CHICKEN RAMEN NOODLE DUMP DINNER

Low maintenance and packed with flavor, this creamy casserole transforms dorm-friendly ramen noodles into a satisfying casserole for a crowd.

Number Of Ingredients 6

Six 3-ounce packages chicken-flavored ramen noodles (1 flavor packet reserved; the remaining discarded)
One 8-ounce container scallion cream cheese
4 cups whole milk
2 cups shredded rotisserie chicken (skin and bones discarded)
One 10.8-ounce bag frozen broccoli florets
8 ounces shredded Cheddar

Steps:

  • Preheat the oven to 400 degrees F.
  • Put the ramen squares in a single layer covering the bottom of a 13-by-9-inch baking dish. Whisk together the cream cheese, milk and the 1 reserved flavor packet from the ramen in a medium bowl. Pour the mixture over the ramen. Scatter the chicken over the sauce and noodles and then scatter the broccoli. Sprinkle with Cheddar, making sure to distribute it evenly across the whole casserole.
  • Bake until the noodles are cooked through, the cream sauce is bubbly and the cheese melts, 30 to 35 minutes.

I learned this simple recipe in high school from my friend Stacey. It's now a family favorite. It may sound odd but give it a try! I usually substitute bean thread/cellophane noodles for the Ramen noodles.

3 ounces ramen noodles
1/4 lb boneless skinless chicken breast
1 hard-boiled egg, chopped
1 green onion, chopped
soy sauce
pepper

Steps:

  • Make the noodles as directed. Drain.
  • Add the chicken breast* and water to cover in the same pot, bring to boil and then simmer until meat is done. Remove and chop chicken but reserve broth.
  • *I will often put a washed egg in with the chicken to make the hard boiled egg.
  • Put in about 1/2 a packet of seasoning from the Ramen if that's what you used, otherwise just leave it or add a dash of ginger-root or some concentrated bouillon.
  • Place noodles in bowl. Top with chopped chicken, then egg and onions. Pour about 1/4 cup broth over all. Add soy sauce and lots of pepper to taste. Enjoy!
  • Also good if you add slightly steamed pea pods or peas, or any other veggies.

1/4 cup brown sugar
1/4 cup smooth peanut butter
1/4 soy sauce, low sodium
2 cloves garlic, minced
1/2 cup panko breadcrumbs, bread crumbs
3 (3 ounce) packages chicken ramen noodles
2 boneless skinless chicken breasts
1 tablespoon vegetable oil
1 1/2 cups bean sprouts
4 green onions, sliced

Steps:

  • In small bowl, combine first 4 ingredients.
  • Set aside.
  • In large resealable bag, place bread crumbs and 2 of the Ramen seasoning packets.
  • Combine.
  • Add chicken, one piece at a time and shake until coated.
  • In skillet on medium high heat, heat oil and cook chicken until done.
  • Set aside and keep warm.
  • Cook noodles
  • Add sauce to pan; cook and stir until heated through.
  • Drain noodles and add with sprouts/green onions to pan.
  • Toss to coat.
  • Serve with chicken.

1 pound boneless skinless chicken breasts, cut into strips
2 tablespoons vegetable oil
1-1/2 cups water
2 garlic cloves, minced
2 packages (3 ounces each) chicken ramen noodles
1 package (16 ounces) frozen stir-fry vegetable blend
1 sweet red pepper, julienned
2 tablespoons soy sauce

Steps:

  • In a large skillet or wok, stir-fry the chicken in oil. Add water and garlic; bring to a boil. Add the noodles and contents of seasoning packets, vegetables, red pepper and soy sauce. Cover and simmer for 7-9 minutes or until noodles and vegetables are tender.

i got tired of just plain ramen noodles so i started adding stuff to make it more interesting. i get the Tyson precooked boneless breast because you get around 12 for about $5.00. this makes the total around $9.00 with one meal about $.75.(very rough estimation). can yield up to about 12 servings from one bag of breasts and a pack of noodles per breast. you can also substitute left over meat of just about any kind.

2 -3 cups chopped cooked chicken breasts (depending on the amount of chicken you like)
1 head cabbage, shredded or chopped
1 bunch green onion, finely chopped (or to taste)
2 (2 1/2 ounce) packages slivered almonds
3 tablespoons sunflower seeds
2 packages Top Ramen noodles or 2 packages other ramen-type soup
3 tablespoons oil
3/4 cup vegetable oil or 3/4 cup canola oil
4 1/2 tablespoons seasoned rice vinegar
4 1/2 tablespoons sugar
2 teaspoons salt
1 teaspoon pepper

Steps:

  • Prepare dressing and set aside.
  • Smash noodles of Top Ramen (discard seasoning packets) and brown over medium heat in 3 tbs oil.
  • Once noodles have begun to slightly brown, add slivered almonds.
  • If you start to brown the Ramen and almonds at the same time, the almonds will burn before the Ramen browns.
  • Once the ramen noodles have turned a dark golden brown, remove from heat and set aside.
  • Combine cabbage, green onions, chicken and sunflower seeds in a large bowl.
  • Add the ramen/almond mixture and stir well.
  • Add dressing and stir to coat.
  • I generally prepare the dressing right before serving.
  • If it sits in the refrigerator too long, it gets very thick and won't remix well.
  • Also, this amount of dressing is just the right amount to give the salad a good coating.
  • If you are one of those who likes more dressing, I would recommend making 1/2 batch of extra dressing.
  • If you plan on eating this left over, keep in mind that the noodles will not stay crunchy.

1 package chicken-flavored ramen noodles, cooked

Steps:

  • Season chicken breasts with garlic powder, seasoned salt and pepper.
  • Brown chicken in butter while cooking Ramen noodles, reserve the seasoning packet for later.
  • Cut chicken into bite sized pieces.
  • Place in small casserole dish that has been lightly greased.
  • Drain noodles then add to chicken.
  • Add remaining ingredients then sprinkle seasoning packet from Ramen noodles stir well.
  • Bake at 350 degrees until heated through and cheese is completely melted.
