Ground Turkey or Chicken Patties image

Simply spiced ground turkey or chicken made into patties with seasonings readily available in most pantries. I used Ritz crackers and minced sweet onion instead of the onion flakes. You can cook these patties up to 2 days before serving. Wrap in plastic wrap and refrigerate until ready to cook. When you want to serve, microwave on HIGH for 30 to 45 seconds. Originally from a Family Circle magazine clipping. Excellent served with French Toast and fruit for breakfast or brunch. I have also made these patties into a breakfast sandwich with a fried egg and slice of cheese on top of a toasted English muffin.

1 lb ground turkey or 1 lb ground chicken
1/2 cup butter flavored cracker, finely crushed (about 12 crackers,like Ritz)
1 tablespoon onion flakes or 1 tablespoon onion, minced
1 teaspoon poultry seasoning
3/4 teaspoon garlic salt or 3/4 teaspoon garlic powder
1/2 teaspoon dried thyme
1/4 teaspoon black pepper
1 tablespoon olive oil

Steps:

  • In a large bowl, mix ground turkey or chicken, crushed crackers, onion flakes, poultry seasoning, garlic salt or garlic powder, thyme, and black pepper.
  • Shape into six patties each about 1/2 inch thick and 3 inches in diameter or other size as desired. Adjust cooking time if changing size or thickness of patties.
  • Heat oil in a large nonstick skillet over medium-high heat.
  • Add patties and cook on all sides for a total of 10 minutes or until nicely browned and internal temperature reaches 160 degrees Fahrenheit on an instant-read thermometer. Or,cut into one cooked patty to make sure it is no longer pink inside.

These are very easy chicken & cheese burger patties. You can use either ground chicken or turkey meat. These grill up great outdoors on the BBQ or inside on the indoor grill. My husband and I love serving these on a bun coated with BBQ sauce & a handful of "French's" fried onions and we top them with a slice of american cheese too - they are perfect that way. PS: These are super to freeze, I make a fresh batch of either chicken or turkey & always freeze about 6 or so patties. I wrap them individually in Saran Wrap, then put all 6 either in a tupperware container or a large freezer zip-loc bag as in photo.

1 cup sharp cheddar cheese, finely shredded
1/3 small onion, chopped (microwave with a dash of olive oil)

Steps:

  • Take the 1/3 of small onion chopped & put in microwave safe bowl with a dash of olive oil & microwave for 1 minute.

  • Grill on BBQ or pan fry with 1 tablespoon vegetable oil (if you panfry, coat burger patties individually in additionaly 1/2 cup breadcrumbs then fry they are extra crispy & tasty :-) ) You could also bake these in oven.

2 rashers streaky bacon , chopped
1 large potato (about 250g total weight), peeled and cut into small cubes
red chilli , deseeded and finely chopped
1 ready-cooked chicken breast , shredded
3 spring onions , thinly sliced
375g pack ready-rolled puff pastry
2 tbsp milk

Steps:

  • Heat oven to 220C/fan 200C/ gas 7. Fry the bacon in a non-stick pan over a medium heat for a few mins, until it starts to release its fat. Add the potato, turn up the heat and fry for 5 mins, stirring occasionally, until the bacon is crisp and the potato just underdone. Add the chilli and cook for a further min. Season generously with black pepper, plus salt to taste.
  • Tip into a bowl and mix with the shredded chicken and spring onions. Unroll the pastry and, with a rolling pin, roll out until it's large enough to cut out 4 circles of pastry, using a large saucer or a side plate as a guide, discarding the trimmings. Lift onto a baking sheet.

1 ½ teaspoons salt
1 cup shortening
1 cup cold water
1 pound boneless round or chuck steak, cut into 1-inch cubes
2 potatoes, peeled and cubed
1 onion, chopped
¼ rutabaga, cubed
1 carrots, diced
salt and pepper to taste
6 tablespoons margarine

Steps:

  • In a large bowl, combine flour and salt. Cut in shortening until mixture resembles coarse crumbs. Stir in water until mixture forms a ball. Shape into a ball. Wrap in plastic and refrigerate.
  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • In a large bowl, combine meat, potatoes, onion, rutabaga and chopped carrots. Season with salt and pepper. Divide dough into six pieces, and shape into balls. On a lightly floured surface, roll each ball into a 6 inch round. Place approximately 1 cup filling on one half of each. Dot each with 1 tablespoon margarine. Draw the other half of the pastry over the filling. Crimp edges to seal in filling. Prick with a fork and place on prepared baking sheet.
  • Bake in preheated oven for 1 hour.

1 lb ground turkey
1 coarsely chopped onion
3 finely chopped garlic cloves
1 teaspoon nutmeg
1 teaspoon cinnamon

2 teaspoons chili powder
1 1/2 cups corn
1 cup finely chopped broccoli
1/2 cup finely chopped sweet red cherry peppers
fresh coarse ground black pepper

Steps:

  • Sautee turkey, onions, garlic, nutmeg, cinnamon, allspice, chili, corn, broccoli, and peppers until turkey is no longer pink and onions are translucent.
  • Roll out biscuits with a rolling pin until they are about 6 or 7 inches in diameter.
  • Place a large dollop of meat filling in biscuit and fold in half into a half moon shape.
  • Seal with water and cut steam vents into top.
  • Brush top lightly with butter.

This is a very nice way to use up leftovers from a roast dinner. Use the amounts given in the recipe only as a guide. Chop and change the recipe according to the ingredients you have on hand. If you prefer shortcrust pastry then that is fine too. I often use the leftover gravy instead of the stock, I do water it down somewhat When I have less time I just cut the pastry into squares and make them as triangles.

