1 (12-ounce) box uncooked jumbo pasta shells
2 cups chopped cooked chicken
2 cups fresh chopped spinach
1 onion, chopped
2 cloves garlic, minced
1 (15oz) container ricotta cheese
2 (8oz) packages cream cheese, softened
1 (5oz) package shredded Parmesan cheese (about 1 2/3 cups)
1 large egg, lightly beaten
1 Tablespoon dried parsley flakes
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/2 teaspoon pepper
2 cups shredded mozzarella cheese, divided
1 (26oz) jar prepared spaghetti sauce (If you like it saucier use more)

Steps:

  • Cook shells according to package directions. Be careful not to overcook them or they will tear easily when trying to fill them. Drain and set shells out individually on a cutting board or baking sheet so that they don't stick together.
  • Preheat oven to 350°. Lightly grease two 9x13 baking dishes.
  • In a large bowl, combine chicken and all the rest of the ingredients except mozzarella and spaghetti sauce. Stir in 1 cup mozzarella. Spoon into shells. *Tip: For easier filling, fill a gallon ziplock baggie with the filling and snip a quarter size hole off the corner of the bag. Then you can just pipe the filling into the shells.
  • Spread half of spaghetti sauce into prepared baking dishes. Arrange shells over sauce; top with remaining sauce. Cover tightly with heavy-duty aluminum foil. If you are freezing one of the 9x13 prepared pans, freeze it after this step. Include a baggy of the remaining mozzarella for when you cook it.
  • Bake, covered, for 40 minutes. Uncover, sprinkle with remaining 1 cup mozzarella. Bake for 5 to 10 more minutes.
  • Makes 8-10 servings.

Dinner is about to get delicious with these tasty chicken stuffed shells. Jumbo shells are stuffed with chicken, ricotta and mozzarella and baked in marinara sauce for pasta dinner the whole family will love.

10 oz jumbo shells
2 tsp olive oil
2 garlic cloves
3 cups baby spinach
2 cups shredded chicken
½ cup whole-milk Ricotta
4 oz fresh mozzarella (cut into small cubes)
½ cup grated Parmesan (divided)
1 Egg
½ tsp salt
1/8 tsp black pepper
2 cups marinara sauce
½ cup heavy cream
1 cup shredded mozzarella cheese
Basil for garnish

Steps:

  • Bring a large pot of water to a rolling boil. Season with salt.
  • Add jumbo shells one at a time to prevent them from sticking. Boil until UNDER aldente. You want them to be firm so they don't break when you stuff them. They will continue to cook in the oven. Use a slotted spoon to gently remove the shells from the pasta water. Set on a cutting board or large plate to cool.
  • While the shells boil, heat a medium skillet to a medium heat. Add olive oil. Once the oil is hot, add the garlic. Cook for 30 seconds. Add the spinach, sauté until wilted, about 2 minutes. Transfer spinach and garlic to a large bowl.
  • Add shredded chicken, ricotta, fresh mozzarella cubes, ¼ cup parmesan cheese, egg, salt, and black pepper to the spinach and garlic. Stir until combined. Season to taste with salt and pepper.
  • Set aside.
  • Add marinara sauce and cream to the same pan you cooked the spinach and garlic in. Bring to a boil and reduce to a simmer. Stir in parmesan cheese. Once the cheese has melted, remove from the heat and season to taste with salt and pepper.
  • Pour the sauce into a 9x12 baking dish or a similar size. Use a spoon or your hands to stuff the filling into the shells. Arrange them in the pan. Sprinkle with shredded mozzarella.
  • Bake uncovered until hot and bubbly and the cheese has melted, about 25-30 minutes.
  • Garnish with fresh basil

  • Heat oven to 350°F. Cook and drain pasta as directed on package. Rinse with cool water; drain.

24 jumbo pasta shells (about 10 ounces)
6 frozen chicken tenders (about 12 ounces)
1 pound whole-milk ricotta
1 cup grated Parmesan
1 1/2 teaspoons Italian seasoning
3 cups shredded mozzarella (about 12 ounces)
2 1/2 cups marinara sauce

Steps:

  • Position an oven rack in the center of the oven and preheat to 400 degrees F.
  • Bring a large pot of salted water to a boil. Cook the pasta shells until just slightly softened but still firm, about 7 minutes. Drain well, then rinse under cold water. Arrange the shells in a single layer on a baking sheet, without touching each other.
  • Cook the chicken tenders according to the package directions. Slice the tenders into quarters; set aside.
  • Meanwhile, stir together the ricotta, Parmesan, Italian seasoning, 1 1/2 cups of the mozzarella and 1/2 teaspoon salt in a medium bowl. Transfer the mixture to a medium resealable plastic bag. Snip 1/2 inch off one corner of the bag.

1 - package fresh spinach; steamed and cooled
1 medium onions, yellow, medium, chopped

Steps:

  • Cook pasta as directed on box. Drain & cool. Steam fresh spinach and squeeze out all the juices. Set aside
  • In a fry pan saute chicken pieces, onion and garlic in olive oil until chicken is done showing no pink; cool slightly. In a large bowl combine cottage cheese that has been mixed with an egg, chicken mixture, parmesan cheese, 2 c of mozzarella cheese, half-half, spinach,garlic powder,salt, pepper, italian seasoning and ginger. Combine well.
  • Using a spoon, fill up each shell with a heaping tablespoon of mixture. Place in a 13x 9 pan. Sprinkle with Parmesan & the rest of the mozzarella cheese. Cover with foil. Bake at 375F for 40 minutes. Remove foil and turn up oven to 425F to allow to browned in oven. Remove and let sit for 10 minutes.

