I have made this numerous times and have always been told to make it again. It is on the rich side but excellent.

Steps:
- Heat oven to 300 degrees.
- Pound out chicken breast to a 1/4 inch thick.
- Place 2 slices dried beef on chicken and roll up.
- Wrap 1 slice of bacon around chicken and put into a large casserole dish.
- Melt together the cream cheese and soup.
- Pour all over chicken.
- Cook uncovered at 300 degrees for 3 hours. (Don't cheat on the time; it really does change the taste).
- Serve with rice or mashed potatoes.
BBQ CHICKEN DELUXE PAN PIZZA
A recipe from the blog Two Peas and Their Pods. I didn't try it, but when I'll do, I'll use my favorite pizza dough in the bread machine.

Steps:
- In a small saucepan, scald the milk over medium heat. Add butter, sugar and salt. Allow milk mixture to cool to warm. Add yeast and mix thoroughly. Let sit for 5 minutes.
- In the bowl of a stand mixer, add milk/yeast mixture. Slowly add flour, one cup at a time, until the dough pulls away from the side of the bowl and forms a ball. Add water, a little at a time, until the dough combines. If the dough is still wet, add a little more flour. Knead dough for 5-10 minutes using the dough hook. Place dough in a large greased bowl. Cover and allow dough to rise for 2 hours or until dough has doubled in size.
- While the dough is rising, brush the chicken breast with 2 tablespoons of BBQ sauce and grill. Chop cooked BBQ chicken into small pieces and set aside.
- Preheat the oven to 400 degrees F. When the dough is ready, punch down the dough, knead briefly on a floured surface. Roll out the pizza dough, using a rolling pin. You want the dough to be about a 1/2 inch thick. Place dough in a buttered 10-inch sauté' pan or cast iron skillet. Push dough in the bottom and up the sides of the pan. Pinch off excess dough. You can save this dough to make another pizza or breadsticks. We usually stick it in the freezer for later.
- Evenly spread 1/2 cup BBQ sauce on the bottom of the pizza dough. Top sauce with 2 cups of the shredded mozzarella cheese. Roll the pizza dough that is on the side of the pan down, about one inch, and pinch to form a thick crust. Add the BBQ chicken, bacon, pineapple, and jalapeño slices. Sprinkle pizza toppings with the additional 1/4 cup of cheese.
- Place pizza in the oven and bake for 25-30 minutes, or until crust is golden brown. Remove pizza from oven and let sit for 10 minutes. Slice pizza with a bread knife and serve warm.

Steps:
- In large mixing bowl, toss chicken or turkey with salt, pepper, and enough oil to coat the meat very lightly.
- Then toss with the lemon juice, and finally with the herbs, celery, onions, and optional walnuts.
- Add torn lettuce.
- Taste and correct seasoning.
- Let steep 10 minutes, tossing several times.
- Drain any accumulated liquid out of the salad, correct seasoning again; fold in just enough mayonnaise to" bind" the ingredients.

DELUXE CHICKEN BREASTS
Very good and easy to make. We serve this with 2 vegetables. Add some garlic powder and season salt to the creamy sauce for a good kick. Also, I butterfly each breast to evenly and quickly cook the chicken.

- Preheat oven to 350F.
- On a sheet of waxed paper, combine the flour and bread crumbs.
- In a shallow bowl, whisk together egg whites and water.
- Dip chicken in egg white mixture, then dredge in bread crumb mixture, turning to coat.
- In large skillet, heat oil over medium-high heat.
- Add chicken; cook, turning once, until browned, about 10 minutes.
- Place chicken in a shallow baking dish.
- Bake until cooked through, about 15 minutes.
- To prepare sauce, in a small saucepan over medium heat, melt margarine (or butter).
- Stir in flour until well combined.
- Slowly add milk stirring constantly.
- Cook, stirring, until thickened (about 8 to 10 minutes).
- Remove from heat; stir in 1/4 cup of cheddar.
- Place chicken breasts on serving plates.
- Drizzle with sauce and sprinkle with the remaining cheddar.
- Garnish with paprika and serve immediately.
CHICKEN CARBONARA DELUXE
This is yet another recipe that my husband enjoys. You can add vegetables if you'd like (peas, portabella mushrooms, etc.). Also, the sauce may need doubling so be sure you have extra on hand just in case it's not to your liking. We always double our sauce!

- Cook and drain spaghetti as directed on package.
- While spaghetti is cooking, cook bacon in 3-quart saucepan over low heat 8 to 10 minutes, stirring frequently, until crisp. Remove bacon from saucepan and drain. Drain fat from saucepan but reserving 1 tablespoon in saucepan.
- Cook onion and garlic in bacon fat over medium heat for about 3 minutes, stirring frequently, until onion is tender. Stir in spaghetti, chicken, cheese and whipping cream. Cook, stirring occasionally, until heated through. Toss with bacon.

CHICKEN SALAD DELUXE
Buttermilk dressing,macaroni,grapes,almonds and water chestnuts give chicken salad a new twist. Given to me by a dear friend, this is delish! This serves 20! Due to the chill times, prep and cook times do not include overnight chill. If you are unable to find Beau Monde(by Spice Islands) at your grocery store, it is available online. It's a great all around spice that I bought after tagging recipe #184001.

- Combine salad dressing, mayonnaise,half and half, seasoning,salt and pepper in a small bowl, blend, cover, refrigerate overnight to blend flavors.
- Place chicken, onion slices,carrot & celery in dutch oven, add enough cold water to cover; cover,bring to boil, reduce heat to low, simmer 7 minutes until chicken is no longer pink.
- Drain chicken, discarding vegetables and liquid, refrigerate chicken until cool, cut chicken into 1/2" pieces.
- Cook shells until al dente', drain, cover and refrigerate until chilled.
- Combine chicken,shells,dicedcelery,grapes,almonds,water chestnuts & chopped onion in a large bowl, pour dressing over, toss gently to coat.
- Serve on lettuce-lined plates, garnish if desired; serve with cantaloupe slices.
