Chicken Enchiladas with Tomatillo Sauce image

Light and fresh chicken enchiladas filled with tender, smoky chicken and cheddar cheese in a tangy tomatillo sauce.

Provided by Jennifer Segal, inspired by a recipe in Cook's Illustrated

Categories     Dinner

Time 1h

Yield 4

Number Of Ingredients 24

1 tablespoon olive oil
1 medium yellow onion, roughly chopped
3 medium cloves garlic, peeled and smashed with the side of a chef's knife
¾ pound tomatillos, husks and stems removed, cut into 1-inch chunks
3 jalapeño chiles, seeded and roughly chopped (see note)
1 teaspoon sugar
¾ teaspoon salt
¼ teaspoon ground cumin
1 pound chicken tenderloins
2 teaspoons ground cumin
1½ teaspoons smoked paprika
1 teaspoon salt
2 tablespoons olive oil
1 medium yellow onion, chopped
½ cup chopped fresh cilantro leaves
8 ounces (2 cups) shredded sharp cheddar cheese
11 6-inch corn tortillas
2½ tablespoons olive oil
3 ounces (¾ cup) shredded sharp cheddar cheese
Smoked paprika
¾ cup sour cream
1 small heart of romaine lettuce (or 5-6 leaves), shredded
1 avocado diced
1 lime, sliced

Steps:

  • Heat the oil in a medium saucepan over medium heat. Add the onions and garlic and cook, stirring occasionally, until softened, about 5 minutes. Add the tomatillos, jalapeños, sugar, salt, cumin and ⅓ cup water; bring to a simmer, then reduce the heat to medium-low and simmer until tomatillos are softened, about 8 minutes. Transfer the mixture to a blender and purée until completely smooth. Set aside.
  • Place the chicken tenderloins in a medium bowl and sprinkle with the cumin, smoked paprika and salt. Toss with tongs until the chicken is evenly coated with the spice blend.
  • Heat the oil in a large nonstick sauté pan until shimmering but not smoking. Add the chicken and cook until just done, about 2 minutes per side; transfer to a plate to cool. Do not rinse the pan. Add the onions and reduce the heat to medium. Cook, stirring occasionally, until soft, about 5 minutes. Remove the pan from the heat.
  • Once the chicken is cool enough to handle, shred it into bite-sized pieces. (All tenderloins have a tough tendon running through them; just remove it.) Add the shredded chicken to the pan with the onions, along with the chopped cilantro and shredded cheese.
  • Preheat oven to 400 degrees.
  • Spread ¾ cup of the tomatillo sauce on the bottom of a 9 x 13-inch baking dish.
  • Pour the oil into a small bowl or ramekin. Using a pastry brush (or your hands), brush both sides of each tortilla with oil, then stack them on a plate and microwave until hot and steamy, 1½ - 2 minutes. This makes them pliable.
  • Spoon about ⅓ cup of the filling down the center of each tortilla. Roll each tortilla tightly and place side by side in the baking dish, seam side down.
  • Pour the remaining chili sauce over the top, and use the back of a spoon to spread evenly over each tortilla. Sprinkle the cheese down the center of the enchiladas. Bake until hot and bubbling, 15-20 minutes. Sprinkle the smoked paprika down the center of the enchiladas and serve immediately with sour cream, lettuce, avocado and lime wedges. (The nutritional information below does not include the sour cream, romaine lettuce or avocado used to top the enchiladas.)
  • Note: If you touch the seeds of the jalapeño pepper, just be sure to wash your hands well and avoid touching your eyes.
  • Freezer-Friendly Instructions: The cooked enchiladas can be frozen for up to 3 months. When ready to serve, defrost them in the refrigerator for 24 hours and then reheat, covered in foil, in a 325°F oven until hot.

CHICKEN ENCHILADAS WITH ROASTED TOMATILLO CHILE SALSA

Chicken Enchiladas With Roasted Tomatillo Chile Salsa image

This is a recipe from Tyler Florence that I'm filing here for safekeeping. He suggests serving it with Spicy Black Beans and Yellow Rice, so I'll post those, as well. I've served these dishes for friends on several occasions, with very good results (i.e., we LOVE it!)

