Chicken Breasts with Balsamic Vinegar and Garlic image

This is a quick, easy and impressive gourmet dish. Goes great with roasted new potatoes.

4 skinless, boneless chicken breasts
salt and pepper to taste
¾ pound fresh mushrooms, sliced
2 tablespoons all-purpose flour
2 tablespoons olive oil
6 cloves garlic
¼ cup balsamic vinegar
¾ cup chicken broth
1 bay leaf
¼ teaspoon dried thyme
1 tablespoon butter

Steps:

  • Season the chicken with salt and pepper. Rinse the mushrooms and pat dry. Season the flour with salt and pepper and dredge the chicken breasts in the flour mixture. Heat oil in a skillet over medium high heat and saute the chicken until it is nicely browned on one side (about 3 minutes).
  • Add the garlic. Turn the chicken breasts and scatter the mushrooms over them. Continue frying, shaking the skillet and stirring the mushrooms. Cook for about 3 minutes, then add the vinegar, broth, bay leaf and thyme. Cover tightly and simmer over medium low heat for 10 minutes, turning occasionally.
  • Transfer the chicken to a warm serving platter and cover with foil. Set aside. Continue simmering the sauce, uncovered, over medium high heat for about 7 minutes. Swirl in the butter or margarine and discard the bay leaf. Pour this mushroom sauce mixture over the chicken and serve.

⅓ cup balsamic vinegar
½ cup chicken broth
2 tablespoons white sugar
1 clove garlic, minced
1 teaspoon dried Italian herb seasoning
4 skinless, boneless chicken breast halves
1 tablespoon olive oil

Steps:

  • Whisk together the balsamic vinegar, chicken broth, sugar, garlic, and Italian seasoning in a bowl, place the chicken breasts in the marinade, and marinate for 10 minutes on each side.
  • Heat the olive oil in a large skillet over medium-high heat. Remove the chicken from the marinade and reserve the marinade. Place the chicken in the heated pan and cook until they start to brown and are no longer pink inside, about 7 minutes per side. Pour the marinade into the skillet, and cook until it thickens slightly, turning the chicken breasts over once or twice, about 5 minutes.

Kosher salt
Boil-in-bag rice, as needed, for serving
2 tablespoons vegetable oil
1 1/2 pounds boneless, skinless chicken thighs, cut into 1-inch strips
1 teaspoon red pepper flakes
Freshly ground black pepper
2 red bell peppers, cut into 1-inch pieces
2 cloves garlic, minced
1-inch piece ginger, minced
1 bunch scallions, white parts cut into 1-inch pieces, green parts thinly sliced
1/4 cup balsamic vinegar
1 teaspoon brown sugar
1 teaspoon cornstarch

Steps:

  • Bring a pot of water to a boil and add salt. Add the rice to the boiling water and cook according to the package instructions.
  • Heat the oil in a large nonstick skillet over medium-high heat. When hot, add the chicken in one layer and season with the red pepper flakes and some salt and pepper. Cook until light brown, about 4 minutes. Flip the chicken, add the bell peppers, garlic, ginger and scallion whites and cook, stirring, for 2 minutes. Stir together the balsamic and brown sugar and add it to the skillet. Cook until the vinegar reduces a bit, about 2 minutes. Mix the cornstarch with 1/4 cup water and add it to the skillet. Cook until the sauce thickens, about 1 minute.
  • Remove the rice from the pot and drain. Cut open the bag(s) and serve up. Spoon some of the chicken over the rice and garnish with the sliced scallion greens.