1 (12 ounce) package jumbo pasta shells
2 cups cooked, shredded chicken ((such as from a rotisserie chicken))
1 (10 ounce) box frozen chopped spinach, thawed and squeezed dry
1 (15 ounce) container ricotta cheese (about 1 ¾ cups)
2 cups (8 ounces) shredded mozzarella cheese, divided
¼ cup grated Parmesan cheese
1 egg
1 tablespoon chopped fresh basil ((or 1 teaspoon dried basil))
½ teaspoon salt
½ teaspoon garlic powder
Pinch of nutmeg
2 cups Alfredo sauce ((I used one 15-ounce jar plus part of a second jar))

Steps:

  • Preheat oven to 350°F. Spray a 9 x 13-inch dish with cooking spray. Pour 1 cup of the Alfredo sauce into the bottom of the dish. Save the rest of the sauce for later.
  • Cook pasta in a large pot of salted boiling water according to package instructions. Drain and rinse under cold water.
  • In a large bowl, combine the chicken, spinach, ricotta, 1 ½ cups of the mozzarella, Parmesan, egg, basil, salt, garlic powder and nutmeg.
  • Stuff each shell with the chicken mixture. Depending on how full you stuff each shell, you might not need all of the shells in the box. I can typically fill and fit about 20-22 shells in my pan. 6 cloves garlic, thinly sliced
2 28-ounce cans San Marzano tomatoes, crushed by hand
1 teaspoon dried oregano
Pinch of red pepper flakes, plus more for topping

I love to make these stuffed shells. They are a favorite with my family. This recipe tends to make an "over-stuffed" shell which is what I like about it. If you prefer a little less filling, simply decrease the amount of the ricotta.

36 jumbo pasta shells
32 ounces ricotta cheese
2 (10 ounce) packages frozen chopped spinach, thawed and drained
3/4 cup grated parmesan cheese or 3/4 cup romano cheese
1/4-1/2 cup chopped onion
2 teaspoons dried basil
4 garlic cloves, minced
2 (5 1/2 g) packets herbox instant chicken bouillon granules
1/4 teaspoon dried thyme leaves
1 egg
1/2 cup shredded mozzarella cheese, plus

3 1/2 cups spaghetti sauce (sometimes I make my own sauce. Other times I use a jar sauce that is meant for baked pasta dishes. I)

Steps:

  • Preheat oven to 350 degrees F.
  • Bring a large pot of salted water to boil, gently place pasta shells in boiling water; bring water back to boil. Cook until noodles are just tender; drain well. I usually set them on wax paper and make sure they are dried off before I stuff them.
  • Squeeze spinach dry. Combine spinach, ricotta, Parmesan cheese, basil, thyme, chicken bouillon, 1/2 cup mozzarella, onion and garlic in a large mixing bowl. Season with salt and pepper if desired. Add egg. Mix well.
  • Spread 1/2 cup sauce evenly over the bottom of a 9x13 inch baking dish.
  • Fill each pasta shell with the spinach cheese mixture. Arrange the shells, filling side up in the baking dish. Spoon remaining sauce over the shells. Sprinkle remaining mozzarella cheese on top of the shells. (Sometimes I use shredded Romano cheese instead. )
  • Cover the pan loosely with aluminum foil and bake in preheated oven until heated through; about 30-40 minutes.

1 (12 ounce) can of fiesta cheddar cheese soup
4 cups of fresh Baby Spinach
4 cups of shredded mozzarella cheese
2 cups of shredded parmesan cheese
1 teaspoon salt
1 teaspoon pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 cup heavy whipping cream
1/2 cup milk

Steps:

  • Preheat oven to 350 degrees.
  • In a mixing bowl, combine Fiesta cheddar soup, half of whipping cream, and milk. After completely mixed, finish adding the rest of the whipping cream, and use half of mixture on the bottom of casserole dish.
  • Once the bottom of the casserole dish is cover, sprinkle a few leaves of baby spinach on top of soup mix.
  • Put dish aside, and butterfly the Chicken breast (make sure you don't separate it fully,) and then pound down the meat evenly just to loosen up the meat and to tenderize.
  • Lightly season with salt, pepper, garlic powder, and onion powder.
  • Once seasoned, sprinkle shredded mozzarella over chicken, then add baby spinach, and carefully roll up the chicken breast, and place in casserole dish with the open end of chicken facing down.
  • Repeat chicken rolling process until all done, and casserole dish is filled.
  • sprinkle the remaining seasonings over rolled chicken breast and then top off with the remaining of soup mixture.
  • Place in the center of the preheated oven for 30mins. After 30mins rotate dish a full 180 degrees. After another 20mins, sprinkle the remaining shredded mozzarella cheese and the parmesan cheese. and finish baking. (Do Not Cover Dish.).
  • Serve with side of steamed veggies or salad.

I've found that food recipes for the masses just didn't suit as in our home, we like a lot more seasoning. However, with a daughter that is vegetarian, I adapted this by just eliminating the chicken. It still is a tasty dish to take to events away. Sometimes it is difficult to buy the very large pasta shells, but I have found them at various fruit & veggie barns. My favourite shell is Conchiglioni 87/b by Divella.

  • Preheat oven to 180F (160C) (I use my NuWave Oven for about 45 minutes).
  • Par-cook the pasta in boiling water for 3 minutes. Drain and cool slightly.
  • Brush a shallow 8 cup ovenproof baking dish or ramekins, with oil. (or spray).
  • Microwave the spinach until just wilted. Then drain and chop finely, squeezing out excess liquid.
  • Combine spinach, ricotta and cottage cheese annd spoon or pipe into the pasta shells.
  • Combine the pasta sauce and stock and pour into the prepared dish or ramekins. Place the shells on top and scatter pieces of skinless chicken around. Sprinkle grated parmesan over all.
  • Bake covered for about 1 hour and scatter torn basil leaves on top to serve.