Provided by SLTowne

Categories     Chicken

Time 1h15m

Yield 8 serving(s)

Number Of Ingredients 21

1 lb tomatillo, husked
1 white onion, peeled, sliced, quartered
4 garlic cloves
2 jalapenos
2 teaspoons ground cumin
1 teaspoon salt
1/2 cup cilantro, chopped
1/2 lime, juice of
2 tablespoons extra virgin olive oil
1/2 medium onion, diced
3 garlic cloves, chopped
1 1/2 teaspoons ground cumin
1/4 cup all-purpose flour
2 cups chicken stock, storebought
1/4 cup cilantro, chopped
1 (3 lb) rotisserie-cooked chicken, from the deli boned, meat shredded (about 3 pounds)
1 teaspoon salt
1 teaspoon fresh ground black pepper
10 large flour tortillas
1/2 lb monterey jack cheese, shredded
2 cups sour cream

Steps:

  • Preheat oven to 400 degrees F.
  • For the salsa:.
  • On a baking tray, roast tomatillos, onion, garlic and jalapenos for 12 to 15 minutes. Transfer the roasted vegetables and any juices on the bottom of the tray to a food processor. Add the cumin, salt, cilantro, and lime juice and pulse mixture until well combined but still chunky.
  • Enchiladas:.
  • Meanwhile heat a 2 count of olive oil in a medium saucepan over medium heat. Add the onion and cook until soft and caramelized - this should take 5 to 7 minutes. Add the garlic and cumin then cook for a further minute. Sprinkle on the flour and stir to ensure the flour doesn't burn then gradually add the chicken stock to make a veloute. Continue stirring over a low simmer until the flour cooks and the liquid thickens. Turn off the heat, add half of the roasted tomatillo chile salsa, some additional fresh chopped cilantro and fold in the shredded chicken meat. Season, to taste, with salt and pepper.
  • Change the temperature of the oven to 350 degrees F and begin assembling the dish. Take a large baking dish and smear the bottom with some of the reserved tomatillo salsa. Now take the flour tortillas and briefly flash them over the stove-top flame (or put them briefly under the broiler if using an electric stove). Using a shallow bowl, coat each tortilla lightly with the reserved salsa mix. Put a scoop of the shredded chicken-enchilada mix on top of the tortilla followed by a sprinkle of the shredded cheese. Fold the tortilla over the filling and roll like a cigar to enclose it. Using a spatula place the tortillas in the baking dish and continue to do the same with all the tortillas. Finally pour over some more of the salsa and top with the remaining shredded cheese. Bake uncovered for about 30 minutes until bubbly and cracked on top. Garnish, cilantro and tomato.
  • Serve hot with Spicy Black Beans and Yellow Rice, the remaining tomatillo salsa, sour cream and fresh guacamole, if desired.

SPICY CHICKEN ENCHILADAS WITH TOMATILLO SALSA

Spicy Chicken Enchiladas with Tomatillo Salsa image

Delicious variation of traditional chicken enchiladas. I like to make the tomatillo salsa and tortillas from scratch! We cook up the chicken on the grill for less mess. My hubby's favorite dish!

Time 1h50m

Yield 6

Number Of Ingredients 18

1 pound skinless, boneless chicken breast halves
1 pinch cayenne pepper, or to taste
salt and ground black pepper to taste
8 fresh tomatillos, husked and chopped, or more to taste
3 serrano peppers, chopped
1 cup white vinegar
1 cup water
½ white onion, chopped
3 cloves garlic, minced
1 pinch salt to taste
½ cup fresh cilantro, stems removed
1 lime, juiced
1 (8 ounce) package cream cheese, softened
1 (8 ounce) package shredded Mexican cheese blend, divided
¾ cup sour cream
1 tablespoon dried minced onion
½ teaspoon cayenne pepper
6 flour tortillas

Steps:

  • Preheat an outdoor grill for medium heat and lightly oil the grate. Season chicken with cayenne, salt, and black pepper.
  • Place chicken on the preheated grill and cook until no longer pink in the center and juices run clear, 5 to 7 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Transfer to a plate and shred using 2 forks.
  • Combine tomatillos, serrano peppers, vinegar, water, onion, garlic, and salt in a large pot over high heat and bring to a boil. Reduce heat and simmer until tomatillos are tender, about 10 minutes. Remove from heat and chill in an ice bath until cool, 20 to 30 minutes. Add cilantro and lime juice. Blend salsa thoroughly using an immersion blender.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Mix shredded chicken, cream cheese, 4 ounces Mexican cheese, sour cream, 1/2 cup salsa, onion, and cayenne pepper together in a medium bowl.
  • Pour just enough salsa into a 9x13-inch baking pan to thinly cover the bottom. Place a heaping spoonful of filling into each tortilla, roll, and place into the pan. Try to keep them from touching. Top with remaining salsa and Mexican cheese.
  • Bake in the preheated oven until bubbly, 35 to 40 minutes.

