Steps:
- Preheat oven to 200°. Place a wire rack on a rimmed baking sheet; spray rack with cooking spray.
- In a small bowl, whisk together Italian seasoning, garlic powder, salt, and pepper. In a medium bowl, combine beef, vinegar, and 2 tablespoons seasoning mixture. Divide mixture into 6 portions; shape each portion into a ½-inch-thick patty.
- In a shallow dish, whisk together 1¼ cups flour and baking powder. In another shallow dish, combine buttermilk and hot sauce. Working in batches, dredge patties in flour mixture, shaking of excess. Dip in buttermilk mixture, letting excess drip off. Dredge again in flour mixture, gently pressing to adhere. Place on prepared rack.
- In a large cast-iron skillet, pour oil to a depth of 1 inch. Heat over medium heat until a deep-fry thermometer registers 350°.
- Working in batches, fry, turning occasionally, until golden brown, 5 to 6 minutes. Remove patties using a slotted spoon, and let drain on paper towels. Transfer steaks to a clean wire rack or baking sheet, and place in oven to keep warm. Reserve ¼ cup frying oil.
- In a 10-inch cast-iron skillet, heat reserved frying oil over medium heat. Whisk in remaining ¼ cup flour and remaining seasoning mixture. Cook, whisking constantly, until flour is fully combined and mixture begins to bubble, about 2 minutes. Slowly whisk in milk. Cook, whisking constantly, until thickened and bubbly, about 5 minutes. Season with salt to taste. Serve gravy with patties. Garnish with pepper and green onion, if desired.

- Form the ground beef into quarter pound patties. Sprinkle with salt and pepper as desired and place the burgers in the refrigerator to chill for 1 hour or as long as overnight. Place the milk in a shallow bowl. Place the flour in another shallow bowl. Heat the shortening in a heavy, deep skillet over medium-high heat to 360 degrees F. Dip each burger patty first in the milk, coating it completely and letting any excess drip off. Next, coat the burgers in the flour on both sides. Place the burgers in the hot shortening and cook on each side until crispy and browned, about 3-4 minutes per side. Remove the burgers from the skillet and let drain on paper toweling. Serve on buns with your favorite burger toppings or try a southern twist and serve them on buns with country style white gravy.

- Combine all ingredients for dredge in a shallow dish and mix well.
- Mix the 1 teaspoon of salt and 1/4 teaspoon pepper into ground beef. Divide ground beef into 8 equal pieces and flatten into 1/2-inch thick patties.
- Pour buttermilk into a shallow bowl.
- Dredge patties in dredge mixture, dip in buttermilk, and then dredge a second time, making sure they are coated well.
- Pour 1/2-inch of oil in a deep cast iron skillet (or another type of skillet). Heat oil to 350 degrees.
- Fry 4 pieces at a time, cooking for 3 to 4 minutes per side. Drain on paper towels.
- Repeat with remaining 4 patties. If desired you can keep the first 4 warm in a 200 degree oven.
- To make gravy, pour excess oil out of the pan, leaving 1/3 cup of oil and the browned bits in the pan.
- Add flour and place over medium heat. Whisk for 1 minute.Whisk in milk, onion powder, salt and pepper. Cook until thick and bubbly. If you want the gravy thinner, add a little more milk.

Forget the expensive chicken fried steak, use hamburger meat. This is a wonderful recipe! I use the same ingredients, that I use to make chicken fried steak.

- Put the 2 tbsp of oil in frying pan, and heat it up on medium heat.
- In a medium bowl mix the eggs salt and pepper, set aside.
- On a large plate make an even layer of the flour, set aside.
- I formed the hamburger meat into patties a little bigger then usual, about the size of a chicken fried steak, and made them as thin as possible.
- Then I put the pattie in the egg mixture. Let it soak a little, if you don't the meat will fall apart easy.
- Then I placed the pattie in the flour and coat both sides very well. Now this is my preference, I like to double dip my meat, now if you do that you need to be careful the hamburger meat doesn't fall apart.
- After I coat the pattie I put it in the frying pan. I usually let mine fry about 5 mins on each side ( I like them very dark and crispy).
- Then serve on a piece of bread and peppered gravy or with your favorite sides.

- In a shallow dish beat together egg and 1/2 cup milk, set aside.
- In another shallow dish or on a plate mix together 3/4 cup of flour,seasoned salt,pepper,and garlic powder.
- Shape ground beef into three equal sized oval "steaks" and flatten into 1/4 inch thickness.
- Add each "steak" one at a time to egg mixture, coating both sides well.
- Then add each "steak" to seasoned flour,making sure to cover each side well.
- Heat oil over medium heat in skillet large enough to hold all the "steaks".
- Add "steaks" to hot but not smoking oil, cook until both sides are golden brown.
- Remove "steaks" and keep warm.
- To make gravy, drain all but 3 Tablespoons oil, add flour and stir into oil until a paste like texture is reached.
- Cook this mixture (roux) for about 5 minutes on medium heat to eliminate the raw flower taste, then warm the milk before adding to roux.
- Stir in milk a little at a time until desired thickness is reached, if you want it a little thinner add a bit of water.
- At this point,taste and add more seasoning if desired.
- Pour gravy over "steaks" and mashed potatoes.

