CHICKEN MISO SOUP

This unique version of chicken soup is packed with vegetables in a savory miso broth.

4 bone-in chicken thighs, or more to taste
1 pinch dried oregano, or to taste
kosher salt and ground black pepper to taste
3 bay leaves
3 tablespoons miso paste, or more to taste
4 quarts water, or as needed
½ bunch celery, diced
4 carrots, chopped, or more to taste
1 bunch fresh dill, minced
½ butternut squash, peeled and chopped
½ small head red cabbage, chopped
1 purple turnip, peeled and chopped
1 leek, diced
½ red bell pepper, seeded and diced
1 large jalapeno pepper, with seeds, diced

Steps:

  • Place chicken thighs in a large pot and season generously with oregano, salt, and pepper. Add bay leaves and miso paste. Fill pot with water and bring to a rolling boil. Reduce heat to medium and cook until thighs are no longer pink in the centers and juices run clear, 30 to 45 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).
  • Remove thighs and bay leaves from the pot. Tear meat off the bones and chop. Discard bones and bay leaves and return meat to the pot. Reduce heat to medium-low; add celery, carrots, and dill. Stir and add butternut squash, cabbage, and turnip. Cook, 5 to 10 minutes more.
  • Add leek, bell pepper, and jalapeno pepper to the pot. Cook until squash and turnip are soft, about 30 minutes more. Add salt to taste.

1 pound boneless skinless chicken thighs
2 tablespoons olive oil (divided)
1 medium yellow onion, chopped
6 oz. shitake mushrooms (stems removed and caps sliced into ¼" strips*)
2 medium carrots, sliced ((approx. 1 cup))
1 tablespoon freshly grated ginger
4 garlic cloves, minced
8 cups reduced sodium chicken broth
1 tablespoon soy sauce
1 tablespoon rice vinegar
1 tablespoon Japanese rice wine (or pale dry sherry)
1/2 -1 tablespoon red chili paste* (like Mae Ploy)
3 oz. thin rice noodles ((vermicelli/rice sticks)**)
1 red bell pepper, chopped
1/4 cup white miso paste (***)
4 heads baby bok choy (cut into bite-size pieces, about 3 cups****)

Steps:

  • Heat 1 tablespoon oil in a Dutch oven/soup pot over medium-high heat. Add chicken and brown on both sides, approximately 2 minutes, but don't cook through. Remove to a plate.
  • Add one tablespoon olive oil to now empty pot and heat over medium high heat. Add onions and carrots and sauté 3 minutes. Add mushrooms, ginger and garlic and sauté for 1 minute.
  • Add chicken BACK TO POT followed by chicken broth, soy sauce, rice vinegar, rice wine, and chili paste. Bring to a boil then reduce heat to medium-low and gently simmer for 10 minutes or until chicken is tender enough to shred. Remove chicken and shred when cool enough to handle. Continue to simmer soup without chicken if you like more tender mushrooms.
  • Add ¼ cup miso paste to a medium bowl. Add a ladleful of hot broth then whisk until the miso is completely dissolved. Set aside.
  • Add rice noodles and bell peppers to pot. Simmer 2 minutes then turn off heat. Add bok choy, shredded chicken and entire miso mixture. Cover pot just until noodles are al dente and bok choy is wilted, 1-2 minutes.
  • Do NOT simmer/boil the soup with the miso, as the miso will become gritty.

1 clove garlic, crushed
½ tsp grated ginger
8 shiitake mushrooms, sliced

Steps:

  • Pour 600ml (1 pint) boiling water into a pan and whisk in the miso paste.
  • Add the rest of the ingredients, except the cabbage, and simmer for 10 mins.
  • Stir in the cabbage, cook for 3 mins and serve.

