MY GRANDMA'S BRAISED CABBAGE

Steps:
- In a medium pot or Dutch oven, cook the onions in the butter over medium heat until softened, about 5 minutes. Add the cabbage and cook, stirring, for a few minutes. Add the apple, brown sugar, wine, vinegar, and water, and bring up to a simmer, stirring. Cover and braise for 30 minutes, stirring once and checking on the texture. Cook a little less for a firmer cabbage; a little more for softer cabbage.
- Add a small splash of cider vinegar just before serving.
GRANDMA'S CABBAGE SOUP

Steps:
- In a large stockpot, heat olive oil over medium heat.
- Stir in onion and garlic, cook until onion is transparent, about 5 minutes.
- Stir in water, bouillon, salt and pepper.
- Bring to a boil, then stir in cabbage.
- Simmer until cabbage wilts, about 15 minutes.
- Stir in tomatoes.
- Return to a boil, then simmer 15 to 20 minutes, stirring often.
GRANDMA'S CABBAGE LAYERED MEATLOAF
Steps:
- Sauce:
- Saute onion and celery in butter in 1-quart heavy saucepan until tender, about 5 minutes. Remove from heat and stir in remaining ingredients. Bring to a boil, stirring frequently. Simmer, uncovered, 15 minutes.
- Meatloaf:
- Preheat oven to 325°F. Chop cabbage coarsely. Cook in salted boiling water, uncovered, 5 minutes; drain. Combine bread crumbs, dry milk, water, salt, and pepper in a large mixing bowl. Mix in meat.
- Pat half of the meat mixture into bottom of an 8 in. square baking pan. Combine cabbage and half of the cheese. Spread over meat. Top with remaining meat mixture. Spoon sauce over all.
- Bake 55-60 minutes. Remove from oven and sprinkle the rest of the cheese. Let stand for 10 minutes before serving.

GRANDMOTHER'S LAMB RECIPE
It is delicious served with hot basmati rice!

Steps:
- Place the cumin seeds into a dry skillet over medium heat, and toast them, stirring constantly, until they give off a roasted fragrance and turn a darker brown, about 1 minute. Scrape the seeds into a bowl, and allow to cool. When cool, grind them with a mortar and pestle or a clean spice grinder. Set the ground seed aside.
- Remove stems of chiles if necessary, and soak pods in the apple cider vinegar in a bowl until soft, at least 1 hour. Place the softened chiles with vinegar, cumin, and garlic into a blender or food processor, and pulse until ground into a paste, 30 seconds to 1 minute or as needed.
- Heat the vegetable oil in a large pot over medium heat, and cook and stir the onions until lightly browned, about 10 minutes. Stir in ginger garlic paste and about 1 teaspoon of the Grandmother's Chile Paste mixture or as desired. Reduce heat to medium-low, and fry the onions with the spice pastes for 5 minutes to blend flavors. Stir in tomato paste, ground red pepper, turmeric, cinnamon, and cloves, and bring to a simmer. Cook to blend flavors, about 20 minutes.
- Mix in the lamb shank pieces, and stir in salt to taste; simmer for 20 minutes, and stir in the water. Bring the lamb and sauce to a boil, reduce heat to a simmer, and simmer until lamb is very tender and sauce has thickened, 45 more minutes. Sprinkle with chopped cilantro to serve.

GRANDMA LAURA'S CABBAGE DINNER
I got this recipe from my aunt. It is one of the meals my grandma made often. Originally the recipe omitted the bacon. If your watching your cholesterol, this might not be for you. ;)

Steps:
- Wash potatoes and cabbage.
- Shred cabbage into bite size pieces.
- Peel and slice potatoes.
- Peel onion and dice.
- Cut bacon into bite size pieces.
- Heat frying pan and add the butter or vegetable oil for frying. (I use butter for frying, but everyone has different tastes.) Add the bacon and let fry for just a couple minutes.
- Then add potatoes, onion, and cabbage to the pan.Season with salt and pepper. Stir every 5-10 mins so it does not stick.
- While bacon, potatoes, onion, and cabbage is cooking, in a separate skillet fry the pound of ground beef until no pink is no longer visible. Drain. (I do this separately to lessen the grease).
- Check potatoes and cabbage to see if they are done.I like to have my potatoes and cabbage brown a bit. Depending on how many potatoes and cabbage you use, cooking time varies, but usually about half an hour. Once everything is cooked, add the ground beef and serve.
