CREAMY CHICKEN ENCHILADAS



Creamy Chicken Enchiladas image

Enchiladas have always been thought of as Mexican "soul food" because of their bright, reassuring flavors. These enchiladas suizas, or Swiss-style enchiladas, are simple to make and boast a creamy, savory texture.

3 pounds plum tomatoes, may substitute round tomatoes or two 28-ounce cans good-quality whole tomatoes, drained
2 jalapeño peppers, or 3 serranos (to taste)
1 1/2 tablespoons lard or vegetable oil, plus extra for the tortillas
1 large white onion
2 cups chicken stock, plus extra as needed
kosher salt
1/2 cup sour cream, or thick crema or crème fraîche
2 cups coarsely shredded cooked chicken, preferably grilled, roasted, or rotisserie
2/3 cup Chihuahua cheese, or other Mexican melting cheese such as shredded quesadilla or asadero
12 corn tortillas
Cilantro sprigs, for garnish

Steps:

  • Roast the tomatoes and chiles on a baking sheet 4 inches below the broiler until they're darkly roasted with blackened and blistered spots, 5-6 minutes per side. (If using canned tomatoes, drain the tomatoes and set aside. Toast the chiles in a small dry skillet over medium heat, turning regularly, until they're soft and splotchy-black, about 5 minutes.)
  • Dice the onion, reserving a few rings for garnish. Heat the oil in a large, heavy-bottomed pot over medium heat; cook the diced onions, stirring regularly, until golden, about 7 minutes. Meanwhile, remove the tomatoes and chiles from the oven and cool.
  • Working over your baking sheet, pull off and discard the blackened tomato skins and, for round tomatoes, cut out the hard "cores" where the stems were attached. Transfer tomatoes and chiles to a food processor or blender, along with all the juices on the baking sheet. Blend to a smooth purée.
  • Add the puréed tomatoes and chiles to the onions and cook, stirring, until they darken in color and thicken to the consistency of tomato paste, 7-8 minutes. Stir in the broth, partially cover, and simmer 15 minutes. Whisk in the sour cream and season with 1 teaspoon of salt.
  • Lay the tortillas out on a baking sheet (2 sheets if you have them, for more even heating), and lightly brush both sides of the tortillas with lard or oil. Bake at 350 degrees F just long enough to warm through and soften, about 3 minutes. Stack the tortillas and cover with a towel to keep them warm and pliable.
  • Spread about ¼ cup of the sauce over the bottom of four to six 9-inch individual oven-proof serving dishes, or smear about 1 cup of the sauce over the bottom of a 13x9-inch baking dish. Working quickly while the tortillas are still pliable, roll a portion of the chicken into each tortilla, then line them up in the dishes, seam-side down. Cover with the remaining sauce, then sprinkle with the cheese. Bake until the enchiladas are hot and the cheese has browned slightly, about 15 minutes.
  • Garnish the enchiladas with reserved onion rings and cilantro sprigs before serving.

Enchiladas suizas differ from typical enchiladas because they contain Mexican crema or sour cream in addition to salsa verde. This version replaces the tomatillo sauce with a roasted tomato-chile sauce, resulting in a rich, creamy dish with bright color.

2 skin-on, bone-in chicken breasts (about 2 pounds)
2 cups low-sodium chicken broth
2 cloves garlic
2 bay leaves
3 to 5 sprigs fresh cilantro, plus more for topping (optional)
Kosher salt
2 pounds plum tomatoes
1 or 2 serrano chile peppers, stemmed
2 tablespoons vegetable oil, plus 1/2 cup for frying
1 large white onion; 2/3 diced, 1/3 sliced into rings
1/2 cup Mexican crema or sour cream, plus more for topping (optional)
12 corn tortillas, preferably white
3/4 cup crumbled queso fresco

Steps:

  • Put the chicken in a medium pot with 3 cups water, the broth, garlic, bay leaves and cilantro; season with salt. Cover and bring to a boil over medium-high heat. Reduce the heat to medium low and gently simmer, turning the chicken as needed, until cooked through, about 30 minutes. Transfer the chicken to a plate to cool. Discard the bay leaves and cilantro and reserve the broth and garlic. Meanwhile, preheat the broiler. Put the tomatoes and chiles on a foil-lined baking sheet and broil, turning, until charred, about 12 minutes. Wrap in the foil to catch any juices, then cool slightly. Peel the chiles and transfer to a blender with the tomatoes and collected juices. Remove the garlic from the broth, add to the blender and puree until smooth. Heat 2 tablespoons vegetable oil in a pot over medium heat. Add the diced onion and cook, stirring, until golden, about 3 minutes. Increase the heat to medium high and stir in the tomato-chile puree and 1/2 teaspoon salt. Cook, stirring, until the sauce is thick, about 15 minutes. Stir in 3 cups of the reserved broth and bring to a simmer. Partially cover and cook about 20 minutes. Add 1 teaspoon salt; keep the sauce warm. Discard the chicken skin and shred the meat. Toss the chicken with the crema and 1/2 teaspoon salt in a bowl. Soak the sliced onion in a bowl of cold water while you prepare the enchiladas. Preheat the oven to 375 degrees F. Spread 1 cup of the tomato-chile sauce in a 9-by-13-inch baking dish. Heat 1/2 cup vegetable oil in a skillet over medium-high heat. Fry a tortilla until puffed, about 15 seconds per side, turning with tongs. Quickly spoon 2 tablespoons chicken onto the tortilla, roll it up and put seam-side down in the baking dish. Fry and fill the remaining tortillas, arranging them side by side in the dish. Pour 2 cups of the tomato-chile sauce over the enchiladas and top with the queso fresco. Bake until warmed through, about 20 minutes. Drain the sliced onion and scatter over the enchiladas. Divide among plates and top with more cilantro, sauce and crema, if desired. 3 lbs ripe tomatoes (OR 2 28-ounce cans good-quality whole tomatoes in juice, drained)
1 1/2 tablespoons vegetable oil (or rich-tasting pork lard, plus a little oil for brushing or spraying the tortillas)
2 cups chicken (preferably grilled, roasted or rotisserie chicken-coarsely shredded)
2/3 cup shredded mexican melting cheese (Chihuahua, quesadilla, asadero or the like or Monterey Jack, brick or mild cheddar)
12 corn tortillas
white onion, sliced, separated into rings, for garnish
fresh fresh cilantro stem (to garnish)

Steps:

  • For fresh tomatoes: Roast the tomatoes and chiles on a baking sheet 4 inches below a very hot broiler, until they're darkly roasted (they'll be blackened in spots), about 6 minutes. Flip them over and roast the other side-5 or 6 minutes more will give you splotchy-black and blistered tomatoes that are cooked through. Cool. Working over your baking sheet, pull off and discard the blackened tomato skins and, for round tomatoes, cut out the hard "cores" where the stems were attached. Transfer tomatoes and chiles to a food processor or blender, along with all the juices on the baking sheet. Blend to a smooth puree.
  • For canned tomatoes: In a small dry skillet, roast the chiles over medium heat, turning regularly, until they're soft and splotchy-black, about 5 minutes. Place in a blender or food processor along with the drained canned tomatoes. Blend to a smooth puree.
  • In a medium-size (4- or 5-quart) pot (preferably a Dutch oven or Mexican cazuela), heat the oil or lard over medium heat. Add the onion and cook, stirring regularly, until golden, about 7 minutes. Raise the heat to medium-high, and, when noticeably hotter, stir in the tomato puree. Cook, stirring, until darker in color and thickened to the consistency of tomato paste, about 10 to 15 minutes. Stir in the broth, partially cover and simmer 15 minutes. Taste and season with salt, usually about 1/2 teaspoon. The sauce should be a slightly soupy consistency-not as thick as spaghetti sauce. If it is too thick, stir in a little additional broth. Keep warm over low heat.
  • Other preliminaries. Stir the crema (or one of its stand-ins) into the sauce. Put the chicken in a bowl and stir 1/2 cup of the sauce mixture into it. Taste and season with additional salt if you think it needs it. Have the cheese at the ready.
  • Heat the oven to 350°. Smear about 1/4 cup of the sauce over the bottom of 4 to 6 nine-inch individual ovenproof baking/serving dishes or smear about 1 cup of the sauce over the bottom of a 13x9-inch baking dish. Lay the tortillas out on a baking sheet (2 sheets if you have them, for more even heating), and lightly brush or spray both sides of the tortillas with oil. Bake just to warm through and soften, about 3 minutes. Stack the tortillas and cover with a towel to keep warm.
  • Working quickly so the tortillas stay hot and pliable, roll a portion of the chicken into each tortilla, then line them all up in the baking dishes. Douse evenly with the remaining sauce, then sprinkle with the cheese. Bake until the enchiladas are hot through (the cheese will have begun to brown), about 15 minutes. Garnish with onion rings and cilantro sprigs. These are best served piping hot from the oven.
  • MAKE AHEAD The sauce can be made a day or two ahead; refrigerate covered. Once the tortillas have been heated in the oven, you need to work quickly and steadily toward serving in order to preserve their beautiful texture. Once out of the oven, the finished dish softens to near mush over a period of 15 to 20 minutes.

