CHICKEN ELEGANTE
Chicken with cream of mushroom and sour cream sauce baked with dried beef and bacon. My father is a firefighter and brought this one home when I was a child. I have loved it ever since. It is most important that you use FROZEN chicken and not fresh otherwise the dish will not work. This a nice recipe because it is super fast to prepare and then just walk away from until it is done cooking.

Steps:
- -Preheat oven to 375.
- -Mix the Sour Cream with the 2 cans of Cream of mushroom Soup. (add garlic salt and pepper to taste if you like more flavor (I highly recommend it).
- -Line a 13 x 9 glass baking dish with the dried beef. (edges slightly overlapping so that the whole bottom is covered).
- -Place FROZEN chicken on top of the dried beef in baking dish (chicken should not be sitting on top of eachother, just one layer).
- -Pour Sour Cream and Cream of Mushroom mixture over FROZEN chicken so that it covers.
- -Place Four (4) strips of bacon over the top width wise.
- -Put baking dish in 325 degree oven for 2 hours.
- -After cooked place on a bed of cooked Egg Noodles and enjoy.

ELEGANT CHICKEN AVOCADO
When I first came across this recipe, I didn't think I would like it, but I decided to give it a try. Boy, am I glad I did! The seasonings meld together and make a wonderful sauce. This is a great choice when you want something a little extra special or for company. If you only need 4 servings, make less cooked rice and only use 4 breast halves. I have also prepared this recipe using turkey tenderloins.

Steps:
- Using a large heavy skillet, heat the oil over medium heat.
- Add the ginger, cinnamon, paprika, curry, salt and pepper to the oil.
- Stir and cook the spices in the oil for 2 minutes.
- Add the chicken pieces and cook over medium heat on each side for approximately 5 minutes or till lightly browned.
- Remove chicken from pan.
- Pour off any excess oil from the skillet.
- Add wine to the skillet and deglaze for about 1 minute.
- Add broth, carrots and celery and return chicken to the skillet, bringing all to a boil.
- Reduce heat to low.
- Cover and simmer for 30 minutes or until chicken pieces are tender.
- Remove chicken from skillet; keep warm.
- Add half and half to skillet, stirring until incorporated, over low heat.
- Place rice on platter and distribute chicken pieces on top of rice.
- Place avocado slices on top then pour sauce mixture over all.
- Sprinkle top with slivered almonds.

Steps:
- Preheat oven to 350.
- Boil chicken 20-40 minutes until almost fully cooked. Pull apart into bite size pieces.
- Mix chicken with sour cream and cream of mushroom soup.
- Spread mixture into a buttered pan.
- Melt butter.
- Pour stuffing mix into a mixing bowl, stir in butter and chicken broth. Spread over chicken mixture.
- Bake 30 minutes or until bubbly.
- If desired serve with cranberry sauce on the side.
ELEGANT CHICKEN OSCAR
This elegant main dish isn't difficult to make. You can substitute your favorite hollandaise sauce, but I've included mine below (plus the COW SOUP MIX, and info on the amazing thickener it's made with).

Steps:
- Place chicken breasts, one at a time, into a plastic bag; pound to 1/4-inch thick, and then cut each in half. Dredge in a mix of flour, salt and pepper.
- Heat oil in a large skillet, browning each side for 3-5 minutes. Remove from heat and sprinkle with flaked crabmeat, garnish with asparagus tips.
- Prepare the hollandaise, blending the ingredients (except butter) together. While blending, slowly drizzle in melted butter. Ladle over top of crabmeat and chicken.
- Sprinkle with paprika and parsley and heat through, in a 350°F oven about 10 minutes.

- Tips: Zap leftover sauce in microwave for 30 seconds and use to spoon over a side dish of asparagus.
- COW SOUP MIX: (Cream-Of-Whatever) 2 c powdered milk (best if NOT instant), 3/4 c Instant ClearJel®*, 3 Tbsp dry chicken bouillon, 1 Tbsp onion powder, 1 tsp salt, 1/2 tsp white pepper. Mix thoroughly, store in an airtight container and use within 12 months.
- Freeze leftover egg whites in an ice cube tray. To brush as "glue" for seeds or toppings over bread dough, thaw and mix with a little water.

ELEGANT CHICKEN
This is so easy! I use it when I'm having people over for dinner because it can easily be doubled to feed a large gathering or dinner party. Once you put it in the oven, you can forget about it for 2 hours and move on to something else. It's always a huge hit with our guests! Serve over rice and enjoy!

- Preheat oven to 275 degrees F (135 degrees C).
- Line the bottom of a 9x13 inch baking dish with slices of chipped beef. Wrap bacon slices around chicken breasts, and place on top of chipped beef. In a medium bowl, mix together condensed soup and sour cream. Pour sour cream mixture over chicken breasts, and sprinkle with paprika.
- Bake in preheated oven for 2 hours.
