Chicken wings are seasoned with a delicate mixture of spices, then coated in mustard and floured before being fried until crisp. If you don't have a deep-fryer, you may use a heavy skillet, but for crispier chicken, I would prefer a deep-fryer. This chicken is SO good!

5 pounds chicken wings, separated at joints, tips discarded
1 tablespoon seasoned salt
2 tablespoons garlic powder
2 tablespoons onion powder
2 tablespoons ground black pepper
1 tablespoon monosodium glutamate (MSG, or Accent flavor enhancer)
3 tablespoons prepared yellow mustard
3 cups all-purpose flour
1 quart oil for frying, or as needed

Steps:

  • Season the chicken wings on both sides by sprinkling with seasoned salt, garlic powder, onion powder, pepper, and MSG. I like to lay it all out on a big plastic bag for easier clean up. Coat each piece with a thin layer of mustard. You may use a basting brush or your fingers. Put the flour into a plastic bag, add the chicken, and shake to coat.
  • Heat the oil in a deep-fryer or deep heavy skillet to 350 degrees F (175 degrees C). When the oil is hot, add the chicken and cook for 6 minutes on each side, or until juices run clear. Drain on paper towels, and cool for 5 minutes before serving.

CHICKEN IN MUSTARD SAUCE

This healthy yet elegant weeknight chicken dish came to The Times in 1988, courtesy of Jacques Pépin. It's simple but loaded with flavor, and you can throw it together in about a half hour. Just sauté the chicken until golden, then make a quick sauce from onions, water and mustard and reduce until thick. Serve with rice to soak up the sauce, and a crisp green salad. If white meat is not your thing, it would be equally delicious made with boneless chicken thighs (just be sure to add a few minutes of cooking time).

8 5-ounce chicken breasts, skinless and boneless
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 tablespoon vegetable oil
1 cup onion, finely chopped
2 tablespoons flour
2 cups water
1 1/2 teaspoons dry mustard
1 tablespoon Dijon mustard

Steps:

  • Sprinkle the meat with the salt and pepper.
  • Heat the oil in a large skillet over medium-high heat. When it is hot, brown the chicken for one-and-a-half minutes on each side.
  • Mix in the onion and continue cooking for one minute.
  • Sprinkle the flour on the chicken pieces, turning them so that all the pieces are coated. Cook one minute to lightly brown the flour.
  • Add the water and stir to dissolve the flour until the mixture comes to a boil. Lower the heat, cover the skillet and boil gently for five minutes.
  • Remove the meat to a serving platter and keep warm.
  • Cook the sauce to reduce it to about one-and-a-half cups. Mix the dry mustard with the Dijon mustard and stir until smooth. Stir the mustard mixture into the sauce and heat, but do not allow the sauce to boil after the mustard has been added.
  • Place the chicken pieces in the sauce and warm over low heat for 10 to 15 minutes to develop the flavor.
  • Serve the chicken with the sauce.

8 chicken thighs, bone-in, skin-on (you can use chicken breast, see the tips in the post above)
6 tbsp Dijon mustard
1 tbsp whole grain Dijon mustard
2 tbsp butter
5 tbsp Crème fraîche (see my substitution tips in the post above)
1 c chicken broth
10-15 fresh thyme sprigs
1 bay leaf
1 small onion (sliced)
1 small shallot (sliced)
2 tbsp parsley (chopped)
3/4 tsp salt
1/4 tsp pepper

Steps:

  • Preheat the oven to 350 F.
  • Season chicken with salt, pepper and rub with both mustards.
  • In a Dutch oven or big oven-proof skillet melt butter on a medium high heat. Add chicken and brown from both sides, about 4-5 minutes per side. Transfer chicken to a plate.
  • To the same pan add shallot and onion and sauté for about 5 minutes until translucent.
  • Add chicken stock, scraping the brown bits off the bottom of the pan.
  • Add thyme and bay leaves and bring a mixture to a boil.
  • Stir in Crème Fraîche and return chicken back to the pan.
  • Cook uncovered in the oven for 50-60 minutes until chicken is completely cooked through and no longer pink in the middle.
  • Garnish with parsley and serve immediately!

Steps:

1 tablespoon olive oil
1 yellow onion (finely chopped (about 1/2 cup))

2 tablespoons heavy whipping cream

Steps:

  • Heat your cast iron skillet over medium heat. Season the chicken with salt and pepper.
  • Add the olive oil, then cook the chicken about 8 minutes per side, until golden brown and the internal temperature reaches 165º degrees. Transfer the cooked chicken to a plate.
  • In the same skillet, add the onions and season with salt and pepper. Cook for about 4 minutes, or until the onions soften and turn translucent. Add the garlic cloves, and cook just 30 seconds.
  • Add the white wine, dijon mustard, and stir to combine. Cook until the sauce has reduced by half, will take about 5 minutes. Turn the heat to low, then add the heavy cream and butter. Whisk to combine. Add the chicken back to the skillet to warm thru.

