1 pound day-old white bread loaf cut in cubes
4 cups water
1/2 pound chicken livers
1/2 cup butter - (1 stick)
1 tablespoon salt
1 onion chopped
1/2 cup chopped parsley
1 1/2 cups chopped celery leaves
2 1/2 cups chopped mushrooms
1 teaspoon garlic powder or 1 minced garlic clove
1 teaspoon dried oregano
1 teaspoon dried basil
1 egg slightly beaten
1 tablespoon minced fresh sage

Steps:

  • Soak bread in water. Cook chicken livers in butter over medium heat, mashing livers while cooking. Add salt, onion, parsley, celery leaves and mushrooms and continue cooking until chicken livers are cooked and no longer pink and onion is soft. Add garlic powder, oregano and basil. Squeeze water from wet bread and place bread in large bowl. Add egg and sage and mix well. Add cooked liver mixture. Turn into greased 13- by 9-inch baking dish, cover tightly with foil, and bake at 375 degrees 30 minutes. Remove foil and bake another 15 minutes. This recipe yields 9 cups. Each 1/2-cup serving: 159 calories; 618 mg sodium; 69 mg cholesterol; 7 grams fat; 20 grams carbohydrates; 5 grams protein; 1.63 grams fiber.

1 pound chicken livers, (preferably fresh)
6 tablespoon rendered chicken fat (schmaltz), recipe follows
1 cup coarsely chopped onion
2 teaspoon kosher salt plus more
Freshly ground pepper
2 hard-cooked large eggs, finely chopped
8 ounces chicken fat and/or skin, cut into small pieces
1 sprig fresh thyme or 1/4 teaspoon dried thyme
1 clove garlic, minced
2 tablespoons cold water

Steps:

  • Rinse the livers and pat dry with a kitchen towel. Clean the livers, by trimming and discarding any visible fat, green parts, or membrane. Set the livers aside.
  • In a large saute pan, over medium heat, heat 2 tablespoons of the chicken fat and add the onions. Cook, stirring occasionally, until golden brown, about 10 to 12 minutes. Transfer the onions to a plate with a slotted spoon. Wipe out the pan.
  • Spread the livers out in a single layer on a sheet pan and season with the salt and pepper. Raise the heat to high, add 2 tablespoons of the fat to the pan and when the fat begins to shimmer, lay the livers in the pan in a single layer. Working in batches, cook the livers turning each over once, until browned, about 2 to 2 1/2 minutes per side. Transfer the livers to the plate with the onions. Repeat with 2 tablespoons fat and remaining livers. Cool.
  • Coarsely chop the livers with a knife (don't be tempted to use a food processor). In a medium bowl, gently combine the livers with the eggs, onions, and remaining 2 tablespoons fat. Season with salt and pepper to taste. Refrigerate for 2 hours before serving. Serve with toast and cornichons if desired.
  • Serving suggestion: Toasted rye or pumpernickel bread and cornichons .
  • In a small saucepan combine the chicken fat or skin, thyme, garlic, and water. Bring the mixture to a simmer over medium-low to medium heat. Cook until the fat has rendered (liquefied) and the skin becomes crispy, about 35 to 45 minutes. (Adjust the heat, as needed, to keep the skin from browning too quickly.) Set the chicken fat aside to cool slightly. Strain into a small bowl. If desired reserve the crispy skin. Refrigerate, covered, for up to one week.
  • Yields: about 1/2 cup

ROAST CHICKEN WITH GREEN HERB STUFFING

One 4 1/2-pound chicken with giblets (2 pieces liver and 1 gizzard, well-trimmed)
Canola oil, for oiling pan and chicken
1 1/4 cups coarse breadcrumbs from a day-old country loaf, white or wheat
Fine sea salt and freshly ground black pepper
Fine sea salt and freshly ground black pepper
8 tablespoons cold salted butter
2 tablespoons white wine
3 ounces fresh pork sausage
1 1/2 large onions, finely diced
1 tablespoon minced fresh sage
3 cloves garlic, minced
1 1/2 cups chopped Swiss chard (about 1/2 bunch)
1/3 cup chopped chives
Zest of 1/2 lemon

Steps:

  • Wash the chicken under cool running water and pat it dry with paper towels. Refrigerate, uncovered, for at least 12 hours and as long as 2 days.
  • Preheat the oven to 425 degrees F. Oil a roasting or baking pan with canola oil.
  • Make the stuffing: Put the breadcrumbs in a medium bowl. Heat a large skillet over medium-high heat. Sprinkle the liver and gizzard with salt and pepper. Add 1 tablespoon of the butter to the skillet and when it melts, add the giblets and cook quickly until browned on both sides, about 3 minutes. Transfer them to a cutting board, chop finely and add to the breadcrumbs. Off of the heat, add the wine and scrape the bottom of the skillet to dislodge the brown bits; pour the liquid onto the breadcrumbs and mix.
  • Add the pork to the skillet and cook until browned, about 5 minutes; scrape the pork into the bowl with the bread mixture. Add 3 tablespoons of the butter, the onions and 1/4 teaspoon each salt and pepper to the skillet and cook over medium heat until the onions are soft and tender, 10 to 15 minutes. Add the sage and garlic and cook 1 minute longer. Add the Swiss chard and cook until wilted. Scrape the mixture and all the buttery juices onto the breadcrumbs and mix to combine. Add the chives and lemon zest and taste for seasoning, adding more salt and pepper if needed.
  • Loosen the skin over the chicken breasts. Insert the remaining 4 tablespoons cold butter under the skin of the chicken breasts, pushing down to disperse them. Rub the chicken all over with a thin film of canola oil. Sprinkle the chicken heavily on all sides with 3/4 teaspoon each salt and pepper. Stuff the cavity with the bread mixture, and stuff the neck skin with any remaining stuffing. Set the bird in the oiled roasting pan.
  • Roast the chicken until the skin dries and the butter melts, about 15 minutes. Turn the heat down to 375 degrees F and continue to roast, basting the chicken once or twice with the fat that accumulates in the corners of the pan, until the thickest part of the thigh registers 170 degrees F on an instant-read thermometer, 45 to 55 minutes.
  • Transfer the chicken to a large platter to rest for 5 to 10 minutes. Strain the pan juices into a bowl and skim off the fat. Pour 1/4 cup water into the roasting pan, set it on a burner on high heat and scrape up any stuck-on bits on the bottom with a rubber spatula. Return the defatted juices to the pan and simmer together for 3 to 5 minutes to make a thin, natural gravy. Season with salt and pepper.
  • Carve the chicken on the platter. Slice the wings at the joint, twist to remove them and set them above the chicken. Cut the thighs at the joint, twist to remove them, slice them diagonally at the leg joint to separate them into thigh and drumstick and lay them on the platter. Carve thin slices from the breast meat and let them lay as they fall; pour a little gravy over the white meat, avoiding wetting the crispy skin of the thighs. Cut the stuffed neck in slices, and serve with the rest of the gravy in a small pitcher on the side.

1 tablespoon olive oil
2 chicken livers (about 2 ounces total), chopped and membrane discarded
1 cup fresh white breadcrumbs
4 ounces Bayonne or other raw, cured ham, finely chopped
1 clove garlic, finely chopped
1/4 cup chopped fresh parsley
1 tablespoon chopped fresh sage
1/4 cup finely chopped red bell pepper
1/2 teaspoon freshly grated nutmeg or 1 teaspoon ground allspice
1 large egg, beaten
Coarse salt and freshly ground pepper

Steps:

  • In a small skillet, heat oil over medium heat; add livers and cook, stirring, 1 to 2 minutes. Place in a large bowl along with breadcrumbs, ham, garlic, parsley, sage, red pepper, and nutmeg (or allspice); mix well. Season with salt and pepper; stir in egg until well combined.

PILAF WITH CHICKEN LIVERS

A Turkish dish. My preference is to reduce the amounts of butter and salt from what is shown. Please be warned that chicken livers have a taste that does not appeal to everybody.