Categories     Cheese

Time 1h15m

Yield 4-6 serving(s)

Number Of Ingredients 14

1 dozen 6-inch corn tortillas, best quality or 1 dozen homemade corn tortilla
1/4 cup vegetable oil
12 ounces gourmet monterey jack cheese, grated
6 ounces gourmet sharp white cheddar cheese, grated
1/2 cup creme fraiche (NOT canned) or 1/2 cup Mexican crema (NOT canned)
1 lb tomatillo, husked, rinsed and stems removed
2 garlic cloves, peeled
1 serrano chilies or 1 milder chile, such as Anaheim
1/4 cup white onion, coarsely chopped
1/4 cup fresh stock
1 tablespoon fresh lime juice
1/2 teaspoon salt
fresh cilantro
lime slice

Steps:

  • NOTE: To all residents of the Pacific Northwest. The original recipe specified Willamettte Valley Cheese Company's Eola Jack, Rogue Creamery's Raw Milk Sharp, and Bellwether brand creme fraiche. Substitute accordingly.
  • Preheat oven to 375 degrees. Have all your ingredients, cooking utensils and sauce pans ready for the enchilada preparation.
  • Sauce: Place the whole tomatilllos, garlic, and chilis in sauce pan. Cover the tomatillos with water and bring to boil. Reduce heat and cook 5 minutes. Remove half of the cooking liquid and set aside. Drain the rest. Put the boiled ingredients, including the reserved cooking liquid, the onion, fresh stock, lime juice and salt in a blender. Blend the mixture until smooth and adjust seasoning if necessary. Set aside.
  • Enchiladas: Grease a 13" x 9" ovenproof baking dish.
  • Place 1 cup of the tomatillo salsa in a shallow bowl. Heat oil in a saute pan until hot. Quickly cook one tortilla at a time until softened, about 10 to 15 seconds. Place each softened tortilla in the bowl with the salsa to lightly coat each side. Place tortillas on a large cookie sheet until ready to fill with cheese. Repeat process until all the tortillas are cooked and sauced.
  • Spoon 1/4 cup of the Monterey Jack cheese down the center of each prepared tortilla, roll up, seam side down and place in baking dish. Repeat. Once all the tortillas are filled, pour the remaining sauce over the enchiladas. Top with the grated sharp cheddar. Cover the baking dish with foil, and bake the enchiladas for 20 minutes. Remove the foil and bake another 5 minutes. Drizzle the enchiladas with creme fraiche. Garnish with lime slices and fresh cilantro sprigs.

Number Of Ingredients 20

INGREDIENTS
4 teaspoon(s) vegetable oil
1 medium onion , chopped medium (about 1 cup)
3 medium garlic cloves , minced or pressed through garlic press (about 1 tablespoon)
1 1/2 teaspoon(s) ground cumin
1 1/2 cup(s) low-sodium chicken broth
1 pound(s) boneless, skinless chicken breasts (2 to 3 breasts), trimmed of excess fat
1 1/2 pound(s) tomatillos (16 to 20 medium), husks and stems removed, rinsed well and dried (see note)
3 medium poblano chiles , halved lengthwise, stemmed, and seeded (see note)
1 to 2 1/2 teaspoon(s) teaspoons sugar
- salt and ground black pepper to taste
1/2 cup(s) fresh cilantro leaves, coarsely chopped
8 ounce(s) pepper jack cheese or monterey jack cheese, grated (2 cups)
12-18 - corn tortillas (6-inch)
GARNISH
- scallions , sliced thin
- thinly sliced radishes
- sour cream
- lime wedges
- fresh salsa (see note)

Steps:

  • Note: Halve large tomatillos (more than 2 inches in diameter) and place them skin-side up for broiling in step 2 to ensure even cooking and charring. You can substitute three 11-ounce cans of tomatillos, drained and rinsed, for the fresh ones in this recipe if necessary. If you can't find poblanos, substitute 4 large jalapeño chiles (with seeds and ribs removed). To increase the spiciness of the sauce, reserve some of the chiles' ribs and seeds and add them to the food processor in step 4. For fresh salsa, chopped fresh tomatoes, chopped sweet onion, chopped ancho/poblano/pasilla/jalapeno/serrano chilies (your preference or a combination of several), chopped fresh cilantro, dash of garlic powder, chili powder, ground cumin, seasoned salt, and a squeeze of fresh lime juice. Mix and adjust seasonings to your taste.
  • Adjust oven racks to middle and highest positions and heat broiler. Heat 2 teaspoons oil in medium saucepan over medium heat until shimmering; add onion and cook, stirring frequently, until golden, 6 to 8 minutes. Add 2 teaspoons garlic and cumin; cook, stirring frequently, until fragrant, about 30 seconds. Decrease heat to low and stir in broth. Add chicken, cover, and simmer until instant-read thermometer inserted into thickest part of chicken registers 160 degrees, 15 to 20 minutes, flipping chicken halfway through cooking. Transfer chicken to large bowl; place in refrigerator to cool, about 20 minutes. Remove 1/4 to 1/2 cup liquid from saucepan and set aside; discard remaining liquid.
  • Meanwhile, toss tomatillos and poblanos with remaining 2 teaspoons oil; arrange on rimmed baking sheet lined with foil, with poblanos skin-side up. Broil until vegetables blacken and start to soften, 5 to 10 minutes, rotating pan halfway through cooking. Cool 10 minutes, then remove skin from poblanos (leave tomatillo skins intact). Transfer tomatillos and chiles to food processor. Decrease oven temperature to 350 degrees. Discard foil from baking sheet and set baking sheet aside for warming tortillas.
  • Add 1 teaspoon sugar, 1 teaspoon salt, remaining teaspoon garlic, and half the reserved cooking liquid to food processor; process until sauce is somewhat chunky, about eight 1-second pulses. Taste sauce; season with salt and pepper and adjust tartness by stirring in remaining sugar, 1/2 teaspoon at a time. Add more of the reserved liquid if desired. Set sauce aside (you should have about 3 cups).
  • When chicken is cool, pull into shreds using hands or 2 forks, then chop into small bite-sized pieces. Combine chicken with cilantro and 1 1/2 cups cheese; season with salt.
  • Place tortillas on 2 baking sheets. Spray both sides of tortillas lightly with cooking spray. Bake until tortillas are soft and pliable, 2 to 4 minutes. Remove tortilla pans and increase oven temperature to 450 degrees (Alternate method: spray 6 tortillas at a time on each side with cooking spray and stack on a small microwaveable plate, cover with damp paper towel and microwave for 30-60 seconds until soft and pliable, repeat as the tortillas are used so they stay pliable enough to roll easily.)
  • Smear bottom of 13- by 9-inch baking dish with 3/4 cup tomatillo sauce. Place warm tortillas on cutting board or countertop and spread approx 1/3 cup filling down center of each tortilla. Roll each tortilla tightly and place in baking dish, seam-side down.
  • Pour remaining tomatillo sauce over top of enchiladas. Use back of spoon to spread sauce so that it coats top of each tortilla. Sprinkle with remaining 1/2 cup cheese and cover baking dish with foil.
  • Bake enchiladas on middle rack until heated through and cheese is melted, 15 to 20 minutes. Uncover, sprinkle with scallions, and serve immediately, passing radishes, sour cream and fresh salsa separately.

ROASTED TOMATILLO CHICKEN ENCHILADAS

Roasted Tomatillo Chicken Enchiladas image

These enchiladas are amazing! I made this for a themed dinner party and the crowd went wild. They tasted as if we were at a mexican restaurant...without all the grease. It takes a little more time to prepare, but so worth it! NOTE: the first 8 ingredients are for the salsa. NOTE: This is a recipe by Tyler Florence.

Time 1h15m

Yield 5-10 serving(s)

Number Of Ingredients 20

1 lb tomatillo, husked
1 white onion, peeled and chopped
4 garlic cloves, chopped
2 jalapenos, de-stemmed
2 teaspoons ground cumin
1/2 teaspoon salt
1/2 cup fresh cilantro leaves, chopped
1 lime, juice of
1 tablespoon extra virgin olive oil
1/2 medium white onion, diced
3 garlic cloves, chopped
1 1/2 teaspoons ground cumin
1/4 cup all-purpose flour
2 cups chicken broth
1/2 cup fresh cilantro, chopped
1/4 cup low-fat plain yogurt
1 roasted deli chicken, pulled from the bones and shredded, we buy a pre-roasted chicken at the supermarket
black pepper, to taste
10 large flour tortillas
2 cups colby-monterey jack cheese, shredded

Steps:

  • For the salsa: Under the broiler and a watchful eye, place whole tomatillos, onion, garlic and jalapenos in a glass baking dish. As they start to turn black and roast, flip them over so all sides are covered. This only takes about 5 minutes. Transfer the roasted vegetables and any juices to either a food processor or blender and add cumin, salt, cilantro and lime juice. Pulse to desired consistency.
  • For the Enchiladas: In a medium saucepan, heat olive oil. Add onions and cook until soft, about 5 minutes. Add garlic and cumin and cook for another minute. Sprinkle on flour and then gradually add the chicken broth. Stir over a low simmer until the liquid thickens. Turn off the heat. Add half of the tomatillo salso, the fresh chopped cilantro, and the shredded chicken. Season to taste with black pepper.
  • Assembly: Change oven temp to 350. Smear the bottom of a large glass baking dish with salsa. Pour the rest of the salsa on a large plate. Take the tortillas and flash them over a stove top flame, or under the broiler so they get a little crispy. Place the tortilla on the plate of salsa, add chicken filling and cheese and then roll like a cigar. Place in the baking dish and repeat until the dish is full. Pour the rest of the salsa over the tortillas and top with the remaining cheese. Bake uncovered for 30 minutes. Enjoy!
