CHICKEN CORDON BLEU CASSEROLE
I wanted chicken cordon bleu one night but I didn't feel like doing everything that is involved in making it. So I got some inspiration from a few recipes and came up with this one. My husband and son both had thirds! This is comfort food at it's best!

Steps:
- Preheat the oven to 375 F.
- In a large sauté pan or skillet, melt the butter over medium heat and add the onion, sautéing for about 5 minutes, until the onions are translucent. Add the mushrooms and sauté until they are cooked through, about another 5 minutes. Add the garlic, thyme and the flour and stir, coating the vegetables completely and cooking for about 2 minutes, until you just feel the flour begin to stick to the pan.
- Add the milk in 3 additions, stirring or whisking after each addition. Bring the sauce to a simmer, stirring constantly, and then add the diced chicken and ham, returning the sauce to a simmer. Add the Swiss and 1/3 cup of the Parmesan cheeses and stir until the cheese has melted and the sauce is smooth. Stir in the vermouth (if using) and season to taste. Spoon the mixture into a casserole dish (or you can simply bake in the skillet if it is ovenproof).
- Stir the breadcrumbs and remaining 1/3 cup of Parmesan and sprinkle this over the casserole. Bake it uncovered for about 30 minutes, until it is bubbling around the edges. Allow the casserole to sit 10 minutes before serving.
- The casserole can be served on its own, over cooked pasta, potatoes or rice, or with toasted garlic bread.

A simple version of Chicken Cordon Bleu! Chunks of chicken and ham layered in a casserole with shredded cheese and a creamy white sauce, topped with buttery crunch and baked to golden perfection! What's not to like! Great comfort food, and also a good use of leftover chicken and ham. Found on "Mennonite Girls Can Cook".

CHEESY CHICKEN CORDON BLEU CASSEROLE
Here is another one that doens't last long at our house. Everyone loves it. A nice green salad or green beans go well with this. For my make ahead weekends, I prep the chicken and ham and combine with the cheese and freeze. Prep time does not include time to cook ham and chicken. The day to cook - just defrost in the refridgerator while I'm at work - and then make the sauce while the oven preheats. Leftovers are rare at our house but boy are they good!

CHICKEN CORDON BLEU CASSEROLE
This is true Chicken Cordon Bleu for me. Bite sized pieces make it a favorite for children. You can make the casserole a day or two ahead of time, and just pop it in the oven for a quick meal. For a lighter twist, you could skip the breading on the chicken and just brown in a pan. I can guarrantee that you won't have any leftovers with this dish.
