2 tablespoons EVOO
2 tablespoons butter
1 pound crimini or button mushrooms, sliced
3 to 4 cloves garlic, finely chopped
2 shallots, finely chopped
A few sprigs each fresh sage and thyme, finely chopped
Salt and freshly ground black pepper
2 tablespoons tomato paste
About 1/3 cup marsala or dry sherry
2 cups tomato passata or puree
1 cup chicken stock
1/2 cup heavy cream
2 cups poached chicken, in bite-size pieces
1 pound rigatoni
Freshly grated Parmigiano-Reggiano

Steps:

  • Heat the EVOO in a deep skillet over medium-high heat, add the butter and melt into the oil. Add the mushrooms and brown well. Add the garlic, shallots, herbs and some salt and pepper, and cook for 2 to 3 minutes more. Then add the tomato paste, stir 1 minute more. Add the marsala, stir. Add the passata, stock and cream, and combine. Add the chicken and simmer over low heat to thicken. Adjust seasoning. Cool and store for a make-ahead meal.
  • Bring a pot of water to boil for the pasta, salt the water and cook the rigatoni to al dente. Reserve a cup starchy water, then drain. Toss the pasta with the sauce and add the starchy water as needed if the mixture seems dry or tight. Serve topped with Parmigiano-Reggiano.

Joining Recipezaar has caused me to start going back through old recipes and discovering old favorites that have "gotten lost" through the years. This is an old one that I got from a friend after eating it at her house and enjoying it. Italian food is always enjoyed at my house.

4 chicken breasts
4 tablespoons olive oil
1 (4 ounce) can sliced mushrooms, drained
1 (6 ounce) can tomato paste, plus
1 (6 ounce) can water
1 (8 ounce) can tomato sauce, plus
1 (8 ounce) can water
1 (1 lb) can whole tomato, plus
1 (1 lb) can water
1/4 teaspoon ground cloves
1/4 teaspoon allspice
1/4 teaspoon pepper
2 teaspoons salt
1/4 teaspoon cinnamon
1 teaspoon rosemary
3 tablespoons dried parsley
1/2 teaspoon garlic powder

Steps:

  • Heat oil, brown chicken on each side for about 5 minutes, remove from pan and set aside.
  • In a large pot break up the whole tomatoes, add the onions, tomato sauces, water and mushrooms; bring to a boil, turn down heat and add chicken and spices.
  • Cook uncovered for about 2 hours or until chicken is done and sauce thickens.
  • CROCKPOT- If you prefer, brown the chicken and put everything together into a crockpot to cook, but allow more time for cooking.
  • This is good served with noodles- rigatoni or otherwise.

8 ounces rigatoni pasta, uncooked
1/2 cup chopped celery
1/2 cup chopped onion
1/3 cup margarine or 1/3 cup butter
1/3 cup all-purpose flour
2 tablespoons instant chicken bouillon granules
4 1/2 cups milk
1 1/2 cups sharp cheddar cheese
3 cups cubed chicken
1 (2 ounce) jar pimientos, drained, chopped
1 (3 ounce) can French-fried onions (optional)

Steps:

  • Cook pasta according to package directions. Preheat oven to 350. In large skillet, over medium heat, cook celery and onion in margarine until tender. Stir in flour and boullion. Gradually stir in milk. Cook and stir until thickened and bubbly. Remove from heat. Add cheese; stir until melted. Stir in pasta, chicken, and pimento. Spoon into a greased 9x13 baking dish. Cover. Bake 30 minutes or until hot and bubbly. Uncover; top with French fried onions, if desired. Bake 5 minutes longer. Let stand 10 minutes.

This was my favourite meal growing up as a kid. My Mom always let us pick the family's meal on our birthdays, and I always picked this, even though my Mom didn't like using the oven in the heat of August. I still love it today! It is my "comfort food" and I make it often. It is great for dinner parties, too. Add some garlic bread and a salad and you have a great meal!

1 lb ground beef
0.5 (900 g) bag rigatoni pasta
1 green pepper, diced
1 small onion, diced
1 cup fresh mushrooms, sliced
1 (700 ml) jar pasta sauce
1 (8 ounce) package mozzarella cheese (small size)
2 tablespoons parmesan cheese
1/2 teaspoon garlic powder
1/2 teaspoon oregano
1 teaspoon parsley

Steps:

  • Preheat oven to 350 degrees.
  • Prepare rigatoni noodles according to package directions. When pasta is done, drain water and put pasta into a large casserole dish.
  • While pasta is cooking, brown ground beef in a frying pan. Add seasonings. When it is about halfway done, add mushrooms, peppers, and onion. Drain when meat is brown.
  • Add pasta sauce to the meat and vegetables and simmer for 10-15 minutes.
  • While the sauce is simmering, grate the cheese.
  • Put sauce mixture, parmesean cheese, and grated cheese into the casserole dish. Mix well. Cover.
  • Cook in oven for 30 minutes at 350 degrees.
  • I always add a bit more parmesean cheese onto my serving before eating.
  • Enjoy!

If there's a group you want to please beyond words, make this dish. It is not without effort, but you and your guests will feel like you have eaten like kings. It's not the usual tomato rigatoni and it is quite rich, but it's one of those dishes you can have once in a while. I'm sure you could reduce the calories by using lower fat products, but I can't say what the end result would be. The recipe came from a friend (thanks Barbara) who used to be a member of a gourmet cooking group in Seattle. You be the judge! It was served with Romaine, Radocchio and Bibb Salad and rolls.

3 large red peppers, washed
1 1/2 lbs rigatoni pasta
1 1/2 lbs fresh asparagus, trimmed and cut into 2-inch pieces
2 (9 ounce) packages frozen artichoke hearts, thawed and cut in half
1 tablespoon extra virgin olive oil
4 1/2 tablespoons butter
6 1/2 tablespoons flour
4 1/2 cups whole milk
2 1/2 cups packed grated Fontina cheese
3 cups grated parmesan cheese
2 1/2 ounces arugula, chopped
1 1/2 lbs smoked turkey breast, skin removed and cut into smallish pieces (or chicken can be used)

Steps:

  • Char peppers over gas flame or under broiler until blackened on all sides. Put in a paper bag and let stand 10 minutes. Peel and seed peppers, cut into 1/2" pieces.
  • Butter 15x10x2 inch glass or ceramic baking dish.
  • Bring large pot ot salted water to boil, add pasta and boil 10-14 minutes until tender but still firm to bite.
  • Blanch asparagus and artichoke hearts 2 minutes in boiling water; immediately pour cold water over to stop the cooking.
  • Drain pasta and vegetables, toss with 1 tablespoons olive oil.
  • Melt butter in heavy saucepan over medium heat. Add flour and stir 2 minutes.
  • Gradually add milk, whisking until smooth. Cook until sauce thickens whisking constantly for about 8 minutes.
  • Remove from heat and add Fontina cheese and 2 1/4 cups parmesan cheese. Whisk until cheese is all melted; season with salt and pepper.
  • Add cheese sauce, arugula, peppers and turkey/chicken to pasta mixture. Stir to coat and transfer to baking dish.
  • Sprinkle with remaining cheese. Cover with vegetable sprayed foil.
  • Can be prepared a day ahead, let stand at room temperature for 1 hour before baking.
  • Bake 350 degrees F covered until heated through (about 50 minutes).
  • Remove foil and bake till top is glazed ~10 minutes.
