1 medium onion, chopped
1/2 cup chopped green pepper
3 tablespoons butter, melted
6 ounces fresh mushrooms, sliced
1 can (10-3/4 ounces) condensed reduced-fat reduced-sodium cream of mushroom soup, undiluted
1/3 cup fat-free milk
1 jar (2 ounces) diced pimientos, drained
1/2 teaspoon dried basil
2-1/2 cups cubed cooked chicken
8 ounces reduced-fat process American cheese, cubed
1-1/2 cups fat-free cottage cheese
1/2 cup grated Parmesan cheese, divided
9 lasagna noodles, cooked and drained
2 teaspoons minced fresh parsley

Steps:

  • In a saucepan, saute onion and green pepper in butter until tender. Add mushrooms; cook until tender. Remove from the heat; stir in soup, milk, pimientos and basil. In a bowl, combine the chicken, American cheese, cottage cheese and 1/4 cup Parmesan cheese., Spread a fourth of the mushroom sauce in a 13x9-in. baking dish coated with cooking spray. Top with 3 noodles, half of the chicken mixture and a fourth of the mushroom sauce. Repeat layers of noodles, chicken and mushroom sauce. Top with the remaining noodles and mushroom sauce., Sprinkle with parsley and remaining Parmesan. Cover and bake at 350° for 30 minutes. Uncover; bake 15-20 minutes longer or until hot and bubbly. Let stand for 15 minutes before cutting.

The cheesiest chicken lasagna layered with cheddar and mozzarella cheese, rich chicken bolognese and no-boil lasagna sheets is a dinner favorite.

500 g (1lb) ground chicken / chicken mince
1 large onion (finely chopped)
2 celery spears (finely chopped (+- ½ cup))
2 large carrots (finely chopped (+- 1 cup))
250 g (½lb) mushrooms (finely chopped )
4 garlic cloves (minced )
1 tsp dried oregano
1 tsp Italian herbs / Italian seasoning
½ tsp chilli flakes
1 cup chopped tomatoes ((I used cherry tomatoes that were starting to soften) )
1 cup tomato puree ((passata / crushed tomatoes) )
2 tsp tomato paste
1 cup chicken stock
1 tbsp Balsamic vinegar
1 tsp sugar ((optional))
2 cups bechamel sauce / cheese sauce ((my recipe is linked) )
250 g (½lb) no-boil lasagna sheets
1 cup grated cheddar cheese
2 cups grated mozzarella cheese
½ cup Parmesan cheese

Steps:

  • Heat 2 tbsp olive oil in a large, deep pan and brown the chicken well. Remove and set aside.
  • Add the vegetables and cook for 7-10 minutes or until they start to soften.
  • Add the garlic and herbs and cook for another minute before adding the chicken back in.
  • Pour in the tomatoes, stock, Balsamic and sugar.
  • Cover, reduce and allow to simmer for 20-30 minutes until the sauce has reduced and thickened slightly. Season to taste.
  • Layer the bolognese mixture with no-cook lasagna sheets and bechamel/cheese sauce in an oven-proof baking dish (18cm x 25cm or 7in x 10in). Add a quarter cup mozzarella cheese with each layer to make it ultra cheese. Top with cheddar cheese, mozzarella and Parmesan cheese.
  • Bake at 200°C/390°F for 20-30 minutes or until a sharp knife can easily be inserted. Remove the foil and allow to bake until browned on top.
  • Remove from the oven, allow to rest for at least 10 minutes then slice and serve.

2 lbs boneless, skinless chicken breast (thin cutlets)
1 tsp Italian seasoning
1/2 tsp garlic powder
2 cups marinara sauce
1/4 cup grated parmesan cheese (divided)
1/2 cup mozzarella cheese
15 oz ricotta cheese
1/4 cup grated parmesan cheese
1 large egg
2 tbsp freshly chopped parsley
1/4 tsp salt
1/4 tsp pepper

Steps:

  • Preheat the oven to 375˚F.
  • Make the ricotta topping by adding the ricotta cheese, grated parmesan, egg, parsley, salt, and pepper to a medium bowl. Mix until combined.
  • In a large 9x13 baking dish, lay the chicken breasts flat. Season with the Italian seasoning and garlic powder.
  • Scoop the ricotta mixture over each chicken breast, then pour the marinara sauce over the top. Finish by sprinkling with the remaining parmesan and mozzarella cheeses.
  • Bake for 35-45 minutes or until the chicken is cooked through (165˚F internal temp) and the edges are bubbly.
  • Let sit for 5-10 minute then serve warm over pasta, mashed potatoes, or with a salad.