1/4 medium onion, roughly chopped
3 cups water
1/2 teaspoon salt
1 lb chicken breast, halved
1/2 teaspoon dried herbs (marjoram, thyme...)
2 bay leaves

Steps:

  • Place onion, water, and salt in a 2-quart saucepan and bring to a boil.
  • Add the chicken (plus addtional hot water to cover, if necessary), skim off any new foam that rises during the first minute of simmering, add herbs and bay leaves, partially cover and simmer for 13 minutes over medium heat.
  • Remove the pot from the heat and let the checken cool in the broth, if there is time.
  • Skin and bone the chicken, then shred the meat into small pieces, Sprinkle with salt before using, unless directed otherwise in your recipe.

Easy and Quick baked enchiladas, with a little different twist to it. I am not a fan of tomato sauce enchiladas.Enjoy!

12 corn tortillas
2 1/4 cups diced cooked chicken breasts
2 cups medium salsa verde
1/4 cup chopped fresh cilantro
3/4 cup reduced-fat sour cream
2 (9 ounce) packages of shredded swiss cheese
1/4 cup sliced scallion
diced tomato (to garnish)

Steps:

  • Preheat oven to 425 degrees.When you turn oven on - warm tortillas stacked together and wrapped in tin foil.
  • Mix cilantro, sour cream and Salsa verde together in a bowl.
  • Once chicken is cooked and diced, combine with one package of swiss cheese in separate bowl.
  • Remove tortillas from oven and prepare a 9X13 baking dish to place them inches.
  • Spoon 3/4 cup of the salsa mixture into bottom of baking dish.
  • Spoon chicken and cheese mixture into each tortilla shell and roll up.
  • Place rolled enchiladas seam-down into baking dish.
  • Pour remaining salsa mixture over the top of the enchiladas.
  • Cover and bake for 15-20 minutes, until cheese is melted and sauce is bubbling.
  • Uncover and spread remaining swiss cheese package over the top of enchiladas.
  • Bake for another 10 minutes, or until cheese is melted.
  • Remove from oven.
  • Garnish with sliced scallions, and tomatoes (optional).

2 (14 1/2 ounce) cans diced tomatoes with green chilies
1 cup chicken broth
1/3 cup fat free sour cream
2 tablespoons whole wheat flour
2 chicken breasts, cooked
6 (6 inch) tortillas, cut into quarters
1 cup nonfat cheddar cheese, shredded

Steps:

  • Preheat oven to 350 degrees. Spray an 8 by 8 pan. In a sauce pan mix the tomatoes and broth. Heat to boiling. Mix flour into sour cream and add hot tomato liquid to sour cream 1/4 cup at a time, mixing well before each addition. when you have doubled the volume of the sour cream with tomato sauce, pour mixture into pan with remaining hot tomatoes. Mix thoroughly and cook until thickened. Pour 1/2 cup into bottom of 8 by 8 pan. Layer half of tortilla pieces onto sauce, then layer half of chicken on top. pour other half of sauce over, layer remaining tortilla pieces, and remaining chicken. Top with cheese and cover with foil. Bake for 20 minutes or until hot and bubbly.
