CHICKEN FRIED STEAK AND GRAVY

Categories     main-dish

Time 1h25m

Yield 6 servings

Number Of Ingredients 7

3 pounds round steak, thinly sliced into 3-inch pieces
Salt and ground black pepper
Salt and ground black pepper
4 1/4 cups all-purpose flour
5 large eggs, lightly beaten
2 1/4 cups whole milk
3 cups vegetable oil

Steps:

  • Place a large piece of plastic wrap on a clean surface. Place a piece of the steak on the plastic wrap and top with a second piece of plastic wrap. Using the textured side of a meat mallet, tenderize the steak until it is very thin. Flip and repeat on the other side. Repeat with the remaining pieces of meat. Season generously with salt and pepper. Set aside.
  • Place 4 cups of the flour in a large bowl or shallow dish. Combine the eggs and 1/4 cup of the milk in a separate bowl. Heat the oil in a large skillet over medium heat. Flick some flour into the oil; when it sizzles the oil is hot enough. Dredge the steak in the flour, coating both sides and shaking off excess. Dip in the milk and then again in the flour. Fry the steak, a few pieces at a time, until the edges turn golden brown, 3 to 4 minutes per side. Transfer to a paper towel-lined plate.
  • Pour the cooking grease into a heatproof bowl or measuring cup. Without cleaning the skillet, return it to the stove over medium-low heat. Add 1/4 cup of the drippings to the skillet, scraping up all the brown bits on the bottom of the pan with a wooden spoon. When the oil is hot, whisk in the remaining 1/4 cup flour until the flour begins to brown, about 2 minutes. Slowly add the remaining 2 cups milk, whisking constantly until the gravy begins to thicken, 5 to 7 minutes. Season with salt and pepper. Transfer the fried steak to a serving plate and drizzle with the gravy.

CHICKEN-FRIED STEAK (CHICKEN WITH CREAMY GRAVY)

Chicken-Fried Steak (Chicken With Creamy Gravy) image

A cast-iron skillet will work the best for this recipe, this also works well using beef that has been pounded thinly. Serve with fries or mashed potatoes...total comfort food! Make certain not to crush the crackers to a fine powder --- this is very good!

CHICKEN FRIED CHICKEN WITH WHITE GRAVY

Chicken Fried Chicken with White Gravy image

A true Southern comfort food, legend has it that chicken fried chicken was created by German immigrants in Texas during the 19th century when they adapted the wiener schnitzel by using beef instead of veal that was then twice-breaded and fried like fried chicken. In reality, chicken fried chicken and its cousin, chicken fried steak, are more closely related to Southern fried chicken, already popular throughout the American South by the 19th century. Over the years, the chicken fried steak technique was also used on chicken breasts, pounded thin and soaked in buttermilk, resulting in crispy, tender chicken. Like its steak counterpart, chicken fried chicken should be served with a peppery white gravy.

Time 1h

Yield 4 servings

Number Of Ingredients 16

4 boneless, skinless chicken breasts (about 1 1/2 pounds)
1 3/4 cups all-purpose flour
3/4 cup cornstarch
2 teaspoons paprika
1 1/2 teaspoons garlic powder
1/4 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper
1 1/4 cups buttermilk
1 tablespoon hot sauce
1 large egg
Canola, vegetable or peanut oil, for frying
3 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 1/2 cups whole milk
Kosher salt and freshly ground black pepper
1/2 teaspoon apple cider vinegar

Steps:

  • Preheat the oven to 200 degrees F. Fit cooling racks into 2 baking sheets.
  • Place 1 chicken breast in a one-gallon resealable plastic bag with the seal left open (alternatively, place between 2 pieces of plastic wrap). Pound with a meat mallet or rolling pin until it is 1/4 to 1/2 inch thick. Repeat with the remaining chicken.
  • Whisk together the flour, cornstarch, paprika, garlic powder, cayenne, 2 1/2 teaspoons salt and 1 teaspoon pepper in a shallow dish. Whisk together the buttermilk, hot sauce and egg in a medium bowl. Set up a dredging station by arranging the chicken, dry ingredients, wet ingredients and prepared baking sheet in an assembly line. Dredge 1 chicken breast in the dry ingredients to coat, then dip in the wet ingredients and shake off any excess. Dredge once again in the dry ingredients to coat and transfer to one of the cooling racks. Repeat with the remaining chicken.
  • Fill a deep cast-iron skillet with 3/4 to 1 inch of oil. Heat the oil over medium-high heat until a deep-fry thermometer registers 350 degrees F. Working in 2 batches, fry the chicken until golden brown, 4 to 5 minutes per side. Place on the second cooling rack and keep warm in the oven until ready to serve.
  • For the gravy: Melt the butter in a medium saucepan over medium heat. Add the flour and cook, whisking continuously, until light brown, about 2 minutes. Pour in the milk in a steady stream while whisking. Add 1 1/4 teaspoons salt and 1 teaspoon pepper, then the vinegar. Cook at a simmer, stirring constantly, until thickened, 1 to 2 minutes.
  • Serve the chicken fried chicken topped with the white gravy.

CHICKEN FRIED STEAK

Chicken Fried Steak image

Thin cube steak is coated in a delicious batter, fried to perfection then served with a homemade gravy - the ultimate comfort food dinner!

Provided by Karlynn Johnston

Categories     Main Course

Number Of Ingredients 15

four 1/2 pound beef cube steaks
1 teaspoon black pepper
¾ teaspoon salt
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon onion powder
1 ½ cups buttermilk
1 large egg
1 tablespoon Tabasco sauce
1 tablespoon minced garlic
3 cups vegetable oil
¼ cup all-purpose flour
2-3 cups whole milk
salt and ground black pepper to taste

Steps:

  • Preheat your oven to 250 °F and get out an oven safe platter/pan.
  • Start by pounding the steaks to about 1/4-inch thickness to ensure even cooking throughout.
  • Salt and pepper each steak on both sides thoroughly.
  • In a medium bowl, add the 2 cups of flour, baking powder, baking soda, onion powder and set aside.
  • In a second bowl, mix together the buttermilk, egg, Tabasco sauce and minced garlic.
  • Place the steak first in the flour, covering completely on all sides, then remove and dredge in the second bowl with the remaining ingredients. Ensure you cover completely.
  • Now place the steak back into the flour mixture and coat thoroughly so that the steaks are covered in the dry flour. Place on a baking sheet and let rest while you heat the oil.
  • Place a 1/4 inch of oil in a deep skillet and heat over medium-high heat. Fry the steaks until golden brown. This can take up to 5 minutes per side but be sure to keep an eye on them to avoid burning.
  • Once browned, remove onto a plate covered in paper towels to soak up any excess oil, then set on the ovensafe platter and place into the preheated oven.
  • Carefully drain all but 1/4 cup of the fat from the skillet. Try to leave as much of the fried brown bits as possible as these will add flavour to your gravy.
  • Heat the skillet to medium-low heat now with the leftover oil still in it. Whisk in the 1/4 cup of flour and scrape the bottom of the pan to remove all browned bits into the soon-to-be gravy mixture. Stir in milk, raising the heat to medium and bring to a simmer.
  • Continue cooking until the gravy thickens, about 5 minutes give or take. If the gravy gets too thick, add in a little more milk. Season with salt and pepper to taste.
  • Spoon gravy over steaks and serve.

MARYLAND FRIED CHICKEN WITH WHITE GRAVY RECIPE

Maryland Fried Chicken With White Gravy Recipe image

Ever wonder why there isn't a chicken-fried chicken alternative to chicken-fried steak? Turns out it exists, and it's called Maryland fried chicken. Shallow fried with a simple dredging of seasoned flour until golden, then topped with a white gravy made in the skillet after frying, this is a version of fried chicken you need to know about.