6 cups chicken broth or 6 cups water
1 lb chicken breasts, cubed (boneless, skinless) or 3 -4 cups leftover shredded chicken
1 tablespoon sliced lemongrass
1 tablespoon chopped basil or 1 tablespoon chopped cilantro
1 small carrot, grated
1 tablespoon grated ginger
3 cloves black garlic or 3 garlic cloves, minced
1/4 cup grated ginseng roots
1/4 cup grated burdock root (optional)
1 -2 cup chopped arugula or 1 -2 cup spinach, well washed and stems trimmed
3 ounces enoki mushrooms, separated
4 button mushrooms, sliced
3 baby king mixed mushrooms, julienned
2 -4 tablespoons miso, i used light in sodium (to taste)
green onion, tops removed thinly sliced
toasted sesame oil
salt, soy, tamari to taste
cabbage kimchi, to taste

Steps:

  • In a medium sauce pan bring water or chicken broth to a boil.
  • Add ingredients chicken trough the mushrooms. Reduce the heat to a gentle simmer and remove from heat. In one cup hot water whisk in the miso paste - so it thins out a bit (this step is to avoid clumping). Stir this back into the pot along with the tofu.
  • Taste, and then add more miso, salt, soy a bit at a time until it is to your liking.
  • Remove from the heat, and let it sit for just a minute or so. Garnish with scallions and or Sesame oil, Kimchi to taste if using.

SHIITAKE MISO BROTH WITH NOODLES AND CHICKEN



Shiitake Miso Broth with Noodles and Chicken image

1 cup dried shiitake mushrooms
3 cups boiling water
8 skin-on, bone-in chicken thighs (2 1/2 to 3 pounds)
Kosher salt and freshly ground black pepper
2 tablespoons canola oil
4 cloves garlic, minced
One 1-inch piece ginger, peeled and grated
1/2 yellow onion, cut into 1/2-inch dice
3 tablespoons white miso paste
2 cups low-sodium chicken broth
10 ounces glass noodles
2 heads baby bok choy, thinly sliced

Steps:

  • Preheat the oven to 375 degrees F.
  • Put the mushrooms in a bowl and pour the boiling water over them. Let soak until tender, 20 to 25 minutes. Lift the mushrooms from the water, leaving any grit at the bottom of the bowl. Pat the mushrooms dry with a kitchen towel, discard the stems and thinly slice the caps. Strain the mushroom soaking liquid through a fine sieve and reserve it in a small bowl.
  • Sprinkle the chicken thighs liberally with salt and pepper. Heat the oil in a large high-sided skillet over medium-high heat until it shimmers. Sear the chicken thighs on both sides until golden brown, 5 to 6 minutes total. (You may need to do this in 2 batches to avoid crowding the skillet.) Transfer the browned chicken thighs to a rimmed baking sheet and bake in the oven until the internal temperature of the chicken reaches 160 degrees F, 12 to 15 minutes.
  • In the same pan that you seared the chicken thighs, saute the garlic, ginger, onions and sliced mushrooms over medium heat until the onions are soft, 6 to 8 minutes. Stir in the miso paste and cook for 2 minutes. Add the chicken broth and reserved mushroom liquid. Bring to a boil, then reduce the heat to a simmer and cook for 10 minutes.
  • Meanwhile, soak the noodles in a bowl of hot water until soft, 3 to 5 minutes. Drain.
  • To serve, put 1/2 cup glass noodles in each serving bowl. Top with the bok choy, chicken and miso broth.

HEARTY SHIITAKE MUSHROOM AND MISO SOUP



Hearty Shiitake Mushroom and Miso Soup image

1 bunch scallions, sliced thin, white and green parts separated
One 1-inch piece fresh ginger, chopped
3 cloves garlic, chopped
2 tablespoons toasted sesame oil
8 cups water
Three 6-inch pieces dried kelp (kombu)
1/4 cup bonito flakes
3 ounces dried shiitake mushrooms
1/2 cup light miso
1 pound baby bok choy, cut in quarters
8 ounces firm tofu, cut into cubes

Steps:

  • In a large soup pot over medium heat add the scallion white parts, ginger, garlic, and sesame oil. Cook for 1 minute and add 8 cups water. Rinse the kombu and add it to the pot along with the bonito flakes. Bring it to a simmer and cook for 10 minutes - do not let it boil. Remove the kombu and set it aside. Add the dried mushrooms and miso to the pot and let it simmer gently for 10 to 15 minutes, or until the mushrooms are hydrated and tender. Add the bok choy and simmer until it is tender, about 10 minutes. Add the tofu and cook for another 5 minutes. Ladle into bowls and garnish with the reserved green parts of scallions.

