, red onion and jalapeno; set aside.
  • Toss the corn with the vegetable oil in a large bowl; season with salt and pepper. Form the beef into four 1-inch-thick patties; season with salt and pepper. Lightly brush the grill grates with vegetable oil. Grill the corn, turning occasionally, until marked and tender, about8 minutes. Meanwhile, grill the burgers about 4 minutes per side for medium rare. Toast the buns on the grill.
  • Sandwich the burgers on the buns with the guacamole and salsa. Serve with the corn.

1 1/2 lb lean (at least 80%) ground beef
1/2 cup Old El Paso™ Thick 'n Chunky salsa
1/4 cup Progresso™ plain bread crumbs
3/4 cup shredded hot pepper Monterey Jack cheese (3 oz)
6 burger buns, split, toasted
6 tomato slices
6 avocado slices
6 tablespoons sour cream

Steps:

  • Heat gas or charcoal grill. In medium bowl, mix beef, salsa and bread crumbs. Shape mixture into 12 (4-inch) patties, 1/4 inch thick. Sprinkle rounded tablespoon cheese in center of 6 patties, spreading slightly. Top with remaining patties; press edges together firmly to seal.
  • Place patties on grill over medium heat. Cover grill; cook 11 to 13 minutes, turning once, until meat thermometer inserted in center of patties reads 160°F.
  • Place burgers on bottom halves of buns. Top each with tomato and avocado slice and 1 tablespoon sour cream. If desired, top with additional salsa. Cover with top halves of buns.

  • Heat grill to medium. In a large bowl, mix together the first six ingredients, then season well. Shape the mixture into 4 burgers and place on a baking tray.
  • Grill the burgers for 3-4 mins on each side until cooked through, then keep them warm. Split each burger bun in half, then lightly toast, cut side up, place under the grill, cut side up, and lightly toast for 1 min. Fill the toasted buns with some salad and top with a burger and a good dollop of tomato salsa.

1 cup mango, diced
3/4 cup red onion, finely chopped
1/2 cup green pepper, finely chopped

1/2 cup quick oats, uncooked
1/3 cup ketchup
1 tablespoon caribbean jerk seasoning
1 egg
1 lb lean ground turkey

Steps:

  • To prepare salsa, in a medium bowl, combine papaya, mango, 1/4 cup of red onion and 14/ cup green pepper, cilantro and lime juice. Set aside.
  • To prepare burgers, in a large bowl, combine remaining 1/2 cup red onion, remaining 1/4 cup of green pepper, oats, ketchup, jerk seasoning and egg and mix well. Add turkey; mix thouroughly. Shape turkey into four 1 inch thich patties; cover and refrigerate for a minimum of 20 minutes.
  • Preheat broiler. Broil burgers until cooked through, flipping once, about 20-25 minutes total. Serve each bruger topped with about a heaping 1/3 cup of salsa.

1 1/2 lbs lean ground beef
1/2 cup salsa
1/4 cup plain breadcrumbs
3/4 cup shredded hot monterey jack pepper cheese
6 toasted hamburger buns
6 slices tomatoes
6 slices avocados
6 tablespoons salsa
6 tablespoons sour cream

Steps:

  • In medium mixing bowl, combine ground beef, salsa and bread crumbs.
  • Mix well and shape into 12 hamburger patties.
  • No bigger than 4 inches in diameter and 1/4 inch thick.
  • On 6 patties, sprinkle cheese on top of each patty.
  • Place the remaining patties on top of the cheese covered patties to form a hamburger.
  • Seal ends together by pressing the ends shut.
  • Place on grill.
  • Grill each side for 11 to 15 minutes or until your liking.
  • Place cooked hamburger on bun topped with tomato, avocado, salsa and 1 Tablespoon sour cream.
  • When doubling recipe, I found I needed to add more bread crumbs so the meat was the right consistency for a hamburger.

SALMON BURGERS WITH KALE SALSA

2 unpeeled sweet potatoes , cut into wedges
1 tbsp olive oil
½ tsp smoked paprika
peel of 1 orange
2 skinless salmon fillets
1 avocado , destoned, peeled and sliced
juice 1 lime
2 wholemeal burger buns
mixed seeds , to serve
50g kale , finely chopped
1 tsp olive oil
1 red chilli , deseeded and finely chopped
small handful coriander , chopped
1 orange , segmented

Steps:

  • Heat oven to 200C/180C fan/gas 6. Put the sweet potato wedges in a large roasting tin, drizzle over the olive oil, then sprinkle over the paprika and toss together to make sure all the wedges are coated. Bake in the oven for 35 mins or until tender and starting to crisp at the edges.
  • While the sweet potatoes cook, take a large piece (about 40cm long) of baking parchment and place the pieces of orange peel on the parchment just to the right of the centre. Lay the salmon on top of the peel and sprinkle over 1 tsp water. Fold the paper over to seal the salmon in a parcel. Put the parcel in the oven when the sweet potatoes are nearly ready and bake for 12-15 mins.
  • Put the avocado slices in a bowl, pour over the lime juice and set aside until needed. For the salsa, tip the kale into a large bowl with the olive oil. Scrunch well with your hands to massage the oil into the kale (see tip, below). Stir in the rest of the salsa ingredients and season.
  • Lightly toast the burger buns and the seeds for about 1 min in a dry, non-stick frying pan over a high heat, then set aside until needed. Take the salmon out of the oven, remove from the parcel and discard the orange peel. Lay the slices of avocado on the bottom half of each burger bun then place the salmon on top. Pile in a couple of spoonfuls of the salsa with a sprinkling of the toasted mixed seeds. Put the lids on and serve with the remaining salsa and wedges on the side.
