Romantic Chicken Scallopine With Saffron Cream Sauce image

This is a recipe of Giada De Laurentiis's from Foodnetwork.com (but I lessened the salt, added flour, upped the garlic, and added a sauce-thickening tip). It seems like it would be super hard, but it is really not that difficult. The first time I made it was for my husband on Valentine's Day. I had never cooked with several of the ingredients before, and except accidentally buying chicken tenders instead of chicken cutlets, it turned out just lovely. :) I also found saffron threads the cheapest at Whole Foods, almost $7.00 less expensive than the next cheapest place! I served this over angel hair pasta with green beans and garlic breadsticks, and we had Recipe #175610 for dessert.

2 tablespoons olive oil
1 lb chicken cutlet
2 shallots, sliced
2 garlic cloves, minced
1/2 cup white wine
1 1/2 cups chicken broth
1/4 teaspoon saffron thread
1/2 cup heavy cream
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
flour (for coating the chicken)
3 tablespoons flat-leaf Italian parsley, chopped

Steps:

  • Warm the olive oil in a large skillet over high heat.
  • Season the chicken cutlets with salt and pepper, and coat each side with flour (shaking off any excess).
  • Cook the chicken until golden and cooked through, about 2 to 3 minutes per side. Transfer the chicken to serving plate and tent with foil to keep warm.
  • Turn the heat to medium, add the shallots and the garlic and cook until tender, about 2 minutes.
  • Deglaze the pan with the white wine. Using a wooden spoon, scrape all the brown bits from the bottom of the pan. Cook until the wine is almost evaporated.
  • Add the chicken broth and saffron threads, bring to a simmer (keeping the heat of the pan at medium) and reduce for 10 minutes. Add the cream, salt, and pepper.
  • Stir to combine and simmer for 1 minute to blend the flavors (or let it simmer longer to reduce further). If you want an even thicker sauce, you can mix 1 Tablespoon cornstarch with 1 Tablespoon water, and add it to the pan.
  • Pour the sauce over the chicken.
  • Sprinkle with parsley and serve immediately.

2 cups all-purpose flour
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
4 boneless, skinless chicken breasts (about 1 1/4 pounds), cut in half horizontally and pounded lightly to make 8 scaloppini
2 tablespoons extra-virgin olive oil, plus more if needed
1 medium onion, finely chopped
2 cloves garlic, minced
1 tablespoon chopped fresh rosemary
4 tablespoons unsalted butter
2 to 3 ounces capers, drained
1/4 cup unsalted chicken stock
Juice of 1 lemon plus 2 lemons, cut into supremes, for garnish (see Cook's Note)

Steps:

  • Put the flour in a large shallow dish and season with the salt and pepper. Pat the chicken scaloppini dry with paper towels, then put them in the flour, coating the chicken on both sides. Set aside.
  • Heat the olive oil in a 14-inch cast-iron skillet over medium-high heat. Add the floured chicken and cook, in batches if needed, until deeply golden, about 3 minutes per side. Remove to a wire rack-lined sheet tray.
  • Reduce the heat under the same cast-iron skillet and add the onion, garlic and rosemary. Stir occasionally and cook until the onions are translucent, 3 to 5 minutes. Add the butter and capers and scrape the skillet as the butter melts to deglaze. Add the chicken stock and lemon juice, stirring to combine. Add the chicken pieces back to warm through and allow the sauce to reduce, another 2 to 3 minutes, spooning the sauce over the chicken to coat.
  • Garnish with the lemon supremes and serve.

I don't remember where I found this recipe, it has been in my recipe box for about 25 years now. It is wonderful for a special occasion dinner, but can also be made up fairly quickly on a weeknight. You can buy sliced mushrooms to use in this to speed it up a bit. This is going to be the main course for my Valentine's Day Dinner this year. I use chicken broth from a 1 litre carton if I don't have any homemade frozen. While it definitely is not diet food you can lighten it up a bit by using half & half instead of heavy cream, but the sauce will be a bit thinner then. While this takes a bit more work than just cooking some chicken breasts it is well worth the effort. You can serve this with pasta or risotto, and some whole green beans with baby carrots.

I came up with this recipe in a effort to create a chicken dish that uses Limoncello. The sauce is so good! The capers add a salty pop that is countered well with the sugary Limoncello. Limoncello does not have the acidity of fresh lemons, if you LOVE lemon flavor, add a Tablespoon of lemon juice as well. Bon Appetite.

2 boneless skinless chicken breasts (pounded to 1/3 inch)
1 tablespoon Dijon mustard
1 egg
3/4 cup fresh breadcrumbs or 3/4 cup panko breadcrumbs
1 pinch rosemary
1 pinch thyme
1 pinch marjoram
1 pinch sage
fresh ground black pepper or lemon pepper
kosher salt
1/2 teaspoon garlic powder
1 tablespoon olive oil
1 tablespoon butter
3/4 cup chicken broth
6 tablespoons limoncello
1 -2 tablespoon lemon juice (optional)
3 teaspoons capers
4 -5 lemon slices
fresh parsley, chopped

Steps:

  • Whisk mustard and egg in a small bowl.
  • Put bread crumbs on a large shallow plate and top with equal big pinches of rosemary, thyme, marjoram and sage and a few cranks of the pepper mill. Literally pinch the herbs to help release the flavor. Sprinkle with a pinch of kosher salt (or more if you like salt) and garlic powder. Mix thoroughly with your fingers.
  • Heat oil and butter in a large saute pan on medium-high heat.
  • Dip the breasts in egg/mustard mixture and dredge in crumbs.
  • Cook chicken for 3-4 minutes a side, or until it is no longer pink inside and the crumbs are a nice golden color. Remove and transfer to a plate to keep warm.
  • Add broth and limoncello to the empty pan and scrape the brown bits with a rubber spatula. If you are adding lemon juice for a more lemony flavor add it now.
  • Add capers, lemon slices and parsley and stir to combine. Steep for about two minutes. The sauce will rapidly evaporate so watch it carefully.
  • Place chicken breasts on plates and top with the cooked lemon circles and spoon sauce over chicken.

1 lb veal (or boneless chicken breasts)
salt
pepper
2 1/2 tablespoons butter
2 tablespoons olive oil
12 ounces cremini mushrooms, sliced (or button mushrooms)
2 large shallots, finely chopped
3/4 cup dry white wine
1 cup broth (beef or chicken depending on meat)
1/4 teaspoon saffron thread
3/4 cup heavy cream (or half & half)
1/2 cup frozen green pea, thawed
1 lemon, cut into wedges

Steps:

  • Sprinkle the meat with salt and pepper.
  • Melt 1/2 T Butter and 2 tsp of oil in heavy frying pan over high heat.
  • Working in batches, add meat and saute until just cooked through and golden, about 45-60 seconds per side.
  • Transfer to a platter and tent with foil to keep warm. Repeat with more butter and oil as necessary.
  • Melt 1 T butter and add 1 T oil in same pan over high heat. Add the mishrooms and shallots, sprinkle with salt and pepper and saute until mushrooms are golden brown, about 8 minutes.
  • Add wine, broth and saffron and simmer until the liquid is reduced by half, about 5 minutes.
  • Add cream and boil until the sauce thickens slightly, stirring often, about 4 minutes.
  • Add peas and return the sauce to a simmer.
  • Season sauce with salt & pepper to taste.
  • Pour sauce over scaloppini and serve with lemon wedges.