CHICKEN WITH TOMATO AND APPLE BALSAMIC VINEGAR

4 chicken halves
Salt and freshly ground black pepper
3 tablespoons olive oil
3 tablespoons chopped onion
1 tablespoon minced garlic
1/4 cup white wine
1 cup apple balsamic vinegar or balsamic vinegar
3 cups tomato concasse (skinned, seeded, and diced tomatoes)
3 tablespoons butter
1 bouquet garni (celery, bay leaf, parsley, and leek tied in a bundle)

Steps:

  • Season the chicken with salt and pepper. Heat a large saute pan until very hot. Add oil and when almost smoking, add the chicken and saute until golden brown on all sides. Add the onion and garlic. Cook for 2 minutes.
  • Transfer meat to a plate and keep warm. Deglaze pan with the wine and vinegar. Reduce by half. Add the tomato, butter, and bouquet garni. Bring to a boil and add the chicken. Reduce heat and simmer for 20 minutes or until chicken is cooked. Remove chicken, and with an immersion blender, blend sauce.
  • Place chicken back into the sauce. Rectify seasoning. Bring to a boil and serve.

Steps:

  • Heat oil in heavy large skillet over medium-high heat. Add onion and garlic and sauté until just tender, about 4 minutes. Add chicken and cook until chicken is brown, stirring constantly, about 3 minutes. Stir in vinegar and mustard. Continue cooking until chicken is tender and cooked through, stirring constantly, about 3 minutes. Season with salt and pepper. Sprinkle with basil if desired.

I wanted to create a fairly quick and easy recipe for a weeknight meal that was also quite delicious. After some experimentation, this is what developed. I love it served with Rice à la Frances.

6 tablespoons extra virgin olive oil
3 -5 boneless chicken breasts
2 (8 ounce) packages sliced mushrooms
5 garlic cloves (sliced)
1/2-1 cup balsamic vinegar
1/2-1 cup white wine (sherry, vermouth, chardonnay, etc.)
1/2-1 teaspoon salt
1/2-1 teaspoon pepper

Steps:

  • In a large skillet, heat olive oil until very hot.
  • Add chicken breasts to pan (don't crowd them, use splatter screen, and keep temp high) and sear until nice caramel brown - about 5 min per side.
  • Remove breasts to a plate - don't worry if they are not fully cooked, they will be added to the pan again for additional cooking.
  • Add a bit more olive oil if needed and sauté mushrooms and garlic for a couple minutes - don't let the garlic burn or it will be bitter.
  • Take a bottle of balsamic vinegar and make several swirls around the pan to deglaze (approx 1/2 to 1 cup balsamic vinegar).
  • Let bubble for a minute and add some white wine to the mix and salt and pepper to taste.
  • Once it starts to boil, add the chicken breasts back to the pan, cover, and reduce heat to a simmer.
  • Flip the breasts every couple minutes so the balsamic vinegar sauce can penetrate both sides nicely.
  • Cook about 8-10 minutes.
  • Remove breasts and mushrooms to serving platter.
  • Reduce sauce until it is thick and rich, adjust seasoning if needed, and pour over breasts.
  • Good served over Rice à la Frances with a nice vegetable or tossed salad on the side.

3 -4 tablespoons olive oil
4 boneless skinless chicken breast halves
1 large vidalia onion
2 -3 garlic cloves
salt
red pepper flakes (I use about 1/2 TBS, we like it a little hot)
1/2 cup white wine or 1/2 cup cooking wine
1/4 cup balsamic vinegar (to taste)
1 (4 ounce) jar pimientos
rice
chicken stock

Steps:

  • Cut each chicken breast half into three pieces. Heat olive oil over medium high heat. Add chicken, cover, and let brown while you cut the onion.
  • Cut the onion into 1/4-1/2 inch wedges. Add them to the pan. Turn the chicken pieces over (they should be brown on the bottom side now). Cover and cook some more while chopping garlic.
  • Chop the garlic coarsely and add to pan.
  • Add salt and red pepper flakes to taste. Allow to cook a few minutes, then add the wine or cooking wine. Bring to a boil, then reduce heat to simmer. Add balsamic vinegar and pimientos. Stir, cover, and cook at simmer for 20 minutes (while you cook the rice). There will be a broth left over to spoon over the chicken, onions, and rice.
  • Cook the rice in the chicken stock. Consult the rice package for correct proportions.
  • Serve the chicken over the rice.