Provided by Daniel Gritzer

Categories     Entree     Mains

Time 30m

Yield 4

Number Of Ingredients 7

1 cup all-purpose flour
Kosher salt and freshly ground black pepper
1 whole chicken (3 to 4 pounds), cut into 8 serving pieces , backbone reserved
Vegetable oil or lard, for frying
2 tablespoons butter
1 1/2 cups whole milk
Corn on the cob, white bread with butter, and mashed potatoes, for serving

Steps:

  • Preheat oven to 200°F. In a shallow bowl, season flour with salt and pepper. Season chicken lightly with salt and pepper and dredge each piece in flour, shaking off excess. Reserve seasoned flour.
  • In a large cast iron or heavy non stick skillet, heat 1/4 inch oil over high heat to 350°F. Carefully lay chicken pieces in hot oil, skin side down, and fry until lightly browned, 1-2 minutes. Using tongs, turn chicken and brown lightly on other side. Turn chicken once more so that it's skin side down again and cover skillet. Cook, covered for 2 minutes. Remove cover and continue frying chicken, turning as necessary, until will browned on both sides and just cooked through, about 5 minutes longer. Transfer chicken to a wire rack set over a baking sheet and sprinkle lightly with salt. Transfer to oven to keep warm.
  • Pour off grease into a heatproof container and return skillet to burner. Lower heat to medium-high, add butter and cook until melted and foamy, whisking to scrape up any browned bits. Add 2 tablespoons of reserved seasoned flour, whisking to form a paste. Whisk in milk and cook until a smooth gravy forms that coats the back of a spoon, about 3 minutes. Season gravy with salt and a generous amount of black pepper.
  • Load chicken onto plates and pour gravy on top. Serve with sides like ears of corn, soft white bread and butter, and mashed potatoes.

TEXAS-STYLE CHICKEN FRIED STEAK WITH CREAM GRAVY

Texas-Style Chicken Fried Steak With Cream Gravy image

It is hard to get much more Texan than Chicken Fried Steak. Quality of the beef really counts in this dish. This recipe calls for cube steaks, but good round steak that you have asked the butcher to run through the tenderizer or that you have tenderized yourself with a mallet (no big deal and can be a real stress reliever) can be even better. NOTE TO CREAM GRAVY NOVICES: Gravy-making is an inexact science. Cream gravy is supposed to be thick, but if you think it's too thick, add more liquid until you're satisfied with it.

Provided by Nana Lee

Categories     Steak

Time 40m

Yield 4 serving(s)

Number Of Ingredients 14

1 lb tenderized beef cutlets (4 cube steaks) or 1 lb round steak, cut into 4 pices and tenderized
1 egg
1/4 cup milk
all-purpose flour
cooking oil or melted Crisco
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon paprika
1/4 teaspoon white pepper
3 tablespoons flour (use the left-over flour from the chicken fried steak recipe)
3/4 cup milk
3/4 cup water
salt
pepper

Steps:

  • STEAKS:.
  • Beat together the egg and milk and set aside.
  • Mix together the salt, black pepper, paprika and white pepper and sprinkle on both sides of beef cutlets.
  • Dredge the cutlets in the flour, shaking off the excess.
  • Then dip each cutlet in the egg/milk mixture, then back in the flour. (You're going to get your hands messy here, so take your rings off.)
  • Set cutlets aside on a piece of waxed paper.
  • Heat the cooking oil in a large cast-iron or other heavy skillet over medium-high heat for a few minutes.
  • Oil should be about a half-inch deep in the pan.
  • Check the temperature with a drop of water; if it pops and spits back at you, it's ready.
  • With a long-handled fork, carefully place each cutlet into the hot oil.
  • Protect yourself (and your kitchen) from the popping grease that results.
  • Fry cutlets on both sides, turning once, until golden brown.
  • Reduce heat to low, cover and cook 4 or 5 minutes until cutlets are done through.
  • Drain cutlets on paper towels.
  • CREAMY GRAVY:
  • After the cutlets are removed from the pan, pour off all but about 2 tablespoons of oil, keeping as many as possible of the browned bits in the pan.
  • Heat the oil over medium heat until hot.
  • Sprinkle flour in the hot oil.
  • Stir with a wooden spoon or whisk, quickly, to brown the flour.
  • Gradually stir in milk and water, mixed together, stirring constantly with the wooden spoon or whisk and mashing out any lumps.
  • Lower heat, and gravy will begin to thicken.
  • Continue cooking and stirring a few minutes until gravy reaches desired thickness.
  • Check seasonings and add more salt and pepper according to your taste.

