This is a third generation recipe and one that is about as simple as it gets. French-style green beans are topped with Chicken breasts, a creamy soup mixture, and a sprinkling of parmesan cheese and baked until bubbly. Best served over mashed potatoes or rice.

1 tablespoon olive oil
4 skinless, boneless chicken breast halves
2 (14.5 ounce) cans French-style green beans, drained
1 (10.5 ounce) can condensed cream of chicken soup
¾ cup mayonnaise
1 teaspoon garlic powder
¼ cup grated Parmesan cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat olive oil in a large skillet over medium-high heat. Quickly brown the chicken breast halves on both sides. Do not cook through. Remove from heat, and set aside.
  • Pour the green beans into a 2 quart casserole dish. Place the chicken on top of the beans. In a small bowl, mix together the cream of chicken soup and mayonnaise. Spread over the top of the chicken and beans. Sprinkle Parmesan cheese over the top.
  • Bake for 35 to 40 minutes in the preheated oven, until the chicken is no longer pink, and the cheese is browned.

2 tbsp Better Than Bouillon Organic Roasted Chicken Base
1/2 lb green beans, trimmed
2 tbsp butter
1 lb boneless skinless chicken breasts, sliced
3 cloves garlic, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
2 tbsp finely chopped fresh chives

Steps:

  • Cook pasta according to package directions with 1 tbsp Roasted Chicken Base; add green beans during the last 5 minutes of cooking time. Drain and reserve 1/4 cup cooking liquid.
  • Melt butter in large high-sided skillet set over medium heat; cook chicken and garlic for 3 to 5 minutes or until chicken starts to brown.
  • Stir in cream and remaining Roasted Chicken Base; bring to boil. Reduce heat to medium-low; cook for 5 to 8 minutes or until chicken is cooked through and cream is thickened slightly.
  • Add pasta, green beans and reserved cooking liquid to skillet; cook for 1 to 2 minutes or until pasta and green beans are well coated. Stir in Parmesan and chives.

Steps:

  • Heat the oil in a large skillet over medium-high heat. Add the chicken and cook until browned. Add garlic and onion, and reduce the heat to medium. Cook and stir just until fragrant. Mix in the green beans, cover and cook to your desired doneness, at least 5 minutes.

¼ cup balsamic vinegar
6 cloves garlic, (minced)

1 teaspoon pepper

1 pound green beans, (ends trimmed)
10 ounces (approximately 2 cups) cherry tomatoes
2 tablespoons olive oil
1 teaspoon kosher salt
½ teaspoon pepper
¼ cup parmesan cheese, (finely grated)
1 teaspoon fresh parsley, (for garnish)

Steps:

  • In a large bowl (or large plastic zipper bag), add the chicken, oil, vinegar, garlic, salt, pepper, and parsley. Toss to combine. Cover the bowl and chill the marinating chicken in the refrigerator for 30 minutes, up to overnight.
  • When ready, preheat the oven to 425°F and line a large baking sheet with parchment paper.
  • Add the green beans and cherry tomatoes in an even layer onto the baking sheet. Drizzle with oil, salt, and pepper. Toss to coat.
  • Remove the chicken from the marinade and nestle it into the veggies on the baking sheet. (Discard the marinade.)
  • Top with parmesan cheese.
  • Bake for 30 minutes or until chicken is cooked through with an internal temperature of 165°F.
