I love this recipe! It is one of my favorites to wow a crowd. Most of its wow factor comes from all the fresh ingredients. I always pick up fresh herbs, garlic, cucumbers, and hot peppers-as well as honey and onions when I can- at my local farmers market. 6 boneless skinless chicken breast halves (6 ounces each)
1/3 cup minced fresh basil
1/4 cup minced fresh cilantro
1 tablespoon olive oil
2 teaspoons minced garlic, divided
1/3 cup reduced-sodium teriyaki sauce
1 tablespoon minced fresh gingerroot
SALSA:
1 English cucumber, chopped
1 medium mango, peeled and chopped
1/4 cup finely chopped red onion
1 jalapeno or fresno pepper, seeded and minced
1 tablespoon minced fresh basil
1 tablespoon minced fresh cilantro
1 tablespoon olive oil
1 tablespoon rice vinegar
1 tablespoon balsamic vinegar
1 teaspoon minced fresh gingerroot
1 teaspoon honey

Steps:

  • Flatten chicken to 1/4-in. thickness. In a small bowl, combine the basil, cilantro, oil and 1 teaspoon garlic; spread over chicken. Roll up each from a short side and secure with toothpicks. Place seam side down in a greased 11x7-in. baking dish., Combine the teriyaki sauce, ginger and remaining garlic; pour over chicken. Bake, uncovered, at 375° for 35-40 minutes or until a thermometer reads 170°. Discard toothpicks., Meanwhile, combine the salsa ingredients. Cut chicken into slices; serve with salsa.

1-1/2 cups uncooked spiral pasta
1/2 cup mayonnaise
1/3 cup whole milk
1/2 teaspoon salt
1/2 teaspoon dried basil
2 cups frozen mixed vegetables, thawed
1-1/2 cups cubed cooked chicken
1-1/2 cups shredded cheddar cheese, divided

Steps:

  • Cook noodles according to package directions. Meanwhile, in a large bowl, combine the mayonnaise, milk, salt and basil. Stir in the vegetables, chicken and 1 cup cheese. Drain pasta; stir into vegetable mixture. , Transfer to a greased 1-1/2-qt. microwave-safe dish. Sprinkle with remaining cheese. Cover and microwave on high for 4-5 minutes or until heated through and the cheese is melted. Let stand for 5 minutes before serving.

2 tablespoons vegetable oil
1 tablespoon minced garlic
1/2 tablespoon grated ginger
2 cups shredded Napa cabbage
1 carrot, grated
1/2 cup bean sprouts
2 ounces bean thread noodles, blanched and chopped
8 ounces shredded cooked chicken breast
1 tablespoon hoisin sauce
1 tablespoon oyster sauce
2 tablespoons chopped coriander
1 package spring roll wrappers
1 egg, beaten
Vegetable oil, for frying

Steps:

  • Heat oil in a skillet or wok over high heat. Add the garlic, ginger, cabbage, carrot, and bean sprouts. Cook for 2 minutes or until the cabbage is just limp. Add the noodles and chicken; continue to cook until heated through. Stir in the hoisin and oyster sauces, toss to coat the mixture. The filling should be moist but not wet. Remove from heat, and allow to cool. Toss in the chopped coriander.
  • Lay a spring roll wrapper on a flat surface on an angle so it looks like a diamond. Spoon 2 tablespoons of the filling near the bottom corner of the wrapper and fold up to enclose the filling. Fold in the 2 sides. Paint the top seam of the wrapper with beaten egg. Continue rolling up to form a tight cylinder.
  • Pour about 1-inch of oil in a skillet and heat to 350 degrees F. Fry the spring rolls for 2 minutes, turning to cook all sides. Drain on paper towels before serving.

SOUTHWESTERN CHICKEN SPIRALS

This recipe can be used for a meal or for an appetizer. I don't like cilantro so I always sub an equal amount of chopped fresh parsley. Plan ahead as the filling needs to chill for 2 hours.