- Pour enough oil to cover bottom of skillet or frying pan. Heat pan to medium heat (300-350 degrees).
- Mix flour, salt and pepper in pie dish.
- Pour Milk into a bowl.
- Put saltine cracker crumbs in another pie dish.
- Beat chicken breats with mallet to desired thickness. (I usually place breast in a ziploc bag to beat and I like the breasts pretty thin.).
- Dip in milk, then flour mixture, then eggs, then saltines.
- Place breasts in pan. Repeat with each chicken breast.
- Cook chicken for approximately 5 minutes each side or until a golden brown.

- Remove from pan and place on a papertowel lined plate to remove excess grease.
- Serve with gravy to top.

My mother made these for us four girls. Money was tight and she couldn't afford steak very often. These use ground beef. I use a 80/20 lean to fat. You can use ground round but it tends to be a little too dry. This is great with mashed potatoes. Everyone I have ever made it for loved it. The first time my DH had it he never knew it was ground beef. He just commented on the tenderness of the steak!

- Mix 2 cups flour with salt and pepper.
- Shape ground beef into four thin patties.
- Dip patties into flour, then beaten egg, then flour again.
- Put shortening, oil or lard into a heavy skillet over medium high heat.
- When a little flour sprinkled into skillet begins to sizzle, add patties.
- Cook for about 5 minutes per side.
- Remove and drain on paper towels.
- To make gravy:.
- Remove all but four tablespoons of fat from skillet.
- Stir in 4 tablespoons of dredging flour and 1/4 teaspoon salt.
- Stir, scraping up browned bits, for about one minute till light brown.

When I moved to Oklahoma from Florida, I learned "Okies" love their chicken fry. In fact, if you ask someone who has ever traveled old Route 66 from Miami (Okies pronounce this My-am-uh) to the town of Texola what's the worst food you can eat they'll likely say "chicken fried steak". The best thing you can eat on Route 66? That would also be chicken fried steak. As contradictory as it may seem it's true! I tried to lighten this dish up by air frying, but feel free to grab a cast iron skillet and cook these steaks up too!

- Combine milk, cola, and steak sauce in a large resealable dish or bag and add the tenderized round steak. Marinate for 30 minutes, or overnight.
- Combine flour, salt, pepper, paprika, granulated onion, and granulated garlic for the chicken fry breading in a shallow dish. Whip egg in a second shallow dish until light and frothy for the chicken dip. Add buttermilk, salt, and pepper.
- Drain steaks from the steak marinade and dredge in chicken fry mixture, shaking off excess. Then dredge in the chicken dip mixture, allow excess to drip off. Dredge in the chicken fry mixture again, shaking off excess. Place steaks on a sheet pan and press any remaining flour mixture onto the steaks. Let stand for 10 minutes.

- Divide the meat into 4 pieces, and flatten into thin beef patties. Heat a heavy skillet over medium heat until almost smoking, and cook the beef patties until browned on both sides, about 4 minutes per side; set the cooked burgers aside. Drain excess grease but leave any browned drippings in the skillet.
- In a shallow bowl, mix together 1 cup of flour with salt and black pepper. In a separate shallow bowl, beat the eggs until smooth, mixing in a half teaspoon of water if needed.
- Heat the vegetable oil in the skillet over medium heat. Dip both sides of cooked burgers into the eggs, then dredge in the seasoned flour; repeat 3 times to build up a thick coating on the burgers. Place the burgers into the hot oil, and pan-fry until golden brown on both sides, about 5 minutes per side. Set burgers aside.
- Spoon away any excess vegetable oil. Melt butter in the skillet over medium heat, and stir to loosen any brown flavor bits left in the bottom of the skillet. Although updated for just four servings this was a favorite for Sunday dinner where mom would turn 2 pounds of ground beef into something that would feed her family of nine and make us feel like we had dined at the nicest restaurant in town. There is no way it could have tasted any better to her family.

- 1. Place the flour in a shallow dish
- 2. whisk the egg and milk together in another shallow dish.
- 3. Place the cracker crumbs in a shallow dish
- 4. Make four patties out of the ground beef
- 5. Place enough oil in either a nine or ten in skillet to be about an 1/8 to 1/4 inch deep and begin heating the oil on medium heat.
- 6. Dredge the patties in first the flour be sure to coat both sides really well, then dip into the egg milk mixture coating both sides. ( this is the secret to getting your cracker or bread crumb coating to stick on any meats when you use the flour first then your egg mix it forms a type of glue that your cracker or bread crumb coatings stick to easier.) Last coat both sides well with the cracker crumbs. Salt and pepper to taste.
- 7. When oil is hot place your patties in the pan and fry on each side 7 or 8 minutes until nicely golden brown and juices run clear.
- 8. Mom always made homemade cream gravy, mashed potatoes and corn on the cob when in season along with her hot from the oven biscuts with butter and honey from our own hive. Oh my was this a wonderful meal.