MUSHROOM MISO SOUP

This miso-enriched brothy soup is pleasing on many levels. You get complex flavor with minimal effort, especially if you make the dashi in advance. All the little garnishes are optional.

1 piece of kombu, about 6 inches square
3 large dried shiitake mushrooms, crumbled
3 teaspoons light soy sauce
2 teaspoons mirin
2 tablespoons sake
2 teaspoons sugar
Salt to taste
3 ounces fresh shiitake mushroom caps, thinly sliced, about 2 cups
3 ounces King oyster mushrooms, thinly sliced
2 teaspoons sesame oil
2 teaspoons light soy sauce
1/2 teaspoon grated garlic
1 teaspoon grated ginger
Salt and pepper
3 tablespoons white or red miso
6 ounces silken tofu, at room temperature
Enoki mushroom tips
2 tablespoons slivered scallions
4 shiso leaves, slivered
Sunflower sprouts
2 tablespoons slivered toasted nori
Pinch of crushed red pepper
Toasted sesame seeds

Steps:

  • Make the dashi: Put kombu, dried shiitakes, soy sauce, mirin, sake and sugar in a large soup pot. Add 6 cups cold water. Place over medium heat, allow the liquid to barely reach a boil, then reduce heat to low and let cook at a very slow simmer for about 30 minutes. Skim foam as necessary. Let cool to room temperature. Strain through a fine-mesh sieve and add salt to taste. (Dashi may be prepared up to 2 days in advance.)
  • Put the sliced mushrooms in a bowl and drizzle with sesame oil and soy sauce. Add garlic and ginger and season with salt and pepper. Toss and let marinate for 10 minutes.
  • Put dashi in a large soup pot over medium-high heat and bring to a simmer. Add mushroom mixture and cook gently for about 5 minutes, until the mushrooms are just tender.
  • Remove 1/2 cup hot broth from pot and place in a small bowl. Stir in miso to dilute, then return miso-broth mixture to the pot. Taste and adjust seasoning. Once the miso has been added, do not let the soup boil.
  • To serve, cut the tofu in half and place a 3-ounce chunk in each of two large bowls. Ladle 2 cups of hot soup over the tofu. Sprinkle with enoki mushroom tips, scallions, shiso, sunflower sprouts, nori, red pepper and toasted sesame seeds as desired.

1 strip kombu (dried kelp)
1 handful sliced shiitake mushrooms
1/2 cup miso
Carrots
Turnips
Ginger
1 handful cooked edamame
1/2 pound silken tofu, cubed
Scallions

Steps:

  • Bring 6 cups of water to a bare simmer and add one strip kombu; let it soak 10 minutes, then remove it and chop; set aside.
  • Meanwhile, saute a handful of sliced shiitakes in oil until crisp.
  • Whisk a cup of the water with 1/2 cup miso in a bowl until smooth.
  • Pour the miso mix into the water and add 1/2 pound silken tofu along with some shredded carrots, turnip and ginger, the chopped kombu and about a handful of cooked, shelled edamame.
  • Let stand long enough to heat the tofu through, about a minute. Add some chopped scallions and the crisp shiitakes and serve.

500ml chicken stock
2 skinless chicken breasts
50g long grain rice
8 Chanteney carrots , halved lengthways
2 tbsp miso paste
1 tbsp soy sauce
1 tbsp mirin
2 spring onions , sliced

Steps:

  • Bring the stock to a gentle boil in a medium saucepan. Add the chicken breasts and simmer for 8 mins until cooked through. Remove from the pan and shred the meat.
  • Add the rice and carrots to the hot stock. Bring back up to the boil, cover with a lid, then reduce the heat and cook for 10 mins until the rice is cooked and the carrots are tender.
  • Return the chicken to the pan and add the miso, soy and mirin. Scatter over the spring onions just before serving.