1 (7 ounce) jar roasted red peppers
2 cups chopped cooked chicken
1 (8 ounce) package cream cheese, softened
1 (1 ounce) envelope buttermilk ranch salad dressing mix
1/4 cup chopped ripe olives
1/2 small onion, diced
1 (4 1/2 ounce) can chopped green chilies, drained
2 tablespoons chopped fresh cilantro
1/2 teaspoon black pepper
1/4 cup pine nuts (optional)
48 inches flour tortillas

Steps:

  • Drain roasted red peppers very well, pressing between paper towels to remove all excess moisture and chop.
  • In a large bowl, stir together chopped roasted peppers, chicken, cream cheese, dressing mix, olives, onion, chilies, cilantro, and pepper.
  • Cover and chill at least 2 hours.
  • Stir pine nuts, if desired, into chicken mixture and spoon evenly over tortillas, spread and roll up.
  • Serve whole, cut in half, or sliced in smaller pieces for appetizers.

12 ounces gemelli, cavatappi or other spiral-shaped pasta
3 tablespoons unsalted butter
1 tablespoon all-purpose flour
1 teaspoon dry mustard
Pinch of cayenne pepper
1 (12-ounce) can evaporated milk
1/2 cup whole milk
3/4 cup shredded yellow sharp cheddar cheese
3/4 cup shredded monterey jack cheese
1/2 cup grated parmesan cheese
1/2 cup panko (Japanese breadcrumbs)
2 tablespoons chopped fresh parsley, chives and/or scallions

Steps:

  • Bring a pot of salted water to a boil; add the pasta and cook until al dente, about 8 minutes. Meanwhile, melt 1 tablespoon butter in a saucepan over medium heat. Add the flour, mustard and cayenne and stir with a wooden spoon to make a paste. Cook, stirring, until the paste puffs slightly, about 1 minute. Whisk in both milks and 1/2 teaspoon salt and simmer, whisking occasionally, until slightly thickened and creamy, 6 to 7 minutes. Add the cheddar and jack cheeses and all but 2 tablespoons of the parmesan and whisk until melted; keep warm. Combine the panko, herbs and/or scallions, 1 tablespoon butter and the remaining parmesan in a microwave-safe bowl and microwave until the butter melts, about 1 minute; toss. Drain the pasta, reserving about 1 cup cooking water, and return to the pot. Toss with the remaining 1 tablespoon butter, then stir in the cheese sauce, adding the reserved cooking water if needed. Season with salt and top with the breadcrumb mixture.

A pesto filling is rolled inside boneless chicken breasts. After coating with bread crumbs, the chicken is cut into spirals, skewered and broiled.

2 cups chopped fresh parsley
6 Tbsp. GREY POUPON Dijon Mustard, divided
2 Tbsp. KRAFT Grated Parmesan Cheese
3 cloves garlic, minced
2 tsp. dried basil leaves
2/3 cup cholesterol-free egg product, divided
1-1/2 cups plain dry bread crumbs, divided
8 small boneless skinless chicken breasts (2 lb.), pounded to 1/4 inch thickness
8 wooden skewers
2 Tbsp. margarine or butter, melted
4 cups hot cooked rice

Steps:

  • Preheat broiler. Mix parsley, 4 Tbsp. (1/4 cup) of the mustard, the cheese, garlic, basil and 1/4 cup of the egg product in small bowl until well blended. Stir in 1/2 cup of the bread crumbs; mix well. Spread evenly onto chicken breasts; roll up each breast starting from one of the short ends.
  • Blend remaining egg product and remaining 2 Tbsp. mustard. Dip chicken rolls in egg mixture, then in remaining 1 cup bread crumbs, turning to evenly coat all sides. Cut each roll-up crosswise into 4 equal pieces, then thread onto skewer. (Each skewer will hold 4 spirals.)
  • Broil, 6 inches from heat, 10 to 15 min. or until chicken is cooked through, turning occasionally and brushing with the melted margarine. Serve with rice.

