SAN JUAN SUMMER SALAD
This is a quick, easy recipe for those hot summer evenings when you don't feel like cooking. I cook the chicken breasts early in the morning and just chop up the rest and throw it all together when we're ready to eat.

Steps:
- Dressing: Blend all ingredients until smooth in blender.
- (Can prepare 1 day ahead.) Salad: Combine all ingredients and toss with enough dressing to coat.
- Serve immediately.

CHICKEN SAN JUAN
Steps:
- 1. In a large (12-inch) nonstick skillet, heat the oil over medium-high heat. Add the chicken and cook, turning occasionally, until lightly browned, about 5 minutes. 2. Add the onion, red pepper, garlic, oregano, and bay leaf. Cover and cook until the vegetables soften, about 4 minutes. Stir in the chicken broth, peas. olives, and paprika and bring to a simmer for 2 minutes. 3. Transfer about 1/4 cup of the cooking liquid into a small bowl. Add the cornstarch and stir until dissolved. Stir the cornstarch mixture into the skillet and cook until the liquid is slightly thickened, about 1 minute. Season with the salt and pepper. Discard the bay leaf. 4. Spoon the rice into individual soup bowls and top with the chicken and sauce. Sprinkle with the cilantro and serve immediately.

- Arepas de Coco. Street food in San Juan doesn’t come much better than arepas de coco — just ask the locals! While arepas are served in a range of countries, in Puerto Rico the fried bread is generally made with coconut flour, as opposed to corn flour.
- Serenata de Bacalao. Serenata de bacalao is a favorite dish of Puerto Ricans, as a refreshing salad enjoyed year-round. The twist to this particular salad is that it’s made with salted cod, usually complemented by potatoes, capers and eggs.
- Chillo Frito. Trying the local seafood is a delight in any cruise destination by the sea and San Juan offers Chillo Frito as one delectable way to enjoy it.
- Arañitas. The word “arañitas” means “little spiders” in Spanish, and that’s exactly what these appetizers look like, making them a thrilling treat for the kids.

- Watch the Sunset at San Juan del Sur Beach. This might not seem that exciting of an activity, but trust me on this – it is! The sunsets I saw at San Juan del Sur were some of the most beautiful I have ever seen!
- Hike to Cristo del la Misericordia. Strolling along the bay in San Juan del Sur, it’s almost impossible to miss a colossal statue that sits on the top of the northernmost seawall and overlooks the town with a serenity quite opposite to that “down below” where parties take place.
- Try Craft Beer at San Juan del Sur Cerveceria. We love beer, and as such, when we travel we are always open to trying local craft beer! Sure, in Nicaragua you can’t go wrong with Victoria or Tone (which are the most common beers in the country) but if you’re after something a little fancier or different then the San Juan del Sur Cerveceria is for you!
- SURF! No list of the best things to do in San Juan del Sur could possibly be complete without surfing. It is, in fact, the most popular activity in this town that is often mistaken for the name San Juan del Surf!
- Bar-hop for Sunday Funday. Almost as iconic as surfing in San Juan del Sur is attending the weekly Sunday Funday party! This “pool crawl” is an event many people (including us) plan their stay in San Juan del Sur around.
- Relax at Playa Hermosa. Playa Hermosa is arguably one of the best beaches in Nicaragua and it’s only a short 20-minute drive from San Juan del Sur! You can get there easily on one of the many $7 USD shuttles available from San Juan del Sur.
- Ride an ATV. ATVs, also known as quads, are perfect for getting around the muddy jungle and hills surround San Juan del Sur! This is an adventure activity that’ll have you speeding around, going as fast or as slow as you want!
- Day trip to Ometepe Island. Ometepe is easily one of my favorite places to visit in Nicaragua! This massive island is made entirely of two volcanoes protruding from Lake Nicaragua.
- Yoga, yoga, and more yoga! A beachside town surrounded by the jungle is the absolute best setting for taking some time for yourself. Practicing yoga is easily one of the most popular things to do in San Juan del Sur, and as such, there are a ton of retreats and studios to choose from!
- Venture to Playa Maderas. Considered one of the best beaches in Nicaragua, Playa Maderas is unmissable if you’re visiting San Juan del Sur. Located 20 minutes north of the town, Playa Maderas is still rather rustic and can only be accessed by a bumpy dirt road, though most believe the journey adds to the adventure.

- Olas Banditos – CLOSED. I don’t know what it is, but good Mexican food and surfing go really well together. There’s just something comforting about having sand between your toes and a burrito in your hand in a place like this.
- Tagpuan. This place surprised me. I was more excited to have burritos and hamburgers than typical Filipino food, but we wound up having one of our best meals here at Tagpuan.
- Gefseis Greek Grill. Gefseis Greek Grill is one of the most popular restaurants in the area. You’ll find it on virtually every top ten “where to eat in San Juan” list.
- Mad Monkeys. Burgers are my ultimate favorite comfort food so I really wanted to eat here. In fact, it was the very first restaurant we went to soon as we arrived in San Juan.
- Flotsam & Jetsam. As you can tell from the pictures, Flotsam & Jetsam is THE place to party at night in San Juan. It’s a hip and uber popular hostel that draws large crowds of millennial partygoers.
- Halo Halo de Iloko. This is the only place in this list that isn’t actually in San Juan. Halo Halo de Iloko, as their name suggests, is a popular halo-halo restaurant in the neighboring town of San Fernando.
- El Union Coffee. As described, El Union Coffee is one of the most popular places in San Juan. From what I understand, they’re a pioneer here and are often featured in articles and TV segments about La Union.
- Great Gamble Seafood Shack – CLOSED. I love seafood so this was another restaurant I was super excited to try. Great Gamble Seafood Shack is known for their seafood sandwiches and rolls, particularly their Classic Quarter Pounder which is 1/4 lbs of crab, shrimp, and scallop in a brioche roll.
- Sabong La Union Fried Chicken. As far as I know, people don’t usually eat fried chicken for breakfast (or drink beer at 10AM), but rules fly out the window when you’re on vacation.
- Papa Bear. Papa Bear has a focused menu offering different types of Asian dishes like pho, char kway teow, and sambal pork. I had this bowl of begg (PHP 180) which is a dish of house-cured bacon cubes served with a sous vide egg over rice.
