2 tablespoons olive oil
1 medium yellow onion, finely chopped
4 garlic cloves, minced
1 whole roasted chicken, bones and skin removed, meat shredded
1 cup shredded Mexican cheese blend
½ (8 ounce) package cream cheese, softened
¼ cup salsa verde
1 (2.5 ounce) can sliced olives, drained and diced
¼ cup chopped fresh cilantro
½ (4 ounce) can diced jalapeno peppers
¼ cup butter
¼ cup all-purpose flour
2 cups chicken broth
1 cup sour cream
½ cup salsa verde
16 corn tortillas
1 cup shredded Mexican cheese blend

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Heat olive oil in a saute pan over medium heat. Add onion; cook and stir until translucent, about 5 minutes. Add garlic and heat until fragrant, about 2 minutes. Remove from heat and let cool.
  • Combine chicken, onion mixture, cheese blend, cream cheese, salsa verde, olives, cilantro, and jalapenos in a large bowl for the filling. Mix well.
  • Melt butter in a saucepan over medium heat. Stir in flour, then chicken broth. Cook until sauce starts to thicken, 6 to 8 minutes. Stir in sour cream and salsa verde; cook until heated through. Spread a spoonful of sauce over the bottoms of two 9x11-inch casserole dishes.
  • Wrap a tortilla in a damp paper towel and microwave for about 30 seconds. Fill with the chicken mixture, roll up, and place seam-side down into a baking dish. Repeat with remaining tortillas until each dish holds 8 enchiladas.
  • Spoon remaining sauce over the enchiladas. Sprinkle cheese on top.
  • Bake in the preheated oven until heated through, about 20 minutes.

1 pound skinless, boneless chicken breast halves
12 (10 inch) flour tortillas
1 (8 ounce) package shredded Monterey Jack cheese
1 (19 ounce) can green enchilada sauce

Steps:

  • In a pot with enough water to cover, boil the chicken 25 minutes, or until juices run clear. Drain, cool, and shred.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
  • Fill each tortilla with equal amounts of chicken and cheese, reserving 1/4 cup cheese for topping. Roll tortillas to form enchiladas. Arrange enchiladas in the prepared baking dish. Cover with the enchilada sauce.
  • Bake enchiladas 30 minutes in the preheated oven. Top with reserved cheese, and continue baking 5 minutes, until cheese is melted.

My friend made something similar to this a couple years ago and I LOVED it. So I decided to make my own version. It's a no-brainer... especially when you buy the roasted chicken from the store beforehand. I make this for game days or dinners... they are ALWAYS a hit with my family and friends. YUM!

1 roasted whole chicken (either bought from the grocery store or home baked)
24 corn tortillas (I like white, use more or less depending on the chicken)
28 ounces green enchilada sauce (I use La Victoria)
4 ounces canned diced green chiles
3 cups Mexican blend cheese (more or less, depending how cheesy you like it)
1 teaspoon basil
1 teaspoon Mexican seasoning (use judgment since chicken sizes vary)
salt and pepper
2 cups vegetable oil (use more or less)

Steps:

  • I HAVE TWO WAYS --
  • **********The First way**********.
  • Preheat oven to 350.
  • Shred chicken into a medium sized bowl (This is probably my least favorite thing to do).
  • Add Mexican seasoning, salt and pepper, basil, and green chiles to shredded chicken.
  • Place oil in a large skillet on medium-high heat.
  • Place 3 tortillas on a paper towel, place in microwave for 20 sec.
  • Immediately, start putting the chicken mixture into the tortilla, roll up, place in oil.
  • Flip over when one side is light brown.
  • Remove from skillet, tilt the rolled tortilla to drain excess oil onto paper towel, place in large pan.
  • Repeat process until all the chicken is gone.
  • Empty the entire Green Sauce on top of the rolled tortillas.
  • Sprinkle cheese on top. Cover entire pan. (I like mine SUPER cheesy!).
  • Lightly season with mexican seasoning.
  • Bake for 20-30 minutes. Cheese should be bubbling and lightly browned.
  • *******The Second Way*******.
  • This method entirely omits the oil and frying.
  • Grease the bottom of the baking pan with Pam.
  • Place 8 corn tortillas on the bottom of the pan.
  • Place half of the chicken mixture on top of that.
  • Pour between 1/4 to 1/2 of the green sauce can onto the mixture.
  • Place 8 more tortillas on top.
  • Place remaining chicken on top of that.
  • Pour rest of the green sauce.
  • Cover with cheese and season with Mexican seasoning.
  • Bake for 20-30 minutes. Cheese should be bubbling and lightly browned.

