This classic chicken Parmesan recipe gets the Good Food makeover, resulting in a hearty yet healthy dish great for sharing with your mates

2 large, skinless chicken breasts, halved through the middle
2 eggs, beaten
75g breadcrumb
75g parmesan, grated
1 tbsp olive oil
2 garlic cloves, crushed
half a 690ml jar passata
1 tsp caster sugar
1 tsp dried oregano
half a 125g ball light mozzarella, torn

Steps:

  • Halve 2 large skinless chicken breasts through the middle then place the 4 pieces between cling film sheets and bash out with a rolling pin until they are the thickness of a £1 coin.
  • Dip in 2 beaten eggs, then 75g breadcrumbs, mixed with half of the 75g grated parmesan. Set aside on a plate in the fridge while you make the sauce.
  • Heat 1 tbsp olive oil and cook 2 crushed garlic cloves for 1 min, then tip in half a 690ml jar passata, 1 tsp caster sugar and 1 tsp dried oregano. Season and simmer for 5-10 mins.
  • Heat grill to High and cook the chicken for 5 mins each side, then remove.
  • Pour the tomato sauce into a shallow ovenproof dish and top with the chicken.
  • Scatter over torn pieces of half a 125g ball light mozzarella, and the remaining grated parmesan and grill for 3-4 mins until the cheese has melted and the sauce is bubbling.
  • Serve with vegetables or salad and some pasta or potatoes, if you like.

This recipe from Southern Living was one of our 'quick-and-easy' favorites. Prepare a package of long-grain and wild rice, throw some green beans in a saucepan to heat, chop up a few pieces of fruit (or open a can), and you'll have a very acceptable dinner in spite of your crazy schedule! :) Also, whether you're cooking for 1 or 4 or 10, this one is easily adaptable.

6 tablespoons butter or 6 tablespoons margarine, divided
1 (1 1/2 lb) package boneless skinless chicken breasts
1 (8 ounce) carton fresh mushrooms
3 -4 green onions
1/2 teaspoon salt
1/2 teaspoon pepper
4 slices mozzarella cheese
2 garlic cloves

Steps:

  • Melt 4 tablespoons butter or margarine in a large skillet over medium heat.
  • Rinse chicken pieces with cold water and pat dry.
  • When butter has melted and begun to sizzle slightly, add chicken to skillet.
  • Cook chicken approximately 10 minutes, until nicely-browned.
  • Meanwhile, rinse and trim onions; slice thinly, including some green "tops".
  • Clean mushrooms and remove stems; slice caps.
  • When chicken is browned on the outside and appears to be cooked approximately halfway through, turn the pieces over and sprinkle evenly with salt and pepper.
  • Add mushrooms and onions to skillet, along with additional butter if necessary.
  • (Note: The original recipe did not call for extra, but I sometimes have to add a tablespoon or two so that the veggies will sauté properly instead of sticking). Cook approximately 10 additional minutes, until chicken is thoroughly done.
  • Place a slice of cheese on each piece of chicken.
  • Remove to a platter and cover with foil.
  • Allow chicken to sit about 5 minutes until cheese melts.
  • Spoon mushroom mixture over chicken before serving.

2 lbs Boneless skinless chicken breasts (cut or pounded to thin cutlets)
1/2 tsp garlic powder
1/2 tsp salt
1/2 tsp pepper
1 tbsp olive oil
4 oz buffalo mozzarella (sliced)
4 cloves garlic (pressed)
28 oz crushed tomatoes ((1 can))
1 tbsp Italian seasoning ((dried))
1/2 tsp salt
1/2 cup heavy cream
1/4 cup parmesan cheese
1/3 cup fresh basil (chopped)

Steps:

  • Mix the garlic powder, salt, and pepper together and season each side of each chicken breast with it evenly.
  • Heat oil in a large skillet over medium high heat. When oil is hot, place chicken breast in a single layer in the skillet. Cook chicken in batches if the skillet is too crowded.
  • Cook chicken 3-4 minutes on each side allowing it to brown before flipping. Then remove chicken from skillet and set aside.
  • Add garlic to the skillet and stir for 30 seconds to flash cook. Then pour the tomatoes over the garlic and add the Italian seasoning. Reduce heat to medium and allow to come to a simmer for 5 minutes, stirring and scraping the pan to release any bits from the bottom.
  • Add parmesan cheese and cream and stir to combine. Stir in fresh basil, then add the chicken back into the skillet and cover in sauce. Simmer for 3-5 more minutes or until everything is heated through.
  • Top each chicken breast with a slice of mozzarella and place in the oven on broil for 3-5 minutes, or until the cheese is melted and starts to bubble and brown.
  • Garnish with additional basil and serve hot over pasta or with roasted veggies.

¼ cup butter
salt and pepper to taste
4 slices mozzarella cheese
1 egg, beaten
2 cups all-purpose flour for coating
1 cup seasoned dry bread crumbs
¼ cup butter
2 teaspoons minced garlic
1 cup dry white wine

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place chicken breasts between 2 sheets of wax paper. Pound each to 1/4 inch thickness. Spread butter/margarine over the inside, then add salt and pepper to taste.
  • Place slice of cheese on breast, roll and close with toothpicks. Repeat with each breast. Dip rolled breasts in flour, then egg, then breadcrumbs. Place coated breasts in a lightly greased 9x13 inch baking dish.
  • To Make Sauce: In a saucepan, melt 1/4 cup butter and add garlic. Add wine and simmer all together. Pour sauce over chicken and bake in the preheated oven for 30 to 45 minutes.