12 boneless skinless chicken thighs
nonstick cooking spray
2 teaspoons extra virgin olive oil
6 garlic cloves, crushed
1 1/2 cups basil leaves
1 1/2 cups chopped fresh flat-leaf parsley
2 tablespoons grated parmesan cheese
2 tablespoons reduced-sodium fat-free chicken broth
1 teaspoon salt
3/4 teaspoon pepper

Steps:

  • Flatten chicken thighs.
  • MAKE PESTO: Microwave oil and garlic together on HIGH 40 seconds; process with basil through pepper in a food processor.
  • Spread about 1 tsp pesto down center of each thigh, leaving a ¼-inch border on short ends.
  • Starting at a short end, roll each thigh up with pesto inside and secure with a toothpick.
  • Arrange rolls ½ inch apart, seam sides down, in a 13 x 9-inch baking dish coated with cooking spray.
  • Bake at 375° until a cooking thermometer registers 170° (about 30 minutes), turning rolls after 15 minutes.
  • IMPORTANT: Cool, transfer to a covered container and refrigerate overnight.
  • Remove toothpicks and cut each roll crosswise into 1/4-inch-thick slices.

8 ounces cream cheese
1 cup diced cooked chicken
1/4 lb monterey jack cheese, shredded
1/4 cup chopped fresh coriander or 1 teaspoon dried coriander
2 tablespoons diced fresh jalapeno peppers or 2 tablespoons diced canned jalapeno peppers
2 teaspoons ground cumin
3 (10 inch) flour tortillas
vegetable oil
salsa
sour cream

Steps:

  • In a large bowl, combine cream cheese, chicken, monterey jack, coriander, jalapeno peppers, and cumin.
  • Spread mixture evenly over tortillas.
  • Roll up each tortilla tightly around chicken mixture.
  • Wrap tightly in plastic wrap and refrigerate for at least 2 hours.
  • Just before serving, cut each tortilla roll into 1/2 inch slices.
  • Arrange on greased baking sheet, brush with oil, bake in 350 degree oven for 12 to 15 minutes or until lightly browned.

4 chicken breast halves, skinless and boneless
1 garlic clove, crushed
2 Tbsp tomato paste
4 slice bacon
fresh basil leaves
oil for basting
salt and pepper to taste

Steps:

  • 1. Spread a chicken breast between two sheets of plastic wrap and beat firmly with a meat mallet to and even thickness. Do this to remaining breasts.
  • 2. Mix the tomato paste with garlic.
  • 3. Spread over chicken breast.
  • 4. Partially fry bacon.
  • 5. Lay bacon slice over each chicken breast.
  • 6. Then lay basil leaves on top. Salt and pepper to taste.
  • 7. Roll chicken from small end, then cut into thick slices. Thread slices onto skewers.
  • 8. Brush lightly with oil and cook on a grill or griddle about 12 minutes turning once. Serve hot.

1 cup chopped fresh parsley
¼ cup Dijon mustard

  • Place chicken breasts between 2 sheets of heavy plastic on a solid, level surface. Firmly pound with the smooth side of a meat mallet to a 1/4-inch thickness. Remove top sheet of plastic. Cut each chicken breast into strips. Roll up and thread on a skewer.
  • Combine parsley, Dijon mustard, Parmesan cheese, basil, and garlic in a small bowl. Spread mixture over skewered chicken.

400 g spiral noodles

4 chicken breasts, cut into strips
2 cloves garlic, crushed
4 small roma tomatoes, diced
1/2 cup light sour cream
1/2 cup chicken stock
1/2 cup shredded fresh basil
fresh ground black pepper
1/4 cup sliced black olives (optional)
1/4 cup grated fresh parmesan cheese

Steps:

  • Cook pasta.
  • While pasta is cooking, heat oil in large pan over medium/high heat.
  • Add chicken and cook stirring until golden brown, about 3- 4 minutes.
  • Reduce heat, add garlic and tomatoes and cook further 3 minutes, stirring constantly.
  • In a bowl combine sour cream and stock, mix well.
  • Add to frying pan with basil and black pepper to taste, reducing heat to low and simmer, stirring for 2 minutes.
  • Drain pasta and add to pan with chicken mixture, olives (if using) and parmesan cheese.
  • Toss over low heat until heated through.