7 -8 ounces cooked turkey or 7 ounces chicken, roughly chopped
6 -8 ounces cubed leftover roasted potatoes (or cooked0)
1 cup leftover prepared stuffing or 1 cup chopped sausage
1 cup leftover vegetables (chopped if needed)
1/2 cup turkey stock (maybe more) or 1/2 cup chicken stock (maybe more)
fresh ground black pepper
1 lb premade puff pastry
1 egg, beaten

Steps:

  • Preheat the oven to 400°F.
  • Mix together the turkey, potatoes, stuffing and vegetables, season to taste with the black pepper.
  • Add the stock to the mixture, it should be moist and not too wet.
  • Unroll the pastry and roll out further so you can cut out 4 large circles, use a side plate as a guide.
  • Place the circles onto a baking sheet, spoon the filling into the middle of each circle.
  • Brush the edges with the beaten egg, then bring them up to the middle and pinch the ends to seal.
  • Brush the pasties with the rest of the egg and bake in the oven for 20-25 minutes or until golden.
  • NOTE: Vegetables I have used so far with success are carrots, brussels sprouts, peas and cabbage. And I also added grated cheese.

- 6 strips cooked bacon,chopped
- 1 onion,chopped
- 1/4 c flour
- 2/3 c milk
- 1 c cooked chicken or turkey,diced
- salt and pepper
- 1 clove garlic,minced
- 1 lb frozen puff pastry,thawed
- water,for sealing pastries
- 1 egg,beaten with 1 teaspoon water

Steps:

  • Preheat oven to 425. Melt the butter in a saucepan,add bacon and onion and cook until onion is soft. Remove from heat,stir in flour and blend in the milk. Return to heat and bring to a boil,stirring constantly. Stir in the chicken,salt,pepper and garlic and cook until it's heated. Remove from heat and cool. Roll out both sheets of pastry about 1/8 inch thick. Using a 4 inch pastry cutter,cut out about 20 circles. Transfer half the circles to a lightly floured surface,put 1 tablespoon of the filling on top of each,leaving room around the edge to seal. Moisten the outer edge of each circle with water and cover with the top layers. Pull up and seal as tightly as possible. Brush the top of each with the egg wash. Cit a few small slits in the top of each with the tip of a paring knife. Place on greased baking tray. Bake for 20-25 mins or until pasties are puffed and golden brown. Serve warm.

  • Preheat the oven to 350°F or 180°C.
  • Dice the chicken into half-inch cubes.
  • Heat the oil in a skillet. Add the chicken and garlic. Cook, stirring frequently, for about 10 minutes until the chicken is fully cooked. Remove from the heat.
  • Roll out the puff pastry sheets and cut each in half (cut the shortest distance through the middle so you are left with two short, fat rectangles not long thin ones).
  • Add the pesto sauce and tomatoes to the chicken and stir to mix.
  • Spoon equal amounts of the chicken mixture onto the pastry sheets, covering half of each sheet but leaving a gap at the edge to seal the pastry.
  • Top the chicken mixture with the grated mozzarella cheese.
  • Beat the egg. Brush egg around the inside edge of each pasty then fold the pastry over to seal. Crimp with a fork to reinforce the seal.
  • Brush each pasty with the beaten egg.
  • Bake in the oven for 15-20 minutes (mine take closer to 20) until the pastry is golden.

450g strong white bread flour
100g frozen butter
100g frozen lard
1 egg, beaten
40g unsalted butter, softened
1 large or 2 small onions, thinly sliced
6 boneless, skinless chicken thighs, cut into 2cm pieces
4 tbsp korma curry paste
1½ tbsp mild curry powder
2½ tbsp plain flour, plus extra for dusting
300ml hot chicken stock
150ml double cream
2 tbsp mango chutney

Steps:

  • For the pastry, tip the flour into a large bowl and stir in ½ tsp salt. Grate in the cold butter and lard. Gently combine with your hands. Swiftly mix in 250ml ice-cold water using a cutlery knife. Tip the dough onto a surface and knead for 1 min until smooth. Wrap and chill for at least 1 hr.
  • To make the filling, heat the butter in a flameproof casserole or large frying pan over a medium-low heat and fry the onions for 10-12 mins until softened and starting to caramelise. Add the chicken and cook for 5 mins more. Stir in the korma paste, curry powder and flour, turn up the heat to medium and fry for another 2 mins. Stir in the stock gradually, in several additions, then simmer for 3 mins until the mixture has thickened. Stir in the cream and mango chutney. Leave to cool completely. Once the mixture is completely cool, cover and chill for at least 3 hrs or overnight.
  • Line two baking sheets with baking parchment. Divide the chilled pastry into six pieces, weighing for accuracy, if you like. Form each piece into a ball, then roll each one out on a lightly floured surface to a 20cm circle. Working with one pastry circle at a time, spoon a sixth of the filling into the middle of the circle. Wet the edge around half the circle, then fold over to the dry edge and crimp using your fingers or a fork to seal. Repeat with the remaining filling and pastry circles, placing them on the baking sheets as you go. Chill for 1 hr.
  • Heat the oven to 180C/160C fan/gas 4. Brush the pasties with the beaten egg and bake for 50 mins-1 hr, or until golden. Leave to cool for 10 mins, then eat hot, or cool completely to pack for a picnic. Will keep chilled in an airtight container for up to two days.