3 tablespoons butter
1/2 cup chopped onion
1/2 cup chopped green pepper
3 cups chopped cooked chicken
1 (4-ounce) jar pimientos, chopped
1 (8 ounce) can cream of chicken soup
1 (8-ounce) can mushroom soup
1 cup chicken broth
6 lasagna noodles, cooked and drained
6 ounces shredded mozzarella

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat the butter in a large saucepan over medium heat. Add the onions and green peppers and cook, stirring occasionally, until they are soft and translucent, about 15 minutes. Add the chicken, pimientos, mushroom soup, and chicken broth. Simmer the mixture until the flavors blend and the sauce thickens slightly, about 5 minutes.
  • Spoon about 1/3 of the chicken mixture into a medium baking dish. Arrange 2 of the noodles over the chicken; repeat layers of chicken and noodles twice more. Top the lasagna with cheese, cover with aluminum foil and bake for 20 minutes. Uncover and bake until the cheese is nicely browned, about 10 minutes. 2 (10 ounce) containers refrigerated alfredo sauce
3 tablespoons lemon juice
1/2 teaspoon black pepper
3 cups chopped chicken breasts (can be boiled or cooked in a skillet, or you can use Rotisserie chicken)
1 (10 ounce) package frozen chopped spinach, thawed and well-drained
1 cup bottled roasted red pepper, drained and chopped
1 (16 ounce) package shredded Italian cheese blend
parmesan cheese
breadcrumbs

Steps:

  • Preheat oven to 325.
  • Combine all ingredients except noodles and cheese.
  • Arrange a layer of noodles in the bottom of a lightly greased rectangular baking dish.
  • Top with 1/3 filling mixture and 1/4 cheese. Repeat layers until noodles and filling are gone, ending with cheese.
  • Cover and bake for 45-55 minutes.
  • Remove cover and sprinkle with Parmesan cheese and bread crumbs and bake for 5 minutes longer, until cheese is melted and top is crusty.

1 lb ground beef
1/2 cup chopped onion
1 dash minced garlic
1/2 teaspoon salt
1 3/4 cups favorite spaghetti sauce (I use chunky mushroom & garlic)
6 ounces spiral noodles, cooked and drained
1 cup cottage cheese
2 cups shredded mozzarella cheese, divided
grated parmesan cheese

Steps:

  • Brown beef with onion, garlic and salt; drain. Stir in spaghetti sauce, simmer until heated. Remove 1 cup meat sauce & set aside. Stir noodles into remaining sauce. Place 1/2 noodle mixture into greased 2qt. casserole dish. Cover w/ cottage cheese and 1 cup mozzarella. Add remaining noodle mixture, top with reserved meat sauce and remaining mozzarella. Sprinkle w/ parmesan cheese. Bake covered at 350degrees for 20-25min. Let stand about 5 min before serving.

1 lb lean ground beef
1 clove garlic, minced
1 tablespoon dried chopped parsley
1 tablespoon dried basil
1/2 teaspoon salt
2 cups tomatoes (or one can of diced tomatoes)
2 (6 ounce) cans tomato paste
1 (8 ounce) package dry lasagna noodles
1 (24 ounce) carton cottage cheese
2 beaten eggs
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons dried chopped parsley
1/2 cup grated parmesan cheese
1 lb grated mozzarella cheese

Steps:

  • Brown meat slowly.
  • Add next 6 ingredients to meat (garlic through tomato paste).
  • Add one tomato paste can of water.
  • Simmer uncovered until thick or about 45 minutes.
  • Meanwhile combine cottage cheese with eggs, salt, pepper, parsley and Parmesan.
  • Cover and refrigerate until ready to use.
  • Also meanwhile, cook lasagna noodles in boiling water until tender.
  • Drain and rinse with cold water.
  • Spray a 13X9X2 baking pan with vegetable oil spray.
  • Place 1/2 of the noodles in the bottom of the pan.
  • Spread 1/2 of the cottage cheese mixture over the noodles.
  • Next layer 1/2 of the meat mixture over the cottage cheese, then sprinkle 1/2 of the mozzarella over the meat.
  • Layer again with noodes, cottage cheese, meat and mozzarella cheese.
  • Bake at 375 for 30 minutes, until bubbling and mozzarella has browned some.

1/2 cup butter
1/2 cup flour

1 slightly beaten egg
6 -7 cooked lasagna noodles
1 cup shredded mozzarella cheese
1/4 cup parmesan cheese

Steps:

  • Melt butter in large skillet on medium low. In a small bowl combine flour, salt, and basil. Once butter has melted, stir in flour mixture then add chicken broth. Stir frequently until thicken and comes to a slow boil. Remove from heat and add chicken.
  • Mix cottage cheese, mozzarella cheese and egg together.
  • Place 1/3 of the chicken mixture in a greased 9x13 baking dish. Top with half the noodles and half the cheese mixture. Repeat layers ending with the last third of the chicken mixture. Top with parmesan cheese.
