1 tablespoon vegetable oil, 1 turn of the pan
4 tablespoons butter, divided
1 pound ground chicken breast
1 small McIntosh apple peeled and finely chopped
1/4 cup pure maple syrup, eyeball it
1 tablespoon grill seasoning blend (recommended: Montreal Steak Seasoning by McCormick)
1 teaspoon poultry seasoning
1/2 teaspoon ground cinnamon
1/4 teaspoon freshly grated nutmeg, eyeball it
4 jumbo/sandwich size English muffins, fork split
8 large eggs
Splash of cold milk
Salt and pepper
1/4 pound Cheddar, thinly sliced or shredded

Steps:

  • Preheat broiler and preheat a medium skillet over medium-high heat with 1 tablespoon oil and 1 tablespoon butter. Mix chicken with apple, syrup, grill seasoning, poultry seasoning, cinnamon and nutmeg and score the meat into 4 sections. Form 4 large, thin patties and set into hot butter and oil. Cook 5 minutes on each side.
  • Place fork split muffins on broiler pan and toast. Butter toasted muffins and reserve.
  • Heat a second nonstick skillet over medium heat and melt a tablespoon of butter in the pan. Beat eggs with milk, salt and pepper and scramble to desired doneness.
  • Pile 1 sausage patty, 1/4 of the eggs and Cheddar cheese on each of 4 muffin halves. Return muffins to broiler to melt cheese, 1 to 2 minutes, then set tops into place and serve.

2 tablespoons finely chopped Mexican oregano
2 tablespoons finely chopped cilantro leaves
12 large eggs
Salt and freshly ground pepper
3 tablespoons finely chopped chives
3 tablespoons unsalted butter
4 bagels, split
4 slices Monterey jack cheese

Steps:

  • Sausage: Heat grill to medium. Combine all ingredients in a bowl, being careful not to overmix. Divide the sausage mixture into 8 (4-ounce) patties. Grill until cooked completely through, about 4 minutes per side. Eggs: Heat grill to medium. Whisk together eggs, salt, pepper, and chives in a medium bowl. Melt the butter in a 9-inch cast iron skillet on the grates of the grill. Add the eggs and stir until soft curds form. Remove from the heat. Assemble: Place bagels, cut side down, on the grill and toast until lightly golden brown, about 45 to 60 seconds. Remove the bagel tops from the grill. Turn the bagel bottoms over and top each with a slice of cheese and let melt, about 30 seconds. Top the cheese with a sausage patty and then divide the eggs among the patties. Top with the bagel tops, close the cover and just let heat through, about 1 minute. Remove from heat and serve immediately. ;

1 tablespoon butter
1 green apple, finely chopped
1 small onion, finely chopped
Salt and pepper
1 teaspoon fennel seed
1 1/2 pounds ground chicken breast
1 1/2 teaspoons poultry seasoning, half a palm full
1 teaspoon allspice, 1/3 palm full
1 teaspoon sweet paprika, 1/3 palm full
Extra-virgin olive oil, for drizzling

Steps:

  • Heat a small nonstick skillet over medium heat. Add butter and melt. Add apples and onions and season with a little salt, pepper and fennel seeds. Gently saute the mixture 5 minutes to soften and remove from heat to cool.
  • Heat a griddle pan or large nonstick skillet over medium-high heat.
  • Place chicken in a bowl and season with salt and pepper, poultry seasoning, allspice, paprika and a healthy drizzle of extra-virgin olive oil. Add in the apples, onions and fennel and mix the sausage. Score meat into 4 sections and form 3 small, thin patties from each section, 2 1/2 inches across, 12 small patties total. Cook patties 3 to 4 minutes on each side and serve warm.

2 large jarred roasted red peppers, well drained
1 lb ground chicken
1 tablespoon McCormick's Montreal Brand steak seasoning
1/4 teaspoon ground allspice
1 teaspoon fennel seed
4 large eggs
salt
black pepper
4 slices provolone cheese
4 crusty kaiser rolls, split

Steps:

  • To a skillet over medium heat, add 1 tablespoon oil.
  • Add in onion to the hot pan; cook 2-3 minutes.
  • While they cook, cut off one quarter of a roasted pepper and chop it finely.
  • Add chopped pepper to the onions and combine; then transfer to a bowl to cool.
  • When the onions and pepper are cool, add the ground chicken, grill seasoning, allspice, and fennel seed.
  • Combine thoroughly, and then form mixture into 4 large, thin patties.
  • Return skillet to stove over med-high heat; add in another tablespoons oil.
  • Cook patties until golden on both sides, about 4 minutes per side.
  • Transfer patties to a plate; tent with foil to keep them warm.
  • Return skillet to heat; add remaining tablespoon oil; decrease heat to med-low, then add eggs.
  • Season eggs with salt and pepper; fry for 2-3 minutes on the first side, then flip and cook to desired doneness.
  • Top the eggs with a slice of provolone cheese just after you turn them and tent the pan with foil to melt the cheese.