CHICKEN FRIED STEAK WITH GRAVY

Chicken Fried Steak with Gravy image

Provided by Ree Drummond : Food Network

Categories     main-dish

Time 1h

Yield 6 servings

Number Of Ingredients 16

1 1/2 cups whole milk
2 large eggs
2 cups all-purpose flour
2 teaspoons seasoned salt
Freshly ground black pepper
3/4 teaspoon paprika
1/4 teaspoon cayenne pepper
3 pounds cube steak (tenderized round steak that's been extra tenderized)
Kosher salt
1/2 cup canola or vegetable oil
1 tablespoon butter
1/3 cup all-purpose flour
3 to 4 cups whole milk
1/2 teaspoon seasoned salt
Freshly ground black pepper
Mashed potatoes, for serving

Steps:

  • For the steak: Begin with setting up an assembly line of dishes. Mix the milk with the eggs in one; the flour mixed with the seasoned salt, 1 1/2 teaspoons black pepper, paprika and cayenne in another; and the meat in a third. Then have one clean plate at the end to receive the breaded meat.
  • Work with one piece of meat at a time. Sprinkle both sides with kosher salt and black pepper, then place it in the flour mixture. Turn to coat. Place the meat into the milk/egg mixture, turning to coat. Finally, place it back in the flour and turn to coat (dry mixture/wet mixture/dry mixture). Place the breaded meat on the clean plate, then repeat with the remaining meat.
  • Heat the oil in a large skillet over medium heat. Add the butter. Drop in a few sprinkles of flour to make sure it's sufficiently hot. When the butter sizzles immediately, you know it's ready. (It should not brown right away, if it does, the fire is too hot.) Cook the meat, 3 pieces at a time, until the edges start to look golden brown, about 2 minutes each side. Remove the meat to a paper towel-lined plate and keep them warm by covering lightly with another plate or a sheet of foil. Repeat until all the meat is cooked.
  • After all the meat is fried, pour off the grease into a heatproof bowl. Without cleaning the skillet, return it to the stove over medium-low heat. Add 1/4 cup of the grease back to the skillet and allow it to heat up.
  • For the gravy: When the grease is hot, sprinkle the flour evenly over the grease. Using a whisk, mix the flour with the grease, creating a golden-brown paste. Add more flour if it looks overly greasy; add a little more grease if it becomes too pasty/clumpy. Keep cooking until the roux reaches a deep golden brown color.
  • Pour in the milk, whisking constantly. Add the seasoned salt and black pepper to taste and cook, whisking, until the gravy is smooth and thick, 5 to 10 minutes. Be prepared to add more milk if it becomes overly thick. Be sure to taste to make sure gravy is sufficiently seasoned.
  • Serve the meat next to a big side of mashed potatoes. Pour gravy over the whole shebang!

  • Finally place the steak back into the flour mixture, being sure to press the flour into the steaks, coating both sides. Repeat until all steaks have been coated.
  • Preheat your oven to 200 F. Place a cooling rack on top of a baking sheet and place it into the oven. (This will be where you will keep the cooked steaks to keep them warm until you are ready to serve).
  • Fill a large deep skillet with about an inch of canola oil and heat to 350 F.
  • Fry the steaks 1-2 at a time, (about 2-3 minutes per side) until golden. Place finished steaks on the cooling rack in the oven. Repeat until all steaks have been fried.
  • Carefully drain the oil from the pan and wipe out the pan. (You can leave the flavorful brown bits in the bottom of the pan if desired. If you do, this will result in a tan and not white gravy though)
  • Add butter to the pan over medium heat.
  • Once the butter has melted, add flour to the pan.
  • Cooked while stirring constantly until golden brown,(about 2-3 minutes). This will remove the raw flour taste.
  • Gently whisk in the broth and milk a little at a time.
  • Cook while stirring constantly to remove any lumps and until the mixture begins to thicken to your liking. (Cook longer if you want thicker gravy or add more milk if you want thinner gravy)
  • Season gravy with salt, pepper, onion powder, garlic powder, and a bit of thyme until your desired flavor is reached (Be sure to taste after each seasoning to prevent overseasoning the gravy. Let your tastebuds be your guide. The end result should taste good enough to eat plain!)