1 lb chicken liver, washed and patted dry
4 tablespoons butter
1 teaspoon salt
pepper
1 1/2 cups thinly sliced scallions
2 medium tomatoes, peeled, seeded and chopped
2 tablespoons pine nuts
2 tablespoons chopped almonds
2 tablespoons raisins
1 cup uncooked white rice
2 tablespoons chopped fresh parsley

Steps:

  • In a skillet, saute chicken livers in 2 Tbs butter 5 minutes or until done; remove from the pan, sprinkle with 1/2 tsp salt and pepper and set aside.
  • Add half the scallions to skillet and saute until slightly browned; remove with slotted spoon and set aside.
  • Melt 2 Tbs butter in a 3-quart saucepan and saute the other half of the scallions.
  • Add the tomatoes through raisins and stir-fry 2 minutes.
  • Add the uncooked rice and stir-fry 1 minute.
  • Add 2 cups water, 1/2 tsp salt and pepper to taste; bring to a boil.
  • Stir with a fork, reduce heat to a very low simmer, cover and cook 25 minutes or until rice absorbs all the liquid.
  • Place the reserved livers and scallions atop the rice mixture, cover and heat through.
  • Sprinkle with parsley and serve.

CHICKEN LIVER & MUSHROOM NESTS

3 tbsp sunflower oil
3 onions , finely chopped
250g pack chestnut mushroom , chopped
1 garlic clove , crushed
400g pack chicken liver , trimmed of any sinewy bits
3 tbsp brandy
140g white breadcrumb
bunch flatleaf parsley , chopped
handful walnuts , chopped
12 smoked, dry-cured streaky bacon rashers

Steps:

  • Heat oven to 190C/170C fan/gas 5. Heat the oil in a large frying pan, then soften the onions for 10 mins with the pan covered. Turn up the heat, add the mushrooms and fry for about 10 mins until golden and all their liquid has evaporated. Stir in the garlic and cook for 1 min more. Tip everything onto a plate.
  • Pat the livers dry, then add a little more oil to the pan. Sizzle in batches for about 20 secs on each side until just golden but not cooked through. Set aside on a plate as you go. Tip in the brandy and let it reduce to 1 tbsp. Roughly chop the livers once cooled, then mix with the oniony mushrooms, brandy, bread and almost all the parsley and nuts.
  • To cook, wind bacon rashers into the wells of a 12-hole bun tin, like little nests. Spoon in the stuffing (reserving 250g for your turkey), scatter with remaining nuts, then bake, covered with foil, for 20 mins. Uncover and cook for 25 mins more until the bacon is gold. Scatter with remaining chopped parsley to serve.

1 pound chicken livers
1 turkey liver, chopped
Salt to taste, if desired
Freshly ground pepper to taste
3/4 pound fresh mushrooms
2 tablespoons butter
1/2 cup finely chopped onion
1/3 cup corn oil
1/4 cup dry sherry wine
4 1/2 cups cooked rice (see recipe)
1 egg, lightly beaten

Steps:

  • Preheat the oven to 350 degrees.
  • Pick over the livers. Cut away and discard the tough connecting membranes. Cut the chicken and turkey livers into small cubes. Sprinkle with salt and pepper and set aside.
  • Cut the mushrooms into quarters and slice them. There should be about six cups.
  • Heat the butter in a heavy skillet and add the onion. Cook, stirring, until wilted. Sprinkle with salt and pepper. Add the mushrooms and cook, stirring, until mushrooms give up their liquid. Continue cooking until the liquid evaporates.
  • Heat the oil in another heavy skillet and add the livers. Cook over very high heat, stirring frequently, about one and a half minutes.
  • Add the livers to the mushrooms. Stir and cook briefly. Add the wine and cook briefly over high heat until the wine evaporates. Add the rice and stir. Add the egg, stirring. Let cool.
  • Stuff and roast the turkey. Heat the leftover stuffing separately in a skillet on top of the stove and serve with the carved turkey.

2 cups water
1/2 teaspoon salt
1 tablespoon butter
1 teaspoon parsley
1 teaspoon minced garlic

1 lb chicken liver, cut in half
3 tablespoons oil
1/4 cup minced onion

Steps:

  • Mix water with next 5 ingredients.
  • Bring to a boil, add rice.
  • Cover and simmer for 17 minutes, until water is absorbed.
  • Mix flour, salt, pepper, and paprika in a bag.
  • Add chicken livers and shake to coat.
  • Heat oil in skillet on med hi.
  • Brown livers, stirring for 5 minutes, or until done, may have to do this in batches.
  • Add more oil if needed.
  • Remove from skillet, keep warm.
  • Stir fry onion in same skillet, with water for 2 minutes.
  • Return chicken livers and mix well.
  • Put rice on plate, top with chicken livers.
