I got the recipe for the patties from an online mum's forum I use. But the dressing and salad I invented myself.

Ingredients

500 g ground chicken
1 small red onion, finely chopped
2 garlic cloves, minced
1/3 cup chopped fresh coriander
1 tablespoon Thai sweet chili sauce
1 egg white, moderately whisked
cooking spray
2 tablespoons Thai sweet chili sauce
2 tablespoons rice vinegar
2 tablespoons sugar
1 -2 dash lemon juice
1 -2 dash fish sauce
1 tablespoon chopped fresh coriander
1/4 cup water
8 cups shredded romaine lettuce (we call it cos lettuce)
1 large carrot, grated
1 small cucumber, sliced

Steps:

Mix patty ingredients together, shape into 8 patties and pan fry with a little cooking spray.
Mix dressing ingredients together, adding water a little at a time, to taste.
Serve patties over salad and/or cooked rice with dressing drizzled over everything.

This is a delicious recipe, different from the normal stir fry, salad or curry. Quick as lightning to make too. I use just cooking spray or bake them.

Ingredients

2 chicken breasts, cubed
1 garlic clove, roughly chopped
1 cm finely chopped fresh gingerroot, knob, roughly chopped
1 small onion, chopped
2 tablespoons coriander, chopped
1 green chili, chopped
1 pinch salt & freshly ground black pepper
2 tablespoons olive oil
sweet chili paste (for dipping)

Steps:

Place the chicken, garlic, ginger, onion and coriander in a food processor with the chilli and season to taste. Blitz for 15-20 seconds.
Shape the chicken mixture into small cakes
Heat the olive oil in a frying pan over a moderate heat and fry the chicken cakes until golden.
Serve immediately, with sweet chilli sauce and sliced spring onion.

1 Line a baking tray with baking paper. In a large bowl, combine chicken, chilli, coriander, garlic and shallots. Season with cracked black pepper. Form mixture into 4 patties, place onto the tray. Cover and chill for 20 minutes.
2 Preheat a greased barbecue hotplate to medium. Barbecue patties for 5-6 minutes on each side, or until cooked through. Spray tomatoes with olive oil and barbecue for 7-8 minutes until tender. Transfer patties and tomatoes to a plate and keep warm. Spray rolls with oil and barbecue for a few minutes on each side until slightly charred.
3 Top bun bases with lettuce, carrot, cucumber and a chicken patty. Sprinkle over coriander and sliced chilli, if using. Drizzle with sriracha and serve with tomatoes.