2 tablespoons olive oil, plus more for drizzling
2 boneless, skinless chicken breasts, cut into bite-size pieces
Salt and freshly ground black pepper

2 cloves garlic, minced
1 large onion, finely diced
One 25-ounce jar good-quality marinara sauce
1/2 teaspoon crushed red pepper flakes, or more to taste
2 tablespoons minced fresh parsley
8 ounces fresh mozzarella, cut into medium cubes
1/4 cup Parmesan shavings, plus grated Parmesan, for serving
12 basil leaves, cut into chiffonade

Steps:

  • Cook the pasta according to the package directions.
  • Heat the olive oil in a skillet over medium-high heat. Add the chicken pieces in a single layer and sprinkle with salt and pepper. Allow to cook, without stirring, until golden, about 2 minutes. Stir the chicken around to brown it on all sides. Remove to a plate.
  • In the same skillet over medium-high heat, add the garlic and onions and stir immediately to start cooking. Cook until the onions are deep golden, stirring occasionally, 2 to 3 minutes.
  • Reduce the heat to low and pour in the marinara sauce, red pepper flakes and 1/2 cup water. Stir until the onions and garlic are mixed in, then add the chicken back to the skillet. Add the parsley and stir to combine. Bring to a simmer and cook, stirring occasionally, for 7 to 8 minutes.

1/2 teaspoon dried oregano
1/2 teaspoon dried basil

1 1/2 tablespoons minced garlic, ((5-6 cloves garlic))
2 cups grape or cherry tomatoes, (halved)
1/4 red onion, (peeled and sliced)
1/4 cup balsamic vinegar
1 tablespoon packed brown sugar
3/4 cup fresh shredded mozzarella cheese
2 tablespoons fresh chopped parsley (or basil, to garnish)

Steps:

  • Preheat oven to 220°C | 430°F.
  • Place chicken breasts in a baking dish and drizzle with olive oil. Season with oregano, basil, salt, pepper and 1 tablespoon of minced garlic. Rub seasoning all over each breast. Arrange the tomatoes and red onion around the chicken in the dish.
  • Whisk together the balsamic vinegar, sugar and remaining garlic in a jug to combine. Pour over the chicken breasts, flip each breast in the sauce to evenly coat.
  • Bake in preheated oven for 20-25 minutes (depending on the thickness of your chicken breasts), or until no longer pink in the middle. Sprinkle with cheese and broil (or grill) for 4-5 minutes, or until cheese is melted and golden.

This is one of the BEST chicken dinners I have ever had! Some of the measurements are a guesstimate. I usually buy the big tray of chicken breasts from the store. Most of the time I buy 2 of them because they freeze really well, but usually they never make it to the freezer.

6 -8 boneless skinless chicken breasts (fileted so you can stuff them and wrap them back up or you can pound them flat about a 1/4 in. thick)
salt and pepper
3/4 cup butter, melted
1 teaspoon marjoram
1 teaspoon thyme
3/4 lb mozzarella cheese, thinly sliced (can use pre-shredded, however, it tends to fall out but it will work)
1 egg, beaten with
1 tablespoon water
Italian seasoned breadcrumbs (for dredging)
1 cup white zinfandel wine

Steps:

  • Preheat oven to 375 degrees Fahrenheit.
  • Filet chicken breast or have the butcher do it at the grocery store; I do this and it saves a lot of time.
  • Add marjoram and thyme to melted butter.
  • Salt and pepper chicken breast.
  • Brush with melted butter mixture on both sides.
  • Place the mozzarella on chicken breast then roll up.
  • Dip roll in beaten egg/water mixture then in bread crumbs.
  • Place in a 9x13 pyrex dish (or whatever you have).
  • Repeat with remaining filets.
  • Pour remaining butter over the top of the chicken (sometimes I'll melt some more butter just to make sure all the chicken gets butter on it).
  • Bake in 375 degree Fahrenheit oven uncovered for 45 minutes.
  • After 45 minutes; remove from oven; pour 1 cup white zinfandel wine over entire chicken.
  • Return to hot oven for another 15 minutes, basting with the juices every 5 minutes or so.
  • Then you are done. The sauce it makes is wonderful so don't forget to ladle some over the chicken when you plate it up. I also recommend mashed potatoes to go with it and pour the sauce over those as well.

4 large chicken breasts (boneless skinless)
2 tablespoons olive oil
1/2 teaspoon garlic powder
Salt & pepper (to taste)
1.5 cups marinara sauce
1/2 cup freshly grated parmesan cheese
1 cup shredded mozzarella

Steps:

  • Preheat oven to 375F and move the rack to the middle position.
  • Season both sides of each piece of chicken with the garlic powder and salt & pepper.
  • Add the oil to a skillet over medium-high heat. Once the pan is hot, sear the chicken for 5 minutes/side. Add the chicken to a greased baking dish (I used a 9x13) once both sides are seared.
  • Pour the marinara sauce over the chicken and use a spoon to spread it evenly over and around the chicken.
  • Sprinkle the parmesan over the chicken breasts, and then do the same with the mozzarella.
  • Bake, uncovered, for 20 minutes. If your chicken breasts are on the smaller side, I suggest doing 15 minutes.
  • Broil the chicken for 3-5 minutes or so until the cheese is lightly browned (watch it closely). Let the chicken rest for 5 minutes prior to serving (this will ensure it's juicy). Chicken is done when an instant read meat thermometer shows 165F in the deepest part. Its temperature will continue to rise while resting.
