- Place the olive oil, soy sauce, honey, garlic and salt and pepper in a large bowl.
- Whisk to combine.
- Add the chicken, bell peppers, zucchini and red onion to the bowl. Toss to coat in the marinade.
- Cover and refrigerate for at least 1 hour, or up to 8 hours.
- Soak wooden skewers in cold water for at least 30 minutes. Preheat grill or grill pan to medium high heat.
- Thread the chicken and vegetables onto the skewers.
- Cook for 5-7 minutes on each side or until chicken is cooked through.
- Sprinkle with parsley and serve.

MARINADE FOR CHICKEN KABOBS
This is a great marinade for kabobs, do not marinade the chicken for more than 5 hours or the lemon juice will start to *cook* the chicken. This recipe may be doubled to 10-12 breasts but prepare two separate marinades in two separate bowls, do not combine the doubled marinade into one bowl. Feel free to thread on you favorite veggies such as mushrooms, cherry tomatoes or whatever you desire! If you prefer a sweeter glaze then increase the honey by a couple tablespoons.

- In a bowl mix together the oil with soy sauce, honey, lemon juice, garlic slices, black pepper and cayenne.
- Place the chicken cubes in the bowl and toss to coat with the marinade.
- Cover and chill for 4 hours.
- Remove the chicken from the marinade.
- Pour marinade into a saucepan then remove the garlic slices and discard; boil for 10 minutes over medium-low heat (start timing the 10 minutes after boiling starts).
- Thread the chicken onto wooden skewers that have been soaked in cold water for 30 minutes.
- Place the skewers on a grill and cook for 18-20 minutes or until the chicken is cooked through, basting with cooked marinade during the last 10-12 minutes of cooking.

- Cut the chicken breasts into 1-inch pieces and place in a large ziptop bag, shallow baking dish, or bowl.
- In a separate bowl or liquid measuring cup, whisk together the olive oil, vinegar, honey, garlic, oregano, thyme, salt, and pepper.
- Pour over the chicken and stir to coat (or seal the bag, removing as much air as possible, and "squish" to coat). Place in the refrigerator to marinate for 30 minutes or up to 3 hours (do not let the chicken sit for longer or the vinegar will cause it to break down). If using wooden skewers, place the skewers in water to soak for at least 20 minutes.
- When ready to grill, preheat the grill to medium-high heat (about 375 degrees F). Brush the grill grates with canola oil or coat with nonstick grill spray.
- Thread the kabobs: Thread a piece of chicken onto the skewer (shake off the excess marinade when removing it from the bag. Add alternating pieces of the red onion, zucchini, yellow squash, and red bell pepper until you've reached the end of the skewer, ending with chicken. Repeat with the remaining skewers, then discard the excess chicken marinade.
- Grill the chicken until fully cooked through and the juices run clear, about 10 to 15 minutes, turning the skewers every few minutes so that each side has grill marks. Transfer to a serving plate and squeeze the lemon over the top. Sprinkle with fresh herbs and feta. Serve warm.

- Combine the first 10 ingredients in a large bowl. Add the chicken and toss to coat. Refrigerate for at least an hour, or overnight. Heat grill on high for 15 minutes with the lid closed. Turn heat down to medium and open the lid. Tightly fold a paper towel into a square and dip in oil. Use the heavily soaked paper towel and brush the rack to oil it. This will prevent the chicken from sticking. Remove chicken from the refrigerator and thread 3-4 pieces onto each skewer, alternating between the peppers and potatoes. Grill chicken, turning every 2-3 minutes for a total of 12 minutes or until chicken is cooked through. Serve immediately.
CHICKEN KABOBS ON THE GRILL
These kabobs are awesome and easy to make, but it does take some preparing time. The longer you marinate the more moist and tasty they are. We served these at our Memorial Day BBQ and we couldn't make them fast enough and we got great raves from all our family and friends... even the kids love these! Also a few ingredients go a long way... just plan ahead. I used the family pack of chicken (7-8 large boneless breasts) and it fed over 30 people)!

- Soak skewers in water for at least 1 hour before before putting food on them. I like to put them in a water pitcher.
- cut peppers and onion into approximately 1 inch pieces.
- cut chicken into approximately 1 inch pieces.
- place peppers, onions, chicken, and pineapple (drain juice) into a large glass bowl. (Don't use a plastic bowl or the catalina will stain it and the chicken can pick up a plastic taste).
- Add equal parts of italian dressing and catalina dressing to large bowl, mix well and cover with plastic wrap or lid. Marinade over night if possible (but no less than 5 hours).
- Place ingredients on skewers alternating chicken, peppers, onions, pineapple in any order. (This is a messy job!) I put each prepared skewer on a foiled cookie sheet to take outside to grill and put a new sheet of foil on for the cooked kabobs.
- Place on bbq grill and cook until chicken is done (approx. 15-20 min.) Any left over veggies can be placed in a pie tin and cooked on the grill. MMM!