2 ounces pancetta
8 chicken thighs
salt and pepper
8 garlic cloves, peeled
3/4 cup white wine
2 tablespoons balsamic vinegar

Steps:

  • Heat oven to 400 degrees. Put oil in a large skillet, preferably nonstick; turn heat to medium-high. A minute later, add pancetta, and cook, stirring occasionally, about a minute. Add chicken, skin side down, and turn heat to medium. Season with salt and pepper; scatter the garlic in the pan.
  • Cook chicken, rotating pieces so they brown evenly. After 10 to 15 minutes, when skin side is brown, turn. Season again. Cook until nicely browned all over and nearly done. Remove to a plate, and put in oven.
  • Remove all but 2 tablespoons of fat from pan. Add wine or water; raise heat to high. Cook, stirring occasionally and scraping bottom of pan to loosen browned bits. 2 lbs bone-in skinless chicken thighs
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 cup chopped shallot, no substitute
1/4 cup balsamic vinegar, - 10 year old

Steps:

  • Heat a large frying pan on medium high heat and add olive oil.
  • Rinse thighs with cold water and pat dry with paper towelling.
  • Season thighs with salt and pepper.
  • Brown chicken thighs well on all sides, about 3 minutes.
  • Cover, reduce heat to medium and cook for approximately 25 minutes or until thights are almost cooked through, depending on size, turning once during cooking.
  • Add shallots, and cook for 2 to 3 minutes or until they soften.
  • Stir in balsamic vinegar and cook for 1 minute longer. Turn chicken to coat thoroughly.
  • Serve chicken thighs with cooked rice and spoon sauce over thighs.

1 lb baby red potato, sliced into thirds
3 small shallots or 3 small onions, chopped

2 leeks, well washed and cut into 2 inch long strips
5 carrots, peeled and cut into 2 inch long strips
1 red bell pepper, cut into thin strips
1/4 teaspoon garlic powder
1/2 teaspoon salt

1/4 cup balsamic vinegar

Steps:

  • In a large skillet, heat olive oil over medium high heat.
  • Add the chicken and cook, turning, until golden brown on the outside and white throughout, about 10minutes.

3/4 lb green bell pepper
2 teaspoons olive oil
1/3 cup raisins
1/4 cup balsamic vinegar

1/4 teaspoon salt

1/4 cup slivered almonds, toasted
6 chicken breasts, boneless skinless
3 tablespoons dry breadcrumbs
3 tablespoons parmesan cheese, grated
1/4 cup all-purpose flour
2 egg whites
2 teaspoons olive oil
2 tablespoons balsamic vinegar
1 tablespoon sugar
2 tablespoons water

Steps:

  • Cut bell peppers into 2 x 2 1/2 inch strips. Heat 2 tsp olive oil in a large nonstick skillet over medium-high heat. Add peppers; saute 8 minutes. Add raisins; saute 1 minute. Add 1/4 cup vinegar and next 3 ingredients; cook 1 minute. Remove from heat; stir in almonds. Set aside, and keep warm.
  • Place each piece of chicken between 2 sheets of heavy-duty plastic wrap, and pound out to 1/4 inch thickness, using a meat mallet or heavy skillet. Combine breadcrumbs and cheese in a shallow dish; set aside. Place flour in a shallow dish; and place egg whites in a shallow dish. Dredge each piece of chicken in flour, then dip in egg whites. Dredge chicken in breadcrumb mixture.
  • Heat 2 tsp olive oil in a large nonstick skillet over medium-high heat. Add chicken and cook 3 minutes on each side or until done. Remove from heat. Place chicken and bell pepper mixture on a serving platter; set aside, and keep warm. Add 2 Tbl vinegar, 1 Tbl sugar and water to skillet; stir with a wooden spoon to loosen browned bits. Cook for 3 minutes to reduce down a little. Spoon mixture over chicken and bell pepper mixture.