The secret to the wonderful flavor of this sauce is the tomatillo, a fruit generally known as the Mexican green tomato. There is no substitute for the tomatillo, since ordinary unripe tomatoes don't have the same characteristics. Originally from the R.S.V.P. section of a November 1978 Bon Apetite magazine. The recipe request was from Don Hernando's restaurant in the Beverly Wilshire Hotel in Beverly Hills, Ca.

2 -3 celery ribs, cut into 1 inch chunks
1 onion, cut into large chunks

1 quart chicken stock
2 lbs tomatillos, peeled
5 fresh serrano peppers, seeds and pith removed, minced
2 garlic cloves, minced
1 onion, diced
1/2 bunch fresh cilantro, minced
1/4 teaspoon oregano
1/4 teaspoon fresh ground pepper
1 pinch sugar

1 tablespoon butter
1 tablespoon flour
2 green bell peppers, diced
2 onions, diced
2 large tomatoes, peeled and diced
chicken stock (optional)

16 corn tortillas

Steps:

  • Place chicken pieces in large pot and cover with 1 1/2 quarts water.
  • Add celery, onion,salt and pepper and cook until chicken is tender, about 40 minutes.
  • Remove chicken from broth and set aside to cool. Strain stock and reduce further, if necessary, until 1 quart remains;reserve for sauce.
  • For Sauce :.
  • Combine all ingredients except butter and flour in large saucepan.
  • Bring to boil over medium heat,stirring occasionally,and skimming foam off as it rises to the surface.
  • Reduce heat and simmer, stirring occasionally, until sauce is the consistancy of puree (about 1 hour) gently piercing tomatillos with a fork as they become soft.
  • Strain sauce and return to pan.
  • Combine butter and flour to form a paste;add to sauce and cook over medium heat until sauce returns to boil and thickens slightly.
  • Set aside and keep hot.
  • For filling :.
  • Combine peppers, onion, tomatoes, and chilies in a large skillet.
  • Place over medium heat and cook until soft, stirring constantly and moistening with chicken stock if necessary.
  • Remove meat from cooled chicken and shred.
  • Add chicken to filling and cook a few minutes more. Mix well and salt and pepper to taste.
  • To assemble :.
  • Preheat oven to 250 degrees.
  • Lightly oil skillet and fry tortillas about 10 to 20 seconds on each side until soft.
  • Roll each tortilla gently in paper towel to remove excess oil and keep pliable.
  • Place about 1/4 cup filling in each tortilla, roll up and place seam side down in a lightly greased 9x13 baking dish.
  • Top each with a thin slice of cheese.
  • Bake until heated through and cheese melts, about 20 minutes.
  • Cover with hot green sauce, and top each enchilada with sour cream and olive slices.Serve immediately.

This is one of my favorite ways to reinvent rotisserie or leftover chicken. This weeknight favorite is excellent if you're a meal prepper, and the homemade tomatillo salsa is awesome even on its own served with tortilla chips.

1 tablespoon olive oil
1 yellow onion, chopped
2 cloves garlic, minced
1 pound fresh tomatillos, husks and stems removed, coarsely chopped
3 jalapeños, halved, seeded, and coarsely chopped
Juice of 1 lime
1/2 cup packed fresh cilantro leaves and stems, plus more for garnish
Kosher salt and freshly ground black pepper
Pinch sugar
Nonstick cooking spray, for the baking dish
1 tablespoon olive oil
1 yellow onion, finely chopped
2 cloves garlic, minced
2 teaspoons ground cumin
3 cups skinned and shredded rotisserie chicken
2 cups crumbled queso fresco, plus more for garnish
One 8-ounce carton sour cream
3 to 4 cups shredded Monterey Jack cheese
10 soft taco-size flour tortillas
Chopped red onion for garnish, optional

Steps:

  • Make the tomatillo salsa: Heat the oil in a medium saucepan over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Add the tomatillos, jalapeños, and 1/2 cup water. Bring to a boil; reduce the heat to medium-low and simmer until the tomatillos are softened, about 10 minutes. Transfer the mixture to a food processor or blender. Add the lime juice and cilantro. Process until the mixture is smooth. Season to taste with salt, pepper and sugar.
  • For the enchiladas: Preheat the oven to 350 degrees F. Coat a 9-by-13-inch baking dish with nonstick cooking spray. Spoon a little of the tomatillo salsa in the bottom of the dish.
  • Heat the oil in a large skillet over medium-high heat. Add the onion, garlic and cumin and cook until the onion is tender, about 5 minutes. Combine the onion mixture, chicken, queso fresco, sour cream and 2 cups Monterey Jack in a large bowl.
  • Wrap the tortillas in a damp paper towel and microwave on high for 1 minute to soften. Divide the chicken filling evenly among the tortillas and roll up, burrito-style. Arrange in the prepared baking dish. Pour the remaining salsa on top and sprinkle with the remaining 1 to 2 cups Monterey Jack cheese.
  • Bake until the cheese is browned and bubbly and the enchiladas are warmed through, 30 to 35 minutes. Garnish with queso fresco, cilantro and red onion, if desired.

1/2 large onion, sliced
2 cloves garlic, minced
2 boneless chicken breasts, thinly sliced
1/2 green bell pepper, sliced
1/2 red bell pepper, sliced
1 teaspoon dried chili flakes
2 cups Green Sauce, recipe follows
8 to 10 corn tortillas
1 cup oil
3 cups shredded Cheddar/mozzarella mix
1/4 cup chicken broth
1 roasted Anaheim chile, skin removed, stemmed and seeded, roughly chopped
7 tomatillos, roughly chopped
1 garlic clove
1 teaspoon dried oregano
1 teaspoon salt
1 tablespoon white pepper
3 cups water
2 cups long-grain rice
1/2 cup roughly chopped cilantro leaves
1/2 lime, juiced

Steps:

  • Preheat oven to 350 degrees F.
  • In a large skillet heat 2 tablespoons olive oil over medium heat, add the sliced onion and minced garlic, saute for about 2 minutes. Then add the chicken slices and cook until chicken is a nice golden brown. Turn the heat up a touch and add the bell pepper slices and dried chili flakes. Once chicken is no longer pink remove from the heat and place the mixture into a bowl.
  • In a small skillet add 1 cup oil. When oil is warm submerge a tortilla for 10 to 15 seconds or until soft. This will soften them and make rolling a lot easier. Drain on paper towels and repeat this process until all tortillas have been softened. Pour 1 cup of Green Sauce on bottom of the baking dish to cover. Divide the chicken mixture evenly among the tortillas, roll them up. Place seam side down on top of the sauce in the baking dish. Pour the remaining green sauce over them and spread the cheese mix evenly over the top. Bake for about 20 minutes until golden brown. Remove from the oven and serve with long-grain rice.
  • For the Green Sauce:
  • Pulse all ingredients in a food processor until a nice salsa consistency is reached.
  • For the Rice: Pour 3 cups of hot water in a large saucepan and bring to a boil. Rinse the rice well in a bowl under cold water and drain. This will remove surface starch and will be less sticky. Place the rinsed and drained rice into the saucepan, cover and cook until al dente, about 10 to 15 minutes. Add fresh cilantro and lime juice and serve.

10 to 12 corn tortillas
2 tablespoons cumin
2 tablespoons chili powder, plus more for sprinkling
2 tablespoons Cajun spice
1 teaspoon salt
1 teaspoon freshly ground black pepper
2 boneless, skinless chicken breasts
1/4 cup vegetable oil
1 large onion, diced
Three 15-ounce cans green enchilada sauce (or use red if preferred!)
3 cups grated Cheddar-Jack cheese, plus more if needed
Sour cream, for serving
Diced tomatoes, for serving
Chopped fresh cilantro, for serving
Lime wedges, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • One at a time, hold the tortillas over the stovetop burner (heated to medium heat) to brown slightly, about 30 seconds per side. Set the warmed tortillas aside.
  • In a bowl, mix together the cumin, chili powder, Cajun spice, salt and pepper. Sprinkle both sides of the chicken breasts with the spice mix.
  • Heat the oil in a skillet over medium heat and cook the chicken on both sides until done in the middle and the juices run clear, 4 to 5 minutes per side. Set aside on a plate to cool, then shred finely with a fork.
  • Throw the onions into the same skillet, stir them around and cook until deep golden brown and caramelized, 4 to 5 minutes; set them aside on a plate. Pour the enchilada sauce into the skillet and reduce the heat to low, allowing it to warm through.
  • To assemble the enchiladas: Pour 2 cups of the sauce into a 9-by-13-inch casserole dish and leave the rest in the skillet. Dip a tortilla into the sauce in the skillet, then lay it on a baking sheet or plate. Sprinkle some cheese down the middle, followed by some chicken and finally, some of the caramelized onions. Roll it up tightly, then place it seam-side down in the casserole dish. Repeat with the rest of the tortillas. Pour the rest of the sauce over the enchiladas, then sprinkle on the rest of the cheese. Give it a final sprinkling of chili powder.
  • Bake until hot and bubbly, 30 minutes. Let it sit for 15 to 20 minutes before serving.
  • Serve the enchiladas topped with a dollop of sour cream, a sprinkle of diced tomatoes, a sprinkling of cilantro and a wedge of lime.

