CHICKEN MARSALA PORTOBELLO MUSHROOMS

This super tasty low carb dinner will be a hit with the whole family! Switch up the filling using ground turkey, beef or pork!

1 tablespoon olive oil
1/2 cup diced onion
2 garlic cloves, minced
1 teaspoon salt
1/2 teaspoon ground pepper
1 lb. ground chicken
5 cups chopped fresh spinach
3 tablespoons grated parmesan cheese
1/4 cup plus 2 tablespoons marsala wine, divided
3/4 cup mozzarella cheese - 1/2 cup for the filling and 1/4 cup for topping the mushrooms
4 large portobello mushroom caps

Steps:

  • Preheat the oven to 375 degrees.
  • Add the oil to a large skillet over medium heat.
  • When the oil is hot, add the onion and cook for 3-4 minutes until softened, then add the garlic to cook for a minute more.
  • Next add the chicken and cook, breaking up with a spoon until browned through.
  • Pour in 1/4 cup of the marsala wine, the salt and pepper. Cook down until the liquid is almost all absorbed, about 1 minute.
  • Place the chopped spinach into the skillet a few handfuls at a time and stir into the chicken until wilted down, then add in the rest of the spinach to wilt.
  • Stir in the parmesan cheese and 1/4 cup of the chihuahua (or mozzarella) cheese, stirring to combine.
  • Pour in the remaining 2 tablespoons of marsala at the end and stir to combine.
  • Set the filling aside while you prepare the mushrooms.
  • Scrape the brown gills from the mushrooms and trim the stems.
  • Season the mushrooms with salt and pepper and a drizzle of olive oil, then fill each mushroom cap with the filling, dividing equally between all four mushrooms.
  • Bake for 15 minutes, then remove from the oven and top with the other 1/4 cup of cheese on each mushroom and bake for another 5 more minutes until the cheese is melted.

One 4- to 5-pound chicken (organic and free range, if possible), cut into 10 pieces
Kosher salt and freshly ground black pepper

3 tablespoons canola or vegetable oil
4 cups sliced white button mushrooms
2 cloves garlic, minced
1/2 medium onion, finely diced
1 tablespoon tomato paste
3 sprigs fresh thyme
1 cup dry marsala
1 1/2 cups low-sodium chicken broth
4 tablespoons unsalted butter, chilled, cut into cubes
Juice of 1/2 lemon
2 to 3 tablespoons chopped fresh Italian parsley
Chardonnay, for serving

Steps:

  • Preheat the oven to 375 degrees F. Pat the chicken pieces dry with a paper towel and sprinkle all over with salt and pepper. Set a turkey roaster pan over 2 burners on medium heat and add the canola oil. Brown the chicken, skin-side down first, 3 to 4 minutes, then turn and brown on the other side, 2 to 3 minutes longer. Remove from the pan and set aside.
  • Add a little more of the oil to the pan on high heat and add the mushrooms, garlic and onions. Season with salt and cook just long enough to get some color on the mushrooms, 2 to 3 minutes. Stir in the tomato paste and thyme and cook about 1 minute longer. Place the chicken pieces back into the pan skin-side up and spread them out evenly, pushing them down into the mushrooms and onions. Add the marsala, scraping up the brown bits from the bottom of the pan, and add the chicken broth. Place the whole pan in the oven and cook until the tops of the chicken are golden brown, 30 to 35 minutes.
  • Use tongs to remove the chicken from the pan and transfer onto a serving platter and keep warm. Set the roasting pan back over the burner on high heat. Bring the contents to a boil and cook the liquid until it is reduced and the flavors become concentrated, 3 to 4 minutes. Shut off the heat, add the butter cubes and stir gently to melt the butter evenly. This will thicken the marsala sauce and give it a rich flavor. Taste and season with salt and pepper. Add a squeeze of the lemon juice and fold in the parsley. Pour over the chicken and serve with Chardonnay.

