1/2 cup seasoned bread crumbs
1/4 cup grated Parmesan cheese
1/2 teaspoon garlic powder
1/4 teaspoon paprika
4 boneless skinless chicken breast halves (about 6 ounces each)
2 tablespoons butter, melted

Steps:

  • In a shallow bowl, combine the bread crumbs, Parmesan cheese, garlic powder and paprika. Coat chicken with crumb mixture. Place on a microwave-safe plate. Drizzle with butter. Cover loosely with waxed paper. Microwave on high for 4-6 minutes or until juices run clear, turning once.

1/3 cup buttermilk
2 teaspoons hot pepper sauce
3/4 cup seasoned bread crumbs
3/4 cup yellow cornmeal
3/4 teaspoon salt
3/4 teaspoon dried cilantro flakes
3/4 teaspoon chili powder
3/4 teaspoon cayenne pepper
1/4 teaspoon ground cumin
6 bone-in chicken breast halves (6 ounces each), skin removed

Steps:

  • Line a 15x10x1-in. baking pan with foil and coat the foil with cooking spray; set aside. , In a shallow bowl, combine buttermilk and hot pepper sauce. In another shallow bowl, combine the bread crumbs, cornmeal and seasonings. Dip chicken in buttermilk mixture, then roll in crumb mixture. Place bone side down in prepared pan., Spritz chicken with cooking spray. Bake at 425° for 15-20 minutes. Remove from oven; spritz again with cooking spray. Bake 15-20 minutes longer or until a thermometer reads 170°.

¼ cup sesame seeds
1 teaspoon paprika
½ teaspoon dried oregano
1 (3 pound) broiler/fryer chicken, cut up
⅓ cup milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
  • Combine cornflakes, Parmesan cheese, sesame seeds, paprika, and oregano in a bowl. Cover and refrigerate for up to 4 months.
  • Dip chicken pieces in milk, then roll in about 1 1/4 cups coating mix. Place in baking pan.
  • Bake in preheated oven until no longer pink at the bone and juices run clear, about 45 to 50 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

1 tablespoon chopped fresh sage leaves
1/2 stick (1/4 cup) unsalted butter
2 tablespoons Dijon mustard
2 whole skinless chicken legs (about 3/4 pound total)
2 skinless boneless chicken breast halves (about 3/4 pound total)

Steps:

  • Preheat oven to 450°F. and line a baking sheet with foil.
  • Tear bread into pieces and in a food processor pulse until finely ground. In a large bowl stir together 2 cups bread crumbs, Parmesan, sage, and salt and pepper to taste. Melt butter and stir in mustard and salt and pepper to taste.
  • With a sharp knife cut chicken thighs from legs. Pat chicken dry and brush all over with butter mixture. Roll chicken in bread-crumb mixture, pressing gently to adhere, and arrange chicken, without crowding, on baking sheet. Bake chicken in middle of oven until cooked through and golden, 25 to 30 minutes.

Steps:

  • Measure all ingredients into bowl.
  • Stir thoroughly.
  • To use, moisten chicken parts with water and dip in coating.

Rinse and pat dry:
3 1/2 pounds chicken parts
Season with:
Salt and ground black pepper to taste

Whisk together in a shallow bowl:
2 large eggs
1/4 cup milk
Combine in a wide, shallow bowl:
2 1/2 cups crushed corn flakes
2 teaspoons salt
1/2 teaspoon ground black pepper

Steps:

  • Dip the chicken pieces in the egg mixture, then coat with the corn flake mixture, patting with your fingers to make the crumbs adhere. The chicken can be prepared to this point up to 3 hours in advance and kept, uncovered, in the refrigerator. Arrange the chicken skin side up on the baking sheet. If you wish, drizzle over the chicken:
  • 2 to 3 tablespoons melted butter
  • Bake until the chicken is crisp and golden, 45 to 60 minutes. Serve immediately or at room temperature.
