CHICKEN NOODLE ALFREDO CASSEROLE

Had the ingredients in the pantry and fridge - so I made this for dinner! I won't say it was good- IT WAS DELICIOUS!! There was very little left.

1/2 c margarine, or butter
11 oz cream cheese, room temperature
1/2 c parmesan cheese
1 Tbsp garlic powder + 1 teas. minced garlic
pepper and salt to taste
10 3/4 oz can cream or chicken soup
1 1/2 soup cans of milk
12 oz can evaporated milk,such as pet
16 oz pkg. wide noodles, cooked al dente
8 oz pkg. frozen peas
4 medium chicken breasts, boneless and skinless, cut to in bite size pieces
paprika, sweet mild

Steps:

  • 1. Heat oven to 350^. Spray a 9x13-inch baking pan; or 2 8-inch square pan bake and freeze one.
  • 2. Put medium kettle on to boil water for the pasta. When water boil add the chicken pieces and boil for 1 minute. Remove with slotted spoon and set aside in a bowl. Add the peas to the kettle and let boil 30 seconds and remove with the slotted spoon; add to bowl with the chicken. Add the noodles to the kettle and boil for 5 minutes. Strain and rinse with cool water. Pour into a large bowl.
  • 3. Add the chicken and peas to the pasta and mix to combine. Sauce: In a medium saucepan, melt margarine. When it is almost melted add the cream cheese in pieces, so it melts quicker. Stir until butter and cream cheese are well blended.
  • 4. Add the evaporated Pet milk, Parmesan cheese, garlic powder and minced garlic; add the cream of chicken soup and the milk, stir to blend all, then add pepper.
  • 5. Remove from heat and pour over noodle mixture, mix well and pour into the prepared baking pan. Sprinkle top with salt and pepper and paprika. Bake for 35 minutes or until golden and bubbly.

12 ounces fettuccine pasta
3 tablespoons olive oil
4 -5 sliced white mushrooms
3 cups half-and-half
1/4 cup butter
1 tablespoon garlic powder
1 tablespoon seasoning salt
1 tablespoon black pepper
3/4 cup grated parmesan cheese
2 boneless skinless chicken breasts
1 cup French's French fried onions

Steps:

  • cook chicken and slice into bite size strips. cook and drain noodles, toss in mushrooms, chicken and olive oil, place in large casserole dish. pour half and half into large sauce pan and whisk in garlic powder, seasoned salt and black pepper and bring to light boil being careful not to let it foam over, slowly add parmesan cheese while stirring and let simmer 1 to 2 minutes. pour sauce over noodles and toss together, sprinkle fried onions over top, cover and bake at 300 degrees for 10 to 15 minutes. serve with salad and garlic bread.

This family-friendly casserole is great for a large gathering. You can make and assemble it a day ahead, just bring it back to room temperature before baking. We like boneless skinless chicken thighs because they cook quickly and stay moist and tender.

4 tablespoons unsalted butter, plus more for the baking dish
Kosher salt
1 1/2 pounds skinless, boneless chicken thighs, cut into large chunks
2 1/2 cups low-sodium chicken broth
6 cloves garlic (4 crushed, 2 chopped)
3 wide strips lemon zest, plus 1 tablespoon lemon juice
2 sprigs rosemary
2 bay leaves
1 pound penne
6 cups small broccoli florets (about 1 pound)
4 tablespoons all-purpose flour
2 cups heavy cream
Freshly ground pepper
1 1/4 cups grated Parmesan cheese
1/4 cup chopped fresh parsley
2 cups shredded low-moisture mozzarella cheese

Steps:

  • Preheat the oven to 400˚ F. Butter an 11-by-14-inch or other 4-quart baking dish. Bring a large pot of salted water to a boil.
  • Put the chicken in a dutch oven or other large pot, then add the chicken broth, crushed garlic, lemon zest, rosemary sprigs and bay leaves. Partially cover and bring to a simmer over medium-low heat. Cook, partially covered, until the chicken is tender, 20 to 22 minutes. Strain through a fine-mesh sieve (you should have 2 cups liquid; if necessary, add a little water to make 2 cups). When the chicken is cool enough to handle, tear or shred into small pieces. Wipe the dutch oven clean.
  • Meanwhile, add the pasta to the boiling water and cook until just al dente, adding the broccoli during the last 2 minutes of cooking. Drain the pasta and broccoli in a colander and rinse with cold water to stop the cooking. Let drain in the colander while you make the sauce.
  • Melt the butter in the Dutch oven over medium heat. Add the chopped garlic and cook until sizzling, about 30 seconds. Sprinkle in the flour and stir to make a paste; cook until the flour is no longer raw, 1 to 2 minutes. Whisk in the reserved 2 cups cooking liquid and the heavy cream; season with 1 teaspoon salt and a few grinds of pepper. Return to a simmer, whisking to make a smooth sauce. Cook over low heat until thickened, 3 to 4 minutes.
  • Remove the pot from the heat. Stir in 1 cup Parmesan, the parsley and lemon juice. Add the chicken, pasta and broccoli and stir to coat. Transfer to the baking dish and sprinkle with the remaining 1/4 cup Parmesan and the mozzarella. Bake until the top is golden and the edges are bubbly, about 25 minutes. Let rest 5 minutes before serving.

