FRIED VENISON (DEER) STEAKS
This is how I remember eating deer growing up. It is easy and I have never had any issues with a gamey taste. But if you are afraid of that you can soak you deer in milk for about 30 minutes. Great with fried potatoes and a salad. I like mine with steak sauce (57).

- Place steaks in between plastic wrap and pound out. I use the flat side of the meat mallet instead of the pointy side. I do not get too thin because it will dry out too much while cooking.
- Put seasoning in with flour.
- Dredge steak and fry in skillet.
- Cooking time is about 3 minutes each side. Enjoy.

CRISPY CHICKEN FRIED VENISON STEAKS
This venison version of chicken fried steak comes out crispy, and the flavor is as good as its beef counterpart. The caramelized onions and gravy make it a solid meal for the whole family.

- Beat the egg in a bowl, then whisk in 1 cup of milk and the hot pepper sauce. Pound the venison steaks with a meat mallet to 1/4 inch thick, and place into the milk mixture. Stir together the cornmeal, bread crumbs, cornstarch, baking soda, black pepper, and garlic salt in a shallow dish.
- Remove the venison steaks from the milk mixture one at a time, allowing the excess to run off, and press into the bread crumb mixture; set aside. Reserve the remaining bread crumb mixture.
- Heat the oil in a large skillet over medium heat. Place as many breaded venison steaks into the pan as will fit without overlapping. Cook until the venison is golden brown on both sides, about 3 minutes per side. Remove to drain on a paper towel lined plate and keep warm. Repeat with remaining venison.
- Once the venison has finished cooking, stir the onions into the hot oil, and cook until dark brown, about 5 minutes. Pour off and discard the oil, remove the onions to a plate and set aside. Stir the reserved bread crumb mixture into the hot skillet, and cook for a few seconds until it begins to toast. Stir in the remaining cup of milk, and simmer until the milk has thickened, about 5 minutes. Pour the gravy over the venison steaks and top with the caramelized onions to serve.

- Sprinkle 1/4 teaspoon salt and 1/4 teaspoon black pepper evenly over steaks.
- Combine cracker crumbs, 1 cup flour, 1 teaspoon salt, 1/2 teaspoon black pepper, red pepper, and baking powder.
- Whisk together 3/4 cup milk and eggs. Dredge steaks in cracker mixture; dip in milk mixture, and dredge again in cracker mixture.
- Pour oil into a 12" skillet; heat to 360 degrees (do not use a nonstick skillet). Fry steaks 3-4 minutes. Turn and fry 2-3 minutes or until golden. Remove steak to wire rack in a jellyroll pan. Keep steaks warm in a 225 degree oven. Carefully drain hot oil, reserving cooked bits and 1 tablespoon of dripping in skillet.
- Whisk together remaining 4 cups of milk, 1/4 cup of flour, remaining 1 teaspoon salt, and remaining 1 teaspoon black pepper. Add milk mixture to reserved dripping in skillet; cook, whisking constantly, over medium-high heat for 10-12 minutes, or until thickened. Serve gravy with steaks.

I was looking for something different to do with my man's fresh kill, so I just whipped this up from stuff I had in the cupboard. My husband and children loved it. Serve with mashed potatoes and gravy (I used brown gravy, but country gravy may be used for a milder taste).

When we cut our deer loins up for steaks, we cube them with a machine. So, actually it is tenderized twice, where the pattern on meat is cubed. I got tired of just the same old thing ,so I thought, why not try this? Glad I did.