One sheet tray and you have a classic B.E.C. (bacon egg and cheese) for everyone.

Number Of Ingredients 7

1 pound bacon
1 cup milk
1 dozen large eggs
Kosher salt and freshly ground black pepper
One 24-count package Hawaiian sweet rolls
8 slices American cheese
Ketchup, for serving

Steps:

  • Preheat the oven to 400 degrees F.
  • Weave the bacon into an approximately 10-inch square on a cooling rack. Put the cooling rack with the bacon on a baking sheet. Bake until partially cooked, 15 to 20 minutes
  • Meanwhile, whisk together the milk, eggs, 1 1/2 teaspoons salt and several grinds of pepper in a large bowl.
  • Remove the cooling rack with the bacon and set aside. Spread the rendered fat on the baking sheet with a pastry brush. Pour the whisked eggs onto the baking sheet and bake for 5 minutes. Remove from the oven and stir until fluffy. Bake until set but not dry, another 5 minutes.
  • Using a serrated knife, slice the entire package of sweet rolls in half, keeping them attached to each other. Top the bottom halves with the cheese. Spoon the scrambled eggs onto the cheese. Transfer the bacon lattice on top of the eggs and top with the other half of the rolls. Cut into individual servings and serve with ketchup.

1/4 teaspoon ground allspice, eyeball it
1 teaspoon fennel seeds

4 crusty Kaiser rolls, sesame or plain, split

Steps:

  • Place a medium nonstick skillet over medium heat and add 1 tablespoon EVOO once around the pan. Add the onions to the hot pan and cook 2 to 3 minutes. While they cook, cut off one quarter of a roasted pepper and chop it finely. Add the chopped pepper to the onions and combine, then transfer to a medium bowl to cool.
  • When the onions and pepper are cool, add the ground chicken, grill seasoning, allspice, and fennel seeds. Combine thoroughly then form the mixture into 4 large, thin patties. Return the skillet to the stove over medium-high heat and add another tablespoon of EVOO. Cook the patties until golden on both sides, 8 minutes total. Transfer the patties to a plate and tent with foil to keep them warm. Return the skillet to the heat. Add the remaining tablespoon of EVOO, reduce the heat to medium low, then add the eggs. Season the eggs with salt and pepper and fry for 2 to 3 minutes on the first side, then flip and cook to desired doneness, over easy to over hard. Top the eggs with a slice of provolone cheese just after you turn them and tent the pan with foil to melt the cheese.
  • Chop the remaining peppers in the food processor until smooth, then season with salt and pepper to taste.
  • Place a chicken sausage patty on each roll and top with a fried egg and cheese plus a rounded spoonful of roasted pepper puree. Set the roll tops in place and serve hot.

2 roasted red peppers, pat dry and chopped
A handful of flat-leaf parsley, chopped
4 crusty rolls, split
4 slices smoked Gouda
2 cups chopped watercress (1 bunch)

Steps:

  • Season the chicken breast cutlets evenly with smoked paprika, salt and pepper. Heat 2 tablespoons extra-virgin olive oil in a large nonstick skillet over medium-high heat. Add chicken to pan and cook 2 to 3 minutes on each side. Remove from skillet and let rest, tented with foil. Wipe pan and add 2 tablespoons more extra-virgin olive oil. Beat eggs with salt, pepper, milk or half-and-half. Add roasted peppers to skillet and cook 30 seconds then add eggs and scramble to desired doneness with wooden spoon or spatula.
  • Preheat broiler. While eggs cook, toast rolls under broiler, 1 minute, then remove from oven.
  • To assemble, slice chicken and pile on bun bottoms. Top each sammy with 1/4 of the eggs and a slice of cheese. Place sammies back under broiler 30 seconds to melt cheese. Reserve the tops. When cheese has melted, transfer the sammies to plates and top with a pile of watercress then set bun tops in place.

I dunno who came first, but I'm glad they met up in my sandwich! This simple sammy supper stacks together cutlets, egg, cheese, and greens, all in one bun. It's so good it's why the chicken crossed the road.

Number Of Ingredients 11

1 1/2 pounds chicken breast cutlets
2 teaspoons smoked paprika
Salt and black pepper
4 tablespoons EVOO (extra-virgin olive oil)
4 large eggs
2 tablespoons milk or half-and-half, whichever you keep on hand for coffee
2 jarred roasted red peppers, patted dry and chopped
A handful of fresh flat-leaf parsley, chopped
4 crusty rolls, split
4 slices smoked Gouda cheese
2 cups chopped watercress (from 1 bunch)

Steps:

  • Preheat the broiler.
  • Season the chicken breast cutlets evenly with smoked paprika, salt, and pepper. Heat 2 tablespoons of the EVOO, twice around the pan, in a large nonstick skillet over medium-high heat. Add the chicken to the pan and cook for 2 to 3 minutes on each side. Remove the chicken from the skillet and let it rest, tented with foil. Wipe out the pan and add the remaining 2 tablespoons of EVOO. In a small bowl, beat the eggs with salt, pepper, and milk or half-and-half.
