EASY COLESLAW DRESSING
My mother-in-law gave me this recipe years ago and it is the one I make the most. Super easy. Halve the recipe to cover one bag of prepared slaw vegetables. Prep time does not include chill time.

- Whisk together ingredients for dressing in a non-reactive (non-metal) bowl until sugar dissolves.
- Toss with slaw vegetables of choice.
- Refrigerate at least four hours.

- In a small saucepan, combine the sugar, flour, mustard and salt. Stir in egg until smooth. Gradually add vinegar and water. Cook and stir over medium heat for 3 minutes or until mixture reaches at least 160° and coats the back of a metal spoon. , Remove from the heat; stir in butter. Let stand for 5 minutes. CREAMY COLESLAW DRESSING
Coleslaw is one of my all-time favorite foods if it has a nice, creamy dressing. After doing some research, making dozens of different dressings, and trying to find the flavor that I like, I came up with this dressing for coleslaw that became a hit. I'm always asked for this recipe. What surprised me was at a potluck when a culinary chef asked me for my recipe. He told me that it was one of the best he had ever tasted since he had left the southern part of the USA.

- Bring to a boil over high heat, reduce heat to medium.

- In small saucepan, beat the eggs thoroughly; add the sugar, flour, salt and mustard.
- Combine the vinegar and the water and beat into the egg mixture, then add the butter or oil.
- Cook over low heat, stirring constantly until thick, about 5-8 minutes. The mixture will be very lumpy looking (not to worry) beat it to smoothness.
- When very thick, remove from heat and beat in cream or milk. Cool.
- this can be made a day ahead and refrigerated.
- In a large bowl, combine all of the coleslaw ingredients.
- Add the cooled dressing and toss lightly to coat with the dressing.
COLESLAW WITH COOKED DRESSING
This is a great oil & vinegar coleslaw dish that you can make with the whole head of cabbage. The longer it sits, the better it gets! A great way to always have coleslaw on hand in the fridge, I have been making this recipe for 20+ years, with great results. I found it in our local newspaper's Christmas recipe insert, & have been making it ever since :) Enjoy!