4 boneless skinless chicken breasts (1 1/2 - 2 pounds total)
1/4 teaspoon kosher salt
1/8 teaspoon coarse ground black pepper
1 tablespoon oil ((vegetable, canola or grapeseed))
1 medium shallot, finely diced
1 teaspoon finely chopped fresh rosemary
1 large clove garlic, minced (about a teaspoon)
1 tablespoon all-purpose flour
1/2 cup dry white wine ( (not sweet wine))
3 tablespoons grainy Dijon mustard
1 cup unsalted or reduced sodium chicken stock
1/2 cup heavy cream
Optional: fresh chives or parsley for garnish

  • Preheat oven to 400ºF.
  • Trim chicken and sprinkle both sides with salt and pepper.
  • Add oil to a large oven safe skillet over medium heat. When oil is hot, place chicken in skillet. Cook for 3-4 minutes or until golden brown and it removes easily from the pan (it shouldn't stick). Flip each piece over and cook for another 3-4 minutes.
  • Place the pan in the oven and bake for 10 minutes or until the internal temperature of the chicken breasts reaches 165ºF when checked with an instant-read thermometer in the thickest portion of the meat.

4 whole Boneless, Skinless Chicken Breasts
2 tbsp. Olive Oil
2 tbsp. Butter
3 whole Garlic Cloves, Minced
1 c. Brandy (or White Wine If Preferred)
1 tbsp. (heaping) Dijon Mustard
1 tbsp. (heaping) Grainy Mustard
1/4 c. (to 1/2) Heavy Cream
1/4 c. (to 1/2) Chicken Broth
Salt And Pepper, to taste

Steps:

  • *Amount of cream and broth has slightly decreased; add more as needed.Cut the chicken breasts in half lengthwise so that you have eight smaller, thinner chicken cutlets. Salt and pepper both sides.Heat oil and butter in a large skillet over medium-high heat. Cook cutlets on both sides until nice and golden brown and cooked through. Remove chicken from the skillet and keep on a plate. Reduce the heat to medium. Add the garlic to the pan and saute it for a minute, stirring to make sure it won't burn. Next pour in the brandy (or wine if using) being careful if cooking over an open flame. Then just let the booze bubble up and cook until it's reduced by half. Throw in the mustards and stir to combine, then pour in the cream. Stir in chicken broth, adding more if the sauce seems too thick. Taste sauce and adjust whatever you think it needs. Add chicken breasts back to the pan, nestling them into the sauce. Allow sauce to cook for another few minutes, shaking the pan if needed to move things around. Steps:

  • Mix the chicken with smashed garlic, salt and 1/2 tbsp pepper. Heat the oil in a non-stick frying pan and fry the chicken on low heat, turning occasionally, with cover on. Cook tenderly on all sides. Do not overcook or brown the chicken.
  • Meanwhile, beat the cream cheese and gently mix in the milk, the seasoning, remaining pepper and mustard powder. Add to the pan when the chicken is done on all sides. Cover and simmer on low heat until chicken is soft and completely cooked. If it becomes too dry before chicken is completely cooked, add more milk. Once cooked, remove the cover and simmer until desired consistency is reached. Add salt to taste.

4 whole chicken legs (2 lb total)

3/4 cup chopped shallots (2 large)
1/2 cup dry white wine
1 cup low-sodium chicken broth
2 teaspoons whole-grain or coarse-grain mustard
1/4 cup chopped fresh dill

Steps:

  • Whisk together flour, 1/4 teaspoon salt, and 1/4 teaspoon pepper in a pie plate or shallow bowl. Pat chicken dry, then dredge legs, 1 at a time, in flour, shaking off excess. Transfer to a sheet of wax paper, arranging chicken in 1 layer.
  • Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then brown chicken, skin sides down first, turning over once, 6 to 8 minutes total. Transfer chicken to a plate, then pour off all but 1 tablespoon fat from skillet.
  • Add shallots to skillet and sauté, stirring occasionally, until golden brown, 2 to 3 minutes. Add wine and deglaze skillet by boiling, stirring and scraping up brown bits. Add broth, mustard, and remaining 1/4 teaspoon salt and pepper. Bring to a simmer, then return chicken to skillet, skin sides up, along with any juices from plate, and cook over moderate heat, covered, until chicken is cooked through, about 25 minutes. Transfer chicken to a platter and boil sauce until reduced to about 1 cup and slightly thickened, 3 to 5 minutes. Remove from heat and stir in dill, then pour sauce over chicken.

It's rich and impressive enough to make for a dinner party, but I have no problem tackling it during a weekday. I feel like almost every French style dish gives you the best of both worlds like that.What makes this dish shine is searing the chicken thighs in the pan to crisp up the skin and create the base for the sauce. They're finished in the oven on a sheet pan so you can make the sauce while they roast. The tangy, creamy sauce comes together with lots of white wine, grainy mustard and capers - no cream added!The crispy chicken thighs and mustard sauce is delicious on its own or you can also pair it with a frisée salad, potatoes or even serve it over spaghetti.