3 tablespoons butter
1/2 pound sliced baby portobello mushrooms
2 shallots, finely chopped
3 garlic cloves, minced
1 tablespoon all-purpose flour
1/4 cup beef broth
2/3 cup Marsala wine
4 boneless skinless chicken breast halves (5 ounces each)
1 tablespoon large egg
1 tablespoon water
1 sheet frozen puff pastry, thawed
1/2 teaspoon salt
1/4 teaspoon pepper
Fresh thyme, optional

Steps:

  • In a large skillet, heat butter over medium-high heat; saute mushrooms and shallots until tender, 3-4 minutes. Add garlic; cook and stir 1 minute longer. Stir in flour until blended. Gradually stir in broth and wine; bring to a boil, stirring constantly. Reduce heat; simmer, uncovered, until slightly thickened, 2-3 minutes, stirring occasionally. Remove to a bowl; cool slightly. Refrigerate, covered, until cold., Preheat oven to 425°. Pound chicken breasts with a meat mallet to even thickness. Whisk together egg and water. On a lightly floured surface, roll pastry sheet into a 14-in. square. Cut into four 7-in. squares. Place 1 chicken breast on center of each square. If desired, fold narrow end under to fit pastry square; sprinkle with salt and pepper. Top each with 1 rounded tablespoon mushroom mixture. Lightly brush pastry edges with egg mixture. Fold pastry over filling; press edges with a fork to seal. Place on a rimmed parchment-lined baking sheet., Brush tops with egg mixture. Bake until golden brown and a thermometer inserted in chicken reads 165°, 18-23 minutes. Reheat remaining mushroom mixture; serve with pastries. If desired, garnish with thyme.

1/4 cup onion, diced
1 large garlic clove, minced
4 ounces marsala wine
1/2 cup vegetable stock
1/4 cup butter, vegan
2 tablespoons sugar
1/4 teaspoon red pepper flakes
2 tablespoons italian seasoning
salt and pepper, to taste
1 tablespoon cornstarch
1/4 cup water

Steps:

  • Begin by cleaning the mushrooms thoroughly. Place a large skillet on the stove over medium heat and add the mushrooms, garlic, and onion. Cover and simmer for 10-15 minutes until the mushrooms are tender.
  • Add marsala wine, vegetable stock, butter, sugar, pepper flakes, and Italian seasoning. Allow to boil for about 10 minutes or until the alcohol is cooked out. Tasting and smelling the sauce will help you determine when the alcohol has boiled out.
  • Combine corn starch and water in a separate container and mix until thoroughly combined. Add to the sauce pan and mix together. The sauce will thicken slightly.

1 1/2 lbs chicken tenders
1/2 lemon
1 teaspoon salt
1/4 teaspoon white pepper
1/4 cup flour
6 tablespoons butter
2 tablespoons olive oil
8 ounces sliced mushrooms
3/4-1 cup dry marsala wine

Steps:

  • Squeeze the lemon over the chicken and sprinkle with the salt& pepper; Coat with flour.
  • In a large skillet, melt three tbsp.

1/4 cup seasoned bread crumbs
1/4 cup parmesan cheese, freshly grated
1 egg, beaten
1 small shallot, chopped
1 tablespoon olive oil
2 portabella mushrooms, sliced
1 tablespoon parsley, chopped
1/4 teaspoon black pepper
4 slices mozzarella cheese

Steps:

  • Preheat oven to 425°F.
  • Mix together bread crumbs and Parmesan cheese in a shallow dish.
  • In a small bowl, beat egg.
  • Dip chicken in egg and then breadcrumb mixture.
  • Place chicken in baking dish sprayed with nonstick cooking spray.
  • Heat olive oil over medium high heat in skillet. Add shallot and saute until soft.
  • Add mushrooms, parsley, and pepper and cook about 5 minutes, turning once.
  • Top chicken with mushroom mixture evenly divided over each piece. Place mozzarella slice evenly over each piece.