- 1. Beat together the egg & milk. Set aside.
- 2. Lay meat, a few pieces at a time, on counter. Take a small cast iron skillet, or other skillet that is not rounded on bottom, & with the bottom edge of the pan, slightly flatten the meat. So, if the meat was 1/2" thick to start with, flatten to about 1/4".
- 3. Place the deer steak in egg mixture.
- 4. Place the flour in sorta deep bowl to prevent a mess.
- 5. Remove the meat from mix, one piece at a time, & shake off excess liquid & place in flour mixture. With hands, cover both sides of meat with flour & press it onto it. Shake off excess & place on a piece of wax paper. Repeat with all pieces of meat. Do not stack.
- 6. Heat 1/4" canola oil in cast iron skillet or whatever you fry in. Heat on med-high heat.
- 7. As you place the meat in the fryer, re-dip in your flour first & shake off excess.
- 8. Place in hot oil & fry until golden brown on one side, flip & repeat on other side.
- 9. Drain on paper towels. Salt & pepper on top. Serve hot with mashed potatoes & white gravy.
- 10. This has absolutely no deer taste. It tastes just like the normally chicken fried steak without the gristle & added fat.
CHICKEN FRIED DEER STEAK
We eat a lot of venison and wild turkey, this recipe is delicious when served with mashed potatoes & gravy, fried okra, greens and some skillet cornbread!

- 1. Soak venison steaks in ice cold salt water for ½ hour to 1 hour prior to cooking. Place flour in a large bowl and add salt & pepper, mix together. In another bowl beat eggs with milk.
- 2. Place oil in skillet (you want about 1" of oil in the skillet) and heat to medium high, you want to cook the steaks fast and have them sizzling when you first drop them in, but not hot enough to burn them quickly.
- 3. Drain venison steaks and salt & pepper them well, then dip them in egg wash and cover each steak with flour (I usually do this twice per steak, egg wash then flour, to get a lot of coating on it), then drop into hot skillet and cook until golden brown on each side (hint, don't flip steaks the first time until the bottom is crispy, you will lose coating).
- 4. Drain on paper towels and serve with some southern home-made fixins: Mashed potatoes, milk gravy, fried okra, collard greens, buttered corn and cornbread!

- For the steak: Begin with setting up an assembly line of dishes. Beat the milk with the eggs in one; the flour mixed with the seasoned salt, 1 1/2 teaspoons black pepper, paprika and cayenne in another; and the meat in a third. Then have one clean plate at the end to receive the breaded meat.
- Work with one piece of meat at a time. Sprinkle both sides with kosher salt and black pepper, then place it in the flour mixture. Turn to coat. Place the meat into the milk/egg mixture, turning to coat. Finally, place it back in the flour and turn to coat. Place the breaded meat on the clean plate, then repeat with the remaining meat (dry mixture/wet mixture/dry mixture).
- Heat the oil in a large skillet over medium heat. Add the butter. Drop in a few sprinkles of flour to make sure it's sufficiently hot. When the butter sizzles immediately, you know it's ready. (It should not brown right away, if it does, the fire is too hot.) Cook the meat, 3 pieces at a time, until the edges start to look golden brown, about 2 minutes each side. Remove the meat to a paper towel-lined plate and keep them warm by covering lightly with another plate or a sheet of foil. Repeat until all the meat is cooked.
- After all the meat is fried, pour off the grease into a heatproof bowl. Without cleaning the skillet, return it to the stove over medium-low heat. Add 1/4 cup of the grease back to the skillet and allow it to heat up.
- For the gravy: When the grease is hot, sprinkle the flour evenly over the grease. Using a whisk, mix the flour with the grease, creating a golden-brown paste. Add more flour if it looks overly greasy; add a little more grease if it becomes too pasty/clumpy. Keep cooking until the roux reaches a deep golden brown color.
- Pour in 3 to 4 cups milk, whisking constantly. Add the seasoned salt and black pepper to taste and cook, whisking, until the gravy is smooth and thick, 5 to 10 minutes. Be prepared to add more milk if it becomes overly thick. Be sure to taste to make sure the gravy is sufficiently seasoned.
- Serve the meat next to a big side of mashed potatoes. Pour gravy over the whole shebang!

- Cut the venison roasts into 1-inch-thick cutlets. You can make cuts partially through and butterfly in half for larger pieces. Take a meat mallet and pound each cutlet to ¼ inch thick. Season with salt and pepper on both sides.