Salt and fresh black pepper
1 Tbsp olive oil

  • Pre-heat the oven to 175˚C (350˚F).
  • Season the chicken generously on both sides with salt and fresh black pepper.
  • Heat the oil and butter in a large skillet over medium heat.
  • Sear the chicken, skin side down first for 3-4 minutes per side until golden brown and crispy. The chicken will release itself from the pan easily when it's ready to be flipped and taken out of the pan!
  • Transfer the chicken thighs to a sheet pan and roast in the oven for 18-22 minutes until the internal temperature reads 75˚C (165˚F). Roasting time will depend on the thickness of the chicken thighs so check the temperature.
  • Immediately after removing the chicken from the pan, turn the heat down to medium-low and add the shallots and thyme.
  • Sauté for 1-2 minutes until they begin to soften.
  • Add the flour and grainy mustard and cook for another minute until the rawness of the flour is cooked out.
  • Deglaze the pan with the white wine, scraping the bottom of the pan to release all of the browned bits from the chicken.
  • Turn the heat up to medium-high and reduce the wine by at least half.
  • Add the chicken stock and capers to the pan and simmer for 5-8 minutes until the sauce has reduced and has thickened.
  • Taste and season with salt, if needed, and lots of fresh black pepper.
  • Plate by spooning some of the pan sauce onto each serving dish, placing the chicken in the sauce, and then drizzling a little bit of sauce over the chicken. Garnish with lots of chopped parsley.

  • Mix together the butter, mustard, honey (fill the empty mustard jar with honey) paprika and lemon juice. Season and taste. You may need more lemon juice. It may tasta a little spicy, depending on what mustard you use but remember that will calm down a lot once it is cooked. In an ovenproof casserole, place the chicken thighs skin side down and pour over half the sauce. cook for 15 minutes in a moderate oven. Remove from the oven and turn the thighs over. pour over the remainder of the sauce and sprinkle each thigh with some poppy seeds. Place back in the oven for a further 10 mins or until the thighs are cooked through. Great served with creamy mashed potatoes and seasonal veg. Any remaining sauce can be spooned over you chicken and potatoes.

2 tablespoons extra-virgin olive oil, divided
1 onion, chopped
1/4 pound white button mushrooms, quartered
3 cloves garlic, minced

1 tablespoon flour
1 teaspoon dried tarragon
1/2 cup white wine
1 cup chicken stock, plus more if needed
1/4 cup Dijon mustard
2 tablespoons sour cream
Super Buttered Noodles, recipe follows
2 chicken bouillon cubes
1 pound egg noodles
3 tablespoons butter, softened
1 tablespoon sour cream
Chopped fresh parsley, for garnish
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Rinse and dry the chicken thighs and season with salt and pepper.
  • Heat 1 tablespoon olive oil in a Dutch oven over medium-high heat. Brown the thighs on both sides, working in batches if needed. Remove the chicken and set aside.
  • Add the remaining 1 tablespoon olive oil to the Dutch oven and cook the onions until soft, about 5 minutes. Add the mushrooms and continue to cook until the mushrooms have softened, 3 to 5 minutes. Stir in the garlic and cook until fragrant, about 2 minutes. Add the tomatoes and flour and cook, stirring, to remove the raw flour flavor, about 3 minutes. Stir in the tarragon. Turn up the heat and deglaze the pan with the white wine, allowing to bubble for a minute or two. Return the chicken to the Dutch oven. Add enough chicken stock to reach halfway up the sides of the chicken. Cover, place in the oven, and braise for 45 minutes, removing the lid halfway through.
  • When finished, remove the chicken from the Dutch oven and set aside. Add the mustard and sour cream and whisk to blend well. Return the chicken to the pan and allow the flavors to meld before serving, about 5 minutes. Serve over Super Buttered Noodles.
  • In a large pot filled with boiling water, dissolve the bouillon cubes and cook the noodles according to package directions. Drain the noodles in a colander and then nestle the colander into the pot so some of the pasta water goes into the pot as the pasta continues to drain. Remove the colander and stir the butter and sour cream into the pot until the butter melts. Add the parsley and the noodles. Season with salt and pepper. Toss to combine well. Pour into a serving bowl and serve.

I just love it, and the recipe makes enough sauce that you can enjoy it over noodles or rice. Although one of my favorite things is to have a nice crusty loaf of bread to sop up the sauce. 4 boneless skinned chicken breasts, cut into 1 1/2 inch pieces
1 tablespoon vegetable oil
1/3 cup dry white wine
1/2 cup whipping cream
1 tablespoon Dijon mustard

1/4 teaspoon dried tarragon
1 dash ground red pepper

Steps:

  • Brown the chicken in the oil in a large skillet over medium-high heat for 4 minutes or until done, turning occasionally. Remove the chicken from the skillet, reserving the drippings in skillet. Set the chicken aside; keep warm.
  • Add the wine to the drippings; cook over high heat, deglazing pan by scraping the particles that cling to the bottom. Reduce heat to medium. Stir in the whipping cream, Dijon mustard, lemon juice, salt, pepper, tarragon and a dash or ground red pepper. Cook, uncovered, until the mixture is thick enough to cat a spoon, stirring occasionally. Add the reserved chicken. Bring to a boil; cover, and reduce the heat. Simmer for 5 minutes. Serve.

Steps:

Reserve half of the sauce in a small bowl for basting.