GREEN CHILE CHICKEN ENCHILADAS

I love to experiment with Mexican and Italian dishes. This is a recipe that a friend gave me that I tweaked to my family's liking. Instead of frying the tortillas, these are dipped in Chicken Broth. ;) You'll never miss the oil and the enchiladas are moist and flavorful. ;)

2 (7 ounce) cans fire roasted diced green chilies, mild
1 (4 ounce) can fire roasted diced green chilies, hot
1 small onion, diced
3 tablespoons olive oil
1 tablespoon butter
3 tablespoons minced garlic cloves
1/4 teaspoon salt
1/2 teaspoon fresh ground black pepper
1 (14 ounce) can garlic roasted seasoned chicken broth
2 cups chicken broth, divided
18 (7 -8 inch) corn tortillas
3 cups shredded cooked chicken, see note
2 cups monterey jack and cheddar cheese blend (mexican blend shredded)
sour cream (optional)

Steps:

  • Preheat oven to 400°.
  • Heat oil and butter in a large frying pan over medium heat. Add garlic and onion and cook until fragrant, about 30 seconds. Add chiles, salt, and pepper. Cook, stirring occasionally, 3 minutes. Add 1 cup chicken broth and simmer until reduced by one-third, about 10 minutes.
  • Bring seasoned chicken broth and remaining chicken broth to a gentle simmer. Working one at a time, very briefly dip tortillas into broth to barely soften. Transfer each tortilla to a large baking sheet (you may need 2 or 3 sheets). Do not overlap or tortillas will stick.
  • Divide 1 1/4 cups cheese equally among tortillas and top each with shredded chicken, dividing evenly. Wrap tortilla around filling and transfer, seam-side down, to a 9- by 13-in. baking dish. I can fit 9 into a casserole dish.
  • Pour chile sauce over enchiladas, add large spoonful of simmered chicken broth (left over from tortillas) over sauce and top with remaining 3/4 cup cheese. Bake until cheese is bubbling and browned approximately 15 minutes. Serve with sour cream and spanish rice. Ole!
  • Note: I buy a whole seasoned chicken and put in the crockpot and set for 10 hours. This cooks the chicken slow and makes it easy to shred and give these enchiladas more flavor.

  • Combine chicken, 1/2 of the onion, peppercorns, salt, and bay leaf in a small pot. Cover with water and bring to a slow boil. Cook until chicken is no longer pink in the center and the juices run clear, about 15 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Transfer chicken to a plate and shred meat with a fork. Discard broth or reserve for another use.
  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Heat oil in a skillet over medium heat; stir in remaining onion. Cook and stir until the onion has softened and turned translucent, about 5 minutes. Transfer onion to a bowl and mix in shredded chicken, 1 cup Monterey Jack cheese, and cotija cheese.

18 (6 inch) corn tortillas, torn in half
1 (28 ounce) can green chile enchilada sauce
1 (16 ounce) package shredded Monterey Jack cheese
1 (8 ounce) container reduced fat sour cream

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.

I used about 4 chicken legs and 3 small breasts for these enchiladas and I had about 1 and 1/2 cups leftover. I took a few bites to the office the next day and these are now requested for our Christmas potluck.

3 1/2 lbs frying chickens, cut up
1/4 ounce sazon goya, con azafran seasoning package
1/2 cup oil
3/4 cup flour
5 cups chicken broth (I use the broth I cooked the chicken in)
16 ounces light sour cream
2 cups monterey jack cheese, shredded
2 (4 ounce) cans chopped green chilies (save the liquid)
1 teaspoon cumin

1 onion, chopped small dice about 3/4 cup

Steps:

  • Put chicken on to boil in enough water to cover chicken.
  • Mix the SazonGoya con Azafran seasoning package into the chicken water.
  • Boil chicken about 40 minutes till falling off the bone.
  • De bone chicken saving all broth for later.
  • Chop chicken into bite size pieces.
  • Mix oil and flour together and set aside.
  • Chop onion and saute in small amount of oil about a tsp till translucent.
  • Add in oil and flour mixture stirring constantly for about 4 minutes till flour not raw.
  • Add in Chicken broth about a cup at a time should have a nice sauce consistency. Add in the two cans of green chilis and the sour cream.
  • Stir to combine.
  • Season with Chili Sauce and Cumin.
  • Set aside.
  • Fry corn tortillas in small amount of oil and set aside,.
  • Pour 1/2 on enchilada sauce into 12 x 9 large pyrex cooking dish.
  • Lay tortilla flat put in small amount of cheese and chicken and roll.
  • Place in pan seam side down.
  • Repeat for all 14 tortillas.
  • Cover with rest of sauce and sprinkle cheese on top.
  • Cover with foil.
  • Bake in 350 oven for 40 minutes.

3 pounds bone-in, skin-on chicken breast halves
Coarse salt and ground pepper
5 garlic cloves, unpeeled
2 jars (16 ounces each) medium green salsa
3/4 cup heavy cream
12 corn tortillas (6-inch)
12 ounces Monterey Jack cheese, coarsely shredded (3 cups)
1/2 cup fresh cilantro, chopped (optional)

Steps:

  • Preheat oven to 450 degrees. Season chicken with salt and pepper; place with garlic on a rimmed baking sheet. Bake until an instant-read thermometer inserted in thickest part of breast (avoiding bone) registers 165 degrees, 25 to 30 minutes. Meanwhile, in a large bowl, combine salsa and cream.
  • Reduce oven temperature to 350 degrees. Once chicken is cool enough to handle, shred meat, discarding skin and bones. Peel and chop garlic. In a large bowl, combine chicken, garlic, and 1/2 cup salsa mixture.
  • Stack tortillas flat, and wrap in damp paper towels; microwave on high for 1 minute to soften. Working with one tortilla at a time, dip in salsa mixture, lay flat, and fill with 1/3 cup chicken mixture. Roll up and arrange, seam side down, 8 enchiladas lengthwise and 4 crosswise in a 9-by-13-inch baking dish. Top with remaining salsa mixture, then cheese.
  • Bake until cheese is browned and salsa is bubbling, 40 to 45 minutes; let rest 10 minutes. Serve, sprinkled with cilantro, if desired.

vegetable oil for pan-frying
3 cooked boneless skinless chicken breast halves, shredded
12 ounces shredded Monterey Jack cheese, divided
¾ cup minced onion
¼ cup butter
¼ cup all-purpose flour
2 cups chicken broth
1 cup sour cream
1 (4 ounce) can chopped green chiles, drained
½ cup chopped green onions
½ cup chopped fresh cilantro

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.
  • Heat 2 tablespoons of oil in a skillet over medium-high heat. Fry tortillas (1 at a time) for 5 seconds on each side to soften and make them pliable. Add more oil to pan as needed. Drain between layers of paper towel and keep warm.
  • Divide chicken, 10 ounces of Monterey Jack cheese, and onion among the 12 tortillas. Roll up each tortilla and place seam-side down in the prepared pan.
  • Melt butter in a saucepan over medium heat. Add flour and whisk until mixture begins to boil. Slowly add broth, stirring with a whisk until thickened. Mix in the sour cream and chiles, heating thoroughly but do not boil, stirring occasionally. Pour mixture over the enchiladas.
  • Bake in the preheated oven until bubbly and heated through, about 20 minutes. Top with remaining Monterey Jack cheese and bake for 5 more minutes. Garnish with chopped green onions and cilantro.

1 lb cut up cooked chicken
1 (10 3/4 ounce) can condensed cream of chicken soup
1 (16 ounce) can black beans
1 (10 ounce) package frozen corn, thawed
1 (4 ounce) can chopped green chilies
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
20 corn tortillas
2 cups shredded cheddar cheese or 2 cups monterey jack cheese, blend
1 (19 ounce) can green enchilada sauce
2 cups salsa
1 cup sour cream

Steps:

  • Drain and rinse beans and corn.
  • Combine chicken, cream of chicken soup, beans, corn, chiles, and garlic powder and onion powder in a bowl.
  • Preheat oven to 350.
  • Grease bottom of 2 13'x9' pans.
  • Soften tortillas in microwave, 5 at a time, between slightly damp paper towels for 50 sec. at a time.
  • Scoop 3-4 T. chicken mixture into each tortilla, roll up and place edge side down in greased pan.
  • Pour half of green sauce over each pan, half of salsa over each pan, and sprinkle each pan with one cup each of the cheese mixture.
  • Bake in preheated 350 degree oven for 25 minutes. Serve with sour cream.