- Prepare marinade. Combine all ingredients for the marinade in a large bowl and mix until the salt and sugar have dissolved. Add the cut pieces of chicken, squash, zucchini, bell pepper, and onion to the marinade. Stir gently to coat all of the chicken and vegetables with marinade. Cover tightly and refrigerate for 4-12 hours.
- Preheat grill. Heat the grill to 400 degrees F for direct grilling.
- Assemble the kabobs. While the grill preheats, assemble your kabobs. This process takes about 15 minutes. Skewer on your chicken, squash, zucchini, peppers, and onions onto the kabobs in a pattern. Repeat until all of the chicken and vegetable pieces have been secured on the sticks. Season on all sides with a light sprinkle of additional salt and pepper before grilling, if desired.
- Grill the chicken kabobs. Place the kabobs directly on the grill grates and close the lid. Grill for 4-5 minutes before opening the lid and rotating the skewers. Close the lid and grill for an additional 4-5 minutes. Open, check the temperature of the kabobs, and if the internal temperature of the chicken hasn't reached 165 degrees F, rotate them once again, close the lid, and cook until they hit the target temperature.
- Rest and serve. Remove the finished kabobs from the grill and rest for only 1-2 minutes before serving. The pieces are so small, they don't need to rest much longer than this and you want to serve them hot.

- Add the chicken chunks to a gallon-sized Ziploc bag
- Mix all of the spices in a small bowl (so that they get incorporated evenly) and sprinkle them on the chicken breast
- Add the olive oil and lemon juice to the bag with the chicken. Massage until the spices are evenly incorporated. Marinate for at least 4 hours or overnight.

- Mix the yogurt, oil, lemon juice, oregano, coriander, paprika, garlic, 1/2 teaspoon salt and 1/4 teaspoon pepper in a medium bowl until fully blended. Add the chicken and mix to coat. Cover and refrigerate for 2 to 4 hours.
- Preheat a grill pan or outdoor grill for cooking over medium-high heat. Thread the marinated chicken onto the soaked skewers, about 5 pieces per skewer, taking care not to pack the chicken pieces too tightly.

- Cut chicken into 1 inch (2.5 cm) cubes and place in large resealable plastic bag. Place shrimp in another bag. Set aside.
- Cut onion and sweet peppers into 1 inch (2.5 cm) chunks and add to a third large resealable plastic bag. Set aside.
- Make the marinade by adding the green onion, shallot, garlic, ginger, minced hot pepper (optional), cider vinegar, molasses, brown sugar, light tamari (or soy sauce), orange juice, allspice, cinnamon, nutmeg, salt and freshly ground black pepper to the bowl of a blender or food processor. - Soak 16-20 wooden skewers in warm water for 20-30 minutes. Thread a piece of chicken onto a skewer followed by a piece of onion, shrimp and sweet pepper alternating in that order. Repeat. Place kabobs on platter as you make them. Pour any leftover marinade over kabobs.
- Heat grill to medium-high. Grill kabobs over medium-high heat until lightly browned, cooked through and internal temperature reaches 165°F (74°C) - approximately 7-10 minutes per side. Baste along the way with any leftover marinade. Turn half-way through cooking.

- Cut the chicken breasts into large pieces, about 1 1/2″ in size. Whisk all of the marinade ingredients together in a medium bowl. Add the chicken pieces and toss to coat well. Cover and refrigerate for 4-6 hours or up to overnight.
- 45-60 minutes before dinner, remove the chicken from the refrigerator. Drain off the marinade and discard. Completely cover a rimmed baking sheet with foil or plastic wrap. Spear the chicken pieces onto the bamboo sticks, placing the chicken pieces snugly together. Lay prepared kabobs on the covered baking sheet.
- Pre-heat the grill (or grill pan) to hot. For outdoor grilling, scrape the grill grates clean and oil them. Use a wad of paper towels and tongs. You can also use a grill-approved non-stick spray.

- In a medium bowl, combine the yogurt, olive oil, paprika, cumin, cinnamon, red pepper flakes, lemon zest, lemon juice, salt, pepper and garlic.
- Line a baking sheet with aluminum foil for easy clean up. Thread the chicken onto metal skewers, folding if the pieces are long and thin, alternating with the red onions. Be sure not to cram the skewers. (Note: You'll need between 6-8 skewers.) Place the kabobs on the prepared baking sheet. Brush the marinade all over the meat, coating well. - Slice your chicken breast into large chunks that are all equal size! This will ensure that they all cook evenly. To a large bowl, add the diced chicken.