3 skinless, boneless chicken breast halves
1 (8 ounce) package penne pasta
½ (16 ounce) jar Alfredo sauce
1 ½ cups shredded mozzarella cheese, divided
¼ cup milk
1 tablespoon onion powder
1 tablespoon garlic powder
1 cup shredded Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place chicken into a pot and cover with water. Bring to a boil over high heat; reduce heat and simmer until no longer pink in the centers and juices run clear, about 15 minutes.
  • At the same time, bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain. Drain cooked chicken and cut into bite-size pieces.
  • Place chicken, noodles, Alfredo sauce, 1/2 mozzarella cheese, milk, onion powder, and garlic powder in a large bowl and mix well. Pour into a 1 1/2-quart casserole dish. Layer remaining mozzarella cheese and Cheddar cheese on top.
  • Bake in the preheated oven until melted and bubbly, about 25 minutes.

My family loves this recipe. It is a twist from the regular spaghetti dishes. The recipe came from me. I was just adding ingredients and there it was. I hope you all enjoy it as much as my family does.

2 lbs boneless chicken breasts, cut-up into chunks
1 large green pepper, chunked
1 large onion, chunked
fresh mushrooms, cleaned and quartered
chopped garlic (, as much as you desire)
olive oil
3 (16 ounce) jars alfredo sauce (I use Ragu)
1 -1 1/2 lb spaghetti

Steps:

  • Add olive oil to skillet with the garlic, chicken, and all veggies.
  • Cook until chicken is completely cooked through.
  • Drain and add back to skillet.
  • Add Alfredo sauce with 1/4 jar of water.
  • Let simmer.
  • Boil spaghetti according to directions.
  • When done top with the Alfredo mixture and enjoy.
  • Great with garlic bread.

1 pkg no yolk egg noodles (12 oz pkg)
1 jar(s) ragu alfredo sauce (16 oz)
16 oz sour cream
1 can(s) stokely peas (drained)
1 pkg precooked chicken (strips or cubes)
1 Tbsp crushed garlic
1 c grated parmesan cheese
salt and pepper to your liking
1 sleeve of ritz crackers (crushed)
2 Tbsp butter (melted)

Steps:

  • 1. Cook egg noodles according to instructions on package. Drain.
  • 2. Mix with a whisk the jar of Alfredo sauce and the sour cream until blended. Add in your garlic and parmesan cheese. Mix until blended. Add your chicken and peas. Incorporate your noodle to this mixture and fold in until noodles are mixed well.
  • 3. In a sprayed 9x13 casserole dish pour the noodle mixture. Then take crushed Ritz crackers and melted butter mixed together and add them to the top of the casserole. Bake at 350 degrees for approximately 35 minutes.

2 1/2 cups uncooked pasta (any kind)
2 tablespoons olive oil
1 1/2 lbs boneless skinless chicken breasts
2 cups broccoli (fresh or frozen)
1 (16 ounce) jar alfredo sauce
2 cups shredded Italian cheese blend
1 teaspoon garlic powder (or to taste)
1/2 teaspoon dried basil (or to taste)
1/2 teaspoon salt, & pepper to taste
1/2 cup plain breadcrumbs
2 tablespoons butter, melted

Steps:

  • Cook pasta per package. Drain & place into large mixing bowl.
  • On Medium-High heat, warm up olive oil in skillet. Cut chicken breasts into bite-sized pieces. Cook 8-10 minutes or until chicken is cooked through.
  • Cut broccoli into bite sized pieces, place in microwave safe bowl, add 2 tablespoons water, cover with plastic wrap. Microwave 4 minutes, stir & microwave an additional 4 minutes or until it reaches your desired crunchiness.
  • Place the chicken, broccoli, alfredo sauce, 1 3/4 cups of cheese & spices into the bowl with the pasta. Mix together.
  • Spray a 9" x 13" pan with cooking spray & dump the pasta/chicken mixture inside.
  • In a small bow mix the bread crumbs, melted butter & remaining 1/4 cup of cheese. Sprinkle over the top of the casserole.
  • Bake for 25-30 minutes or until the cheese is melted & the edges are bubbling.
